What are the differences between sparkling wines?

True champagne Authentic champagne is named after Champagne, France, the region where the grapes used to make it are grown, fermented and bottled.

According to European law, the only labels that are allowed to include the name “Champagne” must be bottled within 100 miles of this region, which is close to Paris.

The taste of champagne is unique thanks to the soil in which the grapes are grown. It is a mineral-rich soil and imparts that flavor into the beverage.

Champagne is made from a unique base of grapes that include Pinot Noir, Pinot Meunier and Chardonnay grapes. Experts with Wine Country also say that roughly 90 percent of all blended champagnes use a ratio of 2⁄3 red and 1⁄3 Chardonnay mixes.

Another component that sets champagne apart is the process by which it is made. It is strictly controlled by the Appellation d’Origine Controlée. This certification dictates how a producer may grow

the grapes and how the grapes can be harvested and processed.

Champagne is produced by méthode champenoise, a process that is said to have been invented by a monk named Dom Perignon.

This procedure involves double fermentation in bottles and creates an earthy, yeasty flavor.

Sparkling wines Champagne is sparkling wine, but not all sparkling wines are champagne. Other notable types of sparkling wine include Italian Prosecco and Spanish Cava.

Sparking wine is produced in regions of France as well as in the United States and Canada. But sparkling wine can be made just about anywhere grapes are grown.

Sparkling wines are often doublefermented in steel containers instead of bottles.

People are drawn to other sparkling wines besides champagne for various reasons. For some, cost is a heavy consideration, as authentic champagne can be considerably more expensive than sparkling wine.

In addition, some people find less expensive champagnes are not as palate-pleasing as sparkling wines.

Few things are more universally associated with celebrations than a bottle of bubbly. Subtle differences set sparkling wines apart from champagne, but personal preference is oftentimes the deciding factor when choosing which beverage to choose for a special occasion.

Although revelers may assume any fizzy beverage they are served is champagne, by the true definition of the word, they actually may be drinking something else — one of many varieties of sparkling wine.

Notable New Year’s traditions include toasting champagne beneath skies lit up by fireworks, kissing one’s sweetheart at midnight and making resolutions to better oneself in the year ahead.

New Year’s Eve and New Year’s Day traditions vary across the globe.

The following is a look at the unique ways people ring in the new year throughout the world.

• Filipinos embrace round fruits for the new year. The custom includes gathering 12 different round fruits for each month of the year. The round shape symbolizes wealth and prosperity.

• Around Stonehaven, Scotland, people wield large fireballs for the Hogmanay festival on New Year’s Eve. The idea is to ward off evil spirits by swinging balls of fires over the heads of trained professionals and then tossing them into the sea. The tradition has endured for more than 100 years.

• In the Eastern Orthodox Greek Church, Christmas isn’t celebrated until January 7.

Aghios Vassilis, the Greek Santa Claus, makes his rounds on New Year’s Day. • Chilean families celebrate the arrival of the new year by

• Burmese people end the Thingyan water festival on New Year’s Day. Since April, they have celebrated the arrival of Thagyamin, a celestial Buddhist figure, with the firing of water cannons. The water-logged revelry ends with the new year.

• Siberians celebrate the new year’s with the planting of the “New Year’s Tree” underneath frozen lakes. This “yolka” is said to symbolize the coming of Father Frost, but also represents starting over.

• Grapes are a hallmark of Spanish New Year’s celebrations.

Throughout Spain, revelers gobble a grape per second as they count down the last 12 seconds of the year. Each grape corresponds to good luck for the 12 months of the new year.

• In Denmark, residents break old dishes on the doorsteps of family and friends on New Year’s Day. The bigger the pile, the more friends and good will in the new year.

• In China, wthe new year will be celebrated on January 25, 2020 according to the lunar calendar, celebrants paint their doors red or hang red curtains or cutouts on windows to symbolize good luck.

The origins of some beloved holiday traditions

Tradition is integral come the holiday season. Throughout the month of December, traditions fill people’s days and comprise the many reasons why individuals decorate, celebrate and dine the way they do this time of year. But few may know the origins of some of the most beloved holiday traditions.

Christmas is rife with traditions that date back ages.

Christmas stockings The Christmas stockings of today may be a byproduct of various traditions. One such tradition dates back to a Dutch custom in which children would leave shoes full of food to feed St. Nicholas’ donkeys, and then St. Nicholas would leave small gifts in return.

