By Charlotte Beard On Aug. 19, Normandy High School (NHS) students not only returned to a new school year they returned to a new space that was created specifically with them in mind.

The high school opened for students with two new food service lines – Viking Grill.

Operation Food Search (OFS) teamed up with Normandy Schools Collaborative (NSC) to implement the changes at the high school that have taken the utilization rate for students partaking in lunch from between 45 percent and 50 percent to 86/90 percent in less than a month depending on school attendance on a given day.

A portion of OFS’ $180,000 grant from the Community Impact Network, was used to implement the changes. In addition, the OFS-NSC Food Service team collaboration helped the high school maximize the National School Lunch reimbursement model.

“There are two lines in their cafeteria and up until this point (students) had been offered the same thing on both lines,” stated Brian Wieher, Director of Child & Family Nutrition for OFS. “Instead of making it seem like it was just the same old lunch line, we wanted to rename it something different.

I wanted to make it restaurant flare. I wanted these kids to feel like this is the best restaurant in town. And you can’t have a restaurant without a name. So, we named it. We have menu boards inside there now. The cafeteria workers – when they serve – are wearing black chef coats and hats, and the ‘Viking Grill’ is embroidered on their coats so they feel a sense of empowerment when their serving this food.”

Wieher went on to clarify that everything about the Viking Grill is brand-new. On the

first day of school, the Chef ’s Creation menu offered penne pasta with a choice of sauce (red or white) and a choice of protein (chicken or meatballs), along with a vegetable medley and fruit. Wieher shared that at least three fruit choices will be offered each day; two items will be fresh and one previously canned fruit. As previously requested by students to have more restaurant-type options, items such as spicy chicken sliders will be offered.

Students will get to build their own slider.

Street Tacos will be another theme under the Chef ’s Creation with the choice of chicken or crispy fish, and rice or black beans. That option would be served with a crunchy vinegar slaw.

“We are trying to do as much scratch cooking as allowable with the time, space and equipment,” stated Wieher.

The Grab & Go service line offers a daily repetitive menu without the “built-to-order” option of the Chef ’s Creation menu. Its options include hamburgers, chicken sandwiches, pizza, deli sandwiches, salads, fresh fruit and vegetables arranged in the same order daily.

“It really helps us with speed,” stated Wieher, “something that is often overlooked in school food (service). If the line is too long often as adults we just bail and go somewhere See ‘LUNCH’ page 2

‘LUNCH’ from cover else. But when you’re in the school cafeteria you’ve only got one cafeteria. So, by doing these two different options we’re able to split that line. Last year, one of the indicators in our assessment was that it was taking greater that 20 minutes to get all the students through the lunch lines.

When there is a 25 or 30-minute lunch that’s a long time. If you’re last in line you just might not eat or say, ‘Forget it, I’ll drink water.’

But now (students) are getting through the lunch lines in 12 minutes or less. It’s helped us feed twice as many kids.”

Wieher shared that OFS’ consulting and project management

role for the Viking Grill was initiated after they had completed the launch of Breakfast in the Classroom (https://breakfastintheclassroom.org) for NSC’s elementary schools in 2018.

Principal Pablo Flinn welcomed implementation of the program for the high school students but also wanted changes for its lunchroom model.

“Breakfast in the Classroom wasn’t a concern for me at the moment,” stated Flinn, “because if you’re serving the same food in a different space, nobody is going to eat. High school kids are a bit more particular about what they’re eating. Not that elementary kids do not have voice, but high school students are going to share their concerns by virtue of not eating and not partaking. I needed the quality of the food in the lunchroom to change.”

Flinn, who is now in his third year as principal, shared that during his first year he met with students to ask what changes they wanted to see at the school.

He stated that food quality and its presentation, along with the “ambiance in the space” where they ate was among their top concerns. He states that staff and administration knew of the concerns, but they didn’t know how to address them.

