s I reflect upon this month’s focus on heart health, I am reminded of how the heart is not only a determining hub of physical health, but also of our emotional, spiritual and mental health. I often refer to the owner’s manual published by our Creator, which tells us in chapter 15 of the Gospel of Matthew, how the heart in its largest sense is the engine of our being. So “where the heart is”frames and colors the essence of who we are; our words and actions also emanate from our center.

I love how the iconic symbol of love, including Valentine’s Day, is a big red heart. A vibrant, healthy heart reflects its good physical condition nourished by vibrant relationships with our true self and other good people, which is what our Creator intends for us.

Who wants to succumb to unhealthy physical and emotional states of being and a resultant unhealthy heart?

The good news is that like the Earth, our body is designed from inception to be self-sustaining and self-healing. Like other engines, it will perform well and last a long time if we take care of it.

We trust that the insights ourcontributorsshare in this month’s issue will cause us all to pause andreflect on the physical and emotional health of our heart, as well as the lifetime relationship we each have with ourself. Expertsexplain how we can equip ourselves to better handle stress, lose fat and enjoy more vital relationships with ourselves and others, so that we can keep our heartsand lives happily and efficiently humming along.

The count gives participants a chance to be citizen scientists by collecting valuable data for Cornell’s research program.

Water Conservation Workshop at Eastfield College

workshop, Water-Efficient Property Management, will take place from 9 a.m. to 12:30 p.m., February 21, at Eastfield College to help property managers learn how to conserve water. Valentine Pet Food Drive Helps Needy Families

T

he Don’t Forget to Feed Me (DF2FM) Pet Food Bank will kick off its sixth annual Who Do You Love Valentine Pet Food Drive with a cheese tasting from 6 to 8 p.m., February 7, at Magnolia Cheese Company, in Fort Worth. Attendees should bring a bag of pet food to donate.

The pet food drive continues through February 21, with a goal of 10,000 pounds of food collected.

DF2FM Board Chair Amber Blair says, “We launched with an inaugural Valentine Pet Food Drive in 2009, and this drive continues to be a cornerstone event through which the community contributes to helping their neighbors keep their pets at home. Cowtown Marathon Provides Running Shoes for Kids

T

he 36th Cowtown Marathon, to be held from February 21 to 23 at Will Rogers Memorial Center, in Fort Worth, includes two 5Ks, a 10K, the half marathon, marathon and ultra marathon. With almost 27,000 participants in 2013, the Cowtown is the largest multi-event in Texas.

Founded by the University of North Texas Health Science Center in 1978, proceeds of the marathon benefit local charities and nonprofit organizations. The Cowtown Children’s Activities for Life & Fitness Program provides training, grants and running shoes to children in need. Current nonprofits include the American Cancer Society, the Leukemia & Lymphoma Society, and Team RWB, a support organization for wounded veterans and their families. Each year, the Cowtown supplies thousand of needy children with running shoes.

The marathon and ultra marathon are Boston Marathon qualifying events. The Cowtown Cook Children’s 5K race was named the top kids running event in the nation by USA Running, with more than 5,000 children registered to run in 2013.

Leashed dogs are allowed.

omen may worry more about breast cancer, but in reality, heart disease is the top killer of American women, claiming 300,000 lives a year, 7.5 times the number that die of breast cancer, according to the Centers for Disease Control and Prevention. Although heart disease is more often perceived as a men’s issue, since 1984 more women have died of heart disease than men.

Part of the reason may be that women’s heart attacks can differ from men’s and the American Heart Association (AHA) warns that women often fail to recognize the symptoms, ranging from torso aches and pains and nausea to anxiety, shortness of breath, dizziness and extreme fatigue. They may experience subtle symptoms for months and write them off as byproducts of menopause, heartburn or effects of aging. The National Institutes of Health states that 43 percent of women that have heart attacks experience no chest pain.

The difference between the more subtle signs of a heart attack in women and the more dramatic signs in men may help explain why 75 percent of men, prompted to act quickly, survive a first heart attack, while only 62 percent of women do, according to the AHA. “Research shows that women may not be diagnosed or treated as aggressively as men,” notes the Agency for Healthcare Research and Quality, part of the U.S. Department of Health & Human Services.

