Countdown to Valentine’s Day with week-long fun

M

illions of people eagerly await the arrival of the shortest month of the year for the opportunity to show their spouses, girlfriends, boyfriends, companions, and many other special people in their lives how much they are loved. Even though Valentine’s Day is just one day a year, that doesn’t mean it should be the only time one expresses his or her love for a special someone.

With this in mind, individuals can count down the days to Valentine’s Day with these daily events that precede the day of love.

February 7: Rose Day

Celebrate love with a vase filled with roses. Red symbolizes love, and many other colors represent heartfelt emotions. The flowers will add to home decor and ambiance.

February 8: Proposal Day

Couples ready to tie the knot can use this day as an opportunity to propose. Those already engaged or married can spend Proposal Day celebrating the events that led up to their own engagement or betrothal, and toast how their relationships have evolved.

February 9: Chocolate Day

Lavish a loved one with all the decadent treats they enjoy. These can include store-purchased chocolates, chocolate fudge sundaes or warm brownies fresh out of the oven.

Tips to Protect Your Winter Wardrobe

Unfortunately, winter often brings with it slush, mud, salt and other threats to fabrics. To protect your winter wear affordably, consider the following tips: • Be smart about footwear: On wet or slushy days, tuck pants into durable, waterproof boots.

Any delicate footwear should be brought along in a waterproof bag and changed into at your destination -- or protected by waterproof shoe covers.

• Use at-home dry cleaning: Many winter items carry tags that say “dry clean only” or will shrink when washed. Slash dry cleaning expenses up to 90 percent and skip the hassle and harsh

chemicals by opting for at-home dry cleaning. Using your own dryer and the right product, you can safely and thoroughly clean your special care clothes at home without experiencing fading, shrinking or stretching.

Chocolate treat for a Valentine sweet...

Restaurant reservations, red roses and sparkling jewelery all are par for the course on Valentine’s Day. However, nothing may epitomize the holiday more than a decadent chocolate treat. When heart-shaped chocolate boxes are not enough, resourceful gifters can turn to homemade desserts to really capture the spirit of Valentine’s Day. This recipe for “Hot Cocoa Cookies,” courtesy of King Arthur’s Flour, marries the decadent taste of chocolate with the notion of a warm and soothing hot cocoa that’s ideal for a chilly February day. Even though the premium cocoa mix is baked right into the recipe, don’t hesitate to enjoy a steaming mug of cocoa on the side as the perfect complement to this rich and tasty cookie.

Hot Cocoa Cookies - Yield: 51⁄2 dozen cookies

COOKIES:

8 tablespoons (1⁄2 cup) unsalted butter, at cool room temperature, 65 F to 68 F 1⁄2 cup King Arthur hot chocolate mix 1⁄3 cup light brown sugar 1 teaspoon baking powder 1⁄2 teaspoon salt 1 teaspoon espresso powder, optional, for enhanced flavor 1 large egg 1 teaspoon vanilla extract 11⁄4 cups King Arthur Unbleached All-Purpose Flour 11⁄2 cups mini chocolate chips 1⁄2 cup cocoa nibs, optional

TOPPING:

About 51⁄2 dozen Belcolade bittersweet disks, or other high-quality chocolate wafer Marshmallow fluff, cocoa nibs, or chopped nuts, for garnish

DIRECTIONS

Preheat the oven to 375 F. Lightly grease two baking sheets, or line with parchment.

To make the cookies: Combine the butter, hot chocolate mix, brown sugar, baking powder, salt, and espresso powder in a mixing bowl. Beat until the mixture is smooth.

Add the egg and vanilla, and beat until thoroughly combined.

Weigh out your flour, or measure it by gently spooning it into a cup, then sweeping off any excess. Add the flour to the cookie mixture, stirring to combine. Mix in the chips and cocoa nibs.

Drop the dough by teaspoonfuls onto the prepared baking sheets — a teaspoon cookie scoop works well here. Space the cookies at least two inches apart. Bake the cookies for 8 to 9 minutes, until the surface is set, but the cookies aren't quite fully baked.

Take the cookies out of the oven and press a chocolate disk into the center of each cookie. Return the cookies to the oven for 1 to 2 minutes longer, until the chocolate begins to turn shiny and softens. Remove the cookies from the oven once again, and sprinkle the melted chocolate disk with your garnish of choice.