Wieher stated, “We monitored the lunchroom and saw that there were not a lot of kids eating. We heard anecdotally from the principal, ‘Could things be better? Is this the best that we can do? Is this what’s offered? Is this (current way) because of the Healthy Hunger-Free Kids Act (of 2010)? Is this the same food that’s served at other high schools?’ We just didn’t know…you’re in your own environment.”

It was determined that feedback from the students themselves was essential.

“So, we conducted a student survey and asked everyone to fill it out,” Weiher said. “We got almost 200 responses out of about 550 in attendance.

We asked questions like, ‘How often do you eat in the cafeteria? What’s your favorite item?

What’s your perceptions of the look, the taste, the temperature, the amount, the variety of food items?’ We asked (about) their

perceptions of customer service – of the food service staff. We frankly asked, ‘Are people nice to you?’ That’s how we were able to tie it back to a direct indicator of the feel of the cafeteria in the high school. That helped us form what we wanted to do next.”

Following the survey, OFS was asked by NSC to do a comprehensive assessment of the food service at the high school. OFS completed an assessment which included but was not limited to inventory levels, service, food and equipment. Subsequently, a recommendation was made by OFS which resulted in Viking Grill. Wieher shared that the support they received from Normandy’s principal, food service coordinator, assistant superintendent (in charge of food service), and NSC’s school board gave them the freedom needed to produce what its high school students now enjoy at lunch time.

Flinn shared, “(OFS was) very intentional about building a partnership because consulting only works with people who want to be consulted.”

Flinn explained that OFS effectively navigated working with all stakeholders by collaborating in a supportive way to enhance the cafeteria’s space and lunch model.

“Often consultants are services that (provide a document to follow),” stated Flinn. “(However, OFS) said we’re suggesting but we’ll show you how this can be implemented. And that becomes a partnership different from just consulting.”

The feedback from students have been overwhelming for both the high school administration and OFS. Wieher stated, “So many students have walked up to myself or my dieticians and just said, ‘Thank you, because you all listened to us. I participated in that survey and you actually listened, and something changed.’ So, they are feeling quite the sense of empowerment because students sometimes get to say their peace, but they’re not often heard. The very first day of school one student was Facebook Living in the lunch line. She was saying – (quote), ‘Our food is better than your food.’ On the second or third day of school we had a

student kind of crying in line, and one of my dietician’s asked if she way okay. (The student) said she’s just so proud of her school for the food, that it made her emotional. So, we’re also seeing a visible sense of community in the students.”

Fiinn shared that in the past years many students would get a tray of food but throw everything away except the fruit and the milk. That is no longer happening and he states that it is a big deal now that students are eating everything they get at the Viking Grill. In addition to both Flinn and Wieher addressing the increase in the utilization rate, Flinn mentioned the impact on staff members.

“Staff rarely eat,” stated Flinn. “(Since the change) we’ve had over half the staff eating almost daily in the cafeteria – at least getting food. Staff could not be more ecstatic as well.”

In accordance with the opening of Viking Grill, all NHS staff can eat free through the month of September. The goal is that staff will experience what the

students are enjoying, as well as model better eating habits.

“I will be eating in that cafeteria every day. Late last week I had a meeting to be at; I was headed back (to the school) and I knew I had missed lunch. I called ahead (for) a cheeseburger. Cheeseburgers (weren’t) out that day but I was able to get a chef salad that would rival…I would have paid for that anywhere. As of Sept.30, when Pablo needs to pay for lunch, rest assured I’ll be paying for lunch.

I’m ecstatic.”

According to Flinn, other district staff have visited the school to eat at the Viking Grill to experience the new menu and atmosphere.

OFS has plans for a follow-up review of the grill’s impact with NSC’s board members after the new lunchroom has completed at least a month of service. In the meantime, OFS will continue to gather data from NHS’ food service department and the attendance office to assess overall usage as well as provide support for any food service issues.

