A Christmas message from your Mayor

T

his is a very special time of year on our Sunshine Coast and there is always plenty to experience and enjoy, with events for all ages across our healthy, smart, creative region.

Each year, our Sunshine Coast Council proudly supports a wide range of festive season events that reflect the lifestyle, cultural values and diversity of our community.

There are many highlights to look forward to, including: • the spectacular Community Christmas trees and lighting in 20 locations; • community carols and Christmas-themed events along the coast and into the hinterland, including more than 25 events funded by council’s Community Grants program; • special council-sponsored Christmas events in Nambour, Coolum, Cotton Tree, Beerwah and Kings Beach; and • the spectacular, family-friendly New Year’s Eve celebrations at Mooloolaba, Coolum and Caloundra.

It has been a big year for our region and our community continues to be central to everything that your council does – whether it be working to preserve our beautiful natural environment or supporting the development of a stronger economy.

There’s a lot to look forward to in 2020, including the implementation of council’s new Community Strategy, the new Sunshine Coast Airport runway opening, submission of a Biosphere nomination for the Sunshine Coast to UNESCO, commissioning of the submarine cable providing a direct international data and telecommunications connection to global markets, and a range of community activities and events, including a visit from Sir Elton John.

Over the holiday season I encourage you to get out and enjoy our region’s fantastic attractions, including our beaches and waterways, aquatic centres, art galleries and museums, parks and environmental reserves, walking and bike riding trails and all of the wonderful experiences that are right here on our doorstep.

We also welcome the many thousands of visitors from across Australia and the world who choose to spend the festive season here on our Sunshine Coast.

On behalf of my family and our council, I would like to wish everyone a happy and safe holiday season and an enjoyable 2020.

The singing will kick off at 3.30pm. Skydiving Santa will be arriving in style at 4.30pm, straight onto Peregian Beach with his troupe of skydiving elves. It will finish with a spectacular display of fireworks over the park at 7.30pm. Gold coin donation requested.

Join families from all over southeast Queensland for stacks of festive fun in a supportive environment. This is the Sunshine Coast’s largest event for young people and families living with autism and disability. There will be waterslides, rides, sensory tent, petting zoo, face painting and Santa arrives with gifts for the kids. Entry is $10 and includes all rides and entertainment. Santa pops in for a visit and arrives across the lake.

Come along and hear some book reviews and spend time with others in the community who like to read. Join us under the fairy lights up The Lane for a variety of books reviewed for all ages. A relaxed way to celebrate Christmas while getting to know new books and neighbours.

THURSDAY DECEMBER 19 Carols by Candlelight, 7pm Good Shepard Lutheran Church, 295 Witta Road, Witta witta.lutheran.org.au Pay a visit to the historical little church in Witta for an evening of traditional carol singing. The singing will take place under the stars in the church grounds so bring something to sit on and some kind of illumination. If the weather is inclement, we will be inside the church.

No charge for entry. There will be a sausage sizzle and refreshments for sale throughout the evening. Carols kick off at 5.45pm with lots of singing and dancing and of course a special visit from Santa, followed by the spectacular fireworks display over the lagoon at around 8pm. Tickets in the Monster Christmas Tree raffle will be available on the night with one lucky person taking home more than $6500 of prizes. The raffle will be drawn on the night. Funds raised this year will be donated to the Maroochy North Shore Lions Club.

Festivities aboard the Rattler There are many Christmas adventures to be had aboard the Mary Valley Rattler this holiday season. Celebrate in style with the Cocktails and Canapes event on December 6. A drink on arrival, a selection of canapes and live music await for a night you will never forget as you embark on a three-hour journey through the stunning hinterland.

The station will be lit up like a Christmas tree in time for the Christmas Twilight Train on December 13. Departing the Gympie Historic Station at 5.30pm, passengers will steam their way through the Mary Valley.

100 historic aircraft to explore Queensland Air Museum has made its most sizable acquisition just in time for the festive season. The 60-tonne P3 Orion is one of RAAF’s quiet achievers and was used in the search for the missing Malaysian Airlines flight MH370 as it is extremely versatile. It is an aircraft capable of land and maritime surveillance as well as search and rescue operations. QAM volunteers are now reassembling the Orion and aim to finish by June 2020. Come check it out, along with 99 other aircraft. If you crave a slice of aviation history, head to the QAM these holidays. Woodford Folk Festival If you haven’t yet made it to the 500-acre Woodford Folk Festival site, home to sprawling green lawns, towering gums and knock-out views of the Glass House Mountains, make this year your first. The six-day happening from December 27 to January 1, closes out one year and welcomes the next, and strives to be more

than just a festival, more than an event.