Another origin story of Christmas stockings can be traced to the 12th

century, when nuns would leave socks full of nuts, fruit and tangerines for the poor. This is why some people still put tangerines in Christmas stockings.

Christmas tree Christmas Trees are everywhere this time of year. The use of evergreen trees predates Christmas and is associated with the pagan festival of Saturnalia, which celebrated the agricultural god Saturn with partying and gift-giving. During the winter solstice, green branches served as a reminder that spring would arrive anew. Germans are credited with first

bringing evergreens into their homes and decorating them.

Santa Claus Santa Claus’ origin story can be traced to St. Nicholas, a Christian bishop who lived during the fourth century. St. Nicholas was very generous and gave away his fortune to help the needy. He also did various other good deeds. St. Nicholas became infamous and began to be known by various names around the world. The Dutch called him Sinter Klaas, which was eventually transformed to Santa Claus. The jolly persona came later when 20th

The tradition of hanging it in the house goes back to the times of the ancient Druids. Mistletoe was thought to bring good luck to a household and ward off evil spirits. The custom of kissing under mistletoe can be traced to England.

Originally, a berry was picked from the sprig of mistletoe before the person could be kissed. When all the berries had gone, there could be no more kissing.

Christmas bells Church bells ring for many special services, including Christmas mass.

During Christmas midnight mass in the Catholic Church, the altar bells may be rung while the priest says the “Gloria.” Bells are part of caroling, and jingling bells are associated with sleighs and Santa’s reindeer.

Add delicious scents to the home by way of freshly baked goods or holiday meals. Nothing beats the smell of cookies right out of the oven, and the scents can linger for hours.

Filling a home with fragrant decor takes a little ingenuity and planning.

Here are some ideas to incorporate the scents of the holiday season into your decor.

• Use a real Christmas tree. An easy way to create a pine-like scent indoors is to select a real Christmas tree. Ask the tree farm which varieties are the most fragrant. If a fresh tree is not possible, fill a decorative basket with pine cones and evergreen boughs for that woodsy appeal.

• Create a seasonal scented simmer. Take to the stove to make a homemade air infusion from ingredients in and around the house. Simmer pine branches, citrus peels, vanilla,

nutmeg, cinnamon, and whatever else can be placed in a pot or slow cooker with water. The scents will permeate the house for hours if enough water is added to the mixture.

• Make holiday sachets. Some of the same ingredients for the holiday simmer can be dried and sewn into sachets. Add ribbon and hang on real or artificial trees. Or tuck the pouches into various areas around the house.

• Experiment with scented candles. Scented candles can be found at various stores during the holiday season. Select among popular holiday aromas like pine, cinnamon, apples, and Christmas cookie varieties.

• Utilize essential oils. Natural food stores and other retailers may sell essential oils, which can be diluted and sprayed on surfaces or into the air. Exercise caution around upholstery, or test for staining before use.

• Craft some “gingerbread” ornaments. A mixture of cinnamon, applesauce and glue can be used to make ornaments or gift tags that resemble gingerbread cookies, and these ornaments have more staying power than actual cookies.

• Design a pretty pomander. Stud an orange with cloves. Cut off the top of the orange and hollow out a place for a small tea light.

The warmth of the flame will produce more scent.

Rich and inviting aromas can fill a home with the holiday spirit.

Kwanzaa, which celebrates the symbolism and traditions of African American culture, begins on December 26 and lasts through January 1.

There are many components of Kwanzaa celebrations, and decorating for the holiday remains an important way to demonstrate spirit.

Celebrants can start by decorating with the traditional colors of red, green and black. These can be displayed in fabrics used in the home, clothing, linens, and other decor. Posters, crafts or photographs can be used to symbolize these seven principles.

Chanukah foods steeped in tradition

hanukah, which roughly translates to “dedication” or “induction,” is a Jewish holiday celebrated each year in November and/or December, depending on the Jewish calendar.

Although it may not hold the same level of spiritual significance as some other holidays of the religion, Chanukah is a highly anticipated and popular holiday among people who practice Judaism.

Here’s a look at some of the more common foods and their significance.

