Citizenfour Viewing and Talk with Journalist Glenn Greenwald

T

he Loft Cinema will host a screening of the Oscarwinning documentary Citizenfour, the 2014 film concerning Edward Snowden and the NSA spying scandal, at 7:30 p.m., March 24. The film will be followed by an onstage discussion with Pulitzer Prize-winning journalist and best-selling author, Glenn Greenwald. Greenwald is a journalist, constitutional lawyer and author of four New York Times best-selling books on politics and law. His most recent book, No Place to Hide, is about the U.S. surveillance state and his experiences reporting on the Snowden documents around the world. In January 2013, filmmaker Laura Poitras started receiving encrypted e-mails from someone identifying himself as “citizen four”, who was ready to blow the whistle on the massive covert surveillance programs run by the NSA and other intelligence agencies. She and reporter Greenwald flew to Hong Kong in June 2013 for the first of many meetings with the man who turned out to be Snowden. The film that resulted from this series of tense encounters is absolutely sui generis in the history of cinema: a 100 percent real-life thriller unfolding minute by minute before our eyes. Poitras is a masterful storyteller. She compresses the many days of questioning, waiting, confirming, watching the world’s reaction and agonizing over the next move, into both a great character study of Snowden and a narrative that will leave viewers on the edge of their seats. The idea of having one place to go for many natural health and beauty needs came about when Debbie Shaw and her husband, Dr. Noel Shaw, decided to add more diversity to their chiropractic clinic. io-Touch will be a first-time exhibitor at the eighth annual Tucson Festival of Books, which will be held on the campus of the University of Arizona, March 12 and 13. This will be an opportunity for the Tucson community to learn more about Bio-Touch, a simple touch-healing technique that everyone can learn and practice to alleviate pain and stress, and support good health through all stages of life. Attendees will also have an opportunity to meet Paul Bucky and Debra Schildhouse. Here are some steps to take to ensure that pets are receiving the best possible nutrition. • Read the labels on dog food. Look for animal protein identified by species and whole-food ingredients at the top of the list. • Supplement food with vitamins, minerals and herbs— even raw and homemade food. The farming in the last century has depleted the soil so that our food is not as nutritionally rich as it was it the past. Therefore, our pets need additional help to have a fully balanced, healthy diet. • Periodically, change up pets’ food. They need a different mix of nutrients occasionally to support their best overall health. The timing would vary by pet, but a good suggestion is every six months. • Observe the pet when food is changed to note their general, overall health. Look especially for allergic reactions like scratching or oozing eyes and loose stool.

Cell Memory Causes Physical Manifestations in the Body

T

rauma from early in this life or a past life may stay in the body as cellular memory. For example, deep-seated heartbreak may cause discomfort in the center of the chest and difficulty breathing. If these issues are not addressed, a serious physical disease may develop. There are ways to relieve these cellular memories and free up more healthy, loving, heart-centered energy. Simply by recognizing the issue, it is much easier to release the cell memory causing the discomfort. Indoor Gardening is Looking Up The world’s largest indoor farm, in Japan, covers 25,000 square feet, with 15 tiers of stacked growing trays that produce 10,000 heads of lettuce per day, or about 100 times more per square foot than traditional methods. It uses 99 percent less water and 40 percent less power than outdoor fields, while producing 80 percent less food waste. Customized LED lighting helps plants grow up to two-and-a-half times faster than normal, one of the many innovations codeveloped by Shigeharu Shimamura. He says the overall process is only half automated so far. “Machines do some work, but the picking is done manually. In the future, though, I expect an emergence of harvesting robots.” These may help transplant seedlings, harvest produce or transport product to packaging areas. Meanwhile, Singapore’s Sky Farms, the world’s first low-carbon, hydraulically driven, urban vertical farm, runs on a Sky Urban Vertical Farming System, making the most of rainwater and gravity. Using a water pulley system, 38 growing troughs rotate around a 30-foot-tall aluminum tower. A much bigger project, a 69,000-square-foot vertical indoor garden under construction at AeroFarms headquarters, in Newark, New Jersey, will be capable of producing up to 2 million pounds of vegetables and herbs annually. Edible Insects Can Help Feed the Planet Insect expert and bug farmer Sarah Beynon, Ph.D., a research associate for England’s University of Oxford, reports, “Two billion people eat insects every day, and not just in the West. In fact, insects are extremely good for you and eating them is good for the planet, too.” Western governments are enthusiastic about the potential of entomophagy—the human practice of eating insects—for feeding growing numbers of people sustainably. By 2050, humans will require 70 percent more food, 120 percent more water and 42 percent more cropland. Meat production is predicted to double, and conventional production consumes extraordinary volumes of land and water resources. A recent British Food and Agriculture Organisation report suggests that there are more than 1,000 known species of edible insects. Insects are extremely nutritious, containing lots of calcium, zinc and omega-3 fatty acids, and are low in cholesterol. Evolve Advances PT to Coolest Place in Tucson by Marcia Detwiler Scupin