University of Missouri expert says that people in happy marriages are more likely to rate their health better than their peers as they age. Evidently, engaging with one’s spouse builds a strong relationship that can improve spirits, promote feelings of well-being and lower stress.

Analyzing data from 707 continuously married adults that participated in the Marital Instability Over the Life Course panel study, a 20-year nationwide research project begun in 1980, researchers found that married people have better mental and physical health and are less likely to develop chronic conditions than their unmarried, widowed or divorced peers.

Thus, researchers recommended involving spouses and families in treatment for any illness. They further suggested that in cases of a strained marital relationship, improving marital harmony would also improve health.

FDA Moves to Ban Trans Fats

H

eart-clogging trans fatty acids may soon be a thing of the past. The U.S. Food and Drug Administration (FDA) has taken the first step to remove trans fats from its GRAS (generally recognized as safe) list, effectively banning their use in food products.

Trans fats, also known as hydrogenated vegetable oils, can be found in many processed foods, including baked goods, microwave popcorn, peanut butter, frozen pizza, margarine and coffee creamers. Created by adding hydrogen to liquid oils to turn them into a solid form, trans fats have been used to improve the texture, shelf life or flavor of foods. For more than a decade, numerous scientific studies have documented that trans fats raise dangerous LDL cholesterol and lower good HDL cholesterol.

The FDA’s proposed ban would require the food industry to gradually phase out all trans fats, likely over several months or years, noting their threat to health. Commissioner Margaret Hamburg said the move could prevent 20,000 heart attacks a year and 7,000 deaths. Many food manufacturers have already phased out trans fats since new nutrition labeling requirements were introduced by the FDA in 2006; plus an increasing number of local laws have banned them.

Greenwashing Watchdog Dr. Bronner Clears Out Imposters

The nonprofit manufacturer of Dr. Bronner’s Magic Soaps (DrBronner.com), known in the U.S. for more than 50 years for its devotion to purity and informationcrammed product labels, has taken to filing lawsuits against companies that don’t live up to health claims or that employ deceptive greenwashing tactics.

One primary focus is the cosmetics industry’s use of so-called “organic” ingredients. Company president David Bronner reports, “About 80 percent of these companies simply dropped their claims; the others reformulated.” He also lobbies for labeling of genetically modified organisms (GMO) in Washington State.

Ice Storms Can Cause Permanent Damage

S

evere ice storms over the holiday season have stricken many communities, and the first order of business was clearing roads and restoring power. The International Society of Arboriculture (ISA) reminds homeowners that what’s fallen to the ground after an ice event is only part of the overall danger when working around damaged and icecovered trees.

Tree limbs damaged in an ice storm can split or break in the treetops, and branches of all sizes can come crashing down at any time, especially during high winds. Trees should be checked from the bottom up, preferably by a certified arborist, to determine the full extent of damage.

Dangerous work such as pruning or removing trees should be left to trained professionals. Be sure to ask for proof of insurance before hiring a tree service for the job.

Don’t hire someone asking for business door-to-door and offering reduced rates for tree work. Never allow a tree professional to “top” the trees. Topping trees does more harm than good because it increases the tree’s recovery time and makes it more dangerous.

Turning Agri-Waste to Good Use Cement that incorporates waste ash from sugar production is not only stronger than ordinary cement, it also qualifies as a greener building material.

Researchers at the Niels Bohr Institute at the University of Copenhagen, in Denmark, have found that cement made with sugar cane ash mixed in is stronger, can withstand higher pressure and crumbles less than ordinary cement.

In countries where sugar cane is grown, such as Cuba and Brazil, this agricultural waste product has been added to cement for years. Extracting sugar from the cane typically leaves a lot of fiber waste that is burned into ash, discarded and then requires disposal.

Using sugar cane ash also can lower the energy use and carbon footprint of cement production. Heloisa Bordallo, a researcher at the Institute, comments, “You are saving both CO2 emissions and raw materials.”

