Roasted Pork Chops and Peaches
Serves 4
1 10-ounce package couscous (11/2 cups)
1 tablespoon olive oil
4 bone-in pork chops (3/4 inch thick; about 2 pounds total)
Kosher salt and black pepper
2 peaches, cut into wedges
1 small red onion, cut into thin wedges
3 tablespoons white wine vinegar
1/2 cup fresh basil leaves
Directions:
Heat the oven to 400 F. Cook the couscous according to the package directions.
Meanwhile, heat the oil in a large ovenproof skillet over medium-high heat. Season the pork with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until browned, 3 to 5 minutes per side. Transfer to a plate.
Add the peaches, onion, vinegar, and 1/4 teaspoon each salt and pepper to the skillet, and cook, tossing, for 1 minute. Return the pork and any accumulated juices to the skillet.
Transfer the skillet to the oven and roast until the pork is cooked through and the peaches are tender, 8 to 10 minutes. Serve with the couscous and sprinkle with the basil.

Serves 8 to 10
3⁄4 cup cashew flour
1⁄4 cup coconut flour
3 tablespoons arrowroot flour
1⁄4 cup maple sugar
1⁄4 cup coconut sugar
1⁄4 teaspoon fine sea salt
1⁄2 cup chilled ghee, or palm shortening
1⁄2 cup shredded unsweetened coconut
3 pounds baking apples
Finely grated zest of 1 orange
Finely grated zest of 1 lemon
1 teaspoon freshly squeezed lemon juice
1⁄4 cup pure maple syrup
1 teaspoon ground cinnamon
1⁄2 teaspoon ground nutmeg
1⁄4 teaspoon ground allspice
Whipped cream (dairy or non-dairy), optional
Directions:
In a large mixing bowl, mix together the cashew flour, coconut flour, arrowroot, maple sugar, coconut sugar, and salt. Mix the ghee into the flour mixture using a pastry blender or two knives, until the mixture has the texture of coarse sand. Add the shredded coconut, and use your hands to toss and squeeze the mixture until large, moist clumps form. Place the bowl in the freezer to chill while you prepare the filling.
Peel and core the apples, then cut them into large wedges. In a 2-quart baking dish, combine the apples with the orange zest, lemon zest, lemon juice, maple syrup, cinnamon, nutmeg, and allspice. Remove the topping from the freezer and scatter it over the apples. Place the baking dish on a baking sheet and bake for 1 hour, until the top is brown and the sauce is bubbling. Serve warm with whipped cream on top.

The Origins Of Oktoberfest
Oktoberfest
is a celebration that transcends geographical boundaries. Much like people in various pockets of the globe celebrate St. Patrick's Day and Cinco de Mayo even if they have little or no connection to Ireland or Mexico, respectively, Bavarian heritage is not a prerequisite for participation in Oktoberfest revelry.
According to Oktoberfest.de, each year millions of people are attracted to the festival of Oktoberfest. It's not hard to see why so many people attend Oktoberfest, which is synonymous with fun, food, music, and, of course, beer. But the chance to engage in what might be best characterized as living history undoubtedly is part of the appeal of Oktoberfest as well. Oktoberfest is indeed steeped in tradition, and understanding the history of the beloved festival can make the celebration even more enjoyable.
The first Oktoberfest occurred as part of a wedding. Kronprinz Ludwig of Bavaria, who later became King Ludwig I, was set to marry Princess Therese
of Saxe-Hildburghausen on October 12, 1810. The couple's nuptials were deemed a cause for great celebration, and a horse race was held in their
honor on October 17. The inspiration for the races and the subsequent celebration of Oktoberfest remains a topic of debate. But there's no debating that Ludwig's decision to invite the people of Munich to join in the festivities had a lasting effect, inspiring many of the city's wealthiest residents to decorate the city. But even the less well-todo joined in the celebrations. In fact, according to Oktoberfestguide.com, 32,065 buns; 3,922 pounds of swiss cheese; 400 kilos of mutton; 8,120 cervelat sausages; and 13,300 pairs of smoked sausage were distributed for free. Alcohol and music also featured prominently during the inaugural Oktoberfest, as 232 hectoliters of beer and four hectoliters of Austrian white wine were served during a celebration that also featured 150 musicians.
Though the festive atmosphere of Oktoberfest is known across the globe, the celebration has not been without its tragic moments. For example, Oktoberfest 1980
was shaken by a bomb that exploded at the festival entrance on September 25. Thirteen people were killed and more than 200 were injured, and the bombing remains under investigation more than 40 years later. World wars also affected the beloved festival, which was suspended between 1914 to 1918 due to World War I and then again from 1939 to 1945 due to World War II. The years immediately following both wars also featured toned down events that were not characterized as Oktoberfest but rather autumn celebrations. Celebrations in 2020 and 2021 were canceled due to the COVID-19 pandemic.
Oktoberfest remains a popular celebration more than 200 years after the inaugural event. Though devotees insist nothing can match the annual celebration in Munich, those who can't make it to Germany can likely find some Oktoberfest festivities close to home, wherever that home happens to be.

