My first job was cutting and overlocking, as my family were in fashion. I was seven years old.

CAN YOU NOMINATE A DAY IN YOUR LIFE THAT TURNED OUT TO BE A TURNING POINT?

WHAT ARE YOU CURRENTLY WORKING ON? It’s a bit of a secret but it involves bringing the foodies of the Sunshine Coast together.

I call that ‘inspirational discontent’, when something triggers in your brain and you make a usually drastic change. For me, I had been teaching business for a while and even though I loved it, I had wanted to teach cooking for 15 years. Well one day I was teaching a friend how to make a particular dish and I felt such happiness that I thought, why am I putting this off? There will never be the perfect time, so as soon as she left I got online, found a premises and registered the business and here I am.

YOUR FAMILY INCLUDES. . . My awesome husband Will, my daughter Natalie and her brood and my son Stevie and his.

DO YOU HAVE A NICKNAME? I’ve never had a nickname till I became a Paterson, now I get Mrs P. It’s cute.

FIRST CAR? OMG, I was 18 years old, it was some sort of Chrysler that we paid $200 for and it would conk out if you didn’t constantly rev it, so at the lights, everyone thought I wanted to race them – nightmare.

HOW LONG HAVE YOU LIVED ON THE SUNSHINE COAST? For the best part of 25 years.

WHY DO YOU LIVE HERE? I’m like a homing pigeon, I might leave for a while but I always return. It is where I feel most at peace.

WHAT IS YOUR FAVOURITE PLACE ON THE SUNSHINE COAST? My favourite place is a spot on the beach not far from our house where Will proposed. We go there most Friday nights for fish and chips and take a bottle of wine. It

reminds us both of why we live here and we unwind after the week.

WHERE DO YOU TAKE VISITORS WHEN THEY COME TO THE COAST? We start off at Mooloolaba to show them you can have a tourist industry without spoiling the area and Maleny and Montville for the views.

IF YOU COULD CHANGE ONE THING ON THE COAST WHAT WOULD IT BE? I would love to see business people more supportive of each other and locals supporting local businesses. I am always hearing people talk about shopping in Brisbane.

WHAT ACHIEVEMENT ARE YOU MOST PROUD OF? On a personal level, it is my children. They grew up without a TV so we always had activities. Now Natalie is a successful designer of Emu designs – she recently came back from New York fashion week. My son Stevie is a French fine dining chef and artist. I am also proud of the legacy I have left with Demi International Training School.

YOU ARE HAPPIEST WHEN? I’m with my family, preferably in the kitchen.

WHAT FRUSTRATES YOU THE MOST? Waste of any kind, food, time, money, a life. People put more planning in to a party than they do their lives.

ADVICE TO YOUR 18-YEAR-OLD SELF? Don’t worry so much, the universe is looking after you, you are going to be just fine.

TEA OR COFFEE? Coffee, strong and hot. I’m Greek after all.

NRL OR AFL? Ha, I follow Billy Slater, I don’t care if he takes up ice skating! Seriously though I prefer boxing, which surprises a lot of people as I’m such a girly girl.

WAITING FOR A CHANGE OF HEART

With tens of thousands of Australians dying of cardiovascular disease each year, why do we fail to heed the warnings? WORDS: Richard O’Leary

t was just another day in paradise when a bowl of tom yum soup saved Ken Kipping’s life. It was a cloudy but dry September 10 last year, when the Sunrise Beach resident who had turned 70 just two days before, pulled into a car park at Noosa Junction just after 8pm to pick up his Thai takeaway. Seconds later he suffered a massive stroke. A passing driver saw him slumped against the steering wheel and did a U-turn to see if he was all right. That decision by good Samaritan Josh Collins was the first step towards saving Kipping’s life. “He saw the state I was in,” Kipping says, “and grabbed a passer-by who happened to be medically trained, and they immediately contacted an ambulance.” “The ambulance took me to Nambour Hospital, which has a dedicated stroke unit…and I was injected with a new drug which dissolved the clot.” “They’re [medical staff ] all shaking

