Growing up on Long Island, I can recall the cold winters when I would long for and daydream about the first bloom of spring. I would relish the vacation my family and I would take each year during winter break to enjoy someplace warm and sunny on the beach.

Though I am still not a fan of temperatures that drop below 40 degrees, as I have matured, I have come to appreciate each of the four seasons that we are blessed to experience here on Long Island. When you lean into moments, you can make them beautiful and memorable. Activities like sledding or snowboarding with my son, sitting by a warm crackling fire with a blanket and a good book, whipping up heartier meals, making snow angels and sipping a mug of hot coca are just some of the cherished moments I now look forward to during the winter months.

February is the month of fluffy pajamas and socks, warm mittens and scarfs, and taking in the splendor of a Winter Wonderland on our beautiful and magical island. This month, I will be throwing caution to the wind and going ice skating for the first time in years. Wish me luck!

Stay Safe and Warm During Winter Workouts

A

thletes devoted to outdoor workouts do not abandon their routines when winter rears its chilly head. While it can be difficult to embrace the great outdoors when temperatures hover around freezing, maintaining your motivation bodes well for your fitness goals the rest of the year.

Staying warm is a top priority for athletes who exercise outdoors during winter months. While there’s no guarantee winter winds won’t test your willpower, there are ways to stay warm when working out in colder climates.

For years, many people subscribed to the conventional wisdom that suggested people lose 40 to 45 percent of their body heat through their heads. But in 2008, researchers at Indiana University debunked that myth, suggesting that if humans lost that much heat through their heads, they would be just as cold when going outside without a hat on as they would be if they left home without wearing any pants. But wearing headgear when exercising outdoors is still a good idea, as the head is more sensitive to changes

in temperature than many other areas of the body. A wool hat you can pull down over your ears can protect them from getting too cold.

Athletes may also want to consider ski masks or other facial covers that can protect their faces.

Layering has long been a reliable way to beat the cold when temperatures are at their lowest. But layering must be done correctly to be effective. When choosing your workout gear, choose an inner layer that will move moisture away from your skin. Cotton retains moisture, and that means your sweat will cling to your body and make you feel cold.

Once you find a shirt made with moisture-wicking material to wear against your skin, look for a second layer that also wicks moisture so you can more effectively control your body temperature. Your outer layer should be capable of handling the elements, so look for something that is waterproof and wind-resistant.

Check the forecast before beginning an outdoor exercise, paying particular attention to the wind chill. According to the Mayo Clinic, frostbite can occur when skin is exposed to wind chill levels below minus 18 F for 30 minutes. If need be, shorten outdoor workout routines and find ways to exercise indoors when wind chills get dangerously low.

Know your weather reports. While it’s admirable to stay on course with your outdoor workouts in the winter, don’t allow your devotion to overtake your common sense.

Comfortable Winter Entertaining Ideas Winter entertaining need not end once Christmas and New Year’s Day have come and gone. Getting together with friends and family is still possible, even when the weather outside is frightful. When Mother Nature takes a chilly turn, those who don’t want the party to end can consider the following entertaining ideas.

Indulge in sweet treats. Comfort foods can make even the most blustery winds easier to tolerate.

Invite people over for a dessert party. At a dessert pot luck party, everyone brings along a favorite decadent dessert, from molten lava chocolate cake to warm bread pudding. Serve alongside tea, coffee and hot chocolate. Adults can enjoy the added punch of spiked beverages, which can warm everyone up instantly.

Host a “snowed in” party. Spending a day cooped up inside when the roads are covered in snow might not be your idea of a good time, but inviting a mix of friends and

Sled styles: Sleds come in many different styles, each with its own advantages. Sleds with metal blades will work like ice skates, balancing riders’ weight on two metal runners. These sleds can work well during icy conditions or with hard-packed snow. Toboggans can fit multiple people, which can increase the fun factor and downhill speeds. Choose safe hills, such as those that are free of bare spots, holes, trees, and obstructions, and do not end abruptly at a road. Hills with a long, flat areas at the end make for easy, safe stopping.

Safety first: Put safety first when sledding. Sled during the daytime so visibility is better. Keep arms and legs on the sled, and only sled feetfirst, advises the National Safety Council.

Fun Family Friendly Winter Activities

M

any people may run indoors when the temperatures outside approach or dip below freezing. But the truly adventurous see no reason why a little cold weather should keep them cooped up indoors for months at a time.

Sports and other physical activities can provide the perfect respite from the cabin fever that can settle in during long winters. Families looking to get some quality time outdoors together this winter can enjoy a host of activities in the great outdoors, even if the temperatures are a tad on the chilly side.

