Don’t Miss What The World Is Showing You

W

hen did we stop simply traveling and start documenting the evidence that we traveled? Somewhere along the way, vacation became part adventure, part photo shoot. We don’t just want to see the Eiffel Tower—we want the photograph proving we saw it. Are we traveling for the experience, or just to post? Travel has always been about collecting memories. We took photographs long before social media existed. We bought postcards, saved ticket stubs, and brought home souvenirs. But something about traveling today feels different to me. We can share every meal, every sunset, and every hotel room with thousands of people before we’ve even had a chance to experience it ourselves. There is nothing wrong with taking the perfect photo. In fact, I’m all for it. I love that a photograph can transport me right back to a place I’ve visited years later. www.longislandmediagroup.com

We’ll remember the laughter.

It’s about curiosity.

We’ll remember the person we were with—or the people we met.

It’s about stepping outside what is familiar and allowing yourself to be surprised.

L E I S U R E

By Kerry Mastrobuoni

For me, traveling isn’t really about checking places off a list.

But I can’t help but wonder if capturing the moment is becoming more important than actually being in it. We’ve all seen it: a famous landmark surrounded by people holding their phones at arm’s length, trying to get the perfect angle. We’ve waited in line at a restaurant because it went viral online. We’ve driven across town because someone called a particular café “the most Instagrammable in the city.” And perhaps we’ve all been guilty of it. I know I have. But some of my favorite travel memories probably wouldn’t make anyone’s “Top 10 Things to Do” list. They are the little moments that were never planned. The restaurant we stumbled upon because we were hungry. The conversation with a stranger who somehow made an unfamiliar city feel a little more welcoming.

It’s about discovering that the world doesn’t always look the way you imagined it would. We live in a world where we can research almost everything before we arrive. We can see the hotel room, read thousands of reviews, watch videos of the resort, and plan every detail months in advance. Convenience is wonderful. But I wonder if we’ve planned away some of the mystery.

We’ll remember the feeling of standing somewhere completely new and realizing just how big the world really is. Maybe that’s the real luxury: not seeing everything, but being completely present for something. So the next time you travel, ask yourself a simple question before you reach for your phone: Am I experiencing this - or am I just capturing it? Take the picture.

There was a time when part of the adventure was not knowing exactly what you’d find.

Then put the phone away. Look around.

I miss that. I’m trying to be more aware of this myself.

Your greatest memory might be happening right in front of you.

Put the phone down and eat somewhere without checking the reviews first.

And it may not need a filter.

Sit at a café and watch the city go by. Talk to someone. And yes, take the photograph—but take it because you want to remember how you felt, not because you need to prove to everyone that you were there.

The wrong turn that led us somewhere spectacular.

Because years from now, I’m not sure we’ll remember how many likes a vacation photograph received.

The afternoon when we ditched the itinerary to just wander.

But we’ll remember the sunset.

Until next time, leave a little room for the unknown. Let the maps get tangled, let the battery run low, and trust that the best views are the ones saved entirely in your mind. Lime makes soil less acidic and reduces soil pH. Low soil pH makes it hard for certain plants to grow, but acidic soil is ideal when growing blueberries. Test the soil for lime and amend it depending on what you hope to grow in the spring so it’s ready to thrive when winter ends. • Remove dead or diseased plants. Dead or diseased plants should not be left in the garden through the winter. These plants can attract insects and are vulnerable to disease, which can make it hard for the garden to thrive in the spring. • Protect fruit trees. If you have fruit trees, install mouse guards around the base to prevent mice and voles from killing the trees over the winter. If left to their own devices over the winter, mice and voles may eat the bark of fruit as that can make it hard to remove the trees, killing the trees as a result. ardens provide an idyllic escape from the hustle and bustle of everyday life. In fact, many gardening enthusiasts typically cannot wait for the spring thaw so they can spend the next several months tending to their plants under the warm sun. But a gardener’s work is never truly done, and the work to make gardens stun in the spring actually begins during the preceding fall. Preparing gardens for winter is an important step that can help homeowners ensure their gardens return to full strength in the spring. The tasks necessary to prepare gardens for winter may depend on what homeowners are planting, but the following are some general maintenance suggestions that can keep gardens safe this winter. •R emove weeds and debris. Weeds and debris are unsightly and detrimental to plant life in spring, but they also can be harmful in the winter. Weeds and debris left to linger in gardens through the winter provide overwintering spots for insects and can contribute to disease. So it’s imperative that weeds and debris are removed before the ground hardens in winter. Don’t wait until the ground hardens, www.longislandmediagroup.com

Fall Flavors Shine In A Chewy Cookie

F

all is a season of cooler temperatures and changing leaves, and it also marks the return of autumn flavor profiles. Root vegetables, roasts and heartier fare are prime cooking ingredients this time of year. In terms of baking, treats spiced with ginger and cinnamon are in demand each fall. Carrot cake and oatmeal cookies are familiar favorites this time of year. In this recipe for “Carrot Cake Oatmeal Cookies” from “Live Well Bake Cookies” (Quarto Group) by Danielle Rye, delicious spiced carrot cake is transformed into a soft and chewy cookie.