He says his near death experience has given him a new perspective on life. “You think you’re indestructible to be honest, it just shows you it can happen to anyone.” People feeling bulletproof is an attitude Professor Kim Greaves comes across every day as a consultant cardiologist and Director of Cardiac Research at the Sunshine Coast Hospital and Health Service. “It is frustrating, but it’s more of an issue with people thinking that once I have a heart attack the doctors will cure it, take some tablets and it will all go away.” “Unfortunately, whilst we can do a lot of things for you, the way to really make a big difference…is at the start, before they have problems, when they are healthy. areas are in the higher than average category – in the red zone basically.” “The World Health Organisation says this is a major issue and we’re headed towards a precipice as the Western world is getting heavier and heavier, with all the complications that go with that which lead to heart disease. Heart disease is the major end point, really.” In Australia alone, one person dies every 12 minutes from cardiovascular disease (heart, stroke and blood vessel diseases) – more than 43,000 people a year. It affects one in six Australians or nearly four million people. It was the main cause for 518,563 hospitalisations in 2012/13 and played a role in an additional 680,000 hospitalisations. Coronary heart disease is the biggest cause of death in Australia, claiming 19,766 lives in 2013 – which is 13 per cent of all deaths. But it’s not just the deaths caused by cardiovascular disease that the health community is worried about. Just as concerning is the number of people who are left incapacitated – and that flows through to the family and the entire community. “What we see are patients who have had heart attacks and so on, and if they develop heart failure that limits their capacity even further. They are breathless on exertion, and it really does affect your way of life, and those around you. “You imagine you are born with an eight-cylinder engine and you end up with a three-cylinder engine, that does prohibit what you can do and your enjoyment of life. “For every one person that dies from it (heart attack) you’ll have five who are left in that limbo area.” There’s no big secret to help reduce your chances of heart disease – doctors have been telling their patients for years to stop smoking, eat better and exercise. Despite that – the condition continues to kill tens of thousands of Australians

every year. Greaves doesn’t blame the patients, he says they are victims of the way our society has developed over the decades – in particular marketing that promotes food that’s easy to eat, high in calories, and overstimulates insulin. He says there’s an urgent need for cultural change – and that should start in the workplace. “The management needs to change how it thinks when we go to work. Management needs to create an

While creating health-friendly places to work is a good start, Greaves believes the measures must go much further to make a real impact on heart disease in Australia, including warnings on food similar to the ones on cigarettes. “There needs to be better labelling, there needs to be some kind of labelling that says this is not good for you to eat, it has high calories, so although you get a quick sugar rush and it tastes nice, at the end of the day, you are doing yourself no good.”

One of the ways it’s trying to change that frightening statistic is the development of a wellness program at the new Sunshine Coast Public University Hospital, which will incorporate a healthier lifestyle into the workplace.

PARENTS ADVISED TO GIVE KIDS FLU JAB Parents are being urged to vaccinate their children this flu season with 2015 figures showing a large number of young people contracted influenza. Children and youths under 20 years of age made up 40 per cent of all notified cases of influenza in Queensland last year and a fifth of all influenza related hospital admissions. Nine per cent of hospitalised children with confirmed influenza spent time in the Intensive Care Unit. Sunshine Coast Hospital and Health Service Public Health physician Dr Andrew Langley says influenza is more easily spread where large numbers of people gather.

STUDY SUNSHINE COAST PORTAL NOW LIVE A new regional initiative is set to introduce the 300,000-plus international students who come to study in Australia to the Sunshine Coast and help keep more local students at home for their tertiary education. The council’s Study Sunshine Coast portal is now live and will promote education to both overseas and domestic students. MEGAWATT Sunshine Coast Council has awarded Downer the contract to build a 15-megawatt solar farm at Valdora. Mayor Jamieson says the council will become the nation’s first local government to build a utility scale, grid-connected solar farm. “The 15-megawatt solar farm, covering 24 hectares of a 49-hectare site will be the biggest solar farm in Queensland — the next largest being the Gatton Solar Farm at 3.3 megawatts and the fifth largest solar farm in the nation.” By 2017 it will offset 100 per cent of the organisation’s electricity consumption across all its facilities and operations.