The Fabulous Fox hosts musical powerhouse Tedeschi Trucks Band What do you get when you take two successful musical artists and unite them in every way? Take Susan Tedeschi, known for her dynamic soulful vocal sound and folksy blues roots and combine her with Derek Trucks and his large entourage touring jam band and you get a musical powerhouse. As I heard in an interview, they commented that deciding on their marriage was easy, deciding to blend their music into one band took a bit longer. Derek was a key part of the extended life of the Allman Brothers Band and helped continue its legacy through his unique style of

slide guitar.

Though all musicians and artists testify about the artists that have influence them, few put all these rich influences on display as fully as the Tedeschi Trucks Band. This band delivers a perfect blend and a potent dose of roots, blues, jam and rock while bringing their own fresh stellar sound to favorites, covers and originals. In this show they covered The Beatles, Bob Dylan, Leon Russell and even Sly and The Family Stone. Vocally, Susan is able to make any song her own.

This will be a two- day event to be held on Saturday, Sept. 14 and 15 at the Atonement Lutheran Church located at 1285 N. New Florissant Rd. On Saturday, Sept. 14 at noon, the American Legion Post 444 will have their honor guard in attendance and will be doing a 21 gun salute. A proclamation will be presented to the family at the event to honor PFC Chris White and to thank the White family for their dedication and commitment with Camp Hope and for the positive impact they have made on the lives of the veterans that have visited Camp Hope and for all that they have done for the veteran community.

In conjunction with Camp Hope Day in Florissant on Sept. 14, proceeds from the Atonement Men’s Club BBQ on Sept. 14 and 15 will be donated to Camp Hope.

On June 20, 2006, U.S. Marine PFC Chris White, a machine gunner and four other Marines were riding in the last Humvee in a convoy traveling through Al-Anbar Province in Irag when an IED exploded under their vehicle. PFC Chris White and three other Marines were killed. His parents Mike and Galia White wanted to keep his spirit alive, they founded the nonprofit organization called Camp Hope. The mission of Camp Hope is to honor the fallen by helping the wounded. Camp Hope offers all expenses paid adventures and comradery for the service men and women that gave selflessly for our freedoms.

Camp Hope is situated in rural Farmington, Missouri, approximately 80 miles south of St. Louis. Camp Hope is located in the heartland of America. With cool streams, winding creeks, granite boulders, gravel paths, tall trees and an abundance of wildlife, there is plenty of open space.

The “lazy days of summer” weren’t so lazy for the 15 science teachers enrolled in St. Louis Community College’s Bio-Bench Workshop.

During the experience – made possible through a $25,000 grant from the Bayer Fund – teachers become students who spend the week experimenting with advanced science techniques and even doing homework.

Center for Plant and Life Sciences Education Outreach Specialist Lee Douangkeomany, who is leading this year’s workshop, said the teachers make good students.

“We’re through the first two days and educators are loving it,” Douangkeomany said. “I give homework every day and still receive positive feedback.”

The theme for this year’s program is “Exploring Genes to Save Our World.” Workshop participants explored different genetic techniques used to increase food production, prevent and treat disease, perform environmental remediation and more.

The teachers experience hands-on lessons in modern agriculture by CPLS staff and guest presenters including CoverCress Inc., Donald Danforth Plant Science Center, KWS Gateway Research Center, the Saint Louis Science Center and STEMSTL. The Bio-Bench Workshop advances learning about biotechnology in two ways. First, eighththrough 12th-grade science teachers or specialists participate in a weeklong, lab-based professional development experience. The workshop also includes tours of Bayer Crop Science Division research facility, KWS Gateway Research Center and NewLeaf Symbiotics.

The teachers then share their experiences with their students in the fall. In addition to instruction, teachers receive the option of three graduate workshop credits through Lindenwood University, a $500 stipend if they attend the entire week and provide an approved lesson plan, and $500 in lab supplies and equipment.

