A

small herd of adolescent boys, ranging from 8 to 16 and amped on Red Bull and Cheetos, charges into Promises Bridal and Formal Wear. In a few moments they will be fitted for tuxedos for their cousin’s wedding. White tuxedos. With the force of a stern-yet-doe-eyed camp counselor, store manager Amanda Beld takes control. “Whoa! Stop.” She demands through kindly parted lips. “Before we do anything, go to the back and wash your hands. Really wash them! No tuxedos until the hands are clean.” The boys return one by one to the fitting area, their raucousness reduced now to a dull roar, Beld remains in command, gradually transforming the Cheeto-chompers into sophisticated young men finely appointed in white satin cummerbunds and crisp black bow ties. So slick and handsome, they will make their mamas cry when the big day comes. In 2008, owner Linda Jo Alexander opened Promises Bridal and Formal wear at 2824 F St. in Eureka’s Henderson Center after having spent more than 20 years in the beauty biz. From selling women’s hair and make-up products to working for The Gap and Victoria’s Secret, Alexander gained hands-on know-how of how to

tell what’s hot and what’s not. Alexander knows women’s fashion. Her specialty? Wedding gowns. “The first thing I ask brides-to-be,” explains Alexander, “is have they tried on gowns before? And if they have, we talk about what they liked or didn’t like.” In fact, before any trying-on begins, Alexander consults with each bride to guide her in the direction of a dress that will hopefully accentuate her body and accommodate her budget. Quips Alexander, “If you’re not finding what you’re looking for, you haven’t tried on the right dress. It’s magic, when you find the right one.” How does a bride find her magic? According to Alexander the first trick is to recognize her body type and help her select gowns that make her look taller and thinner — “Even if she’s already tall and thin!” A wedding dress on the way to making magic will also appear to minimize her midsection. (“No woman has ever asked me to add 10 pounds to her waistline!”) Lastly, the perfect gown will make the bride’s hips appear how she wants them. Alexander points out that though some ladies prefer a slim-hipped silhouette, increasingly she works with women who are proud of their ample backsides, and they want to make sure their dresses don’t hide that ‘baby got back.’

sleeveless is how most brides choose to do it. But what if your dream dress doesn’t hinge upon current trend and fashion? Perhaps you’ve been gifted your great grandmother’s turn-of-the-century underwear (think thin cotton strapless bathing suit). Maybe a friend gave you a silk Dupioni wedding gown from the 1980s. Perhaps a slew of fellow fabric aficionados collected scraps of high-quality silk, linen, and cotton just for you. If you’re a seamstress and designer like Mari Penley, this is where wedding gown magic departs, soars even from the path less traveled, where the do-it-yourself creative spark sizzles, ignites and takes flight. Shortly after her engagement in December 2011, Penley began designing her gown for an August 2012 wedding. Her aim was to create a dress that would not only be unique and tasteful but would also honor the sewing spirits of her grandmothers. As she began, Penley stitched her great-

grandmother’s undergarment into the interior of the bodice she designed, making it the literal and conceptual foundation of the gown. She then refashioned the Dupioni into a creamy-rich, strap-

less silk corset and dyed linen and cotton underskirts bright marigold and brilliant California poppy orange. When completed, the gown would be multiple layers of cream ruffles with orange and

For example, Alexander selects a gown and indicates that this, a strapless, A-line, bubble-hem gown, would accentuate the assets of a bride who is curvy, muscular and petite. The lack of straps would draw attention to the bust-line, while the A-line design draws in the waist and accentuates the hips, making the bride-to-be appear taller, thinner and — buxom. If a bride wanted to minimize her hips, a fullskirted ball gown would do the trick by accentuating her waist and neckline. This season, Maggie Sottero’s A-line gowns accented in lace are burning up the bridal path as are antique lace Enzoanie ball gowns. Cap-sleeves and illusion necklines also smolder. “Modesty, really, is the trend this year with much more lace at the neck and sleeves,” reveals Alexander. “I’m curious to see how this trend will play up here.” In Humboldt County, for those warm inland summer weddings, strapless and