Allow the cookies to cool right on the baking sheet until the chocolate disks are set.

Store well-wrapped cookies at room temperature for a week or so; freeze for longer storage.

TIP:

King Arthur hot chocolate mix is a proprietary blend of sugar, ground chocolate, dry milk, and cocoa powder. If you'd like to use a store-bought hot chocolate mix, try to find one with a similar list of ingredients.

Unique ways to celebrate Valentine’s Day

alentine’s Day is an opportunity for couples to celebrate their love for each other, whether their relationship is relatively new or has endured through many years.

The National Retail Federation estimates that Americans are expected to spend close to $20 billion on Valentine’s Day this year. While chocolates and champagne are high on the list of most-purchased items for February 14th, couples should not feel beholden to tradition on Valentine’s Day. This year may be the perfect time to try something new, even if it’s out of couples’ comfort zones. Here are some novel ideas for couple’s looking to set their celebrations apart.

• Paint and sip: Couples can take part in a growing trend this Valentine’s Day. At paintand-sip events, people are guided step-bystep through the process of painting their own masterpieces. Breaks are provided through the evening to indulge in beverages and snacks of choice. Couples can bring along a bottle or two of wine and a platter of cheeses, chocolates or other Valentine’s Day fare.

• Activity night: Couples who are naturally competitive or devoted sports fans can enjoy the evening by engaging in some healthy competition. Some restaurants host trivia nights, or couples can head to

Beating the winter blues

M

ost areas in Europe and North America observe daylight saving time. Daylight saving time is often welcomed in spring, as it helps to extend daylight hours well into the evening, but few may welcome turning the clocks back in fall.

Coupled with the natural shortening of daylight hours as winter approaches, the end of DST facilitates a sudden shift in the ratio of sunlight to darkness.

As autumn transforms into winter, the number of available hours of daylight slowly dwindles. Some areas of Alaska and Canada see only about three or four hours of daylight per day in the winter months.

Conversely, those who live in Key West, Florida, the southernmost point of the contiguous United States, may enjoy around 10 hours of daylight.

Fewer daylight hours can adversely affect mood and productivity. Seasonal Affective Disorder, often referred to as “SAD” or “the winter blues,” has been recognized and included in the Diagnostic and Statistical Manual for Mental Disorders. Clinicians say that, as days become short and dark, a predictable set of symptoms of SAD may emerge. Individuals with SAD may experience a host of symptoms, including difficulty waking in the morning; diminished energy levels; a tendency to eat more; an inability to concentrate; and depression.

The Cleveland Clinic advises that approximately half a million people in the United States suffer from winter SAD, while 10 to 20 percent may suffer from more mild forms of winter blues. The Canadian Mental Health Association

states that between 2 and 3 percent of Canadians will experience SAD in their lifetime. Another 15 percent will experience a mild form of SAD that leaves them only slightly depressed.

Similar symptoms can occur for those people who live in cloudy regions or high latitudes.

Evidence strongly suggests SAD is linked to sunlight. This lack of sunlight may trigger production of melatonin in some individuals. Melatonin is a hormone made in the pineal gland that regulates sleep onset and sleeping patterns.

A combination of selfcare strategies as well as professional medical treatment may help those with winter blues or more severe SAD. The U.S. Department of Health and Human Services says that these strategies can help people coping with SAD.

• Get out of the house into sunlight or brightly lit spaces early in the day when the sun is out.

• Increase time spent outdoors. Take a break midday and enjoy lunch outside or take a walk, even if it’s chilly.

• Try to spend time with other people and chat with friends and relatives.

• Avoid overloading on carbohydrates like cookies and candies.

• Talk to a doctor about using light therapy, which is the

first line of SAD treatment, according to the University of Maryland School of Medicine.

• Consider cognitive behavioral therapy or talk therapy with a licensed mental health provider.

He or she also can make recommendations about the use of medication to alleviate symptoms if other treatments do not provide results.

There are many ways to mitigate the symptoms of winter blues.

Enjoy corned beef and cabbage this St. Patrick’s Day

C

orned beef and cabbage might not be a part of many people’s diet regimens throughout the year, but come March 17, it’s not uncommon to find people from all walks of life indulging in this beloved meal.