Sledding. Sledding may remind adults of their childhoods and turn kids’ snow days into fun afternoons they will never forget. Kids can seemingly ride their sleds and toboggans down snowy hills all day long, but even parents get a kick out of racing kids downhill or sharing a sled with their youngsters. While older kids can typically handle sleds on their own, parents should ride along with toddlers to prevent falls and handle steering duties. When sledding, keep a close eye for any signs that suggest kids might be getting too cold, such as shivering or clothes that are soaked through.

Snowshoeing. Parents may not know that many retailers sell snowshoes for children. While snowshoeing can be physically demanding, it’s also a fun way for families that like family walks to

continue those traditions even if there are a few inches of snow on the ground. Make sure kids are bundled up, paying extra attention to their footwear. Kids will enjoy snowshoeing more if their boots are both comfortable and capable of keeping their feet warm.

Snowman building. Perhaps no outdoor winter activity is more conducive to family fun than building a snowman. The season’s first substantial snowfall provides the perfect opportunity for parents and their children to start building some snowmen. While “snowman building” is unlikely to find its way onto any gym schedules, building a snowman provides a great workout.

Lifting snow is great strength training, while pushing snow to form Frosty’s body is a great way to get in some cardiovascular exercise.

Skiing and snowboarding. The earlier youngsters start skiing and/ or snowboarding, the more likely such activities will prove second nature. Many resorts offer skiing and snowboarding lessons to kids and adults, so parents can book weekend getaways for the family to nearby resorts and foster a love of winter sports in youngsters.

While it’s tempting to huddle up indoors when winter hits full swing, families who embrace the great outdoors when the temperatures dip can avoid cabin fever and enjoy one another’s company along the way.

Chocolate treat for a Valentine sweet

estaurant reservations, red roses and sparkling jewelry all are par for the course on Valentine’s Day. However, nothing may epitomize the holiday more than a decadent chocolate treat. When heart-shaped chocolate boxes are not enough, resourceful gifters can turn to homemade desserts to really capture the spirit of Valentine’s Day.

This recipe for “Hot Cocoa Cookies,” courtesy of King Arthur’s Flour, marries the decadent taste of chocolate with the notion of a warm and soothing hot cocoa that’s ideal for a chilly February day. Even though the premium cocoa mix is baked right into the recipe, don’t hesitate to enjoy a steaming mug of cocoa on the side as the perfect complement to this rich and tasty cookie: Hot Cocoa Cookies. .

Yield: 51⁄2 dozen cookies Cookies:

8 tablespoons (1⁄2 cup) unsalted butter, at cool room temperature, 65 F to 68 F 1⁄2 cup King Arthur hot chocolate mix 1⁄3 cup light brown sugar 1 teaspoon baking powder 1⁄2 teaspoon salt 1 teaspoon espresso powder, optional, for enhanced flavor 1 large egg 1 teaspoon vanilla extract 11⁄4 cups King Arthur Unbleached All-Purpose Flour 11⁄2 cups mini chocolate chips 1⁄2 cup cocoa nibs, optional

Lightly grease two baking sheets, or line with parchment.

To make the cookies: Combine the butter, hot chocolate mix, brown sugar, baking powder, salt, and espresso powder in a mixing bowl.

Beat until the mixture is smooth. Add the egg and vanilla, and beat until thoroughly combined.

Weigh out your flour. Or measure it by gently spooning it into a cup, then sweeping off any excess. Add the flour to the cookie mixture, stirring to combine. Mix in the chips and cocoa nibs.

Drop the dough by teaspoonfuls onto the prepared baking sheets — a teaspoon cookie scoop works well here. Space the cookies at least two inches apart. Bake the cookies for 8 to 9 minutes, until the surface is set, but the cookies aren't quite fully baked.

Take the cookies out of the oven and press a chocolate disk into the center of each cookie. Return the cookies to the oven for 1 to 2 minutes longer, until the chocolate begins to turn shiny and softens.

Remove the cookies from the oven once again, and sprinkle the melted chocolate disk with your garnish of choice.

Allow the cookies to cool right on the baking sheet until the chocolate disks are set. Store well-wrapped cookies at room temperature for a week or so; freeze for longer storage.

Topping: About 51⁄2 dozen Belcolade bittersweet disks, or other high-quality chocolate wafer Marshmallow fluff, cocoa nibs, or chopped nuts, for garnish

Protect Your Home From Winter's Freeze

reezing temperatures may be good for ice skating or building snowmen, but sub-freezing temperatures can be dangerous for the average person and his or her home.

Cold weather often leaves people scurrying to do whatever is necessary to safeguard themselves from the big chill. But it’s important

that homeowners also protect their homes in cold weather: Plumbing and pipes may be vulnerable to cold weather. Frozen pipes can burst and cause substantial damage to a home, potentially causing flooding and structural damage.

Homeowners should disconnect and drain garden hoses. Water to outdoor hose bibs should be turned

off, though the valves on these outdoor faucets should be left open to drain. Also, outdoor faucets can be covered with insulating foam covers.

