erry Christmas friends.

After a year of experiencing the unexpected, there’s a sense of relief and looking forward to time out and Christmas celebrations.

Christmas means different things for different people, but Christmas trees in public paces, colourful fairy lights, warm weather and holiday-makers all signal the festive season. The season when we gift presents, make special summer meals and share and care with loved ones.

It’s a special time of year and despite COVID restrictions, the Sunshine Coast community has worked hard to bring us an assortment of festive season choices. ome rain, hail or shine, Christmas Day is a special time when we join with family and friends to share a good meal and fine company. It’s the time when we look forward to Christmas cake or pudding, perhaps a slice of pavlova or two and busting a bon-bon.

3. Festive foliage: Invest in pots of herbs, mini olive trees, fresh flowers or dried flowers. (A nice touch is to bunch, trim or tie with a ribbon to pair with your theme colour.) For an Aussie feel, try gum leaves, banksia flowers and gumnuts sprinkled across the table.

You can make your Christmas dinner extra special this year by taking the time to put together some truly awe-inspiring Christmas table decorations.

4. Get lots of: bon-bons – colour themed.

Not sure where to start to get your Christmas look? Here’s a few inspirational tips: 1. Decide your style: Traditional, vintage, classic white, coastal, eclectic or modern.

2. Decide your colour: For instance, traditional is your glowing green and red.

Get a little more classic and go all gold or rose gold. Get modern and slip in the silver alternative. If you go for coastal, think emeralds, blues, white, bleached naturals and neutrals.

5. Be quirky, recycle: Paint up those old rubber thongs – red and white stripes, red or green, wrap some holly or ribbon around the toe piece and hang from the Christmas tree.

Themes COASTAL We live close to the ocean, sand and surf, so let’s start with a corresponding theme.

Colours: Keep it cool with aquamarine, turquoise, tones of sky blue, silver, white and yellow and rose gold.

All aboard The Mary Valley Rattler has introduced a new Pets On Board service, allowing passengers to share the experience with their favourite four-legged friend. The service launched with Bear, part of a team at the Detection Dogs for Conservation Centre at the University of the Sunshine Coast. The Rattler has configured a carriage with two segregated booths that can accommodate up to six people per booth with up to two pets per booth from the same family.

General manager of the Mary Valley Rattler Mike Green says, “It is part of our philosophy of making the Rattler available to everyone in the community. Earlier this month we launched an all-access carriage that was specially designed to facilitate wheelchair passengers and that has attracted a flood of bookings.”

Festive recipes Christmas is all about sharing the love and nothing brings people together better than a great meal. If you need inspiration, try these Christmas recipes.

SUMMER BERRY TRIFLE – SUPPLIED BY IGA MARKETPLACE WISES ROAD Serves 8-10 | Prep time 30 minutes INGREDIENTS • 170g La Casa Del Formaggio mascarpone cheese • 60g caster sugar • 750ml Norco thickened cream • ¼ tsp vanilla extract • 1 tsp icing sugar • 450g store-bought sponge or Madeira cake, cut into pieces

• 60ml orange or cranberry juice • 1kg mixed seasonal fruits (such as strawberries, blackberries, blueberries, raspberries and peaches) • 600g vanilla custard • 50g sliced almonds, toasted

METHOD 1. Beat the mascarpone and sugar using an electric mixer on medium until combined. Add 250ml cream and vanilla, beat until stiff peaks form. Refrigerate.

2. In a separate bowl, beat 500ml thickened cream and icing sugar using an electric mixer on medium until soft peaks form. Refrigerate.

3. In trifle bowl, scatter pieces of cake, pour over the juice, then layer fruit, custard, mascarpone mixture, more fruit and finish with cream and almonds.

CHRISTMAS PORK WITH CRACKLING

METHOD Preheat oven to 240 degrees. Season meat and skin generously with cracked pepper, sea flakes and dried sage. Transfer pork to a roasting dish and roast for 50 minutes. Reduce temperature to 160 degrees and roast for a further 90 minutes.

Increase the temperature back up to 230 degrees and roast for a final 10 minutes, or until the rind has turned into a golden crackling and the pork is cooked through. Remove from the oven and allow to rest for 15 minutes before carving.