Canada Shows the Way via Mass Transit The government of Ontario, Canada, is issuing “green bonds” to fund the expansion of mass transit infrastructure in the province. Ontario Premier Kathleen Wynne says, “Green bonds are a great tool to raise capital for a project with specific environmental benefits. The worldwide market for green bonds in the last year has doubled; it’s now estimated to be more than $346 billion in U.S. dollars.”

ecobriefs Incandescent Bulbs Are History

I

t’s time to add old-fashioned incandescent light bulbs to such obsolete inventions as rotary telephones and record players as a multiyear phase out is wrapping up. As of January 1, no more traditional 60- or 40-watt incandescent bulbs have been allowed to be manufactured in or shipped to the United States.

The change was part of a landmark legislation called the Energy Independence and Security Act passed by congress in 2007 that touched on a variety of conservation issues, including lighting efficiency in bulbs that don’t meet federal energy-efficiency standards.

It’s the last part of a gradual phaseout that began in 2012 with 100-watt bulbs, and progressed last year with discontinuation of the 75-watt variety.

But this final stage is the most significant, according to Noah Horowitz, a senior scientist at the Natural Resources Defense Council, a Washington, D.C.-based environmental organization. “The 40s and 60s represent more than 50 percent of the consumer lighting market,” he says.

The 2007 law doesn’t actually mandate that manufacturers discontinue their bulbs, just that they improve them: 40W bulbs must draw just 10.5W, and 60W bulbs 11W. The result is the same: Incandescents simply can’t keep up with those twisty compact fluorescent (CFL) and newer LED bulbs, and even retailers were buying in bulk as the deadline approached.

While consumers might not appreciate the drop in choices, they should like their plunging energy bills, says the National Electrical Manufacturers Association, the main trade association for bulb builders.

The Act is eliminating unnecessarily wasteful products from the market. There are 4 billion light bulb sockets in the U.S. and more than 3 billion of them still use standard incandescent technology that hasn’t changed much in 125 years. The old bulbs are only 10 percent efficient, and the other 90 percent of the electricity it uses is lost as heat.

Another benefit of using more efficient light bulbs is the reduction of harmful emissions from coal-fired power plants, such as mercury, arsenic, chromium, nickel, acid gases and greenhouse gases. This helps to protect the health of our citizens, wildlife and environment, and it’s an easy, achievable step toward reducing our carbon footprint.

Additionally, efficient products mean cost savings. The new standards mean U.S. households collectively could save nearly $6 billion in 2015 alone, as estimated by U.S. Department of Energy.

communityspotlight Adapting an Ancient Art to Modern Medicine

r. Daniel Finley, LAC, practices acupuncture and Oriental medicine at the Living Well Health and Wellness Center, in Dallas. He is now helping others, but it was his own health problems that sparked an interest in the field.

Finley was a devotee of the martial arts as a teenager. When he experienced digestive problems, he was treated by his future teacher, Grandmaster James Shyun, a doctor of Chinese medicine, when Western medicine fell short. “I never in 1,000 years would have imagined going into acupuncture if I hadn’t had that experience,” Finley says. “I love it.

It’s very much focused on the living body.”

The Keller native explains that when the treatments brought relief to his irritable bowel syndrome, he wanted to learn more about Eastern medicine. By that time a kung fu instructor, Finley Daniel Finley enrolled in Texas Health Science University, in Austin, where he received a master’s degree in Oriental medicine and licensure in acupuncture in 2008.

Today, he’s helping returning soldiers find relief using this ancient modality.

In addition to his private practice, he works two days a week with veterans at an in-patient facility in Denton. Many are returning from Afghanistan and Iraq, suffering from addictions, chronic pain and post-traumatic stress. “I was so excited to help veterans,” he says. “They’re coming home and having a lot of problems.”

He says acupuncture is wellsuited to work with addictions because it doesn’t introduce additional medicines into the body. “Acupuncture is very good for balancing out and calming the central nervous system,” says Finley. “They’ve found it’s very effective to get pain relief and stress relief without introducing pain medications.”

Finley’s client list includes athletes that are dealing with old injuries or want to enhance their physical performance, and he draws from his own experience as a longtime martial arts athlete and the treatments that have worked for him. In addition, he treats people with chronic stress and pain, fertility problems and sleep disorders.

There are a number of myths surrounding acupuncture,” relates Finley.“For example, many people they’re going to have to take off their clothesand be stuck all over their bodies with needles during treatment. Actually, most of the points that get used are on the hands and feet, because the strongest nerve signals are in the fingers and toes.”

