Countdown to Valentine’s Day with week-long fun

M

illions of people eagerly await the arrival of the shortest month of the year for the opportunity to show their spouses, girlfriends, boyfriends, companions, and many other special people in their lives how much they are loved. Even though Valentine’s Day is just one day a year, that doesn’t mean it should be the only time one expresses his or her love for a special someone.

With this in mind, individuals can count down the days to Valentine’s Day with these daily events that precede the day of love.

February 7: Rose Day

Celebrate love with a vase filled with roses. Red symbolizes love, and many other colors represent heartfelt emotions. The flowers will add to home decor and ambiance.

February 8: Proposal Day

Couples ready to tie the knot can use this day as an opportunity to propose. Those already engaged or married can spend Proposal Day celebrating the events that led up to their own engagement or betrothal, and toast how their relationships have evolved.

February 9: Chocolate Day

Lavish a loved one with all the decadent treats they enjoy. These can include store-purchased chocolates, chocolate fudge sundaes or warm brownies fresh out of the oven.

February 10: Teddy Day

This day can be interpreted in different ways.

Couples adding spice to their relationships can celebrate Teddy Day with the lingerie of the same name. Those looking for a more G-rated experience can gift each other with an adorable stuffed bear. Make-your-own stuffed animal retailers at nearby malls are a place to turn for customizable teddy bears.

February 11: Promise Day

Promise Day provides an opportunity to make promises to each other that are specific to couples’ relationships. These can include being more patient, traveling more or spending more time together.

February 12: Hug Day

On this day the world celebrates the uplifting and comforting power of hugs, which can be powerful expressions of love.

February 13: Kiss Day

Couples can pucker up and spend a few extra moments showing their affection with some kisses. The lips are quite sensitive to touch, and kissing is one of the more renowned expressions of intimacy.

alentine’s Day is an opportunity for couples to celebrate their love for each other, whether their relationship is relatively new or has endured through many years.

The National Retail Federation estimates that Americans are expected to spend close to $20 billion on Valentine’s Day this year. While chocolates and champagne are high on the list of most-purchased items for February 14th, couples should not feel beholden to tradition on Valentine’s Day. This year may be the perfect time to try something new, even if it’s out of couples’ comfort zones. Here are some novel ideas for couple’s looking to set their celebrations apart.

• Paint and sip: Couples can take part in a growing trend this Valentine’s Day. At paintand-sip events, people are guided step-bystep through the process of painting their own masterpieces. Breaks are provided through the evening to indulge in beverages and snacks of choice. Couples can bring along a bottle or two of wine and a platter of cheeses, chocolates or other Valentine’s Day fare.

• Chef lessons: Although some couples may dine out on Valentine’s Day, men and women who like to dabble in culinary arts can prepare their own meals from the comforts of their own kitchens. Others may want to enroll in classes that provide expert instruction from area chefs or culinary instructors. Cooking classes can be an ideal way to spend time together learning skills that can be put to use again and again.

• Adventures: Couples who like to push the envelope can explore the possibilities of thrill-seeking activities. Some may include bungee-jumping, hot-air balloon rides, taking laps at the racetrack, or hitting the ski slopes.

Valentine’s Day might be a time for romance, but couples should not hesitate to buck tradition and spend the day together engaging in activities that accommodate their interests.

Chocolate treat for a Valentine sweet...

Restaurant reservations, red roses and sparkling jewelery all are par for the course on Valentine’s Day. However, nothing may epitomize the holiday more than a decadent chocolate treat. When heart-shaped chocolate boxes are not enough, resourceful gifters can turn to homemade desserts to really capture the spirit of Valentine’s Day. This recipe for “Hot Cocoa Cookies,” courtesy of King Arthur’s Flour, marries the decadent taste of chocolate with the notion of a warm and soothing hot cocoa that’s ideal for a chilly February day. Even though the premium cocoa mix is baked right into the recipe, don’t hesitate to enjoy a steaming mug of cocoa on the side as the perfect complement to this rich and tasty cookie.

