To be certified, wineries are audited annually to ensure they are adhering to environmentally sustainable practices in their winemaking operations. These practices all fall within the 3 pillars of environment, economy, and community. Certified wineries must: • Produce VQA wines which are made from 100% locally grown grapes • Use sustainable practices in winemaking including conservation of water, reduction in waste and wastewater, implementation of energy efficiency programs, and use sustainable power sources • Be a good neighbour and cultivate positive relationships within the community • Be a leader in social responsibility

Wayne Gretzky Estates No. 99 Hazy IPA

$3.25 /473ml

Only four ingredients used: yeast, grain (malted barley, wheat and oats), hops (Citra, Amarillo and Cashmere), and pure water. Straw yellow in colour with a hazy appearance and a dense white foam. The nose has pronounced aromas of tropical fruits, exotic flowers, coconut, and oats. This IPA is medium to full-bodied with a creamy mouthfeel, flavourful notes of tropical fruits, and perfectly balanced sweetness and bitterness.

WINEMAKER’S NOTEBOOK During the summer months, we ensure the vines strike the perfect balance of water, nutrients, and sun by doing regular inspections of each block as they grow. We like to get out in the vineyards early to ‘scout’ and ensure there are no visible signs of trouble and that the grapes formed from flowering are setting up well for the fall. We also trim the vines at the top and carefully remove leaves around the fruit zone to open-up the canopy. This ensures we get adequate light penetration into the canopy to allow the vine to develop optimal flavours and ripe tannins.

5 lbs 1 lb 1 cup 2 tbsp 2 tsp 2 tbsp 2 tbsp 2 tbsp 3 cloves 1 1/2 cups 2 large

thick cut potato bread (toasted) grainy mustard mayonnaise sliced heirloom tomato butter lettuce sliced smoked cheddar cooked cripsy bacon strips bbq sauce

ground pork shoulder ground pork belly steel cut oatmeal kosher salt ground black pepper smoked paprika thyme, chopped rosemary, chopped garlic, minced No.99 Premium Lager eggs

Mix all the ingredients for the loaf together with your hands, do not over mix, just incorporate.

Place into a parchment paper lined loaf pan, fill ¾ full. You might make two loaves depending on the size of the pan. Place into the pre heated oven at 375° for 40 minutes until an internal temperature of 160° F. Remove from the oven and let cool on the counter for an hour. Remove from the pan, wrap tight and cool in the fridge overnight.

To assemble: Slice the beer loaf into 1” slices, grill on the BBQ to warm and mark and brush with the BBQ sauce to glaze. Toast the potato bread, spread grainy mustard on the one side and mayo on the second slice, Place the lettuce down on the mayo followed by tomato, beer loaf, bacon, cheese and the mustard side bread.

Slice in half and enjoy with a pint of No.99 beer on the side!

Wayne Gretzky Estates Cabernet Merlot 2019 $15.95/750 ml

STYLE:

Medium-bodied and fruit-forward

ALCOHOL:

12.5%

Winemaker’s notes: A blend of 43% Merlot, 32% Cabernet Franc and 25% Cabernet Sauvignon was harvested from vineyards within the Niagara Peninsula. The individual wines were given subtle oak integration for 6 months with French and American oak, before the final assemblage was created. A full malolactic fermentation was carried out to soften the mouthfeel.

Flavour profile: Bright garnet in colour with a bouquet of dark plum, black cherry and blackberry, accented by notes of spice, oak, and tobacco. The soft tannins give the wine a great mouthfeel, and flavours of black currant, cherry, plum and sweet spice fill the mouth. Notes of tangy berries, spice, smoke, black tea, and cocoa linger on the dry finish.

Best served: Serve at a cool room temperature of 16 to 18°C. Drink now to 2024 and serve with one-year old aged cheddar; grilled red meats; beef on a bun and grilled Portobello mushrooms.

Wayne Gretzky Estates Whisky Oak Aged Chardonnay 2019 $18.95/200 ml

STYLE:

Medium-bodied and slightly rich

ALCOHOL:

13%

Winemaker’s notes: The Chardonnay grapes were harvested from vineyards within the Niagara Peninsula. The wine was aged for 6 months using American and French oak, before the blend was created. A portion of the wine spent two months with our ‘Red Cask Whisky’ oak; this adds punch and power to the mouthfeel, along with increasing the wines ageability and subtle notes of the ‘Red Cask Whisky’.

Flavour profile: Clear and bright with a straw yellow hue and a lovely bouquet of spice, toasty oak, vanilla, red apple, and Anjou pear. This Chardonnay has a smooth yet refreshing mouthfeel and flavours of tree fruits and spice. Notes of orchard fruits, spice, toasty oak, and vanilla bean linger on the finish.

Best served: Serve slightly cool of 14 to 15°C. Drink now to 2025 served with smoked creamy cheeses; creamy chicken pasta; turkey pot pies or rich lobster dishes.
