This elegant Pinot Noir has flavours of juicy red berry and cherry, with just a touch of spice. WINEMAKER’S NOTEBOOK August is all about the vineyard! We are watching the grapes mature and the first red varietals are starting to show a little colour (called ‘veraison’) - a sign that harvest is on its way! By mid-August we begin analyzing grapes for levels of sugar, acid, tannin, and fl avor. We also put netting on our red and later season varietals to avoid losing fruit to the birds and other critters! This vintage has been hot and dry so we’re looking forward to fruity and fl avourful wines.

The Whisky Bartender: Summer Cocktails 101

$20 per person, plus tax for Wine Club members Get in on the cocktail culture with a 45-minute interactive experience hosted by our bartenders. Featuring insider tips on how to create the ultimate whisky cocktail, guests will sharpen their bartending skills while learning the basics of preparing garnishes, simple syrups, shaking and muddling.

Wayne Gretzky Estates Whisky Oak Aged Red 2018 $19.95/750 ML

VQA Niagara Peninsula Medium to full-bodied and bold 13.5%

Winemaker’s notes: A classic blend of 74% Cabernet Sauvignon and 26% Merlot all harvested from vineyards within the Niagara Peninsula. The individual wines aged for 6 months using French and American oak before the blend was created. A portion of the blend spent 2 months with additional French and American oak, and another portion spent 1 month with our Red Cask Whisky oak, this added punch and power to the mouthfeel.

Flavour profile: Deep garnet in colour with a rich, warming bouquet of black cherry, black currant, vanilla extract, smoke, oak, black pepper, and coffee bean. This red blend has soft yet drying tannins and bold fruit-forward fl avours of blueberry, black cherry, black currant, and sweet spice. Notes of cocoa powder and sweet vanilla linger on the finish.

Best served: Serve at a cool room temperature of 17 to 18°C. Pair with aged cheddar and gouda; red meats with rich red wine reductions; pot roast; mushroom stews and grilled portobello mushrooms.

Wayne Gretzky Estates ‘Estate Series’ White 2019 $24.95/750 ML

VQA Ontario Medium-bodied and aromatic 12.3%

Winemaker’s notes: Harvested from vineyards across the Niagara Peninsula, this blend is made up of 32% Viognier, 25% Chardonnay, 18% Riesling, 18% Pinot Gris, 5% Muscat, 2% Gewurztraminer. The Pinot Gris, Chardonnay and Muscat were barrel aged for 6 months in 100% French oak barrels. The Viognier, Riesling and Gewurztraminer were fermented and aged in stainless steel to enhance the fruit expression.

Flavour profile: Clear and bright with a bouquet of yellow apple, ripe pear, peach, spring blossom, and a whisper of oak. This fl avourful wine has a smooth, slightly rich mouthfeel and fl avours of apple, pear, citrus, and tropical fruit. A medley of orchard fruits lingers on the finish.

Best served: Serve lightly chilled at 13 to 15°C as a sipping wine or served with roast chicken; turkey or pork; light cream sauces on seafood and pasta; chicken pot pies; grilled white fi sh and shellfi sh.