Two miracles are celebrated on Chanukah. One of them is a victory by a small number of Jews known as the Maccabees, who defeated the Greek army occupying the Holy Land. The other miracle occurred when the Maccabees liberated their Temple from the Greeks. They only discovered a single night’s worth of oil to light the menorah. However, that oil managed to burn for eight days and nights.

Chanukah celebrations include various traditions that commemorate these miracles.

Many celebrations focus around food and fun. It’s common to find similar foods in Jewish households during the eight days of Chanukah.

• Latkes: Latkes have different names among the sects of Judaism, but they’re essentially fried potato pancakes. Different fried foods, like latkes, are eaten during Chanukah to honor the miracle of the oil that burned for eight days. Other fried foods include jelly-filled doughnuts called “sufganiyot.”

• Loukoumades: These deep-fried puffs dipped in honey or sugar are treats used to represent the cake eaten by the Maccabees.

• Dairy: Dairy was not always included in Chanukah traditions, but cheese, blintzes and cheesecakes emerged to symbolize the story of Judith.

Legend says Judith was a beautiful woman who saved her village from attacking Babylonians. Judith was able to enter the enemy camp thanks to her beauty, charm and a basket of wine and cheese she brought along. She fed the enemy general, Holofernes, who

consumed lots of salty cheese and wine and passed out. Judith killed the general, and the Babylonians left shortly thereafter.

• Brisket and tongue: Although these foods are not tied to a particular Chanukah story, they have grown quite popular as traditional Chanukah meals. Beef brisket pairs well with potato latkes, and beef or veal tongue also may be served.

• Kugel: Potatoes are often baked, along with other hearty vegetables, into casseroles called “kugels.”

• Challah: Challah is a leavened bread traditionally baked and served on the Sabbath and Jewish holidays. The braided white bread is both attractive to look at and tasty to eat.

Food plays a big role in many Chanukah traditions, as there are various delicious dishes steeped in historical significance.

The History of Black Friday

lack Friday is seen by many as a shopping extravaganza that begins in the wee hours of the morning on the day after Thanksgiving, offering deep discounts on various items, doorbuster deals and other specials that have customers anxious to raid the aisles.

Many believe Black Friday was named for the day retail companies would become profitable for the year (retailers would record losses in red in and profits in black), but other accounts of the origins of Black Friday differ.

Gold Rush

One story attributes the name of Black Friday to September 24, 1869, when two speculators created a boom and subsequent bust in the gold market. According to the History Channel, rebel speculators Jay Gould and Jim Fisk attempted to control the nation’s gold market. They hoped to drive the price of gold sky high, relying on a corrupt network that extended from Wall Street and the government of New York City all the way to the family of President Ulysses S. Grant. Eventually, the conspiracy

unraveled on what became known as “Black Friday.”

Other historians say that Black Friday has ties to Philadelphia. According to Bonnie Taylor-Blake, a neuroscience researcher at the University of North Carolina, in the 1950s stores around Philadelphia promoted big sales the day after Thanksgiving when many people were off from work. The sales also were held in advance of the Army/Navy football game that traditionally took place in Philadelphia on the Saturday after Thanksgiving.

Stores knew that suburban shoppers and football fans would be milling about town during the extended weekend. As a result, traffic cops and other law enforcement personnel had to work 12-hour shifts to corral the extra foot and vehicle traffic around the city. These cops referred to the day as “Black Friday.” Despite city officials’ best efforts to remove any negative connotations and rename the day “Big Friday,” the name “Black Friday” stuck and even spread to other areas of the country.

Black Friday is a phenomenom that marks the unofficial start of the

holiday shopping season, though its history might be rooted in more than just buying gifts for loved ones.

What is Plaid Friday?

Plaid Friday is an effort to encourage holiday shoppers to shop local on the day after Thanksgiving, a day that many know as “Black Friday.”

Conceptualized in Oakland, CA, Plaid Friday has spread beyond northern California to cities across the United States. While Black Friday is often associated with big box retailers, Plaid Friday focuses on small, locally owned businesses. But why plaid?

Learn the meaning behind the menorah

T

he menorah is perhaps the most recognizable symbol of Chanukah. Displayed in homes, and often in windows, each year, the menorah is a nine-branched candelabrum that symbolizes Chanukah and much more.

Menorahs have been part of the Jewish faith since ancient times.