Hot Cocoa Cookies - Yield: 51⁄2 dozen cookies

COOKIES:

8 tablespoons (1⁄2 cup) unsalted butter, at cool room temperature, 65 F to 68 F 1⁄2 cup King Arthur hot chocolate mix 1⁄3 cup light brown sugar 1 teaspoon baking powder 1⁄2 teaspoon salt 1 teaspoon espresso powder, optional, for enhanced flavor 1 large egg 1 teaspoon vanilla extract 11⁄4 cups King Arthur Unbleached All-Purpose Flour 11⁄2 cups mini chocolate chips 1⁄2 cup cocoa nibs, optional

TOPPING:

About 51⁄2 dozen Belcolade bittersweet disks, or other high-quality chocolate wafer Marshmallow fluff, cocoa nibs, or chopped nuts, for garnish

DIRECTIONS

Preheat the oven to 375 F. Lightly grease two baking sheets, or line with parchment.

To make the cookies: Combine the butter, hot chocolate mix, brown sugar, baking powder, salt, and espresso powder in a mixing bowl. Beat until the mixture is smooth.

Add the egg and vanilla, and beat until thoroughly combined.

Weigh out your flour, or measure it by gently spooning it into a cup, then sweeping off any excess. Add the flour to the cookie mixture, stirring to combine. Mix in the chips and cocoa nibs.

Drop the dough by teaspoonfuls onto the prepared baking sheets — a teaspoon cookie scoop works well here. Space the cookies at least two inches apart. Bake the cookies for 8 to 9 minutes, until the surface is set, but the cookies aren't quite fully baked.

Take the cookies out of the oven and press a chocolate disk into the center of each cookie. Return the cookies to the oven for 1 to 2 minutes longer, until the chocolate begins to turn shiny and softens. Remove the cookies from the oven once again, and sprinkle the melted chocolate disk with your garnish of choice.

Allow the cookies to cool right on the baking sheet until the chocolate disks are set.

Store well-wrapped cookies at room temperature for a week or so; freeze for longer storage.

TIP:

King Arthur hot chocolate mix is a proprietary blend of sugar, ground chocolate, dry milk, and cocoa powder. If you'd like to use a store-bought hot chocolate mix, try to find one with a similar list of ingredients.

Beating the winter blues

M

ost areas in Europe and North America observe daylight saving time. Daylight saving time is often welcomed in spring, as it helps to extend daylight hours well into the evening, but few may welcome turning the clocks back in fall.

Coupled with the natural shortening of daylight hours as winter approaches, the end of DST facilitates a sudden shift in the ratio of sunlight to darkness.

As autumn transforms into winter, the number of available hours of daylight slowly dwindles. Some areas of Alaska and Canada see only about three or four hours of daylight per day in the winter months.

Conversely, those who live in Key West, Florida, the southernmost point of the contiguous United States, may enjoy around 10 hours of daylight.

Fewer daylight hours can adversely affect mood and productivity. Seasonal Affective Disorder, often referred to as “SAD” or “the winter blues,” has been recognized and included in the Diagnostic and Statistical Manual for Mental Disorders. Clinicians say that, as days become short and dark, a predictable set of symptoms of SAD may emerge. Individuals with SAD may experience a host of symptoms, including difficulty waking in the morning; diminished energy levels; a tendency to eat more; an inability to concentrate; and depression.

The Cleveland Clinic advises that approximately half a million people in the United States suffer from winter SAD, while 10 to 20 percent may suffer from more mild forms of winter blues. The Canadian Mental Health Association states that

between 2 and 3 percent of Canadians will experience SAD in their lifetime. Another 15 percent will experience a mild form of SAD that leaves them only slightly depressed.

Similar symptoms can occur for those people who live in cloudy regions or high latitudes.

Evidence strongly suggests SAD is linked to sunlight. This lack of sunlight may trigger production of melatonin in some individuals. Melatonin is a hormone made in the pineal gland that regulates sleep onset and sleeping patterns.