More than 500 people rallied together for the annual Pretty in Pink Bra Walkathon at Moffat Beach on April 17 to raise support and funds for Maroochydore’s Dickie family. Mother of two, and wife, Renata Dickie lost her battle with cancer earlier this month. Renata, who was originally diagnosed with breast cancer and more recently fought secondary cancer, was to be the recipient of this year’s walk. Event organiser Melinda Bingley said the $20,000 that was raised would be donated to Renata’s husband Steve and children, Daniel, six, and Liam, two.

NEW PORTFOLIOS FOR COUNCILLORS The newly elected Sunshine Coast councillors were last week appointed new portfolios to provide specific responsibilities for the fouryear term. “Individual portfolio councillors will play a key role in engaging with our community, business and industry,’’ he said. Councillor Jason O’Pray will oversee tourism, events and sport; Jenny McKay will assist the mayor on international relations and also head up the community and environment portfolios, while Stephen Robinson will head up economic development and innovation. PLASTIC BOTTLES TO BIKINIS

Mooloolaba marine science graduate Steph Gabriel is helping clean up our oceans one bikini at a time. Words Leigh Robshaw

W

hat led 27-year-old marine science graduate Steph Gabriel to create bikinis made of recycled plastic bottles and discarded fishing nets? It’s a long story. In 2009, Gabriel was working as an events coordinator in Sydney, where she grew up, when she became dissatisfied with the hectic corporate life. So as you do when you’re 20, she quit her job and took off overseas on a grand three-year adventure. She began in the US, working on boats in Fort Lauderdale, then scored a job leading snorkelling tours and handling southern Atlantic stingrays in the Cayman Islands. It was there she realised she wanted to spend her life working in a marine environment – but it had to be in some way related to conservation. “Stingray City is a sandbar where all these boats sail to,” she says. “We would sail out to the sandbank, dive down and lure the stingrays, then let the tourists pat them on their wings. People came to Grand Cayman from all over the world to interact like that with those stingrays, but they had gotten used to being fed for 15 years and were depending on humans too much for food. They were being overfed and were getting sick, fat and lethargic.” Gabriel grew uneasy about the impact humans were having on the stingrays, the coral reef and other marine life, and left the job after a year. Not ready to return home, she ventured off to Latin America. Starting in Mexico, she surfed her way down the west coast of Central America and arrived in Colombia, where she bought a Kombi van and kept exploring. After seven months in Latin America, Gabriel returned to Australia via South Africa and found herself back in Sydney, feeling lost. After two days, she left. “My mum had moved up here three years earlier and I hadn’t seen her in a

long time. I came up here to surprise her and hadn’t planned on staying, but I fell in love with the Coast. I checked out USC (University of the Sunshine Coast) and fell in love with the lifestyle. It was a whole lot more relaxed than Sydney, that’s for sure.” Gabriel began a Bachelor of Environmental Science at USC and continued to indulge her love of the ocean, working on a whale watching boat, where her interest in ocean conservation grew even more. In between full-time study and work, she found the time to launch her own swimwear label, OceanZen. “I started OceanZen smack-bang in the middle of my degree,” she says. “I knew I wanted to do something unique with the environment. Ocean conservation is my absolute passion.” Gabriel spends most of her time in the water, so creating a bikini range made from a sustainable fabric that helps clean

up the oceans was a perfect fit. “I found this fabric when I was doing some research on sustainable products,” she says. “They get the plastic bottles and fishing nets shipped to their factory in the US, get it cleaned, finely chop it, then it goes through a machine that makes it into a thread. That yarn is 100 per cent regenerated and completely sustainable. That gets shipped to Italy where they turn it into a high quality Italian Lycra for swimwear or yoga wear.” Gabriel designs her bikinis with eye-catching cuts and colours and says her swimwear is a little “cheekier” than the average swimwear on the market. “I love to surf and also spend a lot of time snorkelling and diving, so I know how hard it is to find a bikini that stays on in the water,” she said. “By designing beautiful swimwear that appeals to ocean-loving women, I can also use the brand as a platform to raise awareness about the importance of

