eart-shaped boxes filled with decadent treats are coveted gifts on Valentine’s Day. Chocolate lovers typically have a favorite type of chocolate, whether it’s creamy filled truffles or chocolate pieces with fruit or nut fillings.

The tradition of gifting chocolate is anything but new. Chocolate and other sweet treats have been offered for centuries as prized gifts. Even ancient Aztecs and Mayans celebrated chocolate and saw it as a hot commodity. Drinks made of cacao beans would be given as presents to people of high status. Chocolate also would be offered to the gods as a token of appreciation. Cacao beans were even used as a form of currency at one point.

During the 17th century, chocolate consumption grew considerably across Europe. Chocolate houses cropped up in London, and the French elite often indulged in chocolate. Chocolate’s popularity continued to grow, but the dessert was not linked to Valentine’s Day until nearly 200 years later. In the mid-1800s, an enterprising individual named Richard Cadbury was looking for a way to make chocolate even more popular than it already was. He sought out a method to make drinking chocolate more palatable and created “eating chocolates.” These chocolates were packaged in decorative boxes. Eventually, Cadbury saw the benefit of putting images of cupids and roses on the boxes. Cadbury even designed chocolate boxes in the shape of hearts that could be saved as mementos. These chocolates soon became intertwined with Valentine’s Day celebrations.

On the other side of the Atlantic, Milton Hershey dabbled in commercializing chocolate as well. Hershey began as a caramel maker, but experimented with covering the caramels in chocolate in 1894. Hershey would go on to develop one of the most successful brands of chocolate in the United States, which included the famous Hershey bar. In 1907, Hershey launched production of tear-drop shaped “kisses.” (The chocolates were given their unusual name because of the “smooching” noise made by the chocolate when being manufactured.) The kisses became wildly popular and made for affordable chocolate gifts on Valentine’s Day.

Many other chocolate manufacturers soon began packaging their chocolates in special boxes for Valentine’s Day. Russell Stover and Whitmans are two such manufacturers who have long specialized in heart-shaped boxes or other decorative Valentine’s gifts.

Traditionally, men have gifted women with boxes of chocolate for Valentine’s Day. However, that role is reversed in other areas of the world. For example, in Japan, women give gifts — namely chocolates — to the men in their lives to express love, courtesy or social obligation. This tradition first began in 1936 when confectioner Morozoff Ltd. ran the first ever Valentine’s Day ad in Japan through a local English newspaper. By the 1950s, other Japanese confectioners were following suit. Whether one believes that chocolate symbolizes heightened status, acts as an aphrodisiac or is just a special treat, chocolates will likely always be associated with the day of love.

Unique ways to celebrate Valentine’s Day The National Retail Federation estimates that Americans are expected to spend close to $20 billion on Valentine’s Day this year. While chocolates and champagne are high on the list of most-purchased items for February 14th, couples should not feel beholden to tradition on Valentine’s Day. This year may be the perfect time to try something new, even if it’s out of couples’ comfort zones. Here are some novel ideas for couple’s looking to set their celebrations apart.

• Paint and sip: Couples can take part in a growing trend this Valentine’s Day. At paintand-sip events, people are guided step-bystep through the process of painting their own masterpieces. Breaks are provided through the evening to indulge in beverages and snacks of choice. Couples can bring along a bottle or two of wine and a platter of cheeses, chocolates or other Valentine’s Day fare. •A ctivity night: Couples who are naturally competitive or devoted sports fans can enjoy the evening by engaging in some healthy competition. Beating the winter blues

M

ost areas in Europe and North America observe daylight saving time. Daylight saving time is often welcomed in spring, as it helps to extend daylight hours well into the evening, but few may welcome turning the clocks back in fall.

Coupled with the natural shortening of daylight hours as winter approaches, the end of DST facilitates a sudden shift in the ratio of sunlight to darkness. As autumn transforms into winter, the number of available hours of daylight slowly dwindles. Some areas of Alaska and Canada see only about three or four hours of daylight per day in the winter months. Conversely, those who live in Key West, Florida, the southernmost point of the contiguous United States, may enjoy around 10 hours of daylight.

