A blend of 65% Pinot Noir, 21.4% Gamay Noir, 10.4% Pinot Grigio, with a supporting role from Syrah, Cabernet Franc, Cabernet Sauvignon, and Pinot Meunier. Coral copper pink in colour with a fresh aroma of ripe peach, melon, strawberry, and cherry. Refreshing fruit flavours of red berries, pink grapefruit and crab apple linger on the finish.

WINEMAKER’S NOTEBOOK This month brings a lot of barrel tasting in the cellars to start blending our Chardonnay and reds. The wines from 2020 are showing beautiful fruit expressions thanks to the consistently hot weather. We’re also spending a lot of time walking through vineyards, making sure the leaves are trimmed to give the grapes plenty of sun exposure.

Winemaker’s notes: The Baco Noir grapes were harvested from vineyards within the Niagara Peninsula. After traditional red wine making, the wine was transferred to French oak barrels and aged for 6 months. A small portion of the wine was transferred to our Red Cask whisky barrels for one month to enhance depth and complexity.

Flavour profile: Deep purple in colour with a rich bouquet of blackberry jam, blueberry, black cherry, blue plum, sweet spice, and vanilla extract. On the palate you’ll find fruit-forward fl avours of black cherry, blueberry and plum while notes of vanilla bean, sweet spice and chocolate linger on the finish.

Best served: Serve at a cool room temperature of 17 to 18°C. Drink now until 2025 paired with seared red meats, pot roast and roasted root vegetables and grilled portobello mushrooms.

Wayne Gretzky Estates Estate Series Chardonnay 2017 $27.95/750 ML

Winemaker’s notes: Harvested from vineyards across the Niagara Peninsula, this Chardonnay is barrel fermented and aged sur lie for 12 months in 100% French oak barrels.

Flavour profile: Clear and bright with a bouquet of red apple, lemon, toasty oak, and a hint of toffee. The wonderful mouthfeel shows fl avours of tropical fruit, apple, spice, and oak. Refreshing acidity cleanses the palate while notes of apple and grilled lemon linger on the finish.

Best served: Serve slightly chilled at 13 to 15°C. Enjoy now through 2022 served with lemon chicken, buttery potato dishes or chicken pot pies.