F

ive years ago, physical therapist Kate Warren created Evolve Physical Therapy & Sports Performance, offering traditional physical therapy (PT) and a range of other pioneering therapies. Seven months ago, she introduced to Tucson one of the hottest— and coolest—topics in athlete therapy today: whole-body cryotherapy. This subzero cold (minus 230 degrees Fahrenheit) cure, which was

developed in Japan in the late 1970s and refined commercially in Europe in the decades following, is an alternative to cold-water immersion or ice packs. It was not used in the U.S. until recently. The method involves a threeminute session in a chamber in which the only part of the body not exposed to the cold is the head. The effect is cold, not wet. “It’s the best to lower inflammation,” says Warren. “And no

prescription is needed.” Besides cryotherapy’s use in sports recovery and injuries, Warren says it lifts depression and can be used for anti-aging, since it firms, clears and smooths the skin. It also “helps me sleep”, she says. The anti-aging virtues of extreme cold have been known for a long time in Nordic and Eastern countries for rejuvenation and as an apparent fountain of youth. “Athletes can recover faster and train harder—burning 400 to 800 calories in a three-minute session,” according to Warren. Athlete LeBron James uses this therapy to recover from athletic exertion. Other star athletes like Kobe Bryant and Floyd Mayweather, Jr. also chill out in cold chambers regularly. Celebrity Christina Aguilera is reported to use this therapy to lose weight quickly and safely. Other fans include Daniel Craig, Mandy Moore, Lindsay Lohan, Yoko Ono and the New York Knicks. Evolve’s whole-body cryotherapy chamber is the only one in Tucson. A cold-chamber session costs $75, but purchasing a package of three, for example, knocks more than $10 off the price. Other package deals are available on Evolve’s website. Beyond her PT credentials honed at her employment at Tucson Orthopedic Institute, Warren earned her doctorate in Physical Therapy and is a Certified Strength and Conditioning Specialist. A graduate in the top of her class from The University of Arizona and the University of Southern California, Warren is also an expert physical therapist for tactical athletes, athletes of all ages and children. She has competed in multiple national physique competitions and state kickboxing competitions. Evolve’s director also holds a certificate from the American Dry Needling Institute. Dry needling involves multiple advances of very thin needles into muscles along neural tracks, physiological structures like a muscle belly, tendons and joint spaces. Warren says the ancient art of dry needling is a very effective therapy for muscle spasms, tendonitis, headaches, back pain, muscle strain and nerve pain, working to increase blood flow. “It’s really best for pain relief—and people really respond to it,” she says. Another page from antiquity—An-