Fewer daylight hours can adversely affect mood and productivity. Seasonal Affective Disorder, often referred to as “SAD” or “the winter blues,” has been recognized and included in the Diagnostic and Statistical Manual for Mental Disorders. Clinicians say that, as days become short and dark, a predictable set of symptoms of SAD may emerge. Individuals with SAD may experience a host of symptoms, including difficulty waking in the morning; diminished energy levels; a tendency to eat more; an inability to concentrate; and depression. The Cleveland Clinic advises that approximately half a million people in the United States suffer from winter SAD, while 10 to 20 percent may suffer from more mild forms of winter blues. The Canadian Mental Health Association states that

between 2 and 3 percent of Canadians will experience SAD in their lifetime. Another 15 percent will experience a mild form of SAD that leaves them only slightly depressed. Similar symptoms can occur for those people who live in cloudy regions or high latitudes. Evidence strongly suggests SAD is linked to sunlight. This lack of sunlight may trigger production of melatonin in some individuals. Melatonin is a hormone made in the pineal gland that regulates sleep onset and sleeping patterns. A combination of selfcare strategies as well as professional medical treatment may help those with winter blues or more severe SAD. The U.S. Department of Health and Human Services says that these strategies can help people coping with SAD.

• Get out of the house into sunlight or brightly lit spaces early in the day when the sun is out.

• Increase time spent outdoors. Take a break midday and enjoy lunch outside or take a walk, even if it’s chilly. • Try to spend time with other people and chat with friends and relatives.

• Avoid overloading on carbohydrates like cookies and candies.

• Talk to a doctor about using light therapy, which is the

first line of SAD treatment, according to the University of Maryland School of Medicine.

• Consider cognitive behavioral therapy or talk therapy with a licensed mental health provider. He or she also can make recommendations about the use of medication to alleviate symptoms if other treatments do not provide results. There are many ways to mitigate the symptoms of winter blues.

How to help the homeless this winter

• Donate coats, scarves and gloves. In 2017, residents of Bristol, England, tied scarves to the city’s lampposts for homeless to use. Similar concepts can be implemented in towns and cities across the globe. In addition, look for organizations that collect warm clothing for the homeless and the needy.

he problem posed by homelessness is considerable. The National Alliance to End Homelessness says that, on any given night in the United States, more than half a million people are experiencing homelessness. And the problem is not exclusive to the U.S., as the Homelessness Partnering Secretariat (HPS) estimates that between 150,000 and 300,000 individuals experience homelessness in Canada each year.

• Volunteer with a soup kitchen. Soup kitchens routinely provide hot meals for homeless visitors, and such facilities are often in need of volunteers.

Many homeless people are single adults who have nowhere else to turn. Veterans make up approximately 9 percent of all homeless singletons.

While homelessness is challenging at any time of the year, winter is especially brutal for homeless individuals. Those who have no indoor places to sleep (shelters fill up quickly in the cold or are avoided for other reasons) typically must confront harsh winter weather, which can increase their risk for hypothermia. Art from the Streets, a nonprofit organization that strives to help the homeless, says winter weather can prove fatal for homeless communities, which is perhaps one reason why the average age of death for a homeless person is 47. People who have the comfort of warm clothing and shelter may not realize the plight of the homeless this time of year. But with some generosity and volunteerism, anyone can help the homeless community this winter.

• Partner up with an organization. The Blessing Bag Brigade is a New Jersey-based nonprofit that is dedicated to providing various items of comfort to homeless individuals. The organization routinely collects toiletries, snack foods, socks, razors, and breakfast bars and packages them up in bags to deliver to the homeless. Learn more at www.blessingbagbrigadenj.org.

• Alert professionals. Many different charities help place homeless people in temporary shelters or get them a warm bed or meal. Do a quick search of homeless organizations in your area and give a call to find out if they can assist someone you may have spotted on the street.

When heart-shaped chocolate boxes are not enough, resourceful gifters can turn to homemade desserts to really capture the spirit of Valentine’s Day. This recipe for “Hot Cocoa Cookies,” courtesy of King Arthur’s Flour, marries the decadent taste of chocolate with the notion of a warm and soothing hot cocoa that’s ideal for a chilly February day. Even though the premium cocoa mix is baked right into the recipe, don’t hesitate to enjoy a steaming mug of cocoa on the side as the perfect complement to this rich and tasty cookie. Hot Cocoa Cookies - Yield: 51⁄2 dozen cookies

COOKIES:

8 tablespoons (1⁄2 cup) unsalted butter, at cool room temperature, 65 F to 68 F 1⁄2 cup King Arthur hot chocolate mix 1⁄3 cup light brown sugar 1 teaspoon baking powder 1⁄2 teaspoon salt 1 teaspoon espresso powder, optional, for enhanced flavor 1 large egg 1 teaspoon vanilla extract 11⁄4 cups King Arthur Unbleached All-Purpose Flour 11⁄2 cups mini chocolate chips 1⁄2 cup cocoa nibs, optional

Preheat the oven to 375 F. Lightly grease two baking sheets, or line with parchment.