The Red Cross says pipes that freeze most frequently include pipes in unheated areas, such as basements, attics, garages, and crawl spaces. Close vents to the outside in areas like attics and basements to limit the amount of cold air that gets indoors. Think about insulating unheated areas, as well as using pipe sleeves, heat tape or wraps on exposed pipes.

By opening kitchen and bathroom cabinet doors, homeowners can allow warm air from a home to reach pipes under the sink. During extreme freezes, keep cold water dripping from a sink to prevent pipes from freezing

hot water heaters. Inspect the heat exchanger for cracks, install a clean air filter and make sure all thermostats are working properly.

Homeowners who heat their homes with oil, wood or coal should make sure they have plenty of fuel on hand. Shortages can occur, and it may take some time for new fuel to arrive in the midst of a cold snap.

As a precaution, homeowners can rely on portable space heaters to fill in the heating gaps during the most freezing temperatures. Exercise extreme caution with these devices, by purchasing a portable heater that safeguards against overheating.

Preparing a garden for spring and summer involves assessing any damage that harsh weather might have caused. As temperatures climb, gardeners can heed the following post-winter garden preparation tips in an effort to ensure some successful gardening in the months ahead.

Assess the damage. Even if winter was mild, gardens might still have suffered some damage. Inspect garden beds and any fencing or barriers designed to keep wildlife from getting into the garden. ach February, Americans celebrate the birthdays of two of the more influential presidents in United States history.

Presidents Day is observed on or near the birthday of America’s first president, George Washington.

However, Presidents Day also celebrates the life of Abraham Lincoln, the 16th President of the United States, who was born on February 12th. As millions of people prepare to celebrate the life of Abraham Lincoln, celebrants can consider the following interesting tidbits about this incredibly influential man, courtesy of Factslides, Constitution Daily and the History Channel:

Make Managing Winter More Fashionable

avigating snowy landscapes and icy streets can be difficult and uncomfortable. Winter clothing is largely classified by clothes that keep you warm, and some that keep you even warmer, but winter need not be strictly about function. Although winter might not be the season of high fashion, anyone can employ strategies to include form, function and fashion into their winter ensembles.

Whip Up Something Sweet For Your

Sweetheart

Certain times of year give everyone license to indulge in sweets. No day of the year is more sweets-friendly than Valentine’s Day!

Heart-shaped boxes of chocolate are ubiquitous come mid-February. While no chocolate devotee is liable to scoff at a box of delicious chocolates, lovers who want to hit a home run with their sweets-loving sweetheart can try their hand at crafting their own confectionary concoction this Valentine’s Day. This recipe for “Chocolate Cardamom Truffle Cake” from Maxine Clark’s “Chocolate” (Ryland, Peters & Small) will amaze that special someone. This recipe serves 10-12.

• Amaretti Base

• 5 ounces amaretti • 1/2 stick (4 tablespoons) unsalted butter • 5 tablespoons sugar

Cardamom Truffle Filling

• 2 1/3 cups heavy cream • 4 to 6 green cardamom pods, lightly bruised to open them 25 ounces dark chocolate (60-70% cocoa solids), grated • 1⁄2 stick (4 tablespoons) unsalted butter, cubed

Cardamom Cocoa Sugar

• 3 green cardamom pods • 1/4 cup sugar 1/2 cup unsweetened cocoa • 1 10-inch cake pan with a removable base, base and sides lined with nonstick parchment paper

DIRECTIONS

To make the amaretti base, finely crush the amaretti in a food processor or put them in a plastic bag and crush with a rolling pin. Melt the butter and sugar in a pan over low heat, then stir in the amaretti crumbs. Press the mixture evenly over the base of the prepared cake pan and refrigerate for 20 minutes.

To make the cardamom truffle filling, put the cream and cardamom pods in a pan and heat until almost boiling. Remove from the heat and set aside to infuse for 20 minutes.

Meanwhile, put the chocolate and butter in a saucepan. Strain the infused cream through a fine strainer onto the chocolate (the cream will be warm enough to melt the chocolate). If it doesn’t melt, warm over very low heat, stirring occasionally, but do not allow to boil. Stir in the liqueur, then set aside until almost cold, but not set. With an electric mixer, beat the chocolate mixture for a couple of minutes — this will give the cake a lovely airy texture. Pour onto the amaretti base. Let cool, then cover and refrigerate for at least 6 hours, or up to 48 hours before serving.

To make the cardamom cocoa sugar, remove the black seeds from the papery cardamom pods and put the seeds in a spice grinder with the sugar and cocoa. Grind to a powder. Carefully remove the cake from the pan and peel off the lining paper. Set on a chilled serving plate and sift the cardamom cocoa sugar evenly over the top.

Serve immediately, cut into very thin slices.
