etween camp, going on holidays and playdates, summer vacation can feel like endless planning and shuffling from activity to activity. Fortunately, you can use these tips and tricks to cut down on your stress and enjoy quality family time together: Create a schedule. Jot down family activities and commitments on a large calendar and keep it on the fridge so everyone can see what’s coming up. This will help give the kids a sense of security and routine that’s missing during the summer months. Just be flexible, and make sure to schedule plenty of free time to relax and enjoy quiet time with a book. Cut down kitchen time. Don’t like having to choose between healthy and quick, easy meals? Look for simple, nutritious meal options that take much of the work out of cooking. For easy lunches and dinners you’ll feel good about serving the kids, try Mann’s Nourish Bowls. Foods that are comprised of protein and fiber can help you to feel fuller longer. Pack a snack that can provide a boost of energy prior to indulging in any fair foods. Trail mix or a low-calorie protein bar may be enough to tide you over until you leave the fair. Stay Hydrated The Academy of Nutrition and Dietetics says that mild dehydration produces similar symptoms to hunger. If you feel hungry after eating, your body may only need fluids and not food. Therfore, reach for water or a hydrating sports drink (particularly when it is hot outside) as a first step to abating hunger symptoms, especially if you’ve recently eaten. Choose Healthy Food Vendors

Look for vendors that offer things like yogurt cups, roasted vegetables, lean meats and fresh fruits. Kabobs that include lean meats that are low in calories can make a great carnival meal. Corn on the cob without gobs of butter also can be a filling snack. Smart dessert options include fruit smoothies, water ice, frozen yogurt and even a candied apple, which may be rich in fiber. A small dose of cotton candy, which is just 100 calories per ounce, can offer a sweet fix while you avoid deep-fried concoctions. Keep in mind that cheese curds can set you back 650 calories and a funnel cake 720 calories, according to the YMCA. It can take several miles of traversing the fair to burn all those calories. If you splurge on a treat or two, consider sharing it with a friend or family member to cut the portion size. A single bite of a calorie-rich food can be enough to satisfy a craving. If you’re heading to a Renaissance Fair, giant turkey legs may be prime for the picking. Those legs, which may contain as many as 1,140 calories, are well beyond the typical poultry portion size of four ounces. Such food is best shared with others. Pay Attention to Beverages Before you fill up on lemonade or visit the beer tent, remember some beverages contain lots of calories. Weigh your options carefully. If you want a cold beer, you may need to skip that chocolate-covered banana. Fair foods are delicious but often high in calories. Smart choices can ensure dining at a fair does not derail your diet.

pon the arrival of warm weather, many individuals prefer to spend their free time outside, relishing the fresh air and sunshine and evenings spent under the stars. But cracked patios and makeshift chairs and tables may not establish the desired ambiance. An outdoor entertaining area that offers the same amenities found inside a home can make outdoor retreats both comfortable and functional. Creative planning can help homeowners design dream areas

Take an up-to-date photo. Snap a digital head-to-toe picture the day of the trip. This can make it easier for authorities to identify lost children. In a stressful situation, parents may forget what their children were wearing when they went missing. A photo taken the day of the event can help authorities. Dress children in bright colors. Dressing children in very bright colors makes them more visible in a crowd. Lime green, yellow and red clothing can help make children more noticeable. Write down parental contact information. Some parents tuck a piece of paper with their cell phone numbers in their child’s pocket, while others write the number directly on a kid’s arm with a marker or pen. Some parents even apply temporary tattoos indicating their home and/or mobile numbers. Such efforts make it easy for authorities or other adults to contact parents if a child needs assistance.

Identify people children can look to for help. Kids who were taught “stranger danger” may hesitate to go up to other people and ask for help. Parents can identify lifeguards or workers who can assist them should kids become separated from their parents. Assign an adult to each child. It’s easy for one parent to think the other parent is watching. In a family of four, Mom might be watching Joseph while Dad is watching Caitlin. A clear plan means parents can focus their attention accordingly to keep kids safe. Use a child safety harness. Safety harnesses can calm the nerves of parents worried about wandering toddlers. This device tethers a child to his or her parent or guardian, preventing kids from wandering off. Parents never expect to lose their children, but losing kids in crowded public places is possible. Being prepared and acting calmly can help parents quickly find their lost children.