Second, the grant enables 400 students to participate in a daylong, lab-based experience that raises their awareness about bio-technology in the region and opportunities for employment.

Douangkeomany will also visit area schools to present lessons.

The teacher portion of the workshop began July 29 and ended Aug. 2. The student portion of the workshop will happen during the coming school year. Both sections of the workshop are held in “state of the industry laboratories” at the Center for Plant and Life Sciences’ home at the Bio-Research, Development and Growth Park, which is located on the campus of the Donald Danforth Plant Science Center, 1005 N. Warson Road, first floor, in St. Louis.

Dr. Richard Norris, CPLS director, is grateful for the Bayer Funds’ generosity.

“I appreciate the Bayer Fund’s financial support in making the Bio-Bench Teacher Workshop available to area teachers,” Norris said.

“This started in 2008 with the Center’s initial Bio-Bench grant and has only missed one summer since. It is a great opportunity for area science teachers to learn new techniques that they can take back to their students, along with building a relationship with other teachers and the STLCC Center for Plant and Life Sciences.”

Northwest Views: The status of Leftovers, etc.

By Sandra J. O’Dell Many of our readers know who and what Leftovers, etc. is. Many of our readers have been customers of this nonprofit for the entire 28 years the organization has been in existence; 26 years in St. Charles and two years in St. Louis County. But not many people know what has happened to this awesome organization, and if we, as a community, can help them out.

For those who know and use these services, the organization is seeking approximately 20-22,000 square feet of rental space or a free-standing building, preferably centrally located in St. Louis County. Their goal is a lease, with an option to purchase with 17-18,000 square feet of retail/office space and 3-4,000 square feet of warehouse space.

For those of you who do not know what Leftovers, etc. is and what it does, let us enlighten you. Leftovers, etc. is a community-based, and community supported, arts and science Resource and Learning Center. When they moved into the St. Louis County market in November 2016, they leased a space in Maryland Heights, just south of Westport Plaza. In September 2018, they lost that space and have been shut down ever since while they seek a new location to continue their support of the thousands of children and adults who benefit from their services. This organization provides such a wonderful community service and the developmentally-disabled young men and women with whom they interact daily have become their heart and love.

The organization is still looking for space to continue their operations. They are looking for expanded space in order to accommodate two additional veteran-oriented nonprofit organizations, Vision for Vets and The Kaufman Fund, an organization that provides dental, legal and mental

health services to the veteran community.

They have two buildings identified that would suit their needs: 1) The Lakeside Administration Building which is owned by St. Louis County, or 2) 5657 Missouri Bottom Road which has been up for sale for quite some time and a very reasonable price considering the square footage of the building.

The organization has been working with St. Louis County on the Lakeside building, but it needs support from the more than 100,000 followers and clients of the organization. Progress is slow and they are asking for your help.

If you want this organization back up and running, then please contact the St. Louis County Executive and the County Council and voice your support for this organization and the need for their services. You can find their phone numbers and e-mail information on the St. Louis County website.

EVENTS Sept. 12: Breakfast with the mayor

The City of Florissant Mayor’s Town Hall Meeting for Senior Citizens will be held at 9 a.m. at the James J. Eagan Center. A complimentary breakfast will be served provided by DeSmet Retirement Community. Florissant Mayor Tim Lowery will address the senior citizens of Florissant and all city of Florissant Department Heads will be present to address concerns or answer questions. Community organizations will be present to provide senior citizens with valuable information. Sept. 14: Suicide prevention softball tournament

The city of Florissant Parks and Recreation Department will be hosting the 11th annual Suicide Prevention Softball Tournament at St. Ferdinand Park. The softball tournament will start at 9 a.m. and there will be men’s and co-ed divisions for ages 18 and up to complete in. The cost is $125 per team. Registration has already begun but there is still time to get your team registered. 100 percent of the net proceeds go to local suicide prevention organizations funding local outreach programs. UMSL helps to raise money for cancer research by swimming The University of Missouri-St. Louis men’s and women’s swimming teams participated in the national fundraiser Swim Across America Open.