March 17 marks the celebration of St. Patrick, the patron saint of Ireland. Over the years, the day has also become a celebration of the Emerald Isle. Such celebrations tend to feature corned beef and cabbage, even though the dish may have little to do with Ireland (and even less to do with St. Patrick). The precise origins of the link between corned beef and St. Patrick’s Day remain a topic of debate, but some historians say the corned beef enjoyed today can be traced to New York City’s Irish immigrant population in the 19th and 20th centuries, who popularized a salted meat made from brisket that was then sold by Jewish butchers.

Regardless of the authenticity of its link to Ireland, corned beef is delicious and many modern Paddy’s Day celebrants wouldn’t think of going without it on March 17. Those who want to cook up their own can try this recipe for “Corned Beef and Cabbage” from Arthur Schwartz’s “New York City Food” (Stewart, Tabori & Chang).

CORNED BEEF AND CABBAGE Serves 6 to 8

Cook a whole brisket with both sections together with all its fat. (You can trim off the fat after the meat is cooked.)

Whole brisket and second-cut corned beef brisket are hard to find, but your supermarket should have first-cut corned beef vacuum-packed in plastic. Choose the fattiest piece in the case and treat it gently.

You can cook the cabbage and potatoes in the same water as the corned beef. Because the other vegetables need to be cooked in water that simmers more than the meat, scoop out water from the corned beef pot and cook the vegetables in a separate pot or pots.

DIRECTIONS

Place the corned beef in a pot that holds at least 5 quarts of water. Cover completely with cold water. Place over high heat and bring to a simmer.

As soon as bubbles start to break on the surface of the water, adjust the heat so the water simmers very, very gently. With a slotted spoon, skim off the residue that accumulates on the surface. When the residue stops coming to the surface, add the pickling spices.

Continue to cook, with bubbles just gently breaking on the surface, for 3 to 4 hours, until fork tender.

The meat can be safely held in its water for about 2 hours; reheat gently.

Cook the vegetables until fork tender in separate pots of boiling fresh water or, especially for the cabbage, use some of the water in which the corned beef was cooked.

Slice the corned beef and serve with mustard and/or horseradish on a platter, surrounded with some of the vegetables or with vegetables in a separate bowl.

How local businesses give back to their communities

mall businesses are booming. Information from the Small Business Administration and the U.S. Census Bureau’s Annual Survey of Entrepreneurs says that small businesses, or firms with fewer than 500 workers, accounted for 99.7 of businesses.

Firms with fewer than 100 workers accounted for 98.2 percent of companies. Thanks to their influence and reach, small businesses have the potential to impact local communities in numerous ways.

n our grab-and-go culture, plastic is pervasive at the grocery store. But as more supermarkets worldwide adopt smart strategies for reducing single-use plastic packaging, experts say that these same changes are possible here in the U.S., so long as retailers, companies and individuals commit to making them a reality.

“It’s time to build smarter supermarkets,” says Kate Melges, plastics campaigner, Greenpeace.

“We’re starting to see examples of retailers moving away from throwaway packaging, but not at the urgency and scale needed to address this crisis.”

A new report from Greenpeace, “The Smart Supermarket,” travels through a hypothetical grocery store to explore how single-use packaging-free initiatives can be implemented in every aisle, as well as details the benefits each change would have on consumers and retailers.

As you head into a new year and possibly resolve to reduce your environmental impact, consider these report insights:

• “Nude” food: Plastic-wrapped produce creates needless packaging waste and potentially leads to wasted food, as consumers are required to buy portion sizes they may not need. “Nude” food lets you buy exactly what you need. For those products that do require packaging, stores and consumers should consider natural alternatives, such as banana leaves tied with bamboo twine.

• Bulk staples: Smart dispensing systems for such shelf-stable foods as rice, beans and lentils, allow customers to buy the quantities they need and can afford. And when customers dispense products into reusable containers they’ve brought from home or are supplied by the store, the system can eliminate single-use packaging.

• Refillable personal and home products: While the public is becoming aware of the need for reusable shopping bags and coffee cups, there’s less awareness about alternatives to single-use plastics for beauty and cleaning supplies. Refill stations on favorite shampoos, dish soaps and more can substantially reduce plastic waste.

• Smarter takeout: Many grocery stores have togo options like salad bars and hot food counters.

At a smart supermarket, takeout will not mean throwaway. Technology is at the heart of the concept, with customers using an app to collect rewards when they return reusable cups and containers. This is great for stores who want to establish brand loyalty, and great for customers who want kickbacks and to reduce their plastic use.