Do you bee-lieve?

Welcome to a magical Christmas wonderland, located right in the heart of Caloundra for the school holiday season. This year the enchanting exhibition called Do You Bee-lieve? follows the journey of the Puff Dragon family as they visit Lollipop Land, a magical suburb of the North Pole where the fairies and elves make all of the sweet things for the world. Visual display artist Jule Barten and award-winning original doll artist Chris Boston, spend several months every year preparing, designing and creating their own brand of fantasy-themed Christmas exhibitions. Visitors to the exhibition are encouraged to slow down and enjoy the attention to detail in these beautiful displays, with more than 100 original dolls to see. Every character in the exhibition has been meticulously hand-sculpted by Chris. The display itself takes more than 1000 hours to complete. Spend some time to solve the ‘seek and find’ clues and visitors are welcome to take unlimited photos. Sitting on the magical unicorn in the Enchanted Forest is a must and if you love Instagram, you will absolutely love all of the new amazing photo booths this year. holidays, the Little Blue Penguins exhibit will immerse guests in the wonderful world of the smallest penguin species.

The brand new zone will take guests on a journey from an above-ground observation deck to an underwater vantage point for an all-encompassing look into the life of a little penguin. SEA LIFE displays curator Kate Wilson says the exhibit mirrors the penguins’ natural habitat of cool water, plants, rocky shores and sand. “We will be feeding the little penguins a healthy diet of tiny little fish, especially whitebait and small whiting, and look forward to seeing this raft of penguins settle into their new home,” she says. As well as this exciting new addition to the aquarium, guests will still be able to meet seals, grey nurse sharks, rays, turtles, lionfish and moray eels along with countless other intriguing sea creatures.

Festive recipes There is something special about getting into the kitchen and bringing a Christmas menu to life. Christmas food is about fresh, festive ingredients, and love!

CELEBRATION BERRY PAVLOVA – SUPPLIED BY IGA MARKETPLACE WISES ROAD Pavlova is almost mandatory at the Christmas table and this recipe will leave a lasting impression on your guests!

Serves 25 | Cooking time 3 hours FOR THE PAVLOVA • 24 Forage Farm egg whites (1 litre) • 6 cups caster sugar • 4 tbsp cornflour • 6 tsp white vinegar FOR SERVING • Raspberry coulis • Fresh berries of your choice

FOR THE CRÈME PATISSERIE • 8 Forage Farm egg yolks • 120g caster sugar • 50g plain flour • 4 tsp cornflour • 560ml milk • Vanilla bean or essence (optional) • 600ml thickened cream

METHOD 1. Preheat oven to 100 degrees. Place egg whites in the bowl and whisk on high speed until soft peaks form.

2. Add sugar,one tablespoon at a time, whisking until dissolved before adding more. When all the sugar has been added, scrape down sides of the bowl and whisk for a further 1015 minutes or until mixture is thick and glossy.

3. Place cornflour and vinegar in a small bowl, mix until smooth. Add the mixture to the egg whites and whisk for 30 seconds or until well combined.

4. Line trays with silicone or baking paper. Use a spatula to shape mix into circles, around 20 centimetres in diameter. You should have four to five circular meringues. Cook for up to 90 minutes depending on size of circle.

5. To make the crème patisserie, beat egg yolks and sugar for a few minutes until pale and slightly thickened. Whisk in the flours.

6. Heat milk in saucepan until starting to boil. Whisk milk into the egg mix. Put the mixture back into the saucepan and return to heat, stir constantly until thick and simmering.

Take off the heat, chill in fridge. Whip the cream to form stiff peaks then gently fold into the chilled creme patisserie.

7. To assemble the pavlova tower layer the meringue on a large sturdy platter with crème patisserie mixture between each layer. Drizzle with raspberry coulis and decorate with fresh berries. Ideally this dessert should be assembled immediately before serving.

