Get in on the cocktail culture with a 45-minute interactive experience hosted by our best bartenders. Featuring insider tips on how to create the ultimate whisky cocktail, guests will sharpen their bartending skills while learning the basics of preparing garnishes, simple syrups, shaking and muddling. After they are guided through the step-by-step process of creating their own whisky cocktail, guests enjoy their “All Star Creations”.

Join us for a 40-minute seated wine tasting and charcuterie experience in one of our beautiful spaces. Two guests will be able to choose 3 samples each from our preselected portfolio. Included in this package is a charcuterie box that serves two created by local caterer ‘In the Event by Maria’.

Vegetarian and vegan options are available.

Celebrate the i4C International Cool Climate Chardonnay Celebration in Niagara Wine Country with a 3-course lunch prepared by Chef Frank Dodd and his culinary team. You’ll be seated in the sunny Vineyard Pavilion at Trius Winery overlooking our own vineyard.

Each course will be served with a custom Chardonnay pairing and a member of our winemaking team will be in attendance to speak to each wine.

The 2021 Rosé line-up consists of 66.5% Pinot Noir, 15.5% Pinot Grigio, 9% Gewurztraminer, and 9% Gamay Noir, all harvested from our longstanding growers in the Niagara Peninsula. Refreshing fruit flavours of pink grapefruit, red berries, and honeydew melon make a perfect pairing for patio favourites like Margherita pizza, Greek salad, crab cakes or charcuterie and cheese.

International Rosé Day Friday, June 24

Our crews in the vineyard are busy as the young shoots begin to grow.

This is our first chance to adjust the yield on the vine by shoot thinning. By reducing the number of shoots on the vine, we set up the crop and canopy density for the growing season. There are other opportunities to adjust crop load throughout the season, but this is a great time to balance the vine early to allow for an even growth. Flowering or ‘bloom’ typically happens later this month – another exciting development as this sets the stage for what will become the grape clusters.

Light straw yellow in colour, this brew has aromas of floral herbs, pear, fresh cut grass, and fresh doughy bread. Light to medium-bodied, this flavourful beer has notes of floral, herb, and malt on the palate. Dry, crisp, and fresh with a natural bitter note on the finish.

Straw yellow in colour with a golden hue and creamy white foam. You’ll find aromas of honey malt, grapefruit, apricot, and a touch of floral.

This blonde ale is medium bodied and flavourful showing notes of honey, grapefruit, and apricot on the palate. Smooth and refreshing with a low level of natural bitterness providing a smooth finish.

Winemaker’s notes: The Baco Noir grapes were harvested from vineyards within the Niagara Peninsula. After traditional red wine making, the wine was transferred to French oak barrels and aged for six months. A small portion of the wine was transferred to our Red Cask Whisky Barrels (for approximately one month) to enhance depth of complexity, impart the unique spice notes of our whisky, and add punch and power to the mouthfeel. A full malolactic fermentation was completed. The different lots were blended and bottled.

Flavour profile: Deep purple in colour with a rich, warming bouquet of blackberry jam, blueberry, black cherry, blue plum, sweet spice, and vanilla extract. This Baco Noir is medium to full-bodied with silky tannins, food-friendly acidity, and bold fruit-forward flavours of black cherry, blueberry, and Damson plum, with sweet spice and vanilla. Juicy dark fruits, sweet spice, vanilla bean, and chocolate notes linger on the dry finish.

Best served: Serve at a cool room temperature of 17 to 18°C. Drink now to 2025.

Serve with aged cheddar and gouda cheeses; unsalted nuts and dried figs; seared red meats with rich red wine reductions; pot roast with roasted root vegetables; grilled Portobello mushrooms with a drizzle of aged balsamic.

VQA Niagara Peninsula Off-dry and fruity 11%

Winemaker’s notes: Harvested from vineyards in the Niagara Peninsula, these Riesling grapes were chosen for their varietal character and pure fruit flavours.

The grapes underwent a gentle pressing and slow, cool ferment in stainless steel to preserve the bright and expressive aromatics. The fermentation was stopped at a point of balance to produce a wine with refreshing acidity and a juicy off-dry finish.

Flavour profile: Clear and bright with a fresh aroma of tangerine, white peach, melon, and white flowers. This Riesling is light, refreshing with flavours of Meyer lemon, tangerine, peach, and tropical fruit. Lemon, lime, apple, peach, and golden kiwi linger on the refreshing finish. A perfect balance between fruity sweetness and refreshing juicy acidity.

Best served: Serve chilled at 10 to 12°C. Drink while young and vibrant. Fabulous as a sipping wine 365 days a year or serve with citrus chicken; grilled teriyaki shrimp skewers; lightly spiced curry dishes; sushi; fish and chips, or barbecued pork ribs.