Establish an emergency plan. Families should come up with a plan for reuniting if they get separated. This may include children going up to an authority figure for help or another mother with children. Families also can choose a

Try Something New this Grilling Season

rilling is many people’s preferred method of cooking, perhaps because it combines the great outdoors with delicious food. When grilling, many people are comfortable sticking with traditional backyard barbecue fare, such as hot dogs and hamburgers. But those who want to expand their grilling horizons can try the following simple recipe for Grilled Chicken and Onion Skewers: Grilled Chicken & Onion Skewers Makes 10 to 12 skewers Basting Sauce (optional) 1/2 cup soy sauce 1/4 cup mirin 2 tablespoons sugar Ingredients: 1/2 pound boneless, skinless chicken thighs, excess fat removed and cut into bite-size pieces 1 yellow onion, cut into 2-inch wedges, and/or baby leeks, white part only, cut into 1-inch lengths 1 tablespoon canola or other neutral oil Salt (optional)

Directions: Place 10 to 12 bamboo skewers in water to cover at least 30 minutes before grilling. Prepare a mediumhot fire in a charcoal grill, or preheat a gas grill to medium-high. If using the basting sauce, in a small saucepan, combine the soy sauce, mirin and sugar over medium-low heat and cook, stirring, until the sugar has completely dissolved and the liquid just begins to turn syrupy, 5 to 8 minutes. Remove from the heat and set aside in a small bowl.

Grill the skewers, turning 3 or 4 times and basting with additional sauce, until the chicken is cooked through and the onions are scorched around the edges, about 5 minutes total. If the sauce appears to be burning at any point, move the skewers to a cooler part of the grill, or reduce the

heat if using a gas grill. If using salt instead of the basting sauce, place the skewers directly over the heat and grill, turning 3 or 4 times, until cooked through, about 5 minutes total. Sprinkle both sides of each skewer with salt and remove from the grill. Serve the skewers piping hot.

Drain the skewers. Thread the chicken pieces alternately with the onion pieces onto the skewers, using about 3 pieces of chicken and 2 pieces of onion for each skewer. As each skewer is ready, place on a plate. Brush the chicken and onion pieces lightly on all sides with the oil. The grilling goes quickly, so set up your workstation next to the grill before you begin: the plate holding the skewers, the bowl of sauce and a basting brush and/or the salt, and tongs for turning the skewers. If using the basting sauce, either dip each skewer in the sauce or brush

Keep Summer Road Trips Safe

hen the outdoors beckons, road trips can be the perfect way to see the countryside, escape the routine of daily life and enjoy short vacations.

When taking to the open road, it is important to focus on safety. The National Highway Traffic Safety Administration says that planning and prevention can spare roadtrippers from the consequences of breakdowns, traffic accidents or other road emergencies.

Plan your route. Map out the route before heading out. Be aware of potential road closures, obstacles or construction. Thanks to realtime GPS updates through mobile phones and other devices, some drivers like to rely on tech to get them through. But it’s important to realize service may be spotty in rural areas. Mapping a trip out in advance can save drivers from getting lost during mobile service interruptions.

Stock emergency preparedness items. Prior to a trip, drivers should make sure their vehicles are equipped with necessary safety items. Nearly half of Americans do not check that proper emergency items are stored in their vehicles prior to getting on the road. Before embarking on a road trip, make sure vehicles have a first aid kit, flashlight, water bottles, phone chargers, tirerepair tools, flares, jumper cables, towels and even an old backpack for storage. Schedule a service call. Regular maintenance can keep vehicles from breaking down. Drivers should

Join a roadside repair service. Breakdowns happen even if trips are carefully planned. Automotive clubs can help drivers when breakdowns occur. Some car manufacturers also include roadside assistance in warranty packages, so inquire about your coverage. Refresh defensive driving skills. A safe-driving course can remind drivers of the rules of the road. In some cases, courses also may qualify drivers for discounts on their

stops along any route, and drivers can plan their own stops as well.