CHRISTMAS PORK WITH CRACKLING Serves 6-8

TIPS FOR THE BEST

INGREDIENTS • 2kg boneless or bone-in pork shoulder

crackling

METHOD Preheat oven to 240 degrees. Season meat and skin generously with cracked pepper, sea flakes and dried sage. Transfer pork to a roasting dish and roast for 50 minutes. Reduce temperature to 160 degrees and roast for a further 90 minutes.

Increase the temperature back up to 230 degrees and roast for a final 10 minutes, or until the rind has turned into a golden crackling and the pork is cooked through. Remove from the oven and allow to rest for 15 minutes before carving.

Place pork, uncovered with the rind facing upwards, in the refrigerator for at least one hour, or overnight if time allows. Allow pork to come to room temperature one hour before roasting.

Use a sharp knife to score the rind in one-centimetre intervals. Thoroughly pat the skin dry with paper towels before seasoning.

Tip: Save time and pre-score the skin the day before.

CHRISTMAS ROAST CHICKEN – SUPPLIED BY KILCOY MEATS INGREDIENTS • 1 x 2kg whole chicken • 1 lemon quartered

• 2 tbsp olive oil • 3 rosemary sprigs

BUTTER INGREDIENTS: • 100g unsalted butter, softened • 3 tbsp Masterfoods Italia herbs

• 3 garlic cloves, crushed • Salt & pepper

UNDER THE CHICKEN: • 1 cup dry white wine (or substitute chicken stock) • 1 onion quartered • 1 garlic bulb, halved horizontally METHOD Preheat oven to 200 degrees (fan forced). Mix butter ingredients in small bowl.

Loosen skin gently from chicken under the breast (slide your finger between skin and chicken flesh to loosen) – stuff the butter mix evenly into the cavities either side of breast bone. Place two lemon quarters and rosemary sprigs inside the chicken then tie legs with string and tuck wings under the body. Place quartered onion, remaining two lemon quarters and garlic bulb in roasting pan, put the chicken on top and pour wine around the pan.

Drizzle chicken with olive oil and season with salt and pepper. Roast for 10 minutes then turn oven temperature down to 180 degrees and roast for another hour and 20 minutes. Baste twice with pan juices during the cooking time. Cook chicken till juices run clear, remove from oven and rest uncovered for 15 minutes.

PRAWNS AVOCADO AND MANGO SALAD – SUPPLIED BY CALOUNDRA SEAFOOD MARKET Nothing says summer more than this salad. Everyone will be lining up for seconds. Serves 4 INGREDIENTS • 4 handfuls mixed lettuce leaves • 2 mangoes, cut into cubes • ½ red onion, thinly sliced • 20 cooked prawns, peeled and deveined • 2 avocados, cut into cubes • 1 handful coriander leaves, chopped • 1 long red chilli, chopped (optional)

DRESSING • 2 tbsp white condiment (white balsamic vinegar) • 6 tbsp olive oil • 1 tbsp honey • 1/2 tbsp wholegrain mustard

METHOD 1. In a large bowl or on a platter, arrange lettuce, mango, onion, prawns and avocado.

2. To make the dressing, shake ingredients in a jar until combined. Taste and adjust to your liking. Pour over salad, and sprinkle with coriander leaves and chilli.

HOW TO GLAZE A HAM – SUPPLIED BY FRESH MEATS Steve of Fresh Meats Wises Road shares a simple and delicious way of preparing an unforgettable ham this Christmas.

INGREDIENTS • Whole leg ham (8-10kg) • ½ cup raw sugar • Cloves

• ½ cup orange juice • 5ml bourbon

METHOD 1. Preheat oven to 160 degrees.

2. Cut the rind below the hock and peel off the rind.

3. With the tip of your knife, lightly score the fat to make squares, roughly two centimetres each side.

4. Centre a clove in each square and place ham in baking tray.

5. In a saucepan, add bourbon, orange juice and raw sugar. Simmer until sugar dissolves.

6. With a pastry brush, generously apply glaze evenly across the fat.

7. Bake at 160 degrees for three-and-a-half hours, rebrushing with glaze every half an hour.

8. Remove cloves before carving.

FESTIVE OYSTERS Place oysters on a grill tray. Top half of these oysters with half a teaspoon of ready-made garlic butter, sprinkle with freshly grated parmesan and thinly sliced bacon.

Top the other half with diced cherry tomatoes, fresh basil and a mix of parmesan and tasty cheddar. Place under heated grill or onto a barbecue with the hood down until the cheese is melted and bacon is crisp. Serve with lemon.
