Here Comes the Heat

Another long, hot summer is among us! Luckily there are ways to use energy more efficiently and save money:

• Change your AC filter every three months. Dirty filters stop air from flowing which causes your AC to work harder and use more energy.

• Set your programmable thermostat to run the AC only while you're home. There’s no need to keep your house comfortable when nobody’s in it.

• Turn on your ceiling fans. Fans move the air around making the room feel cooler.

• Close the drapes. Hot sun rays can heat the air in your home and force the AC to work overtime.

Lemon Skillet Pie

Whether you have a newly seasoned cast-iron pan or one that’s been passed down for generations, this lemon skillet pie is sure to tingle your tastebuds!

Pie

• 1 stick butter, melted

• 1 1/2 cup crushed graham crackers

• 1/2 cup sugar

• 3 cup sweetened condensed milk

• 3 egg yolks

• 2/3 cup lemon juice

• pinch salt

Topping

• 1 cup heavy cream

• 3 tbsp powered sugar

• 1/2 tbsp vanilla extract

Step 1: Preheat oven to 350 degrees and lightly coat a 12 inch cast-iron skillet with butter

Step 2: Combine crushed graham cracker and sugar in a bowl. Stir in melted butter until blended. Press crub mixture into the bottom and sides of the prepared castiron and bake for about 8 minutes or until firm

Step 3: Meanwhile, combine sweetened condensed milk, egg yolks, lemon juice and salt with a mixer for about 4 minutes

Step 4: Pour mixture into pie crust and put in the oven to bake for about 10 minutes or until the center is set

Step 5: Allow the pie to cool for 30 minutes, cover, and then refrigerate for at least an hour

Step 6: Beat the cream, powdered sugar, and vanilla until fluffy. Spread topping onto pie and garnish with lemon slices, mint, or lemon zest, as desired.
