‘TIS THE SEASON

For Giving

The holiday season is a time of giving. The generosity on display during the holiday season may not have an official start date, but the first Tuesday after Thanksgiving Day may be the unofficial beginning of the giving season.

The first Tuesday following American Thanksgiving has been referred to as “Giving Tuesday” since 2012. The event was started by the 92nd Street Y in New York City, the United Nations Foundation and the technology website Mashable as a response to the commercialization of the holiday season and the rampant consumerism that seems to start as soon as the last bite of turkey is digested.

Thanks to technology, giving has the capacity to go viral and inspire others to engage in their own charitable efforts. Since its inception, Giving Tuesday has evolved. The event now underscores how communities can harness the power of people working together to elicit great change.

• Avoid stuffing the bird. Rather than stuffing the turkey and cooking everything en masse, prepare the stuffing mixture separate from the turkey. This reduces the risk of contamination from the turkey’s raw juices and helps to achieve a crispy coating on the stuffing guests will enjoy. • Make an aromatic roasting rack. Turkeys typically are placed on a metal rack for cooking so the juices do not cause the turkey to stick to the pan. However, you also can cut onions and lay them with a bed of whole celery stalks and carrots to elevate the roast. This creates extra flavor in the bird and the vegetables also can be served or mixed into the stuffing. Some turkey-roasting techniques can ensure a moist and flavorful main course this Thanksgiving.

The Origins Of Christmas Stockings

he holiday season is rife with tradition. Some holiday traditions, such as holiday lighting displays, are easy to notice, while others are more subtle and possibly even unknown to many celebrants. One tradition that falls into the latter category involves the placing of oranges into Christmas stockings. The origins of Christmas stockings are rooted in legend and one of the more popular tales involves a widowed father of three beautiful girls. According to Smithsonian.com, this father struggled to make ends meet and was concerned that his financial struggles would affect his daughters' ability to find a spouse. As the legend goes, St. Nicholas was wandering through the man's town and heard of his concerns. Recognizing that the man was unlikely to accept charity, St. Nicholas slid down the chimney of his house and placed three gold balls in the girls' recently laundered stockings, which were hanging by the fire to dry. The value of the gold balls, which were discovered the following morning, was enough to ensure the girls could eventually wed. So what does that have to do with oranges? Those who wanted to replicate the tale could not so easily come upon gold balls to place in stockings, so they chose something similar in appearance: oranges.

There’s nothing like

Christmas In New York ROCKEFELLER CENTER, A D E S T I N AT I O N F O R A L L For many decades, the Rockefeller Center Christmas Tree has stood as a holiday beacon for all people. While the lights, decorations and stars have changed over time, visiting the Tree remains a quintessential New York experience. In December 1931, workers at Rockefeller Center pooled their money together to buy a Christmas Tree. The men decorated the 20-foot high Balsam Fir with handmade garlands made by their families. Two years later, Rockefeller Center decided to make the Christmas Tree an annual tradition, and held the very first Tree Lighting Ceremony. This year’s Rockefeller Center Christmas Tree hails from Vestal, NY. It’s an 80 foot tall, 43 foot wide Norway Spruce, which weighs 12 tons. The long awaited and very beloved annual tree lighting will be held at Rockefeller Center on Wednesday, November 29. The Tree will be lit daily from 5am-12am until January 13 at 10:00pm. On Christmas Day, the Tree will be lit for 24 hours and on New Year’s Eve it will shine bright from 5am to 9pm. Whether you head to the Big Apple year after year to gaze at the aweinspiring Tree or you have yet to see it in person, consider making the trip this year. While you’re there, you may want to lace up some skates and jump on the rink! Nothing says “Holidays in New York” quite like skating around the iconic ice rink underneath the Christmas Tree and the Prometheus statue. Plus, incredible dining and shopping awaits you...all at Rockefeller Center. FOR MORE INFO, VISIT WWW.ROCKEFELLERCENTER.COM

R

etail sales during the 2022 holiday season inched ever closer to crossing the trillion dollar mark. Though total retail sales during the November-December holiday season fell short of National Retail Federation forecasts, the group still reported that sales totaled $936.3 billion in that period in 2022. Though a host of variables, including inflation, affect how much consumers spend during a given holiday season, it’s not outside the realm of possibility that 2023 could be the year shoppers cross the trillion dollar threshold. That would require an increase of a little less than $64 billion in spending compared to 2022. Such an increase is not unheard of, even in a single year, as NRF calculations based on data from the U.S. Census Bureau indicate holiday season spending between 2020 and 2021 increased by just under $106 billion.