Place pork, uncovered with the rind facing upwards, in the refrigerator for at least one hour, or overnight if time allows. Allow pork to come to room temperature one hour before roasting. Use a sharp knife to score the rind in one-centimetre intervals. Thoroughly pat the skin dry with paper towels before seasoning.

Tip: Save time and pre-score the skin the day before.

CHRISTMAS ROAST CHICKEN – SUPPLIED BY KILCOY MEATS INGREDIENTS • 2kg whole chicken • 1 lemon, quartered

• 2 tbsp olive oil • 3 rosemary sprigs

BUTTER INGREDIENTS: • 100g unsalted butter, softened • 3 tbsp Masterfoods Italia herbs

• 3 garlic cloves, crushed • Salt & pepper

UNDER THE CHICKEN: • 1 cup dry white wine (or substitute chicken stock) • 1 onion quartered • 1 garlic bulb, halved horizontally METHOD Preheat oven to 200 degrees (fan forced). Mix butter ingredients in small bowl.

Loosen skin gently from chicken under the breast (slide your finger between skin and chicken flesh to loosen) – stuff the butter mix evenly into the cavities either side of breast bone. Place two lemon quarters and rosemary sprigs inside the chicken then tie legs with string and tuck wings under the body. Place quartered onion, remaining two lemon quarters and garlic bulb in roasting pan, put the chicken on top and pour wine around the pan.

Drizzle chicken with olive oil and season with salt and pepper. Roast for 10 minutes then turn oven temperature down to 180 degrees and roast for another hour and 20 minutes. Baste twice with pan juices during the cooking time. Cook chicken till juices run clear, remove from oven and rest uncovered for 15 minutes.

HOW TO GLAZE A HAM – SUPPLIED BY FRESH MEATS Steve of Fresh Meats Wises Road shares a simple and delicious way of preparing an unforgettable ham this Christmas.

INGREDIENTS • Whole leg ham (8-10kg) • Cloves • ½ cup raw sugar

• ½ cup orange juice • 5ml bourbon

METHOD 1. Preheat oven to 160 degrees.

2. On the ham, cut the rind below the hock and peel off the rind.

3. With the tip of your knife, lightly score the fat to make squares, roughly two centimetres each side.

4. Centre a clove in each square and place the ham in a baking tray.

5. In a saucepan, add the sugar, orange juice and bourbon. Simmer until sugar dissolves.

6. With a pastry brush, generously apply the glaze evenly across the fat.

7. Bake at 160 degrees for 3.5 hours, rebrushing with glaze every half hour.

8. Remove cloves before carving.

BARBECUE GARLIC BUGS – SUPPLIED BY FISHERIES ON THE SPIT, MOOLOOLABA Spread garlic butter over bugs. Balance the bugs with the flesh facing up on barbecue grill, with the hood down. Cook until butter is melted and slightly coloured.

Alternatively, these can be placed under the grill.

PRAWNS WITH TAILS – SUPPLIED BY I“IGA SUNSHINE COAST STORES. FOR MORE RECIPES, VISIT IGA.COM.AU/RECIPES” INGREDIENTS • ½ cup cream • ¼ cup good-quality tomato sauce • 1 lemon (1 tbsp fresh lemon juice) • 24 (about 2kg) cooked large prawns, peeled with tails intact

METHOD 1. To make the cocktail sauce, combine the cream, tomato sauce and lemon juice in a small bowl.

2. Taste and season with sea salt and pepper (you can add a splash of Worcestershire sauce and Tabasco if you have them for additional flavour).

3. Fill a round serving bowl three-quarters with crushed ice. Drape the prawns all around its lip so the tail is pointing to the ground.

4. Into the middle of the dish, nestled into the ice, place the Seafood sauce.

5. Garnish with wedges of lemon and serve immediately.

STILL HUMMING IN THE BEAUTIFUL BUDERIM FOREST FESTIVE OYSTERS Place oysters on a grill tray. Top half of these oysters with half a teaspoon of ready-made garlic butter, then sprinkle with freshly grated parmesan and thinly sliced bacon.

Top the other half with diced cherry tomatoes, fresh basil and a mix of parmesan and tasty cheddar. Place under heated grill or onto a barbecue with the hood down until the cheese is melted and bacon is crisp. Serve with lemon.
