Featured Brewer: Laura Milukow Wayne Gretzky Estates Laura has long been a lover of beer and experimenting with fl avours. While initially setting out in a career in forestry, home brewing was always a passion and an outlet for creativity. After 5 years out west, she decided to refine her skills and pursue her passion of brewing.

Laura studied at Niagara College and graduated from the Brewmaster and Brewery Operations Management program.

After a year of working at another local distillery, she joined the Gretzky team in 2020.

Wayne Gretzky Estates Merlot 2019

$15.95 /750 ML

Purple garnet in colour with a bouquet of plum, cherry, tobacco, cedar chest and sweet spice. Flavours of juicy red berries and dark plum are dusted with spice. The finish shows notes of black tea, currant and spice. Enjoy with gourmet beef or mushroom burgers and bean stews.

WINEMAKER’S NOTEBOOK As we wait for spring to break, the cellar crew has been busy filtering and bottling the 2020 aromatic wines. We can’t wait to enjoy these refreshing wines on the patio this year! There is also plenty of barrel work as we start to finalize red blends from the previous year and do some final tweaking. We’re looking forward to sharing some new vintages with you at member’s weekend in the spring!

Wayne Gretzky Estates Estate Series Shiraz Cabernet 2017 $29.95/750 ML

ORIGIN: STYLE: ALCOHOL:

VQA Niagara Peninsula Medium-bodied and fruit-forward 12.7%

Winemaker’s notes: A trendy blend of 63% Shiraz, 19% Cabernet Sauvignon, 17% Cabernet Franc and 1% Viognier all harvested from the vineyards of the Niagara Peninsula. Each varietal received barrel malolactic fermentation, then nine months of oak barrel aging before the wines were blended. The final assemblage was then put back into barrel for a further three months (30% of the barrels were new oak; 60% French oak and 40% American oak).

Flavour profile: Purple garnet in colour with a warm, rich bouquet of ripe blue plum, black cherry, blueberry jam, currant, sweet oak, spice and new leather. On the palate you’ll find fl avours of juicy dark fruits and spice. Wonderful notes of black currant, blackberry, black cherry, black tea and spice linger on the finish.

Best served: At a cool room temperature of 16 to 18°C. Pair with aged Gouda or Cheddar; grilled steak with red wine reduction; rack of lamb and shepherd’s pie.

No.99 Hazy Pilsner Made with only four ingredients - yeast, grain (malted barley, wheat and oats), Saaz hops and pure water. This beer has a light yellow straw colour with a chill haze and dense white foam. Delicate aromas of cereal, dough, floral notes, pear, pepper and earth.

This beer is light-bodied and easy-drinking yet flavourful.

No.99 Hazy IPA Made with only four ingredients - yeast, grain (malted barley, wheat and oats), hops (Citra, Amarillo and Cashmere), and pure water. This beer has a hazy appearance with pronounced aromas of tropical fruits, exotic flowers, coconut and a hint of oats. This is a full-bodied and flavourful beer, perfectly balanced between sweetness and bitterness.

Wayne Gretzky Estates Signature Series Pinot Grigio 2019 $24.95/750 ML

VQA Niagara Peninsula Medium-bodied and rich 12.9%

Winemaker’s notes: Harvested from our estate vineyards and long-standing growers for Wayne Gretzky Estates within the Niagara Peninsula, the free-run juice underwent two different fermenting and aging techniques. The final blend consists of the following techniques; 89% was fermented in stainless steel and aged for 5 months in older French oak barrels and 11% was barrel fermented and aged in neutral French oak barrels before the final assemblage.

Flavour profile: Clear and bright with a bouquet of ripe melon, red apple, Bartlett pear and a hint of orange blossom. The wine has a lovely texture with fl avours of melon and juicy white peach. The lingering finish shows refreshing notes of Meyer lemon, apple, melon and a touch of spice.

Best served: Serve lightly chilled at 14 to 15°C to enhance a richer mouthfeel. Serve with crab cakes with mayo dip; pork tenderloin in a cream sauce; potato gnocchi in a cream sauce and leek and mushroom quiche. Enjoy while young and fresh.