Many people fear there will be discomfort, but the reality is quite different.

“It’s very relaxing, calming,” says Finley. “A lot of people take a nap.”

e’re living in a time of extremes and we need to embrace those extremes and adapt, says Gregg Braden.

“The world of the past is disappearing, and no one told us,” says Braden. “We’re waiting for things to get back to normal.”

Instead of clinging to a past that will not return, he says we need to embrace a “new normal.” At the conference, Braden will be sharing the fundamentals of personal and community resilience that he says are necessary to thrive.

He proposes a new way of thinking about jobs, resources and money and adds that one of the principle roadblocks holding us back is the idea of separation, which science has perpetuated. “We’ve been steeped in the idea that we’re separated from our bodies, that nature is modeled on struggle and competition,” he says. “The best science has overturned

that thinking with peer-reviewed facts.”

Braden asserts new research is showing that our thoughts, emotions and beliefs affect our bodies, altering the way we view illness. Also, scientists are finding out that survival in nature requires mutual aid, toppling the notion of competition as the prevailing influence of outcomes. “We need to shift from a paradigm of separateness to a paradigm of cooperation and unity,” he says.

While we frequently hear about tipping points these days regarding the environment and the economy, he believes we still have a chance to ward off catastrophe. “The good news is that we already have the solutions to the big problems that are converging in our lifetime,” says Braden “All that stands between us and the new world where energy comes from clean, abundant sources and is accessible to every member of our global family; where clean, healthy food is plentiful and accessible to every mouth on the planet; and where every human has the basic necessities to live a healthy, meaningful life is the thinking that makes room in our lives for what already exists in the world.”

Ford Makes The Greenest Machine on the Road

D

allas, Los Angeles and New York are the three cities chosen for the debut of Ford’s revolutionary new vehicle, to occur simultaneously with the North American Auto Show, in Detroit. The all-new Ford F-150 Lariat full-size pickup truck has been dubbed Ford’s “green” truck.

Its all-aluminum construction represents the reinvention of the Ford F-Series lineup, which has been the best-selling truck in the country for 37 years and the best-selling vehicle overall for 32 years. The Lariat contains 11 other smart-car features and promises to set the standard for the future of trucks. Ford is also proud of the fact that the Lariat’s manufacturing process is closed-loop, meaning there is no materials waste. Any aluminum scraps are recycled and reused in the manufacturing process.

The Lariat is expected to get 25 to 30 miles per gallon, although mileage may vary.

The Dallas unveiling at Gilley’s Night Club was a huge event, with Ford dealers coming in from all over the state. Texas is especially important to Ford because almost half of all F-150s are sold here. Gilley’s was decked out with trick lariat performances by a couple of real cowboys, photos with Dallas Cowboy Cheerleaders and a country and western band.

New “smart” features include a 360-degree camera view, using exterior cameras to create a bird’s-eye view all around the truck to help drivers park, maneuver in tight spots and navigate narrow roads and; integrated loading ramps, enabling easy loading into the pickup bed; LED headlamps and tail lamps; a new rearview camera feature to help drivers line up truck and trailer without requiring a spotter; a remote tailgate, allowing for the tailgate to be locked, unlocked and released with the key fob; highwattage power outlets (400 watts, 110 volts) in the cab; LED spotlights on side view mirrors, providing bright lighting around the truck exterior; a more efficient 2.7-liter EcoBoost engine; and a new eight-inch LCD productivity screen in the instrument panel. RETHINKING HEART HEALTH Pioneering Doctors and Patients Reinvent Cardio Care

n 1977, Dr. Dean Ornish began to think beyond an allopathic medicine paradigm that defined the reversal of cardiovascular disease, including coronary heart disease (CHD) and the hypertensive diseases such as heart failure and stroke, as physiologically implausible.

Undaunted by the challenge of funding his research, he pushed forward. Results of his foundational 1986 to 1992 Lifestyle Heart Trial, published in the Journal of the American Medical Association, proved that individuals with preexisting coronary atherosclerosis that make intensive, integrated lifestyle changes can begin to experience improvements in their condition after as little as one year without using lipid-lowering drugs.

