WINEMAKER’S NOTEBOOK In the vineyards, the shoots are beginning to grow, and flowering will start later in June. This first stage will result in grape clusters and we’ll adjust yield, or density, on the vine by shoot thinning. We’ll start to see fruit growing in less than 90 days.

In the cellar, we’ve been busy bottling all the 2021 aromatics, just in time for patio season. It’s also time to begin harvest preparations. We are currently awaiting our barrel orders to arrive from our coopers in France and the US.

Distiller’s notes: Our winemaker, Craig, working closely with some of our long-standing growers for Wayne Gretzky Estates, selected the finest Muscat grapes harvested from Niagara Peninsula vineyards. The juice underwent a slow cool fermentation to enhance and retain varietal expression, then it was presented to our distilling team to distill the dry Muscat wine. The fresh and fruity Muscat wine was double distilled in a copper pot still to bring forth a very clean, aromatic spirit with 89% ABV. The spirit was then aged for 2 months in a stainless-steel tank to soften the mouth-feel and enhance aromatics.

Pure, naturally limestone filtered, UNESCO-protected Niagara Escarpment water was added to achieve 40% ABV and the perfect balance of aromatics and flavours. The spirit was then bottled, ready to be enjoyed.

Flavour profile: A clear and pure coloured spirit. At first swirl of the glass, look for elegant tear drops forming along the side of the glass. Aromas of tropical fruit, white grape, floral notes and star anise rise from the glass.

The mouth-feel is full and robust in texture, with notes of ripe fruit, almond, and licorice. The finish is long, lingering and warm with a hint of sweetness and fruity notes of citrus and apple.

Best served: Enjoy neat or on the rocks, mix with soda water and a twist or orange, or as a replacement for vodka in martinis and other cocktails.

Add all ingredients (except one cucumber slice) to a shaker full of ice. Shake until too cold to hold. Run a slice of lime around the rim of a glass and rim with a 1:1 mixture of sugar and salt. Double strain the cocktail into a glass with or without ice. Garnish with the remaining cucumber slice.