Carrot Cake Oatmeal Cookies Makes 22 cookies 1 cup all-purpose flour, spooned and leveled 1⁄2 teaspoon baking soda 1⁄4 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 teaspoon ground ginger 1 1⁄2 cups old-fashioned rolled oats 1⁄2 cup (1 stick) unsalted butter, softened 1⁄2 cup packed light brown sugar 1⁄4 cup granulated sugar 1 large egg, at room temperature 1 teaspoon pure vanilla extract 3⁄4 cup lightly packed freshly grated carrots 1⁄3 cup raisins 1⁄3 cup chopped walnuts

Directions: 1. Preheat the oven to 3500 F. Line two large baking sheets with parchment paper or silicone baking mats and set aside. 2. In a large mixing bowl, whisk together the flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger until well combined. Stir in the old-fashioned rolled oats and set aside. 3. In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter, brown sugar and granulated sugar together for 1 to 2 minutes, or until well combined. 4. Mix in the egg and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed. 5. Mix in the dry ingredients until just combined, then fold in the grated carrots, raisins and chopped walnuts until fully incorporated. 6. Using a 11⁄2-tablespoon cookie scoop, scoop the cookie dough onto the prepared baking sheets, making sure to leave a little room between each one. Gently press each ball of cookie dough down to slightly flatten it. 7. Bake for 12 to 15 minutes, or until the tops of the cookies are set and the edges are lightly browned. Remove from the oven, and allow the cookies to cool on the baking sheets for 5 to 10 minutes, then carefully transfer the cookies to a wire rack to cool completely. 8. Store the cookies in an airtight container at room temperature for up to 3 days. www.longislandmediagroup.com

illions of people each year look forward to the magnificent colors on display in autumn. Fall offers irreplaceable views, whether you’re atop a mountain ridge or thick in the folds of a forest. In addition, the crackle of leaves underfoot and the earthy smell of the soil tempts the senses even more. Some advance planning can help make fall foliage trips that much more enjoyable and awe-inspiring.

to witness blazing autumn color. During leaf-peeping season, travelers can go coast to coast and see awesome vistas. Some regions are particularly known for their leaf displays. New York’s Catskill and Adirondack regions are prime spots for visitors in the autumn. The travel resource Frommer’s offers more leaf-peeping locales to visit.

PEAK VIEWING TIMES Areas of the northern-most latitude will start to show color earlier than more southern areas. Generally, the leafviewing season begins in late September and runs through early November for much of North America. Peak times for viewing depend on areas of travel and time of year. The Weather Channel offers maps and charts at www.weather. com/maps/fall-foliage for tpeak times for many areas of the U.S.

PACK THE RIGHT GEAR While most people are not without a smartphone that can capture amazing highresolution imagery, serious leaf photographers may want to take out their prized camera equipment for leaf-peeping excursions. Also bring along a map or a GPS-enabled device so you can explore back roads and areas off the beaten path more readily. There are plenty of apps that can help with foliage-finding adventures, so a phone is a handy tool. When packing, also bring along hiking boots, comfortable layered clothing and anything for an afternoon in the great outdoors.

Chowder - Ideal For An Autumn Afternoon

T

he arrival of autumn signifies many changes, and cuisine is no exception. Some foods just match up with certain seasons. Such is the case with the following recipe for "Corn Chowder with Chiles and Monterey Jack" from "The Culinary Institute of America Book of Soups" (LebharFriedman). Though it works year-round, this recipe is ideal for that first brisk autum afternoon.

Corn Chowder With Chiles And Monterey Jack Ser ves 8 6 ears corn, shucked 1 cup heavy cream 2 slices bacon, minced 1 medium onion, finely diced 1 red bell pepper, minced 1 celery stalk, finely diced 1 garlic clove, minced 1 1/2 quarts chicken broth 3 yellow or white potatoes, peeled

and diced 3 medium tomatoes, peeled, seeded and chopped, juices reserved 1 4-ounce can green chiles, drained 1 cup grated Monterey Jack cheese 1 cup corn tortilla strips, toasted,

Directions: Cut the corn kernels from the cobs with a sharp knife, capturing as much juice as possible. Reserve 3/4 cup corn kernels. Puree the remaining corn, along with the heavy cream, in a food processor or blender. Set aside.