•S ustainable checkout: Five trillion single-use plastic bags will be used this year alone -- that is 160,000 bags per second. Providing durable, reusable bags at checkout through a rent-a-bag scheme is an easy way for stores to reverse this trend.

How to care for wild birds this winter

Even though several species of birds are migratory and travel to warmer climates to wait out winter, many others stay put. The Audubon Society says that keeping close to home helps some species of birds maintain their territories.

The American Heart Association indicates that more women are now aware that heart disease is the leading cause of death among females than they were 20 years ago. However, the AHA reports that only 42 percent of women aged 35 and older are concerned about heart disease. Initiatives like Go Red for Women in February help shed light on the threat posed by heart disease.

Some birds will puff up to retain heat, others will seek shelter in dense foliage or cavities to avoid the elements. Many birds will huddle together to share warmth.

Here are some facts to consider:

• Heart disease affects women of all ages. In fact, the AHA says that the combination of smoking and birth control pills can increase heart disease risk in younger women by 20 percent.

• Mercy Health System says about 5.8 percent of all white women, 7.6 percent of black women, and 5.6 percent of Mexican American women have coronary heart disease.

• According to the Centers for Disease Control and Prevention, almost two-thirds of women who die suddenly of coronary heart disease have no previous symptoms.

• When symptoms are present in women, they are not like the stereotypical clutching of the chest that men experience. Heart disease symptoms in women can include upper back pain, chest discomfort, heartburn, extreme fatigue, nausea, and shortness of breath.

• Even fit women can be affected by heart disease. Inherent risk factors, such as high cholesterol, can counteract healthy habits.

• Have a supply of food, bird feeders, houses, and any other bird-related gear at the ready before the storms really rev up.

That can be challenging to maintain when common sources of food, such as insects and berries, disappear as winter wears on. This is when some human intervention can prove handy, advise ornithologists.

A few simple efforts may benefit birds and other wildlife that may not hibernate winter away or escape to the tropics.

• Invest in nutritious food, such as black oil sunflower seeds or blends that are high in black oil sunflower seeds. You also can make available more foods that are high in fat, such as suet, peanut butter or even whole peanuts. Mother Nature Network also suggests adding meal worms if they can be found.

• Choose feeders that will keep seed dry, otherwise it will be prone to bacterial and fungal growth.

• Don’t discard fallen leaves or any downed twigs or pruned boughs from trees. This will give birds material for creating shelter or hiding away when the weather gets especially brutal. When the Christmas tree is finished for the season, place it in the yard as a windbreak for birds.

• Put shallow water sources around so birds can drink. Replace them frequently if water freezes.

Wild birds can benefit from some help when the temperatures start to drop in winter.

Women are urged to take various steps to reduce their risk of heart disease: • Lose weight

• Engage in regular physical activity • Quit smoking

• Keep alcohol consumption to a minimum

• Get cholesterol and blood pressure checked regularly • Make healthy food choices • Lower stress levels • Control diabetes

he amount of time people spend outdoors has dramatically decreased, as the Environmental Protection Agency now reports the average American spends 87 percent of his or her time in a residence, school building or workplace.

Being outside is linked to better moods, more physical activity and less exposure to contaminants (concentrations of some pollutants are often two to five times higher indoors). Also, people who spend time outside may not come into contact with surface germs or develop various illnesses spread as often as those who spend a lot of time indoors.

Cold weather can make the desire to be outside less appealing, but it is important for one’s mental and physical well-being to get outside.

The following activities might coax people outside for some crisp air.

Office fire evacuation plans often pair employees up so that each is responsible for making sure the other has evacuated and reached safety. In that instance, the buddy system reduces confusion and makes for a more organized system.

The buddy system also may be utilized in emergencies or instances when there is increased risk for injury, such as during a natural disaster or while engaging in certain risky activities. The Centers for Disease Control and Prevention says that buddies can each look

Children who walk home from school or wait at a bus stop may be paired with a buddy for increased safety against strangers and other hazards. The Holts Summit Police Department in Missouri says that a child alone could become a much easier target if a predator drove by than if a child were with a buddy or in a group.

Buddies can be a friend, an older sibling or an adult approved by parents or guardians. Buddies also may be friends who are asked along when another wants to enjoy a night out on the town or use a rideshare