Doughnuts Make

A Great Chanukah Treat

C

hanukah is a Jewish celebration also known as the Festival of Lights. Chanukah commemorates the miracle of the Temple menorah, during which a minimal supply of oil somehow lasted for eight days. As a result, oil features prominently in Chanukah traditions, and many faithful Jewish people include foods fried in oil as part of their holiday dinners or desserts. This recipe for “Raspberry Jam Doughnuts” from BBC GoodFood produces a delicious treat for Chanukah celebrations. This recipe features metric volumes and weights, so use the correct measuring conversion in countries where the metric system is not employed.

Raspberry Jam Doughnuts

For the icing

Makes 20

400 grams icing sugar, sieved

130 ml whole milk

Pink food coloring

1 vanilla pod, split lengthwise

Freeze-dried raspberries, to decorate (optional)

500 grams strong white bread flour 40 grams golden caster sugar 1 teaspoon fine sea salt 7 grams fast-action yeast 3 medium eggs, lightly beaten 120 grams unsalted butter, softened Vegetable oil, for proving and deep-frying 350 grams raspberry jam

Directions: Pour the milk into a saucepan and add the split vanilla pod. Slowly bring to a simmer and, once it begins to steam, remove from the heat and pour into a measuring jug. If it has reduced, top with up to 130 ml extra milk, then leave to cool until tepid. Put the flour into the large bowl of a stand mixer. Stir through the sugar, salt and yeast. Using the hook attachment for your mixer, begin combining the dry ingredients, then add the vanilla-infused milk and eggs. Keep mixing for 10 minutes until you have a smooth, elastic dough. Scoop small spoonfuls of the softened butter and gradually add to the dough. When all the butter has been added, continue mixing for a further 5 to 6 minutes or until it is well incorporated and the dough is sticky and stretchy. Lightly oil a large mixing bowl, put the dough in the bowl, cover and leave in a warm place for one hour or until doubled in size. Divide the dough into 20 equal-sized pieces (if you want to weigh them, they should be around 45 grams each). Roll the dough into balls and place them, well spaced apart, on two lightly oiled baking sheets. Cover with lightly oiled baking parchment, or a light tea towel (if it’s too heavy it will keep the dough from rising) and leave for a further 1 hour, 30 minutes or until doubled in size. Fill a large heavy-based saucepan two-thirds full with oil and place over a low-medium heat, bringing the temperature up to 170 C. Use a cooking thermometer to check, then carefully lift each doughnut and gently lower into the oil to fry in batches of about five at a time. Cook each batch for 5 minutes, turning halfway, until the doughnuts are dark golden brown. Remove with a slotted spoon and transfer to a baking tray lined with kitchen paper. Leave to cool completely. Spoon the raspberry jam into a piping bag without a nozzle and snip a very small hole in the end. Use a skewer to poke a hole in the side of each doughnut, then push the end of the piping bag into each hole and pipe in a little of the jam. Set aside. For the icing, mix together the icing sugar and 4 tablespoons water, then a drop or two of the food coloring to make it pale pink. Drop a dessertspoonful of the icing on top of each doughnut, then use a palette knife to spread and even out the icing. Sprinkle each one with the freeze-dried raspberries, if you like. www.longislandmediagroup.com

Burn Candles Safely

Holiday Cooking

C

A

For The Holidays And Beyond andles are not in short supply come the holiday season. During Chanukah, candles are an integral component of celebrating the miracle of oil that burned in the Temple for eight days. Celebrants of Kwanzaa utilize candles to represent the seven principles of the holiday. Christians light candles during Christmas services and in their homes to represent the light Jesus brought to the world. There is no denying the warmth and beauty candles can bring to a home when they are flickering delicately. But candles have open flames, so caution must reign supreme when they are in use. The U.S. Consumer Product Safety Commission says 85 percent of candle fires can be prevented by following some key safety precautions. The National Fire Protection Association says Christmas is the most dangerous day for candle fires. Here is how to burn candles safely. • Always trim wicks to 1⁄4-inch before burning candles. Long or crooked wicks can cause uneven burning, dripping, or flaring. • Keep candles at least 12 inches away from anything that can burn. • Use candle holders that are sturdy and will not tip over easily. • Use a long match or long lighter to light candles to prevent fingers and hands from getting too close to the flames. • Run used matches under water to cool them down and prevent fires from occurring after matches are disposed of in the trash. • Never leave a candle unattended. It should be in sight at all times. • Place and store candles beyond the reach of children and pets where they will be less likely to get knocked over. • Never touch or move a candle while it is burning or while the wax is liquefied. • Place candles on stable, heat-resistant surfaces. • Keep candles away from drafts, vents, and air currents. • Follow candle manufacturers’ recommendations on burn time and proper use. • When utilizing multiple candles, place them at least three inches apart from one another. This reduces the chances for the candles to melt one another or create drafts that will cause the candles to burn improperly. • Extinguish a candle if the flame becomes too high or flickers repeatedly. • Refrain from burning a candle longer than three hours at a time, and never burn a candle when there is less than one centimeter of wax at the base. • Use a candle snuffer to safely extinguish a candle and make sure the candle is completely out (wick ember is no longer glowing) before leaving the room. Candles can be awe-inspiring components of holiday decor, but caution must always be the top priority when lighting candles inside a home. www.longislandmediagroup.com

