We are so glad to welcome you back to our renovated building! It has been a very exciting time relocating back to our home. Hopefully you will have a chance to stop by soon for a visit. Just give me a call and I can set up a little tour for you!
Something new as we get resettled: we are adapting our Drop-in schedule to better meet the needs of our seniors. In this edition, you will find a “Cheat Sheet” to sign up for all your favorite Drop-ins. This will help us monitor who is here and who is not. It will also make it easier to reach you if there is an unexpected power outage or closing. We have also added an additional day of Duplicate Bridge on Fridays from 12pm–3pm to help serve the growing number of attendees on Mondays.
We would like to give a special thanks to the staff at TPAC for their hospitality while we spent the last nine months there. From the front line staff to fellow supervisors and managers to the maintenance folks; they made our stay there exceptional.
As the weather is getting warmer, you should join us for our Wednesday Walking Club. We will venture out to various parks and nature preserves in the community. You must sign up to receive the email letting you know our destination for any given week.
We hope you can make it to our Senior Center Welcome Luncheon at the newly renovated Northbrook Community Center. We will have a cookout, entertainment and a small tour of the facilities, see page 8 for more information.
As always, we are here to help you. If you need help navigating any of our Guides or need suggestions on program offerings, please feel free to reach out to me or our amazing customer service staff. You will always see their smiling faces at the front desk when you arrive.
Please join us for Tuesdays in the Park this summer at Village Green Park! Bring your lawn chair and a picnic, then listen to good music and dance. Dates run June 23 through August 4 with a family act at 6:30pm and the main performance at 7:15pm.
Have a wonderful summer!
Sincerely,
Nancy Eschker

Cook, Learn, Connect
Northbrook Park District Debuts
Adult Culinary Classes
Article by Elena Ferrarin, Communications Coordinator
When it comes to cooking, you’re never done learning.
That’s the mantra of Cheryl Knecht, owner and founder of Schoolhouse Kitchen, whose instructors will teach the new lineup of adult cooking classes and workshops offered at the Northbrook Park District’s renovated Northbrook Community Center.
“I cook every day as a professional and as a mother, and I am always learning from other people,” said Knecht, who also teaches at College of DuPage and has taught at Harper College. “Our classes are open to everyone — we get a lot of beginners, but we also have people who identify as more experienced cooks who want to freshen their repertoire and learn new things.”
The adult cooking program — along with cooking classes and summer camps for children and teens — will take place in the Community Center’s kitchen, which was upgraded and modernized as part of the building’s renovation.
“We are excited to offer senior and adult programming in our beautiful, newly renovated kitchen,” Recreation Manager Nancy Eschker said. “This demonstration kitchen will be perfect for all culinary arts learners — and tasters! We encourage everyone to come and join in the fun of hands-on cooking classes.”
The renovated kitchen features three workstations with oven, stovetop and sink, and new appliances,
cabinets, backsplash and flooring. There are new interior windows and large exterior windows providing ample natural light.
The adult cooking classes this summer are:
• “Yeasted Breads 101” on June 19
• “Mediterranean Summer” on June 26
• “Homemade Pasta from Scratch” on July 10
• “Fresh Flavors for the Sheet Pan Dinner” on July 17
• “Schoolhouse Kitchen: Adult/Tot” starting June 13 with sessions through July
Knecht, who will teach at least one of the classes, said she really enjoys working with seniors, who always have interesting stories to tell about their connection to food. Sometimes, seniors join the class because they have lost their spouse and are learning to cook for themselves, she added.
The adult cooking classes expose students to new flavors, ingredients and techniques, giving them the confidence to keep experimenting on their own, Knecht said.
“People are inspired to try new things, and homecooked food and homemade food is always healthier than what you might buy at the store or eat at a restaurant,” she said. “I think it’s important to know what is going into your food — how much salt, sugar and fat, for example. It’s more satisfying when you cook your own food.”
The adult/tot classes are a great option for grandparents who want to experience something new with their grandchildren, Knecht said. The instructors focus on encouraging engagement among participants and showing adults how they can include children in the cooking process at home, she said.
In the end, having a good time in the kitchen — whether in class or at home — is what yields a great meal, Knecht said.
“We like to say that it’s really important to learn how to take care of yourself and the people around you, and cooking is a skill that allows you to care for yourself and others.”

Senior Tap: Low-impact Exercise That Lifts Spirits
Article by Elena Ferrarin, Communications Coordinator
Senior Center member Victoria Bahnasy has been exercising regularly by taking the Dance Fit class, which she enjoys.
Then she enrolled in the Senior Tap class, and fell in love, she said.
“I love it, love it, love it,” Victoria said. “You get there, you put on your shoes and you start dancing. It’s really a lot of fun.”
Indeed, seniors are usually very excited to come to the tap class, which has been offered by Northbrook Park District since spring 2025, said Performing Arts Supervisor Melody DeRogatis.
“The performing arts tend to be a field that a lot of people wish they’d tried at some point in their life, or maybe pursued in high school and then never did it again,” Melody said. “I thought it would be nice to have a friendly, low-pressure environment for people to re-visit those passions in some way.”
That was the case for Victoria, who took tap classes for a couple of years as a child.
“I had not been great about exercise all my life. Then I retired and realized that I was leading a very sedentary life,” Victoria said. “When my four grandkids were little, that was the best exercise in the world, running after them. But now they are in
their 20s, so I had to do something. I do Dance Fit, and now also Senior Tap.”
Tap provides great, low-impact exercise that helps build strong ankles and limbs, which are lifelong assets, Melody said. Plus, it provides a sense of accomplishment as participants grow their skillset. The tap class is also a great way for seniors to socialize and make new friends, she added.
That’s been the case for Helen Kim, who’s been taking Senior Tap since January and is also a walking track member at Techny Prairie Activity Center.
“We become familiar and comfortable with each other. We have things in common — we are all retired and similar ages — and it’s good company,” Helen said about the class. “We also make progress during the class, which is nice to see.” Helen said she especially loves the “click clack” sound that tap shoes make.
“It is a very amusing sound,” she said. “The class gives me a little energy and lifts my spirits.”

SEASONAL RECIPE
Grandma Ruthie’s Famous Chicken Salad
Nancy Eschker, Recreation Manager
Prep time: 15 minutes
Yields: 4 servings
Ingredients
• 2 cups cooked chicken, shredded or diced (rotisserie works well)
• 1/2 cup mayonnaise or plain Greek yogurt (Chobani has excellent flavor and texture)
• 1/2 cup red or green grapes, halved
• 1/2 cup celery, finely diced
• 1/4 cup walnuts or pecans, chopped (optional) (toasted even better)
• 1–2 tbsp lemon juice (to taste) (fresh is best!)
• 1 tbsp Dijon mustard (optional, for tang)
• Salt and black pepper to taste
• Top with a sprinkling of coarsely chopped flat parsley
Directions
1. In a large bowl, mix the mayonnaise, lemon juice, Dijon mustard, salt and pepper.
2. Add the shredded chicken, halved grapes, diced celery, and nuts (if using) to the bowl.
3. Stir until all ingredients are well combined.
4. Refrigerate for at least 30 minutes to allow flavors to meld, though it can be served immediately.
Storage: Store in an airtight container in the refrigerator for up to 3 days.
Serving: Serve on a bed of Boston Bibb lettuce.