cient Egypt, to be precise—is cupping therapy, which focuses mostly on softtissue injuries. Cupping also works by enhancing blood flow to treat muscle strain, ligament sprain and back and neck pain. “The suction works like a massage,” explains Warren. “It separates fascia layers in the muscles.” Nowadays, suction for the various sized cups is machine generated, but in ancient days, fire heated the cups. Enhanced blood flow results, leading to healing. Cupping sessions at Evolve cost $35 per body area. Cold-laser therapy involves a handheld device that increases blood flow to promote healing by penetrating deeply into the tissue. This method increases and restores cellular activity and is also used for pain control. “Cold-laser therapy helps muscular-skeletal ailments heal,” Warren says. “It is also used by body-building competitors.” When body support without restricting range of motion is necessary for healing, kinesiology taping can assist, Warren says. This taping method gently lifts the skin layer and attached tissue covering a muscle, so blood and other body fluids can move more freely

in and around that muscle. “Tape can inhibit or facilitate muscles and joints,” Warren says. “I’ve been trained to apply it to different body parts.” The tape remains in place for 24 to 36 hours, and clients can remove it themselves. Medical doctors refer patients to Evolve, many times for work injuries. “Or people call in and want to try dry needling or cupping,” Warren says. avid Rupley, Jr., M.D.(H), the medical director of Coyote Healing Center, is offering an introduction to the Tower Garden—an aeroponic growing system that uses 10 percent of the water, electricity and space of a traditional garden. Tower Garden simplifies traditional gardening, using a unique vertical garden system that makes it easy to grow fresh fruits and vegetables at home. “Growing your own organic produce— tomatoes, lettuce, peppers, kale and herbs—provides certainty of quality and nutrient value,” says Carol Keck Rupley. Food crops in the Tower Garden grow faster than they would in soil, and need to be harvested on a more regular basis. Aeroponics is the process of growing plants in an air or mist environment without the use of soil. It uses both water and air to produce more colorful, better tasting, better smelling and nutritious fruits and vegetables. Tower Garden has a 20-gallon reservoir or storage tank at its base, which stores a nutrient solution. A small, low-wattage pump pushes the nutrient solution up through a central hose, to the top of the Tower Garden. From there, the solution drips through the central “tower” using a special device that evenly cascades the solution over the exposed plant roots. On the journey down the tower, the nutrient solution feeds the plants’ roots and becomes highly oxygenated as gravity tumbles it back down to the reservoir. The more we learn of our food origins—types of soil, what the soil and plants are treated with, the seed source itself, the quality of water put on the plants, how and when the plants are harvested, how far it is transported and what’s done to it before we buy it—the more we grasp how important it truly is to buy organic, fresh, in season, locally grown foods. Stores often carry organic foods, but how fresh are they? Buying at local farmers’ markets is far fresher than at the grocery store, and helps our local economy and health. Frozen foods are the exception, as they are proven to be frozen immediately upon picking and are therefore the freshest once thawed. Foods that are known to cause inflammation include: conventionally grown beef, pork and chicken; deep-fried foods; peanuts; refined flour products; most packaged or processed foods; white foods like bananas, potatoes and rice; and dried fruits. Inherently, meats aren’t all bad—it is important what the animal was fed and how it was processed. We are seeing proof that grass-fed, non-hormoneinjected meats are actually healthier for the heart. On the other hand, packaged foods are processed so much that little to no nutrient value is left in them. To avoid heart disease, diabetes, gastrointestinal issues, allergies, low energy, joint pains, endocrine disorders and even autoimmune disorders, we need to stop putting inflammatory foods in our bodies. Because climate change is accelerating and is already causing a multitude of adverse effects, and the footprint of our current food system is massive, we urgently need to create a national food supply that is both healthy and sustainable. ~Dr. Walter Willett, Harvard School of Public Health less red meat in particular, because of its large environmental footprint. Neff points out, “Thirty percent of greenhouse gas emissions are connected to red meat.” However, not all red meat is created equal. In her book Defending Beef, environmental lawyer and cattle rancher Nicolette Hahn Niman makes a case for sustainable meat production, noting, “Well-managed grazing could be part of an effective strategy to combat climate change.” In their book The New Livestock Farmer, authors Rebecca Thistlethwaite and Jim Dunlop praise the increase in farmers producing pasture-raised, ethical meats and the growing number of farmers selling directly to people that reject the industrial system. Neff likewise supports such sustainable livestock agriculture, which integrates pasture-raised animals on farms, rather than isolating them on feedlots, where they typically eat a grain-based diet (such as genetically engineered corn) and receive growth stimulants, including hormones and antibiotics.