marine conservation and to encourage customers to support campaigns and projects. It’s an opportunity to combine the two things I love.” Gabriel designed the most recent range during a six-month exchange to the Galapagos Islands in 2014, where she gained hands-on experience researching animal life as part of USC’s Study Overseas Program. “I lived the true island life in the Galapagos Islands, completely detached from the real world and society. I was waking up and going swimming with sea lions, diving with sharks, laying on beaches with sea lions sleeping right next to me, learning and speaking the Spanish language on an island where no English is spoken and finishing the day with an island run under the sky of millions of stars. This was such a raw and amazing experience, but also isolating in a way. “On an island with such unique creatures there were also dangerous ones. I was bitten on the face by a venomous insect and after scuba diving my face had swollen up like a balloon. I was taken to the island ‘hospital’ and had to express what had happened to me in my Spanglish, while also trying to understand what the doctor was saying to me. Island life can be beautiful, but also challenging.” With OceanZen’s following growing rapidly, Gabriel uses her social media platforms to support marine conservation while promoting her label. “Ocean conservation is my heart and soul, as well as OceanZen. I have a lot of knowledge I want to share with people – it’s all about raising awareness.” Having completed her degree in November, Gabriel is now focused on OceanZen and is shipping her bikinis to Canada, the UK, US, Philippines, Singapore, France and Germany. Gabriel will debut OceanZen at the Sunshine Coast Fashion Festival 2016.

HOW CLEAN IS TOO CLEAN?

Nugget reckons the Parramatta Eels have suffered enough and there are kinder ways to punish them than taking 10 points off.

F

irst we were told we did not know how to peel a banana the right way (most of us do it from the wrong end) and then that video about peeling a post-it note the correct way went viral. It made many of us feel like complete idiots. Life hacks are the new black. Well I have a new one for you today. Apparently most people in the developed world are numbskulls when it comes to washing our hands. We are doing it the wrong way, people. Scientists in Scotland have endorsed the hand-washing technique recommended by the World Health Organisation as being the most effective way to blast bacteria and prevent the odd zombie apocalypse. So we are technically meant to spend a whopping 43 seconds washing our hands with soap. I wash mine in about five seconds flat and tap them on my jeans to dry as I walk out of the loo. There is even an instructional video that came out from these funny Scottish academics showing us the right way to wash our hands and really get in those spaces between each finger. There seemed an awful lot of thumb rubbing and individual digit rubbing. Washing hands is a big deal in our house, as we have three kids under five years of age. Two of them are boys so I basically deserve a medal for spending most of my time in a toilet cleaning up

wee and telling little boys to pee IN the toilet and not on the floor. I repeat to them to pee IN the toilet and not on the light switch on the wall. And then for good measure, because I am pretty sure no one ever listens to me, I tell them again to pee IN the toilet not on the hand towel in the far corner. And nine times out of 10, they pee nowhere near the actual loo. As for peeing IN the loo? Well, that is a funny one isn’t it. If my husband ever dares to come home after a few drinks and not pee IN the toilet, then my head starts spinning around on my shoulders and I sprout red horns in my head as I throw my pitchfork at him. I should just give in and use the toilet for more practical uses, like stacking towels, because it really does not function as a lavatory – which brings me back to my main point. I already spend an abnormal amount of time telling all the kids to wash their hands and then showing them again and again how to do it. So if I spent 43 seconds doing this every day and I do it five times a day with each kid and myself, I estimate I would spend at least 15 minutes a day washing hands at the sink. That seems a little excessive to me. Well, the study is from a bunch of Scots. They clearly have a great sense of humour because they also think it is a great idea to eat haggis.

Alleged salary cap breaches may see the club docked as many as 10 competition points and see the Western Sydney region spiral into a malaise not seen since the increased tax on Winnie Blues. I think this possible punishment is too harsh and the NRL needs to consider other options.