Salt, to taste

and chopped

optional

Freshly ground black pepper, to tast Tabasco sauce, to taste

e

Cook the bacon in a soup pot over medium heat until crisp, about 8 minutes. Add the onion, pepper, celery, and garlic. Cover and reduce the heat to low. Cook, stirring occasionally, until the vegetables are tender, 10 to 12 minutes. Add the broth, potatoes and tomatoes, including their juices. Bring to a simmer and cook, covered, until the potatoes are tender, about 20 minutes. Skim any fat from the surface of the soup and discard. Add the pureed corn and cream, reserved corn kernels and chiles and cheese. Warm the soup. Season with salt, pepper and Tabasco. Serve in heated bowls, garnished with tortilla strips, if using. Smoked Corn and Chile Chowder With Monterey Jack Do not try this smoking process unless you have a well-ventilated kitchen. Turn the exhaust fan on high and monitor constantly. Substitute 2 fresh poblano chiles for the canned green chiles. Core and remove the seeds from the poblanos and red bell pepper. Cut into large flat pieces, approximately 4-inches square. To smoke the corn and peppers, place fine wood chips in a disposable aluminum roasting pan fitted with a wire rack (if your rack does not have feet, use balls of aluminum foil to raise the rack a few inches above the wood chips). Use only wood chips that are specifically meant for smoking food. Have ready a fitted cover or aluminum foil large enough to cover the pan. Heat the roasting pan over high heat until the wood chips begin to smolder and smoke. Place the corn and pepper sections on the wire rack over the smoking chips. If the chips are smoldering and creating sufficient smoke, remove the pan from the heat. Otherwise, reduce the heat to low. The idea is to keep the chips smoldering, but to keep them from catching fire. Cover tightly with the lid or aluminum foil and allow the vegetables to smoke for about 15 to 20 minutes. Remove the foil and allow the vegetables to cool. Dice the sections of red pepper and poblano chile. Proceed with the master recipe, adding the poblanos along with the red pepper. www.longislandmediagroup.com

alloween is a time when the line between having fun and being scared is easily blurred. While trick-or-treating and attending parties are ways to enjoy the final day of October, there are plenty of other ways to make Halloween more fun. • Host a Halloween book club. Those who love to read can ensure the October gathering of a book club is one that features a discussion of a scary book. Those looking for a scare can explore horror authors like Stephen King, Anne Rice, Dean Koontz, Clive Barker, Shirley Jackson, and Tananarive Due.

Building Young Minds Through Reading

R

eading can support cognitive health and well-being, and those benefits extend to children. Reading with children supports language development, vocabulary, early literacy and cognitive skills, even before they learn to read on their own. According to the U.S. Department of Health & Human Services’ Early Childhood Learning and Knowledge Center, infants begin developing language skills earlier than once thought. Hearing adults speak and read to them helps prepare their brains for communication. As children grow, shared reading helps expand vocabulary and develop preliteracy skills. Research also links reading for pleasure during childhood with stronger cognitive performance and better mental well-being during adolescence. For More Information, Call 631.226.2636

A hole in the back of the pumpkin can provide easy access when placing candles or lights inside, and cutting here won’t cut off the nutrient and moisture supply a pumpkin needs to avoid drying out. • Scoop everything out. The interior of a pumpkin will be loaded with seeds, which can be removed and later roasted to make a savory snack. In addition to removing the seeds, be sure to get all of the pulp out. Pulp left in the pumpkin will soon get moldy, and that can shorten the lifespan of the jack-o’-lantern. In addition, when removing the interior, try scraping the front inner wall of the pumpkin thinly, which may make it easier to carve.

Tips To Carve The Perfect Jack-O’-Lantern

ack-o’-lanterns are one of many indelible symbols of Halloween. It’s hard to pinpoint the precise origins of jacko’-lanterns, but many historians trace the tradition to 19th-century Ireland. In fact, this instantly recognizable staple of Halloween decor actually gets its name from an Irish folktale character named “Stingy Jack.” Jack-o’-lanterns are ubiquitous in October, but a refresher course on carving one can help those who haven’t dusted off their carving skills since last fall. www.longislandmediagroup.com

Candles might seem like the most authentic and even spooky way to light the interior of the pumpkin, but the heat produced by a burning candle can shorten the life expectancy of the jacko’-lantern. A few simple tips can help Halloween celebrants ensure their jack-o’-lanterns make it all the way to the big day at the end of October.
