We have finally completed the 2020 harvest. All of the wines are aging in tanks or barrels and we’re expecting great things thanks to the great weather we had this year. The vines are preparing for cooler weather as they lose their foliage and the canes harden off. It’s never too early to think about Icewine and we are continually monitoring our Icewine grapes and ensuring adequate netting is on all Icewine blocks in the vineyards.

Holiday DIY Pet Treats

¾ cup pumpkin or sweet potato puree ½ cup creamy natural peanut butter 1 egg yolk 1 cup flour 1 cup whole wheat flour ½ tsp baking powder Combine dough and roll out to 1/4” thickness. Cut out with cookie cutters and bake in a 375°F oven for 20 – 25 minutes depending on the size of your cookies.

Medium-bodied and fruit-forward 12.5%

Winemaker’s notes: A blend of 43% Merlot, 32% Cabernet Franc and 25% Cabernet Sauvignon, all harvested from the vineyards of the Niagara Peninsula. The individual wines were given subtle oak integration for 6 months with French and American oak, before the final assemblage was created. A full malolactic fermentation to soften the mouthfeel.

Flavour profile: Bright garnet in colour with a bouquet of dark plum, black cherry and blackberry, accented by notes of spice, oak and tobacco. The soft tannins give the wine great mouthfeel, and fl avours of black currant, cherry, plum and a touch of sweet spice fill the mouth. Notes of tangy berries, spice, smoke, black tea and cocoa linger on the dry finish.

WINEMAKER’S NOTEBOOK

We’ve dedicated a lot of our time during quarantine to crafting and working on home improvements. This fall, we’ll continue that momentum and whip up some beautiful DIY decorations and gifts! Here’s what we’ll be working on over the next few months with some help from Pinterest.

Best served: Serve at a cool room temperature of 16 to 18°C. Pair with grilled red meats; beef on a bun; pot roast and grilled portobello mushrooms. Drink now to 2024.

STOVETOP POTPOURRI As wine connoisseurs, we know that scent is connected to memory. There’s a distinct smell that reminds us of the holidays and that is stovetop potpourri. Add your favourite scents to a pot of water and boil to release the aromas. Our go-to blend is cinnamon sticks, cloves and orange slices, but you can also try grapefruit, rosemary and lemon or lime, mint and fresh pine sprigs.

Combine your favourite blend together in mason jars and gift them to teachers, friends and neighbours.

DRIED CITRUS ORNAMENTS Add a little bit of vitamin C to your tree! We love the simplicity and pop of colour that dried citrus rounds add to holiday décor. Slice your citrus fruit of choice about half a centimeter thick. Lay the rounds on a grate over a baking sheet and bake them in the oven at 180°F for 4 – 6 hours.

Let them cool and then string them into garlands, wreaths or ornaments. You can also incorporate herbs or greenery.

$24.95/750 ML Winemaker’s notes: Harvested from Clark Farm Vineyard and long-standing growers for Wayne Gretzky Estates. The free-run juice underwent two different fermenting and aging techniques. 55% was fermented in stainless steel and aged for 5 months in older French oak barrels and 45% was barrel fermented and aged in neutral French oak barrels before the final assemblage.

Flavour profile: Clear and bright with a bouquet of red apple, pear, white peach and orange blossom. Lovely fl avours of apple, pear, melon and spice glide across the palate. The lingering finish shows notes of citrus zest and green apple with a touch of spice.

Best served: Serve lightly chilled at 14 to 15°C. Enjoy while young and fresh paired with crab cakes; pork tenderloin with a cream sauce; sweet potato ravioli or leek and mushroom quiche.