A combination of selfcare strategies as well as professional medical treatment may help those with winter blues or more severe SAD. The U.S. Department of Health and Human Services says that these strategies can help people coping with SAD.

Shoppers’ guide to Presidents’ Day sales

O

n the third Monday in February, Americans stop to remember the contributions of the many great leaders who have served as President of the United States. Certain Presidents’ Day traditions have developed over the years, including an opportunity for shoppers to find great deals on a host of items.

Originally established in 1885 to recognize President George Washington, the day we now know as Presidents’ Day was then known as Washington’s Birthday and was traditionally celebrated on February 22. The holiday became known as Presidents’ Day after it was moved to the third Monday in accordance with the Uniform Monday Holiday Act, which enabled the nation’s workers to enjoy more three-day weekends. In addition, the Uniform Monday Holiday Act served as a way to combine the celebration of Washington’s birthday and Abraham Lincoln’s birthday, which is February 12.

In addition to serving as a chance to celebrate and reflect on the contributions of our nation’s past presidents, Presidents’ Day has emerged as a day to rest and shop.

Stores across the country advertise special prices to tie into the day and capitalize on the three-day weekend.

For many retailers, Presidents’ Day is the first major sales opportunity of the new year. The following are some ways shoppers can capitalize on Presidents’ Day sales.

H

eart-shaped boxes filled with decadent treats are coveted gifts on Valentine’s Day. Chocolate lovers typically have a favorite type of chocolate, whether it’s creamy filled truffles or chocolate pieces with fruit or nut fillings.

The tradition of gifting chocolate is anything but new. Chocolate and other sweet treats have been offered for centuries as prized gifts.

Even ancient Aztecs and Mayans celebrated chocolate and saw it as a hot commodity. Drinks made of cacao beans would be given as presents to people of high status. Chocolate also would be offered to the gods as a token of appreciation. Cacao beans were even used as a form of currency at one point.

During the 17th century, chocolate consumption grew considerably across Europe. Chocolate houses cropped up in London, and the French elite often indulged in chocolate.

Chocolate’s popularity continued to grow, but the dessert was not linked to Valentine’s Day until nearly 200 years later. In the mid-1800s, an enterprising individual named Richard Cadbury was looking for a way to make chocolate even more popular than it already was. He sought out a method to make drinking chocolate more palatable and created “eating chocolates.” These chocolates were packaged in decorative boxes.

Eventually, Cadbury saw the benefit of putting images of cupids and roses on the boxes. Cadbury even designed chocolate boxes in the shape of hearts that could be saved as mementos. These chocolates soon became intertwined with Valentine’s Day celebrations.

On the other side of the Atlantic, Milton Hershey dabbled in commercializing chocolate as well.

Hershey began as a caramel maker, but experimented with covering the caramels in chocolate in 1894.

Hershey would go on to develop one of the most successful brands of chocolate in the United States, which included the famous Hershey bar. In 1907, Hershey launched production of tear-drop shaped “kisses.” (The chocolates were given their unusual name because of the “smooching” noise made by the chocolate when being manufactured.) The kisses became wildly popular and made for affordable chocolate gifts on Valentine’s Day.

Many other chocolate manufacturers soon began packaging their chocolates in special boxes for Valentine’s Day. Russell Stover and Whitmans are two such manufacturers who have long specialized in heart-shaped boxes or other decorative Valentine’s gifts.

Traditionally, men have gifted women with boxes of chocolate for Valentine’s Day. However, that role is reversed in other areas of the world. For example, in Japan, women give gifts — namely chocolates — to the men in their lives to express love, courtesy or social obligation. This tradition first began in 1936 when confectioner Morozoff Ltd. ran the first ever Valentine’s Day ad in Japan through a local English newspaper. By the 1950s, other Japanese confectioners were following suit.