Stay over if necessary. According to the NHTSA, driving while drowsy is a contributing factor in 100,000 accidents every year. Drive only when well-rested. Share driving duties or plan a night at a motel so everyone is well-rested. Road trips are all about fun, but drivers must emphasize safety before and during such excursions.

Stop Sand from Spoiling Summer Fun

ew things are as synonymous with summer recreation as a day at the beach enjoying the sun, sand and surf. Whiling away the hours at the coast is an ideal way to get fresh air and enjoy family or solitary time and also can be an entertaining way to exercise and learn about marine life.

While a beach isn’t a beach without sand, sand can adversely affect beach excursions. Sand is a loose, granular material that blankets the coastlines of beaches, lakes and riverbeds. Depending on location, sand is comprised of many materials and comes in a vast array of colors. Silicon dioxide in the form of quartz

Powder up. Baby powder, made of simple cornstarch, can help remove sand from the feet and body. Apply a thin layer to areas where stubborn sand is sticking, and it will fall away. Avoid digging dangers. Digging holes in the sand seems like fun, but it can be dangerous if a collapse occurs. Harvard researchers have catalogued 72 sand collapse stories over the past decade-plus, and 60 proved fatal. A good rule of thumb is to dig sand holes that are no deeper than the knees of the smallest person in the hole.

Regardless of its composition, sand is a nuisance to some people. Because it is lightweight and can stick to clothing and other items, sand often follows beach revelers home. During and after a beach trip, these suggestions can make sand less problematic: Protect the skin. Sand reflects the sun’s rays and can be hot to the touch. Experts estimate that beach sand can reach 120º to 130º F. Wear sandals or water shoes to protect

Rinse all items. Shake and rinse all beach toys of sand before returning home. Hang towels, coverups and other clothing outside to shake off on a clothesline before laundering. This will cut down on the amount of sand tracked inside. Sand can be a bit of a nuisance. Make summer excursions more fun by handling sand effectively.

Tips to Making Delicious Ice Cream at Home

Avoid ice crystallization. Ice crystals in the ice cream can ruin texture by making ice cream crunchy. Freezing ice cream quickly at very cold temperatures is essential. That means freezing the bowl and keeping the ingredient mix cold. Spinning the ice cream and transfering it quickly to the freezer helps keep ice crystals small.

Buy quality ingredients. Choose fresh, high-quality ingredients. Real vanilla beans or extract can produce better flavor than imitations. Select in-season berries and other fruits and, if possible, use organic milk. All of these ingredients will blend together for fresh flavor.

Keep mix-ins small. Mix-ins, like cookie pieces or cake crumbs, can add a different dimension to ice cream. Chill the ingredients and make sure they are small (roughly the size of chocolate chips). Add

Seasonal Selections Serve steak alongside a backyard barbecue staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening. Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame. The following recipe for Grilled Rib-Eye Steaks with Mushroom-Shallot Butter is sure to please, especially when coupled with McNamara’s recipe for Baked Beans, a must-have staple for any backyard barbecue.

Baked Beans Serves 10 2 15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup plus 2 tablespoons unsulphured molasses

Grilled Rib-Eye Steaks with Mushroom-Shallot Butter

1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard

Serves 4 to 6 8 tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature

1 teaspoon ground cloves

1⁄2 cup sliced shallot

Preheat the oven to 350º F.

1 heaping cup sliced cremini mushrooms

Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes.

2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves

Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.

1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely ground black pepper, plus more as needed 4 to 6 steaks (such as rib-eye, New York strip or porterhouse) Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool.

Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400º F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. www.seasonsmagazineonline.com