Based on his 30-plus years of clinical research, Ornish and his colleagues further showed that five years of following proper nutrition, fitness and stress management—which must include love

and support—can reduce symptoms of CHD and other chronic conditions. He remarks in Love & Survival: 8 Pathways to Intimacy and Health that despite numerous studies showing a medical basis for its occurrence, the reason why CHD is reversible is still the subject of debate.

Ornish’s work has paved the way for a growing corps of pioneering integrative physicians successfully collaborating with patients to reduce the leading cause of death for men and women in the United States.

Plaque the Culprit

The cause of cardiovascular disease is arterial plaque, a fine layer of fatty material that forms within the arteries and blocks blood flow. It is largely the result of food and activity choices, plus the degree of inflammation in the arteries. Dr. Steven Masley’s three keys to improving heart health highlighted in

his book, The 30-Day Heart Tune-Up, and an upcoming PBS special, concern lifestyle factors capable of shrinking plaque, improving circulation and strengthening the heartbeat. “Abnormal plaque growth is preventable 90 percent of the time,” states the president of Masley Optimal Health Center, in St. Petersburg, Florida.

While conducting research on the heart health of nearly 1,000 patients over a period of 20 years, Masley suspected that the traditional assessment approach of measuring cholesterol, blood sugar and blood pressure didn’t effectively address the biochemistry within arteries. Testing intima-media thickness (IMT) using a simple 10-minute external ultrasound confirmed it.

The test bounces high-frequency sound waves to measure the thickness of the carotid arteries’ innermost two layers on either side of the neck.

“This valuable tool allows for an estimate of arterial age. A healthy, young cardiovascular system has less plaque and an unhealthy, old one has more,” advises Masley. IMT, a useful tool for preventing future heart attacks and strokes, differs from standard carotid Doppler ultrasound, which looks for artery obstructions suggesting surgery.

A practitioner of functional medicine, Masley explains heart-related diagnoses differently than his allopathic counterparts. “Rather than diagnosing high blood pressure as hypertension, I categorize it as not enough exercise, not enough fruits and vegetables, high emotional stress and excessive body fat.”

To optimize heart health, Masley employs a broad, holistic matrix of options that enhance the cardiovascular system—the interactions among diet, activity level, weight, environmental toxins, hormones, stress and biochemical factors such as blood sugar control and inflammation levels. He prescribes heart-healing foods that simultaneously help to manage the aging process, following a customized, heart-friendly supplement plan; engaging in exercise that strengthens the heart and arteries; and learning how to better manage stress.

It is no coincidence that we address our physical and emotional heart by the same name. Our physical heart usually reflects the state of our emotional heart, and vice versa. ~ Dr. James Forleo health is simple, disease is complicated (also the title of his book). Chronic Inflammation and Heart Disease

nflammation is meant to be a lifesaver.

When we get a splinter in our finger, for instance, a cellular response is triggered to fight the presence of any bacteria that may have entered the body along with the splinter. Additionally, a defensive system made up of specialized antibodies targets bacteria or viruses. These types of shortlived immune responses keep us healthy.

If the inflammation process doesn’t halt when the threat is stabilized, it becomes a chronic, rather than a temporary, condition. This may lead to conditions such as heart disease, stroke, Type 2 diabetes, Alzheimer’s and possibly even cancer.

Many people are aware that atherosclerosis, a buildup of plaque (hardened fat and cholesterol) in the arteries, can lead to heart attacks or strokes. However, what many don’t know is that chronic inflammation can increase the likelihood of the arterial plaques to rupture, causing a heart attack or stroke.

It is also possible that chronic inflammation can increase the production of abnormal cells, facilitating their conversion into cancer, or further damage nerve cells in the brains of those that suffer from Alzheimer’s. Living the Western lifestyleof diets high in fats and sugars and low in exercise increases the likelihood that a person’s body will become inflamed.

A recent study demonstrated that about 50 percent of heart attacks and strokes occur in people with normal cholesterol levels. This suggests that many people with “healthy” cholesterol levels are actually at risk for a future incident.

That’s why it is important to go beyond routine cholesterol tests.

Inflammatory biomarker testing measures inflammation levels and can assess risk of heart attack, stroke or other conditions related to chronic inflammation. If it reveals a need for more investigation, a high-resolution ultrasound can be scheduled to assess the extent of plaque buildup in the arteries.