Isaiah 42:6 indicates that the menorah is a symbol of the nation of Israel, and its mission is to be a “light unto nations.” After being liberated from slavery in Egypt, the Jews were commanded by God to make the original menorah, which at the time featured seven branches. The seven arms were believed to refer to the seven days of creation. The menorah was lit every evening and cleaned every morning. The wicks were replaced and fresh, consecrated olive oil was put into the cups to keep the flame alive.

After the Second Temple in Jerusalem was destroyed and desecrated by the Romans, there remained only enough sealed, consecrated olive oil left to light the menorah for one day. Miraculously, the oil burned for eight days, giving www.seasonsmagazineonline.com

the Jews enough time to make new consecrated oil. This became known as the Chanukah miracle.

While the original menorahs were seven-branched, the Chanukah menorah, or Chanukiah (Hanukkiah), became a nine-branched version lit only during the holiday. According to the Jewish holiday site Breaking Matzo, celebrants light a new candle or wick on each night of Chanukah.

The ninth night, called the Shamash (“helper” or “servant”), is used to light all the other candles or oil lamps. To be kosher, the Shamash must be placed on a different level than the eight other candles.

After both temples were destroyed, a new tradition developed in which Jews did not replicate anything from the destroyed temples. As a result, menorahs used in many Jewish services, apart from Chanukah, no longer had seven branches. Sixbranched menorahs became popular in some synagogues. However, the Jewish Virtual Library indicates that some rabbis have gone back to seven-armed menorahs for regular services because the modern ones are electrified and, therefore, cannot

possibly be duplicates of the original Temple menorah.

A sweet treat for get-togethers

P

ecans are a species of hickory native to northern Mexico and the southern United States. Pecan trees are cultivated for their edible nuts, and it can take 12 years for a tree to reach maturity and begin producing.

The history of pecans, which are the only major tree nut that grows naturally in North America, can be traced to the 16th century. Pecans are frequently enjoyed in southern cooking, particularly in desserts.

There are many different ways to incorporate pecans into recipes, such as in delicious, chewy cookie bars. Enjoy this recipe for “Pecan Praline Cookie Triangles” from “The Pampered Chef® Stoneware Inspirations (The Pampered Chef®, Ltd.)” by The Pampered Chef® Test Kitchens.

Pecan Praline Cookie Triangles

Yields 64 Crust

21⁄2 cups all-purpose flour 3⁄4 cups powdered sugar 1 teaspoon baking soda 3⁄4 cups butter or margarine, melted

Filling 3 cups pecan halves, divided 2 cups packed brown sugar 3 eggs 4 tablespoons butter or margarine, melted 2 teaspoons vanilla extract 1⁄4 teaspoon salt

powdered sugar, optional

Preheat oven to 350 F. For crust, combine flour, powdered sugar and baking soda in a batter bowl. Add butter; mix until crumbly. Lightly press crumb mixture over bottom of stoneware bar pan; roll lightly. Bake 15 minutes; remove from oven to a cooling rack.

Meanwhile for filling, reserve 1 cup of the pecans for garnish; chop remaining pecans. Combine chopped pecans, brown sugar, eggs, butter, vanilla, and

salt; mix well. Pour filling over warm crust, spreading to edges of pan. Arrange remaining pecan halves over filling. Bake 17 to 19 minutes, or until filling is set in center. Remove from oven; cool completely.

Sprinkle with additional powdered sugar, if desired. Cut into 32 squares using a utility knife; cut each square in half diagonally.

Mini Merry Meatballs Serves 24 1⁄2 pound ground beef brisket 1⁄4 pound ground beef ribeye steak boneless 1⁄4 pound ground beef (80 percent lean) 1 cup seasoned stuffing mix 1 egg, beaten 3 tablespoons water 1 teaspoon minced garlic 1⁄4 teaspoon salt 1⁄8 teaspoon pepper Cranberry Barbecue Sauce: 2 teaspoons vegetable oil 1⁄2 cup chopped white onion 1 tablespoon minced garlic 21⁄2 cups fresh cranberries 1⁄2 cup orange juice 1⁄2 cup water

1⁄3 cup ketchup 1⁄4 cup light brown sugar 2 tablespoons cider vinegar 2 tablespoons molasses 1⁄2 teaspoon ground red pepper Salt Combine all ingredients except garnish in a blender.

Blend on high until smooth and frosty. Serve in a margarita glass. Garnish with dried cranberries and a lime wheel.