Raiders, but I think a move to one of the most boring cities in the southern hemisphere might just help the club focus on more important things like staying under the salary cap and winning their first premiership since the Torana was considered a new car.

ADD POINTS Give Parra 10 points rather than take them. This mega boost will guarantee the Eels will qualify for the grand final and then they can do what they do best, lose grand finals. The pain of pooping the bed in another decider will serve as a more than sufficient punishment.

This club has suffered enough already, have you ever been to Parramatta? Most of Mad Max: Thunderdome was filmed on Parramatta Road with virtually no scenery changes. The fact this club is based where it is, is punishment enough.

Want to make Parramatta really serve hard time for their alleged crimes? Make Brian Smith the coach again. The former school teacher’s name alone sends shudders down the spine of Eels players and fans.

Making them stay in Parramatta could be fun, but a geography based punishment could also have its merits for the rest of us. Yes, Parramatta is a city where ugg boots are considered a ‘dress shoe’ but an NRL mandated relocation could also teach them some sorely needed lessons. Canberra could be a nice option. Yes I know, they have a team already in the

ne of the crucial tasks for investors is to assess both the performance of their share portfolio, and to what value they are getting from the manager of their funds. On the surface this would seem to be a rather simple task; if the benchmark index produced a 10 per cent return, anything higher than that (after fees) is good, while anything lower is bad. Like most things in life it isn’t so simple. Let’s take a hypothetical example of three portfolios. Investor A produces a 19 per cent return, while Investors B and C both produce a 10 per cent return. When looking at the returns in isolation, Investor A has smashed it with nearly double the performance of B and

C - both of whom merely met expectations. Clearly investor A is the best investor, right? We need more information to form an opinion. Let’s have a look at how each of these three portfolios were invested and make a judgement about which portfolio has had the best returns on a risk adjusted basis. In finance there are a number of ratios that are used to calculate the risk adjusted returns from a portfolio. For the purpose of this short article I won’t be using any ratio analysis because common sense is all that we really need for this example. Investor A invested in an ASX20 Index fund and has geared that at 400 per cent of the original asset, the loan carrying an interest rate of 7 per cent. Hence they have increased their return by 90 per cent, though subsequently the risk associated with the venture has increased by 400 per cent, thus there is no skill associated with this outperformance - just the willingness to take on excessive risk.

Furthermore, Investor B has invested in a portfolio that reflects the ASX20, performing in line with the index because it is designed to do just that. Again, there is no skill associated with the management of this portfolio, as the investment selection is based solely on the market capitalisation of the top 20 shares in the index. In fact, the portfolio is taking on a significant amount of concentration risk, as 63 per cent of the portfolio is invested in financials because of their domination

of the Australian stock exchange. Investor C has invested in a diversified portfolio of 20 shares, each with a 20 per cent limit on investment in any single sector. As a consequence, the concentration risk associated with both of the previous portfolios has been largely eliminated, but has still managed to produce the same return as Investor B. Ultimately, a competent portfolio manager should seek to provide value to an investor by either generating higher returns without increasing the risk disproportionately, or producing equivalent level of returns at a lower level of risk. JAG AND KIA WIN FIVE-STAR SAFETY RATING

A

NCAP has issued a five-star safety rating to the all-new Jaguar XF due to a suite of advanced safety features being fitted as standard equipment. Chief executive officer of ANCAP – Australia’s leading car assessment program – James Goodwin says the XF has a high standard of safety features that buyers expect. The XF has already received the maximum five-star rating from Euro NCAP against 2015’s highly demanding test protocols and was amongst the most highly rated models in the segment. Jaguar vehicle line director Kevin Stride is not surprised by the result. “The XF was engineered without compromise: we placed just as much focus on safety as we did on dynamics, performance, refinement and efficiency, and our stringent in-house standards far exceed the requirements of legislative and consumer tests,’’ he says. “Everything from the aluminium alloys we developed for the body structures to the state-of-the-art stereo camera at the heart of the autonomous emergency braking system has been

painstakingly optimised to deliver world-class levels of safety.” The new XF is one of the first vehicles in the segment to feature a stereo camera. This state-of-the-art sensor provides a 3D view of the road ahead and is at the heart of the autonomous emergency braking (AEB) system.