Also taken into account are genetic makeup and lifestyle habits. Risk factors

include family history of heart disease or stroke; overweight; high cholesterol; age over 40; high-fat diet; tobacco use; high blood pressure; and diabetes. People should get themselves tested to find out how they can decrease the risk of heart attack or stroke due to inflammation.

Many of the home products we buy contain disquieting, hidden elements.

Understanding which ingredients are hazardous is imperative to maintaining a safe home environment. Key decisions range from the choice of carpets, couches and bedding to cleaning products, laundry solutions and air fresheners.

throwing it out of balance and, as widespread research shows, causing a broad range of diseases.

Making informed choices can alleviate such feelings. It only requires taking a series of small and manageable, progressive steps to create our own style of a healthy and harmonious home life.

How does it differ from other approaches to finding love?

Many approaches focus on the external reasons love is elusive, such as all the good men are taken, men don’t like powerful women or just not having met the right person. This approach focuses more on the internal reasons—going within to discover and release one’s own conscious and unconscious barriers. For most of us, a gap exists between how much we think we want love and how much we are actually open and ready to receive it. Until we bridge that gap, we will covertly keep love at bay, and won’t even realize we are doing it.

What are the most common hidden barriers to love?

One hidden barrier is resentment. We only resent people to the extent that we’ve given our power away to them.

cientists and medical researchers alike differ on how many people fail trying to lose weight, but 95 to 99 percent of people who try to lose weight fail. No matter what method we use, we have less than a one in 20 chance of being successful. That’s why so many people turn to weight-loss programs they can “feel”. Stimulant-laden, fast-fix and edgy weight loss that does not help address lifestyle changes that are actually causing the problem is the biggest reason for the low success rate.

CHOCOLATE AS HEALTH FOOD Boosting Diets and Heart Health

esearch tells us that 14 out of any 10 individuals like chocolate,” quips cartoonist Sandra Boynton. American chocolate lovers buy 58 million-plus pounds around Valentine’s Day, according to Nielsen Research. Ideally, the dark treat would be as healthy as a salad or an apple. Fortunately, accumulating research is on the way to giving plant-based chocolate superfood status.

All chocolate starts with cacao beans, seeds from the pods of the tropical cacao tree that thrives only in hot, rainy climates in Africa, Indonesia and South America. Local soil and climate conditions determine flavor characteristics, much as with grapes.

Harvested beans are fermented to create the chocolate taste and then dried. Afterwards, chocolate makers add brand-specific ingredients to the cacao solids.

“The percentage number on a bar’s wrapper represents the weight that actually comes from the cacao bean content,” says Robert L. Wolke, professor emeritus of chemistry at the University of Pittsburgh and author of What Einstein Told His Cook: Kitchen

Science Explained. “The higher the number, the lower the percentage of sugar and the less sweet, more bitter and complex the flavor.”

This is significant because dark chocolate contains higher levels of antioxidants which can help reduce cell damage, according to the Integrative Medicine Department at the University of Michigan, in Ann Arbor.

Alex Whitmore, founder of Taza Chocolate, in Somerville, Massachusetts, recently had one of its bars lab tested for antioxidant levels, called ORAC, or oxygen radical absorption capacity; the higher the value, the more antioxidants. Taza Chocolate’s 80% Dark Bar had a 65 percent higher ORAC than Himalayan goji berries, famed for being a superfood.

“This is very high for a chocolate bar,” notes Whitmore.

Cocoa also serves as a superfood for cardiovascular and metabolic health, report two recent studies from separate teams of Harvard School of Public Health researchers. A 2012 meta-analysis of clinical trials published in the American Journal of Clinical Nutrition concluded that consum-

ing dark, unsweetened cocoa powder and dark chocolate can improve blood pressure, vascular dilation and cholesterol levels, plus reduce metabolic precursors like diabetes that can lead to heart disease.

In 2011, Eric Ding, Ph.D., a Harvard School of Public Health epidemiologist and nutrition scientist, reviewed short-term trials of subjects ingesting 400 to 500 mg per day of flavonoid-rich cocoa, which he equates to 33 bars of milk chocolate or eight bars of dark chocolate. While Ding feels this is an unreasonable amount to eat because of the extra calories from sugar and fat, he states, “Supplements with concentrated cocoa flavonoids may perhaps be helpful for garnering the benefits discovered. The key is getting the benefits for heart disease while avoiding the calories, and for that, chocolate bars are not likely the best solution.”