Whether one believes that chocolate symbolizes heightened status, acts as an aphrodisiac or is just a special treat, chocolates will likely always be associated with the day of love.

Enjoy corned beef and cabbage this St. Patrick’s Day

C

orned beef and cabbage might not be a part of many people’s diet regimens throughout the year, but come March 17, it’s not uncommon to find people from all walks of life indulging in this beloved meal.

March 17 marks the celebration of St. Patrick, the patron saint of Ireland. Over the years, the day has also become a celebration of the Emerald Isle. Such celebrations tend to feature corned beef and cabbage, even though the dish may have little to do with Ireland (and even less to do with St. Patrick). The precise origins of the link between corned beef and St. Patrick’s Day remain a topic of debate, but some historians say the corned beef enjoyed today can be traced to New York City’s Irish immigrant population in the 19th and 20th centuries, who popularized a salted meat made from brisket that was then sold by Jewish butchers.

Regardless of the authenticity of its link to Ireland, corned beef is delicious and many modern Paddy’s Day celebrants wouldn’t think of going without it on March 17. Those who want to cook up their own can try this recipe for “Corned Beef and Cabbage” from Arthur Schwartz’s “New York City Food” (Stewart, Tabori & Chang).

CORNED BEEF AND CABBAGE Serves 6 to 8

Cook a whole brisket with both sections together with all its fat. (You can trim off the fat after the meat is cooked.)

Whole brisket and second-cut corned beef brisket are hard to find, but your supermarket should have first-cut corned beef vacuum-packed in plastic. Choose the fattiest piece in the case and treat it gently.

You can cook the cabbage and potatoes in the same water as the corned beef. Because the other vegetables need to be cooked in water that simmers more than the meat, scoop out water from the corned beef pot and cook the vegetables in a separate pot or pots.

DIRECTIONS

Place the corned beef in a pot that holds at least 5 quarts of water. Cover completely with cold water. Place over high heat and bring to a simmer.

As soon as bubbles start to break on the surface of the water, adjust the heat so the water simmers very, very gently. With a slotted spoon, skim off the residue that accumulates on the surface. When the residue stops coming to the surface, add the pickling spices.

Continue to cook, with bubbles just gently breaking on the surface, for 3 to 4 hours, until fork tender.

The meat can be safely held in its water for about 2 hours; reheat gently.

Cook the vegetables until fork tender in separate pots of boiling fresh water or, especially for the cabbage, use some of the water in which the corned beef was cooked.

Slice the corned beef and serve with mustard and/or horseradish on a platter, surrounded with some of the vegetables or with vegetables in a separate bowl.

How to make driving in inclement weather more safe

axes are an unavoidable fact of life. Unfortunately, they can be somewhat overwhelming, which can cause people to put the task off and miss the deadline.

Use these tips for a stress-free tax season:

mpaired visibility can be a safety hazard while driving. Everything from sun glare to hail can affect a driver’s ability to see the road and navigate it effectively. Before drivers get behind the wheel, they should make note of their local forecast and make a plan for what to do if rain, snow or other conditions make it challenging to drive.

The International Association of Traffic and Safety Sciences indicates that, based on an examination of crash test data conducted by the National Oceanic and Atmospheric Administration, the “likelihood of a crash increases during periods of low visibility, despite the tendency for less traffic and for lower speeds to prevail during these times.”

Drivers can take several steps to improve their visibility when driving in poor weather conditions.

• Inspect and change windshield wiper blades. Wipers are instrumental in clearing precipitation away from the windshield. If they’re not functioning properly, wipers cannot do their jobs. Drivers should replace their wipers at the first indication that they are no longer effective. In some conditions, wipers can freeze or stick. Drivers should then pull over and clean the wipers manually.

• Clear obstructions. Always make sure the windshield is clear before driving. This can include removing ice and snow in the winter and cleaning off mud or bug splatter in the spring and summer. Use

the front and rear defrost if condensation fogs up windshields and windows.