The Omnivore’s Dilemma. Callicrate observes, “The same chemical compounds that athletes are banned from using in baseball are used to produce our food animals, which our children eat in the hot dogs at the ballgame.” According to the USDA, about 90 percent of feedlot cattle receive hormone implants to promote growth. Yet the European Union Scientific Committee on Veterinary Measures Relating to Public Health reports that the use of natural and artificial growth hormones in beef production poses a potential risk to human health, especially among children. Concerns about growth-promoting drugs led the American Academy of Pediatrics to call for studies that directly measure their impact on children through milk and meat. The President’s Cancer Panel Report on Reducing

Environmental Cancer Risk also states, “Growth hormones may contribute to endocrine disruption in humans.” Their dietary recommendations include choosing meat raised without hormones and antibiotics.

Rising Resistance Antibiotic resistance is now one of the world’s most critical public health problems, and it’s related to misuse of antibiotics in animal agriculture. Red and Processed Meats Targeted Dietary advice to reduce the consumption of red and processed meats, regardless of how the animals are raised, is not new. Kelay Trentham, a registered dietitian in Tacoma, Washington, who specializes in cancer prevention and treatment, points out that joint reports from the World Cancer Research Fund International and American Institute for Cancer Research (AICR) since 2007 have recommended restricting consumption of red meat to less than 18 ounces a week and avoiding processed meats. In 2015, the World Health Organization International Agency for Research on Cancer (IARC) classified processed meat (like hot dogs, ham, sausages, corned beef and beef jerky) as “carcinogenic to humans” and red meat (beef, veal, pork, lamb, mutton, horse and goat) as “probably carcinogenic to humans.” Risk increases with amount consumed, and the evidence is strongest for the relation of processed meats to colorectal cancer. Trentham explains some factors that make red and processed meats risky. “Heating or smoking meat creates cancer-causing compounds. Processed meats contain salts, nitrates and nitrites; a chemical mélange of preservatives that can increase risk,” she says. Trentham and Karen Collins, a registered dietitian and advisor to the AICR, concur that the form of iron found in meat also contributes to cancer risk. Still, the IARC report recognizes, “Eating meat has known health benefits.” Meat is a rich source of protein and B vitamins, iron and zinc. Livestock feed further influences nutritional composition, with meat from cattle raised on pasture (grass) containing higher levels of beneficial omega-3 fatty acids compared to meat from animals fed grain. According to medical doctor and National Institutes of Health researcher Captain Joseph Hibbeln, consuming fewer omega-6 fatty acids and more omega-3s may be one of the most important dietary changes for cutting the risk of chronic diseases, reducing inflammation, improving mental health, enhancing children’s brain and eye development and reducing worldwide incidence of cardiovascular disease by 40 percent. When it comes to eating meat, the agricultural practices, quantity consumed, and methods of processing and cooking make a difference. It turns out that what’s good for the environment is good for animals and people, too. ith refined processing of foods, we’ve seen an increase in diabetes. Some races that experience diabetes in larger numbers are Hawaiians, Native American Indians and Hispanics. Their bodies have a hard time adapting to the modern foods, as they have only had four generations of eating rice and wheat products. With the proper nutrition, diabetes can be well managed by anyone.

Types and Causes of Diabetes

There are three main types of diabetes—diabetes mellitus type I, type II and gestational diabetes—and one rarer form called diabetes insipidus. Diabetes is the third leading cause of

death in America, and it can be detected with a simple urine test. Diabetes mellitus type I, often called insulin-dependent diabetes, affects the young, and is commonly referred to as “Juvenile Diabetes”. It is often caused by a viral attack on the immune system. The body is unable to utilize glucose, the main fuel for the body. Consequently, glucose is high in the blood. This is often called “insulin resistance”. The diabetic’s blood becomes too thick or “sticky”, causing blood clots that damage blood vessels. Type II, or non-insulin dependent diabetes, occurs when people are older, and usually in those with a family history of diabetes. This disorder is