tockland is preparing for the first major land release at Aura, its new $5 billion ‘City of Colour’ on the Sunshine Coast on Saturday, April 30 with buyer demand strong and continuing to increase. The public land release will coincide with the opening celebrations of the new look Aura Vision Centre at Bells Reach, with a host of free activities and giveaways from 10am. Sunshine Coast Stockland regional manager Ben Simpson says with this weekend’s land release drawing closer, buyers are rushing to register their interest in pre-release lots. “The level of interest and excitement we’re seeing from buyers surrounding our first land releases at Aura has been incredible,” Simpson says. “We are creating a unique community that will be an Australian first in terms of scale, educational, vocational and lifestyle inclusions, and one that will set new benchmarks for liveability and sustainability.

Other features of Aura include a 200-kilometre network of cycleways,

ESTUARY: You can find whiting and flathead on the drift along Twin Waters and down to the bar. You can get jew and mangrove jack on live baits at the motorway bridge pylons. There are mud and sand crabs in the deeper channels overnight. Trevally can be caught at the mouth of Petrie Creek. There are banana prawns at Bli Bli being caught in a cast net. SURF: You can find chopper tailor right on dusk at Pincushion with flathead and whiting in the gutters along the North Shore. There are bream at night off Mooloolaba rock walls using mullet fillet strips, mullet gut and prawns. OFFSHORE: A busy time offshore when conditions allow, with boats galore working from The Blinker to Murphy’s with good catches of mixed reef fish at dawn and dusk using squid and mullet fillet. The Barwon Banks are returning the better quality fish such as snapper and pearl perch, using plastics. FRESHWATER: Borumba Dam is returning quality bass, silver perch and saratoga on deep diving lures and floated live shrimp. Golden perch of up to four kilos are being caught this week at Somerset Dam on deep diving lures and earthworms.

FULL OF HOT AIR Richard O’Leary says a ban on underground coal gasification is long overdue.

I

n this column I try not to give politicians too many pats on the back – they seem to do that pretty well themselves. But I’m willing to make an exception on this occasion. Although, it’s not really a hearty ‘well done, good work’ sort of congratulations. It’s more of an ‘about bloody time – I’m glad you’ve finally seen reason’. I’m talking about the state mining minister Dr Anthony Lynham’s decision to ban underground coal gasification in Queensland, with legislation to be drafted by the end of the year. Now it must be said, the Labor Party created the mess, so it’s only fair it cleans it up. In the early 2000s, the Beattie Labor Government gave the green light to two pilot underground coal gasification projects. After leaks of the cancer-causing chemical benzene into groundwater at

one mine, and serious environment harm being alleged at another, Minister Lynham summed it up pretty well: “It has been a failure.” “The potential risk to Queensland’s environment and our valuable agricultural industries outweigh any potential economic benefits.” As you would expect, the Queensland Resources Council expressed disappointment at the decision, claiming there was no consultation. Fair enough – it does represent miners, after all. What does have me puzzled though, are the comments by the state opposition’s environment spokesperson Steve Bennett, who questioned the ban. “The LNP took these issues seriously, but we also take Queensland’s investment reputation seriously.” “So we call on the Palaszczuk Labor Government to release the evidence it

has relied on to make the decision.” I’ll start with the most obvious observation: you are the opposition spokesman on the environment, you are not the alternate mines minister. Secondly, the leaking of a cancercausing chemical into groundwater under farms and the huge fines dished out to the companies running the underground coal gasification projects would suggest there’s some reasonable evidence for such a decision. Lastly, you had Labor on the ropes with this issue. They made a significant mistake, and now they’ve had to make a major backflip. But rather than have a go at them for causing the problem, you castigate them for fixing it. The mining companies may appreciate the support. I doubt farmers in the LNP heartland will feel the same way. roleary@myweeklypreview.com.au.