Assummer transitions to fall, many changes take place. In addition to changing landscapes, men and women may need to adapt their health and wellness habits to ensure that they stay healthy and happy. Part of that daily regimen includes how to care for skin as the seasons change. Just as skin requires certain protection from the sun and heat in the summer, skin has special needs in the fall and winter. Fall and winter are often characterized by cold, dry weather, which can make these times of year particularly challenging for people with dry or sensitive skin. These tips can help people maintain their skin’s appearance and health.
• Don’t Skip The Sunscreen. Sunscreen is not a summer-only requirement. UV rays can damage the skin any time of year, even if the rays are not as strong as during the summer. UV radiation accelerates and increases the risk of skin cancer. It also can lead to premature aging. Utilize a sunscreen with an SPF of 30 or higher every day.
• Invest In A Humidifier. Dry, cold temperatures can rob the skin of essential moisture, even indoors. Dermatologists suggest using a humidifier at home to boost the amount of moisture in the air. This can
make skin more comfortable and can have other health benefits as well.
• Skip Hot Showers. It can be tempting to sit under a hot stream of water to warm up. However, hot water dries out the skin by depleting its stores of natural oils, says Glacier Med Spa. Take warm showers instead and don’t stay in for longer than 15 minutes.
• Limit Exfoliation. While exfoliation can remove dead skin, overdoing it can make already sensitive skin more raw. Increase the time between exfoliation treatments. Consult with a dermatologist for more advice about dealing with flaky skin.
• Don’t Forget Your Lips. Using a thicker moisturizer on the body and face can help add and retain moisture, but pay attention to your lips and eyes as well. Something as simple as petroleum jelly on the lips can help prevent chapping. Invest in a quality eye cream to help the delicate skin around the eyes as well.

The Health Benefits Of Being In Nature
Natureenthusiasts are known to say that spending time in the great outdoors has a positive effect on their mental and physical well-being. Such an outlook is more than mere speculation, as it turns out that spending time in nature provides a host of health benefits that might surprise even the most devoted outdoors enthusiasts.
Nature And Cognitive Health
A 2010 study published in the American Journal of Alzheimer’s Disease & Other Dementias found that engaged persons with dementia in horticultural therapybased (HT-based) programming solicited higher rates of participation than traditional activities (TA) programming. In addition, a separate 2013 study in the journal Dementia found that exposure to a therapeutic garden had a positive impact on the quality of life of people with dementia. And it’s not just dementia patients who can experience the cognitive benefits of time spent in nature, as the Hagley Museum and Library report that numerous studies have found exposure to nature improves cognitive function.

The potential health benefits of vitamin D are increasingly drawing the attention of medical researchers and for good reason. According to the Harvard Medical

Given the aforementioned health benefits related to spending time in nature, it’s easy for even non-scientists to conclude that being outdoors has a profound impact on overall well-being. But non-scientists can rest assured that recent research has confirmed such conclusions. A 2019 study published in the journal Scientific Reports found that individuals who spent at least 120 minutes a week in nature were significantly more likely to report good health and psychological well-being than those who spent less time outdoors. Though the authors of the study cautioned that the exposure-response relationship was under-researched and therefore likely needed to be studied more extensively, in the meantime individuals, after a consultation with their physicians and confirmation that it’s safe to get out more often, can aspire to spend at least 120 minutes in nature each week. The results may speak for themselves.
As the days become shorter and the weather cools down, a new crop of allergy symptoms can arise, turning the autumn season into one marked by sneezing, scratchy throats and itchy eyes. Medications can alleviate such symptoms, but allergy sufferers may want to investigate some natural ways to beat allergies. According to the American College of Allergy, Asthma & Immunology, ragweed is one of the more common triggers of autumnal allergies. Ragweed contributes to “hay fever,” which is a term to describe allergic rhinitis that occurs as a symptom of ragweed pollen in the air. Ragweed releases pollen in mid-August, and it can continue to be problematic until a deep freeze arrives. Other sources of fall allergies include leaf mold and pollen that is present on fallen leaves. This gets circulated when people begin to rake or blow fallen leaves. Classroom pets and chalk dust in schools (although chalkboards are largely a thing of the past) are other autumn allergens.
The good news is that many natural remedies work just as effectively as over-thecounter medications in regard to combatting ragweed and pollen problems. Here’s how to beat the fall allergy blues.
• Stay Away From Pollen. Stay away from pollen and prevent it from being tracked indoors. Remove shoes when walking through the door. Take off clothes worn outside and launder them promptly, showering to wash pollen off of the body. Use an air conditioner or keep windows closed when the pollen count is high.
• Increase Omega-3 Fatty Acids. It is well documented that fatty acids are good for brain health and cardiovascular wellbeing, but these acids also may help with allergies. A German
study linked foods high in omega-3 fatty acids with the ability to fight inflammation, which is a hallmark of allergy suffering. Foods that are high in fatty acids include walnuts, flax, eggs, and cold-water fatty fish.
• Rinse Off Pollen. Use a mild cleanser to rinse the eyelids and eyelashes of pollen, as this is where it tends to congregate after being outdoors. Use saline spray to clear nasal passages of excess pollen as well.
• Take Natural Supplements. A study published in the journal Clinical and Experimental Allergy found participants who used tablets of the herb butterbar showed significant allergy relief after only one week. Select herbs from reputable manufacturers who certify them.
• Use Eucalyptus Oil. This oil is great to have in the house to help clear up sinuses and provide nasal congestion relief. Mix a small amount with coconut oil and rub onto the chest. There also is some evidence that adding a few drops of eucalyptus oil to cleansing products can help kill dust mites around the house.
• Wear A Mask. When doing housework or yard work, wear a mask to reduce the inhalation of specific allergens.