To make the cookies: Combine the butter, hot chocolate mix, brown sugar, baking powder, salt, and espresso powder in a mixing bowl. Beat until the mixture is smooth. Add the egg and vanilla, and beat until thoroughly combined.

Weigh out your flour, or measure it by gently spooning it into a cup, then sweeping off any excess. Add the flour to the cookie mixture, stirring to combine. Mix in the chips and cocoa nibs. Drop the dough by teaspoonfuls onto the prepared baking sheets — a teaspoon cookie scoop works well here. Space the cookies at least two inches apart. Bake the cookies for 8 to 9 minutes, until the surface is set, but the cookies aren't quite fully baked.

Take the cookies out of the oven and press a chocolate disk into the center of each cookie. Return the cookies to the oven for 1 to 2 minutes longer, until the chocolate begins to turn shiny and softens. Remove the cookies from the oven once again, and sprinkle the melted chocolate disk with your garnish of choice. Allow the cookies to cool right on the baking sheet until the chocolate disks are set. Store well-wrapped cookies at room temperature for a week or so; freeze for longer storage.

King Arthur hot chocolate mix is a proprietary blend of sugar, ground chocolate, dry milk, and cocoa powder. If you'd like to use a store-bought hot chocolate mix, try to find one with a similar list of ingredients.

Enjoy corned beef and cabbage this St. Patrick’s Day

C

orned beef and cabbage might not be a part of many people’s diet regimens throughout the year, but come March 17, it’s not uncommon to find people from all walks of life indulging in this beloved meal.

March 17 marks the celebration of St. Patrick, the patron saint of Ireland. Over the years, the day has also become a celebration of the Emerald Isle. Such celebrations tend to feature corned beef and cabbage, even though the dish may have little to do with Ireland (and even less to do with St. Patrick). The precise origins of the link between corned beef and St. Patrick’s Day remain a topic of debate, but some historians say the corned beef enjoyed today can be traced to New York City’s Irish immigrant population in the 19th and 20th centuries, who popularized a salted meat made from brisket that was then sold by Jewish butchers.

Regardless of the authenticity of its link to Ireland, corned beef is delicious and many modern Paddy’s Day celebrants wouldn’t think of going without it on March 17. Those who want to cook up their own can try this recipe for “Corned Beef and Cabbage” from Arthur Schwartz’s “New York City Food” (Stewart, Tabori & Chang).

CORNED BEEF AND CABBAGE Serves 6 to 8

Cook a whole brisket with both sections together with all its fat. (You can trim off the fat after the meat is cooked.) Whole brisket and second-cut corned beef brisket are hard to find, but your supermarket should have first-cut corned beef vacuum-packed in plastic. Choose the fattiest piece in the case and treat it gently. You can cook the cabbage and potatoes in the same water as the corned beef. Because the other vegetables need to be cooked in water that simmers more than the meat, scoop out water from the corned beef pot and cook the vegetables in a separate pot or pots. 1

DIRECTIONS

Place the corned beef in a pot that holds at least 5 quarts of water. Cover completely with cold water. Place over high heat and bring to a simmer. As soon as bubbles start to break on the surface of the water, adjust the heat so the water simmers very, very gently. With a slotted spoon, skim off the residue that accumulates on the surface. When the residue stops coming to the surface, add the pickling spices.

Continue to cook, with bubbles just gently breaking on the surface, for 3 to 4 hours, until fork tender. The meat can be safely held in its water for about 2 hours; reheat gently. Cook the vegetables until fork tender in separate pots of boiling fresh water or, especially for the cabbage, use some of the water in which the corned beef was cooked. Slice the corned beef and serve with mustard and/or horseradish on a platter, surrounded with some of the vegetables or with vegetables in a separate bowl.
