Embrace the chill of the Canadian winter at Peller Estates! Join us at the Winter Market every weekend until March. Your experience includes premium access to our outdoor tasting area plus one tasting flight, 5 oz glass of wine or one feature drink in a souvenir glass and an Icewine marshmallow for roasting over a crackling fire.

Join us for a truly unique Canadian experience at Thirty Bench Wine Makers this winter and snowshoe through our Riesling vineyards! A local Snowshoe expert will teach you tips and best trekking methods while our Thirty Bench wine consultant guides you through samples of Thirty Bench wines amongst the snowcovered vines. Afterwards, enjoy a warm snack at our picnic tables.

Join us for our brand-new Trius Snow Globe Dining Experience! Bundle up and enjoy dinner under the stars in your own heated snow globe. You and up to four guests will enjoy a 4-course tasting menu with perfect wine pairings. Enjoy the best farm-totable dining prepared by Chef Dodd and his culinary team. At the end of the evening, you’ll take home a cup of Chef Dodd’s famous hot chocolate. $200 per person, plus tax and gratuity. Reservations are required.

Chef Jason Parsons and his culinary team will have warm food items available for purchase. Additional beverages and Icewine marshmallows will also be available for purchase. $17 plus tax for Wine Club members.

This experience includes snowshoes, guided trek, wine tastings and a Thirty Bench souvenir wine glass to take home as well as a warm cup of soup. $40 plus tax for Wine Club members.

WINEMAKER’S NOTEBOOK The team has been busy in the cellar blending and filtering the aromatic wines from the 2020 vintage.

We typically start bottling in March so the fresh whites and Rosé are ready for patio season in the spring!

We are also keeping an eye on the weather for more Icewine picking.

In

the winter, we love to indulge. We’re bundled up in layers and craving comfort foods. In January, we might be eating on the healthier side because we made a resolution that this year - we’d incorporate more fruits and vegetables. In February, the resolutions tend to come to a halt once Valentine’s Day rolls around and candy and chocolate is in our face at every store. Who can resist those discounted chocolates? Here are some tips on how to enjoy chocolate with wine, not only on Valentine’s Day, but year-round.

• For 80% dark chocolate or higher, reach for a fortified wine (Sherry or Port).

• If the chocolate has dried fruit in it, pair it with a wine with fruit-forward flavours.

• Avoid overly dry, tannic red wines with dark chocolate as the tannins will clash and taste bitter.

• Sparkling wine can be paired with any chocolate. It is the most versatile and food-friendly wine.

STYLE: ALCOHOL:

VQA Ontario Medium-bodied and smooth 12.5%

Winemaker’s notes: Baco Noir grapes were harvested from the vineyards of the Niagara Peninsula. Through traditional red wine making, subtle French, Hungarian and American oak, and a full malolactic fermentation, we have created a fruit-forward easy-drinking red wine.

Flavour profile: Deep purple in colour with a bouquet of spiced dark plum, ripe blackberry, sweet spice and a touch of smoke. Ripe dark berries, earth and sweet spice notes linger on the juicy smooth finish.

Best served: Serve at a cool room temperature of 15 to 17°C. Drink while young and fresh. Pair with saucy barbecued ribs; roasted beets; gourmet burgers and pulled pork on a bun.

VQA Niagara Peninsula Rich and luscious 11%

Winemaker’s notes: This small lot Icewine is harvested from naturally frozen Vidal grapes from Niagara Peninsula vineyards at -10°C. The grapes are pressed frozen, releasing the pure extract from each grape. The juice is cool fermented to retain freshness and bright fruit fl avours, and 15% of the wine is fermented in oak barrels to build texture and complexity.

• Start with a wine that is slightly sweeter than the chocolate.

• Match the style and weight. Less intensely flavoured chocolate pairs well with lighter-bodied wines and chocolate with more intense flavours can pair well with fuller-bodied wines.

Flavour profile: This Vidal Icewine is bright gold in colour with a classic bouquet of peach, baked apricot, mango and tangerine. Flavours of juicy peach, ripe mango and tangy marmalade explode on the perfectly balanced palate, then notes of marmalade and tropical fruit linger on the amazingly long finish.

Best served: Serve chilled at 8 to 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy now through 2028.