Another observational study published in Nutrition shows that eating dark chocolate might help keep the pounds off for teenagers. Researchers with the Healthy Lifestyle in Europe by Nutrition in Adolescence program at the University of Zaragoza, in Spain, knew that chocolate consumption in adults already had been linked to lower body mass index. They found that chocolate consumption was also associated with lower total and midsection fat in European adolescents, reports Sayer Ji, founder of GreenMedInfo.com, a natural health research database.

“The quality and cocoa content they used in their research is probably much higher than in America,” says Ji. “From my perspective, it appears that even when researchers don’t control for type, the results across the board are rather startling. Even American subjects, presumably eating common milk chocolate bars, see benefits.”

So, this Valentine’s Day—and every day—we can happily relish that one-ounce piece of artisan dark chocolate melting slowly in our mouth and know we’re doing it for pleasure and for health.

Chocolate Cookery Vegan Chocolate Pie

Serve this with fresh raspberries and enjoy a little romance.

Yields 8 servings Chocolate Wafer Crust 6½ oz dairy-free chocolate wafer cookies, crushed into fine crumbs 1 Tbsp maple or date sugar 3 oz vegan buttery stick (such as Earth Balance), melted and slightly cooled Chocolate Filling 13 oz dairy-free semisweet chocolate chips (such as Ghirardelli) 1 /3 cup strong brewed coffee 1 tsp vanilla extract 1 lb silken tofu, drained 1 Tbsp agave 1 (9-in) prepared chocolate wafer crust

Vegan Hot Chocolate

Preheat the oven to 350° F. For the crust, combine the cookie crumbs, sugar and melted vegan buttery stick. Press this mixture firmly and evenly into the bottom, up the sides and just over the lip of a 9-inch metal pie pan. Bake on the middle rack of the oven until the crust is set and appears dry, 18 to 20 minutes. Remove from the oven and cool completely, about 1 hour.

For the filling, melt the chocolate chips with the coffee and vanilla in a medium metal bowl set over a saucepan of simmering water, stirring often with a spatula. Combine the tofu, melted chocolate mixture and agave in a blender or food processor until smooth, about 1 minute. Pour the filling into the crust and refrigerate for 2 hours or until the filling becomes firm.

A comforting way to enjoy the benefits of chocolate on a cold day.

Yields 4 servings 2½ cups plain rice milk 3 Tbsp maple or date sugar 3 Tbsp unsweetened cocoa powder ½ tsp salt ½ tsp vanilla extract 1 pinch ground cinnamon 1 pinch cayenne pepper Bring the rice milk, sugar, cocoa powder, salt, vanilla extract, cinnamon and cayenne pepper to a simmer in a saucepan over medium-high heat. Remove from the heat and whisk until frothy.

ymptoms that suggest a dog or cat’s heart is not pumping effectively include coughing and fatigue from light exercise. Before the signs are evident, it is far better to check for heart disease during regular twice-yearly visits to the veterinarian. Using a stethoscope, a skilled doctor can pick up telltale heart murmurs during the examination.

A fairly common problem with cats, heart disease tends to occur as cardiomyopathy, an issue with the heart muscle. In most dogs, where cardiomyopathy is rare, it usually involves damaged heart valves, resulting in “leaks” that allow blood to flow in both directions.

Upon an initial diagnosis of heart disease, one of two mistakes in treat-

ment routinely occur: Either a doctor prescribes strong cardiac medications to “prevent” heart failure from happening (even though no medication has been shown to prevent heart failure), or he takes a wait-and-see approach, only intervening when the disease progresses to irreversible heart failure.

The better approach is to do further testing and evaluation at the first sign of a murmur, including chest X-rays, an electrocardiogram (EKG) and a cardiac ultrasound to classify the stage of the disease and determine if conventional medications can help. Follow-up visits every six months

Fish oil contains beneficial docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) unsaturated omega-3 fatty acids. The principle metabolites derived from the metabolism of EPA and DHA tend to be antiinflammatory.