• Slow down. Foul weather can reduce drivers’ ability to see far into the distance. Drivers should always drive slower in inclement weather in order to improve reaction time.

• Top off fluids. Always keep the windshield washer reservoir full and keep extra fluid in the trunk.

In addition, look for a fluid that does not freeze in very cold temperatures.

• Learn how to drive in fog. Each year, more than 38,700 vehicle crashes occur in fog, states the Federal Highway Administration.

Travelers Insurance recommends slowing down, staying focused and using regular headlights and not high beams when driving in fog.

The sooner you get your taxes filed, the sooner you can stop worrying about them. Early filing also means an earlier refund -- if you’re due one -- or time to plan to prepare to pay any owed taxes. To ensure it all happens on time, actually block out time in your calendar to sit down and work on your taxes. Be sure not to underestimate how much time is needed. n our grab-and-go culture, plastic is pervasive at the grocery store. But as more supermarkets worldwide adopt smart strategies for reducing single-use plastic packaging, experts say that these same changes are possible here in the U.S., so long as retailers, companies and individuals commit to making them a reality.

“It’s time to build smarter supermarkets,” says Kate Melges, plastics campaigner, Greenpeace. “We’re starting to see examples of retailers moving away from throwaway packaging, but not at the urgency and scale needed to address this crisis.”

A new report from Greenpeace, “The Smart Supermarket,” travels through a hypothetical grocery store to explore how single-use packaging-free initiatives can be implemented in every aisle, as well as details the benefits each change would have on consumers and retailers.

As you head into a new year and possibly resolve to reduce your environmental impact, consider these report insights:

• “Nude” food: Plastic-wrapped produce creates needless packaging waste and potentially leads to wasted food, as consumers are required to buy portion sizes they may not need. “Nude” food lets you buy exactly what you need. For those products that do require packaging, stores and consumers should consider natural alternatives, such as banana leaves tied with bamboo twine.

•B ulk staples: Smart dispensing systems for such shelf-stable foods as rice, beans and lentils, allow customers to buy the quantities they need and can afford. And when customers dispense products into reusable containers they’ve brought from home or are supplied by the store, the system can eliminate single-use packaging.

•R efillable personal and home products: While the public is becoming aware of the need for reusable shopping bags and coffee cups, there’s less awareness about alternatives to single-use plastics for beauty and cleaning supplies. Refill stations on favorite shampoos, dish soaps and more can substantially reduce plastic waste.

•S marter takeout: Many grocery stores have togo options like salad bars and hot food counters.

At a smart supermarket, takeout will not mean throwaway. Technology is at the heart of the concept, with customers using an app to collect rewards when they return reusable cups and containers. This is great for stores who want to establish brand loyalty, and great for customers who want kickbacks and to reduce their plastic use.

•S ustainable checkout: Five trillion single-use plastic bags will be used this year alone -- that is 160,000 bags per second. Providing durable, reusable bags at checkout through a rent-a-bag scheme is an easy way for stores to reverse this trend.

How to care for wild birds this winter

he arrival of winter forces everyone to confront the changes synonymous with the season, and local wildlife is no exception. Low temperatures, harsh winter storms and a scarcity of food can make it challenging for wildlife, including birds, to thrive throughout the winter.

Even though several species of birds are migratory and travel to warmer climates to wait out winter, many others stay put. The Audubon Society says that keeping close to home helps some species of birds maintain their territories.

Some birds will puff up to retain heat, others will seek shelter in dense foliage or cavities to avoid the elements. Many birds will huddle together to share warmth.

Another way of keeping warm is building up fat as an insulator and energy source. The Audubon Society says more than 10 percent of some birds’ winter body weight may be fat. That can be challenging to maintain when common sources of food, such as insects and berries, disappear as winter wears on. This is when some human intervention can prove handy, advise ornithologists.

A few simple efforts may benefit birds and other wildlife that may not hibernate winter away or escape to the tropics.

Khater stresses that while mortgage rates are an essential factor to consider in the home-buying process, there are other important items to think about as well as you lay the groundwork for your purchase.