who re-purposes and makes new designs from old clothing), Penley also belongs to the collective at Origin Design Lab (at 621 3rd Street in Eureka) where she created her dress. She doesn’t make wedding dresses professionally, but at Origin Design Lab she teaches the skills necessary for a fashion-forward, creatively-minded bride-to-be to do what she did. Once you have the skills, you have the Lab to make your dream dress come true. But maybe you don’t sew. You’re not a DIY-er. Yet you have an inspiration for a dress, or discovered an incredible vintage gown at Shipwreck that doesn’t quite fit. The elements and ideas are there — you can feel the potential, the magic tingle — but execution would be excruciating, nigh impossible. It’s time to talk to the ladies at Buttons, which shares space with Origin Design Lab. In June 2012 Margaret Wyles and Rosemary Price went into business together. OK, finally, while searching the vintage formal rack at Little Shop of Hers, it finds you — a pristine, fitted satin, WWII-era, soft peach floor-length gown resplendent with a hand-beaded sweetheart neckline. hould you go with that zingy Italian meringue butter cream or the tried-and-true cream cheese frosting? What about that design idea and re-creating your Uncle Ross’s dairy barn on the top tier? Perhaps then fondant’s the better option? Fondant — not nearly as tasty as chocolate sour cream ganache. Chocolate sour cream ganache! And what about the cake — vanilla, chocolate, strawberry or carrot? Don’t forget, your niece and her boyfriend are vegan, and Aunt Valerie’s family are ALL vegetarians. Organic or conventional? Gluten-free? So many variables, so many options. Just thinking about wedding cakes could make a couple mental. But on the North Coast we’ve a bounty of bakeries and independent confectioners who can help manage details before those bewil-

dering options melt into wedding cake madness. Ramone’s is one of the community’s most recognized and respected local cake bakeries known for consistent quality and wide variety. They can bake an elegant single layer cake from scratch with a touch of fresh local flowers, or they can go six tiers high with a show of bright fondant geometries and delicate accent piping. In 1982 Berit Meyer opened the original Ramone’s Bakery in Old Town, Eureka, and now there are five locations throughout northern Humboldt. Meyer has been perfecting Ramone’s signature pastries and cakes for 31 years and until two years ago, she was the bakery’s primary wedding cake creator. As things got busier, especially after opening the newest location at 2297 Harrison Street in Eureka, Meyer knew she was going to need assistance. She hired Leah Ritter who would gradually take over the wedding cakes. Ritter’s no stranger in the kitchen. The daughter of a professional baker and cooking instructor, by age 5 Ritter had memorized her mother’s chocolate chip cookie recipe. When she was 10, she took a cake decorating class through Lake County 4-H. And that’s when she knew what she wanted to do: bake and

decorate. At 30 Ritter is now the head wedding cake decorator at Ramone’s Bakery and Café. “Basically, we have a ‘never say no’ policy,” says Meyer as she and Ritter sit looking at their wedding cake portfolio. That policy extends to cake recipes and ingredients as well as style and design. Typically, Ramone’s bakes its cakes from scratch using conventional ingredients, but they also do sugar-free, vegan and local organic options. Recently, Meyer and Ritter discovered a non-wheat flour blend of rye, amaranth and tapioca. The women are eager to experiment with gluten-free recipes. Ritter designs with a sharp eye and talented hand. She can work from magazine images or other photos. Or she can pull it straight out of her head. She points to a four-tiered cake with icing designed as water cascading over each layer. A rapid blue and white river breaks around miniature boulders and redwoods. “That was fun,” Ritter muses, “The couple didn’t have a photo, just ideas of what they wanted and things that were important to them, and this is what I came up with. Point State Park. “I had baked and decorated 100 individual, 2-tiered cakes. I should have had extra hands when I delivered them that day,” she chuckles. At the park she also had to cover the picnic tables with butcher paper, place fresh strawberries on each cake, and make sure a fully-stocked cooler with mini-champagne bottles was ready at the site entrance. But then the wind kicked up ripping the butcher paper from its staples and wresting pine needles from their boughs. Ravens and jays jeered and swooped. Meyer persevered. When the wind relented, she says, “I re-papered the tables, and shoo-ed the birds and other critters until I heard the wedding party coming. Then I slipped into the van and headed back to the bakery.” Humboldt local Stacy Chatfield started Verbena Cakes in 1998 after graduating from the Culinary Institute of America in Napa Valley. She’ll never forget her first wedding cake, the one she made while still a student at CIA. Her friends were getting married at the Arcata Veterans Hall. Her only verbal reassurance from them: that everything would be ready for her to bake in the kitchen. “When I got there, all they had was a 5 pound bag of flour, and I had less than 24 hours to pull it together,” remembers Chatfield. She scrambled to get the necessary utensils and sent her husband to get the rest of the ingredients. After a full day and night of baking, building and frosting, Chatfield delivered the five-tiered, fresh red rose bedecked cake on time to elated newlyweds. “That first cake taught me almost everything I need to know to be successful at this,” proclaims Chatfield, “that detailed and clear communication from the beginning will make a cake, or any project, much easier to