For A Crowd Made Easy

number of things can be expected during the holiday season. Children will anxiously await visits from Santa, and travelers recognize there is bound to be traffic on the roadways and crowds at the airport. And if you’re opening your home to guests, those visitors will be expecting some delicious food. Meals are a big component of holiday entertaining, so much so that holiday hosts may spend weeks pondering what to serve guests. These guidelines can help simplify cooking for a crowd. Plan make-ahead dishes Simplifying holiday cooking comes down to spending less time in the kitchen on the day of the festivities. Make-ahead dishes that can be reheated or set in chafing dishes for buffet meals are preferable. There are lots of dishes to choose from, including casseroles, stews, soups, and baked pasta dishes. Avoid fresh pasta offerings, like spaghetti and meatballs, for example. Leftover noodles will get mushy and will not reheat very well. Ham is a good choice Ham is a forgiving dish that is quite popular for holiday gatherings. Many hams come pre-cooked and pre-sliced, so producing a flavorful main course may be just a matter of dressing it up with seasonings or even using the glaze that often comes with such products. Cater a meal There’s certainly pride that comes with offering guests a table full of homecooked foods. But the expense, effort, and time that goes into creating a masterful menu can be taxing. If a lot of people are coming for the holidays, hosts can find out which area businesses offer holiday catering packages and consider them. This frees up more time for mingling with guests. Food establishments often have experience knowing just how much food to have per person, reducing waste and helping hosts avoid having a refrigerator full of leftovers they may or may not eat. Delegate some tasks It’s alright to ask guests to bring something to the holiday dinner. In fact, they may be eager to pitch in. If someone brings a salad, another an appetizer, and others some desserts, then it is just up to the host to provide the main course and maybe a side or two. This removes a lot of the pressure. Select familiar foods Hosts may be tempted to try all of the delicious recipes featured in magazines or online around the holidays. However, sticking with familiar dishes that you have made before reduces the chances of error. Recipes that can be whipped up by rote will make holiday cooking tasks easier and quicker.

Tips To Pick

The Perfect Christmas Christmas Tree

C

hristmas trees are among the most recognizable symbols of the holiday season, and the popularity of trees is undeniable. According to the National Christmas Tree Association, approximately 25 to 30 million real Christmas trees are sold in the United States each year. Christmas trees also are big business in Canada, where Statistics Canada notes cash receipts from Canadian Christmas tree producers totaled nearly $163.5 million in 2022. Annual spending on Christmas trees underscores how important they are to holiday decor. Christmas trees serve as the centerpiece in millions of holiday home decor schemes, so it's important to pick a tree that can shine in that role. This holiday season, celebrants can consider these tips as they look for the perfect Christmas tree. · Measure the area where the tree will be placed. A large tree can be awe-inspiring but also can stick out like a sore thumb if it takes up too much space. There should be enough room around the tree for families and their guests to sit around it. The home interior experts at Better Homes & Gardens recommend leaving a minimum of six inches between the top of the tree and the ceiling. If a tree topper will be added, make sure the top of the tree is at least 12 inches from the ceiling. Measure the area before leaving to buy a tree, so it can fit nicely into the room and the surrounding decor.

· Find the trunk (if you can). A trunk that's visible through the branches indicates the tree does not have dense branches, which will be necessary if homeowners want to dress the tree with ornaments. If it's hard to find the trunk because of all the thick branches and green needles, then the tree is likely pretty healthy. · Test the needles. The home improvement experts at Lowes note that needles should be flexible but still snap when bent sharply. Avoid trees with needles that are already losing their color and can easily be pulled off. A Christmas tree garners a lot of attention come the holiday season, which only underscores the significance of finding a tree worthy of being the centerpiece of holiday decor.

· Try the shake test. Anyone who has purchased a fresh-cut Christmas tree is undoubtedly familiar with the shake test, which remains an effective way to measure the dryness of the tree. A slight shake will produce some fallen needles. If the needles are brown and few and far between, then the tree likely is not overly dry. However, a lot of falling green needles indicate the tree is already drying out, which means it could shed quite a bit and lose its looks before Christmas Day. · Pick a tree with a symmetrical look. Trees are living things, so it's unlikely that buyers will find a perfectly symmetrical tree. However, a tree that's misshapen or already has some sagging branches won't make for an awe-inspiring addition to a home decor scheme. www.longislandmediagroup.com
