WINEMAKER’S NOTEBOOK We’ve been keeping a close eye out in the vineyards to make sure the growing fruit is staying healthy and clean. A healthy vineyard should display even growth with not too much or too little vigor, deep green coloured leaves and should be free from mildew and insect damage. We have our fair share of pests that can flourish in humid conditions, so timely sprays are pertinent.

Broken-Tart Rhubarb Sour

But what do you do with it? When life gives you rhubarb...make a rhubarb cocktail. I remember being a kid at my uncles’ house and my cousin Beth grabbing me a stalk of rhubarb. She rinsed it down and then rolled it in sugar and told me to snack on it. It was amazing! The combination of sweet, sour, and bitter...what a treat.

20-Years later I find myself putting it in a syrup with Juniper and Hibiscus and the result was almost as equal an ‘a-ha’ moment as biting into the Rhubarb for the first time. I hope you enjoy this cocktail as much as I do. I listed a bonus one just because it was so darn good!

Wayne Gretzky Estates Rhubarb Simple Syrup Pluck rhubarb ginger tea Wayne Gretzky Estates Red Cask Whisky lemon juice slices of ginger

Add all ingredients (except one slice of ginger) to a shaker and muddle generously. Add ice and shake until chilled. Use fine mesh strainer and strain into a chilled coupe glass. Garnish with a slice of ginger on the rim of the glass.

You can cold brew your tea to get a less bitter extraction. Simply add 25g of tea to 1L of cold water and allow to steep for 12-16 hours. Strain it out and use it in your cocktails or just enjoy on its own.

VQA Niagara Peninsula Fresh and lively 40%

Distiller’s notes: Our winemaker, Craig McDonald, working closely with some of our long-standing growers for Wayne Gretzky Estates, selected the finest Gamay Noir grapes harvested from Niagara Peninsula vineyards during the fall of 2017. The juice underwent traditional Rosé winemaking techniques, a short period of skin contact for colour, and a slow cool fermentation, to enhance and retain varietal expression. It was then it was presented to our distilling team.

The fresh and lively Rosé wine was then double distilled in a copper pot still to bring forth a very clean, aromatic spirit with 88% ABV. The spirit was then aged for 1 month in a stainless steel tank to soften the mouth-feel and enhance aromatics, and aged for an additional 5 months in Wayne Gretzky Estates Cabernet Franc Icewine barrels for added depth of flavour, mouthfeel and pretty pink colour. Pure, naturally limestone filtered, UNESCO-protected Niagara Escarpment water was added to achieve 40% ABV and the perfect balance of aromatics and flavours.

Flavour profile: Pretty rose petal pink in colour. At first swirl, aromas of strawberry cream, rhubarb, custard, red apple, floral and spice rise from the glass. The mouthfeel is smooth, warm, and creamy in texture, along with a hint of sweetness. Look for flavours of red apple and berry to develop on the palate. The finish is lingering and warm with notes of rhubarb and spice.

Best served: Enjoyed neat or on the rocks, mixed with soda water and a cherry or as a replacement for vodka in martinis and other cocktails.