a little different in that the pancreas does produce insulin, but the insulin is ineffective. Some common symptoms are poor vision, fatigue, frequent urination, skin infections, slow healing of wounds, unusual thirst, drowsiness and tingling or numbness in the feet. The National Institute of Health says that of the 20 to 25 million people with diabetes type problems, some 5 million have undetected Type II. Diabetes insipidus is a rarer form of the disease that has to do with a deficiency in the pituitary hormone called vasopressin, or the kidneys’ inability to respond to it. The symptoms that make it stand out include tremendous thirst and urinating large amounts, regardless of how much one drinks. Diabetics have a larger risk of kidney disease, arteriosclerosis, blindness, heart disease or nerve diseases, as well as being more prone to infections. This is because of their body’s resistance to insulin—the hormone that drives the glucose into the tissue and cells as a nutrient—which disrupts the protein’s ability to function biochemically and further weakens the immune system. Diabetics can present symptoms of hyperglycemia, which is too much glucose in the blood, or at other times, hypoglycemia, when blood sugar is too low. Both conditions can be serious, but hypoglycemia, which can come on from missing a meal, too much exertion or an insulin overdose, is the more serious concern. A poor diet may be one of the biggest factors leading to diabetes. It often occurs in people who are overweight or who eat a diet high in refined sugar and highly processed foods, low in fiber, full of many complex carbohydrates or including too much meat, combined with a lack of exercise.

Experts agree that when a body carries excessive weight, a weight loss program is essential. A doctor specializing in nutrition can give specific advice, but suffice it to say that it is in a diabetic’s best interest to lose excess fat. One should always consult a doctor before starting any medical or nutritional program.


Excess fat cells create chemical messengers that block the body’s ability to actually respond to the insulin. As the fat comes off, the diabetic’s own insulin works better and the blood sugar level can improve. To help control weight, consult the following nutrition suggestions: • Eat more steamed and raw vegetables and naturally low-fat foods, enjoy complex carbohydrates in moderation, cut down on animal fats and dairy and decrease most grains. • Garlic and onion are great for healing the body. • Capsaicin, a natural, healthy derivative of hot peppers, can be added to foods. • Vegetable protein sources have high fiber and help reduce blood sugar urges. • Proteins such as beans, buffalo, salmon and tuna should be eaten two or three times a week; these fish have omega-3, which is great for the immune system. • Use raw olive oil for dressings or spread it on breads instead of butter; never use margarine. • Avoid white flour, table salt and white sugar, as they elevate blood sugar levels. • Eat more legumes, root vegetables, brown rice, quinoa and nut butters. • Avoid tobacco, since it constricts blood vessels and can be much more harmful to one’s condition. Many carbohydrates raise the glucose level of blood dramatically, like whole wheat bread, many breakfast cereals, baked potatoes, raisins, prunes and most dried fruit. Other carbohydrates such as pasta (including quinoa), pita bread, unleavened bread or bible bread, boiled potatoes, grapes, oranges, lemons and honeydew raise blood sugar only modestly. ackie Alpers is an award-winning food photographer who writes, cooks and styles recipes in her northeast-side Tucson studio. Growing up in Columbus, Ohio, she was always interested in food. One of her favorite photographers and biggest influence is Irving Penn, a Vogue magazine photographer known for his attention to detail. Alpers majored in photography

and illustration at the Columbus College of Art and Design. She evolved into her current career—creating food photo magic. “Madden Publications hired me to do a photo shoot of bakeries in Phoenix. I really loved the color and graphic design of food. It just sits there and doesn’t move. It’s easy to rearrange and manipulate,” she observes. Remaining completely true to