How to help the homeless this winter

• Donate coats, scarves and gloves. In 2017, residents of Bristol, England, tied scarves to the city’s lampposts for homeless to use. Similar concepts can be implemented in towns and cities across the globe. In addition, look for organizations that collect warm clothing for the homeless and the needy.

he problem posed by homelessness is considerable. The National Alliance to End Homelessness says that, on any given night in the United States, more than half a million people are experiencing homelessness. And the problem is not exclusive to the U.S., as the Homelessness Partnering Secretariat (HPS) estimates that between 150,000 and 300,000 individuals experience homelessness in Canada each year.

• Volunteer with a soup kitchen. Soup kitchens routinely provide hot meals for homeless visitors, and such facilities are often in need of volunteers.

Many homeless people are single adults who have nowhere else to turn. Veterans make up approximately 9 percent of all homeless singletons.

While homelessness is challenging at any time of the year, winter is especially brutal for homeless individuals. Those who have no indoor places to sleep (shelters fill up quickly in the cold or are avoided for other reasons) typically must confront harsh winter weather, which can increase their risk for hypothermia. Art from the Streets, a nonprofit organization that strives to help the homeless, says winter weather can prove fatal for homeless communities, which is perhaps one reason why the average age of death for a homeless person is 47.

People who have the comfort of warm clothing and shelter may not realize the plight of the homeless this time of year. But with some generosity and volunteerism, anyone can help the homeless community this winter.

• Partner up with an organization. The Blessing Bag Brigade is a New Jersey-based nonprofit that is dedicated to providing various items of comfort to homeless individuals. The organization routinely collects toiletries, snack foods, socks, razors, and breakfast bars and packages them up in bags to deliver to the homeless. Learn more at www.blessingbagbrigadenj.org.

• Alert professionals. Many different charities help place homeless people in temporary shelters or get them a warm bed or meal. Do a quick search of homeless organizations in your area and give a call to find out if they can assist someone you may have spotted on the street.

• Provide hot meals or beverages to a homeless individual. Many times someone who is homeless may benefit significantly from a small token of compassion. If you do not want to give cash to panhandlers, then instead buy a hot sandwich and deliver it to someone who is homeless.

Helping homeless individuals and organizations that aim to help the homeless takes on urgency when the winter arrives. It may not require much to provide comfort and safety to someone in need.

Buddy up for safety

T

he buddy system is a popular and effective safety measure.

The “buddy system” involves teaming up with a partner to prevent the safety risks of being alone. Both parties are then responsible for ensuring the other person’s safety.

The buddy system is effective in various situations. For example, someone who works in a remote location or with hazardous substances can benefit from having a teammate nearby in the event something goes awry. That buddy can then call for help or even administer help on his or her own.

Office fire evacuation plans often pair employees up so that each is responsible for making sure the other has evacuated and reached safety. In that instance, the buddy system reduces confusion and makes for a more organized system.

The buddy system also may be utilized in emergencies or instances when there is increased risk for injury, such as during a natural disaster or while engaging in certain risky activities. The Centers for Disease Control and Prevention says that buddies can each look

out for hazardous conditions, safety demands and stressors. Buddies can be utilized when a person is swimming, surfing, hiking, biking, or camping in the wilderness.

Many schools also utilize buddy systems so that students are never alone. This is handy during school trips or when students are not on campus. The buddy system helps instill a sense of responsibility.

Buddies help make sure their partners get back on the bus and are accounted for when there may not be enough adult chaperones.

Children who walk home from school or wait at a bus stop may be paired with a buddy for increased safety against strangers and other hazards. The Holts Summit Police Department in Missouri says that a child alone could become a much easier target if a predator drove by than if a child were with a buddy or in a group.

Buddies can be a friend, an older sibling or an adult approved by parents or guardians. Buddies also may be friends who are asked along when another wants to enjoy a night out on the town or use a rideshare