manage from start to finish.” These days, Chatfield asks her clients to complete a contract that requires contact information for the bride and members of the bridal party, the florist, the caterer; it requires the location of the cake — inside, outside, beneath a tent, in a barn? She requires this information so that she can remain at the top of her game, because when she isn’t baking wedding cakes, she’s teaching culinary arts at Fortuna High School, or she’s catering local events and parties. She’s a busy lady, and that clear contract is key to keeping everything straight. Chatfield bakes conventional and organic cakes. She prefers buttercream and cream cheese frostings, modeling chocolate, and marzipan, though she does work with fondant if a client requests it. “I learned how to make modeling chocolate in culinary school. It’s similar to a rolled-out Tootsie Roll and works great as a decorating medium.” One client brought Chatfield a piece of pink and blue paisley fabric and asked her to match the pat-

tern for their cake. She covered the cake in modeling chocolate and then fashioned paisley replicas from marzipan, a pliable dough made of almonds and sugar. Though Chatfield has delivered cakes to numerous tucked away Humboldt ranches, even tree houses, she’s never gotten lost. The drive to the destination is one of her favorite parts of the job. She grew up in Arcata and loves the county’s great trees, ocean and valleys. “Sometimes I get stressed about getting a cake out on time, but when I’m driving through the redwoods, I am soothed and thankful to work and live in this great place.” Sarah Hart never thought of herself as a baker or wedding cake maker, though she’s always loved making cakes and special desserts for friends and family. In fact, when she graduated from Humboldt State in 2004 with a bachelor’s in fisheries, she was focused on a career at Monterey Bay Aquarium. But then she took a cake decorating class at Michael’s. And another. And, says Hart, “I found I really,

really liked creating cakes, that I have a knack for constructing them.” Soon, she was crafting birthday cakes for relatives, and friends kept her busy with special requests. Then, three years ago she took on her first wedding cake. The challenge: Create a fourlayer cake; drive it to Hayfork in 90 degree summer heat; load it on a golf cart; drive it over a suspension bridge and then assemble it; make frosting adjustments in a utility barn. Hart did this. On her first wedding cake. It was a success, and soon after, Calla Lily Cakes was born.

Hart uses organic ingredients in all of her cakes and colors her own fondant. Plus, she makes from scratch peanut butter buttercream, Bavarian cream, and chocolate ganache. Of her recent creations, the chocolate seashell cake is a signature fave. It’s decorated gracefully in white fondant, accented with white and milk chocolate shells she’s cast herself. Luminous sugar pearls punctuate the cake’s elegance. She’s also tried her hand at cake pops, a recent trend in bridal cake fashions. Says Hart, “Those are a treat to look at and a good way to use cake scraps.”

Now she’s taking business courses and has entered the Economic Fuel contest at Humboldt State. She’d like to win seed money to establish a kitchen space for her cake business. If she successfully jumps through all the hoops and convinces the judges, she could win as much as $25,000 for Calla Lily Cakes. What a sweet win and that would be — yum! So, what will it be? Buttercream, marzipan, Italian meringue? Organic and gluten-free? Maybe there are myriad options, but they don’t have to drive you nuts.