herself, Alpers wants her food photos to have an emotional appeal and connection, such as hunger, happiness or pleasure. “The word ‘healthy’ should not be used for describing food, because it cannot be quantified. The word ‘nutritious’ is a more accurate description, because it can be quantified,” she notes. For her health, Alpers avoids sugar and keeps carbs to a minimum, but confesses to a weakness for pizza. “I’m a sucker for pizza. I’ll eat pizza even when I know I shouldn’t,” she admits. She also has a penchant for good hot dogs and Mexican food. Her favorite drink is red wine, and her favorite cocktail is a Bloody Mary. “It used to be margaritas, but one margarita has 600 calories,” she laments. To keep her weight stable she exercises three to five days a week, primarily hill walking. Alpers does a lot of research about food photography on the Internet, including Pinterest, and subscribes to food magazines to keep up with the trends. She has tips for amateur food photographers, the most important being “practice”. “It is essential to look at what you’re photographing and to pay attention to composition. Don’t get too close. Try and make sure things are in focus,” she advises. “Don’t be afraid to zoom in or zoom out. Shooting from above is often the right angle.” Tucson is now being recognized as a foodie mecca, with its diversity of cultural and variety of cuisines. “Tucson is the first city in the United States to be recognized for its gastronomy by the United Nations Educational, Scientific and Cultural Organization. Jackie Alpers’ Southwest Style Grilled Chicken Recipe

T

here are Southwestern regional influences that vary from New Mexico to Arizona, Texas and Southern California. Here in Tucson, our regional cuisine is defined by fresh veggies, grilled meats and all of the delicacies that a mid-sized, sunshine-filled desert city/ college town, 60 miles from Mexico, has to offer. It’s summertimeeating all year round. For my Tucson-style grilled chicken, I used sweet Hungarian smoked paprika mixed with hot New Mexico chili pepper, some ground, unsweetened chocolate (inspired by molés) and a good California red wine blend. Healthy chicken is based on happy chickens. Look for free-range, organic chickens raised without added hormones.

Ingredients: 4 chicken legs For Marinade: ¼ cup red wine vinegar ½ cup good quality red wine (something you’d actually drink) ¼ cup olive oil 1 Tbsp ground hot New Mexico chili pepper 1 Tbsp sweet smoked paprika 1 Tbsp unsweetened ground chocolate

1 tsp oregano, preferably Mexican 1 tsp taco seasoning 1 Tbsp minced cilantro 1 Tbsp course ground salt 1 Tbsp onion flakes 2 cloves garlic, minced For Serving: Chopped cilantro Hot peppers Salsa

• Secure all of the marinade ingredients in a large, re-sealable plastic bag, along with the chicken. Massage the marinade into the chicken legs until well combined and coated. Marinate for at least 4 to 6 hours or overnight. • Heat grill or grill pan to medium. Grill for 15 to 20 minutes per side, covered, until the juices run clean. Serve with fresh cilantro, sliced hot peppers and your favorite salsa.

he colors found in fresh vegetables can indicate an abundance of necessary phytochemicals and nutrients. “Many people I see in my practice consume excess food, but have nutrient deficiency,” says Terri Evans, a functional medicine expert and doctor of Oriental medicine. Eating a variety of colorful vegetables can be part of the remedy. “Each color in a vegetable represents 10,000 micronutrients,” explains Evans. “The more colorful you make your diet, the happier your body will be.” She notes that supplements supply a lot of one nutrient, while vegetables gift us with tiny amounts of many requisite nutrients. According to the nonprofit Produce for Better Health Foundation, plant phytochemicals may act as antioxidants, protect and regenerate essential nutrients and work to deacti-

vate cancer-causing substances. So, the more color on our plates, the better. Yellow and orange—in squash and some tomatoes—point to higher levels of vitamins C and A. The beta-carotene behind these colors is renowned for supporting healthy eyesight. Dark green—in leafy greens and cabbages—evidences higher levels of vitamins K, B and E. Chlorophyll creates the color and indicates its welldocumented detoxifying properties. Red—in red bell peppers and tomatoes—indicates vitamin C. Lycopene, which provides the color, is widely associated with lowering the risk of prostate and breast cancers. Purple and blue—in radicchio, red cabbage and eggplant—deliver vitamins C and K.