The event was held last Saturday, Aug. 24, at Lake Alpine at Innsbrook Resort in Wright City.

The Tritons were one of many St. Louis-area schools participating in the event, which raises money for the Siteman Cancer Center. UMSL raised $6,194, contributing to the more than $180,000 raided by the Swim Across America St. Louis chapter.

Individually top finishers for UMSL in the 2.4 miles included Sergio Santisteban and Rebecca Bechtel in the 1.2 miles at the top of the group included Jon Osa and Seela Wang.

Cherry Coffee Cake Add some sweetness to your breakfast routine with this delicious and easy-to-make Cherry Coffee Cake.

Directions: Heat oven to 375 F. Spray 9-inch round cake pan with nonstick cooking spray.

Separate cinnamon roll dough into eight rolls; cut each roll into quarters.

Place dough rounded-side down in pan.

Spoon pie filling over rolls. Sprinkle almond slivers or pecans over cherry filling, if desired.

Bake 25-35 minutes, or until golden brown.

Ingredients Nonstick cooking spray 1 can (12.4 ounces) refrigerated cinnamon rolls with icing

Invert onto plate or cutting board. Invert again onto serving plate.

1 1/2 cups (21 ounce can) cherry pie filling 1/2 cup slivered almonds or pecans (optional)

Remove lid from icing. Microwave 3-10 seconds. Stir icing and drizzle over warm coffee cake.

Serve warm.

These ‘Good Boys’ are breaking bad

Born and raised in South St. Louis, Steve Bryan is now based in Anaheim, California, and has been allowed access to movie and television sets to see actors and directors at work. Though his writing has taken him far from St. Louis, Steve is, at heart, still the same wide-eyed kid who spent countless hours watching classic movies at neighborhood theaters.

ver 30 years ago, Rob Reiner directed “Stand by Me,” a coming-of-age film that was based on Stephen King’s novella “The Body.” Four boys living in a small Oregon town search for the body of another boy. Their journey is both physical and emotional as each young man acknowledges and faces his individual fears. The boys ultimately return home, but their lives and relationships will never be the same.

“Stand by Me” has since become a classic bit of cinema. “Good Boys,” on the other hand, is a sloppy, ill-conceived mess. In this coming-of-age film, three boys in their “tween” years make serious mistakes and set out to correct them. Unlike the quartet in “Stand by Me,” however, they cause more harm than good. In this instance, the boys, as well as the audience, would have been better off staying at home.

Jacob Tremblay (“Room”) stars as Max, a pre-teen who has a serious crush on a classmate. Max gets an invitation to a kissing party, but he’s nervous because he doesn’t know how to kiss a girl. With the encouragement of his buddies Lucas (Keith L. Williams) and Thor (Brady Noon), he uses his father’s company drone to hopefully observe two neighbors kissing. The boys end up losing the expensive device and only have a few hours to replace it.

“Good Boys” does examine the challenges of middle school, peer pressure and the onset of puberty fairly well. Unfortunately, all

these life lessons and insights are buried in a flood of dirty jokes, extreme violence and poor storytelling. On their journey, the boys commit such crimes as theft, underage drinking, physical assault, criminal trespass and invasion of privacy. Their parents and the other adults in their lives are highly ineffective as role models and disciplinarians.

The dirty humor here also masks the real meaning of the film: be confident and be yourPhoto courtesy Universal Pictures self. Thor has a one-of-a-kind singing voice and wants to be in the school musical, but bullying changes his mind. After learning of his parents plans to divorce, Lucas still helps Max despite the pain he’s feeling. Thor and Lucas’ struggles are the heart-and-soul of “Good Boys,” but the endless jokes about adult novelty toys overshadow them.

Director Gene Stupnitsky (“The Office”) seems confused about what story he wants to tell. Max, Lucas and Thor are characters that audiences can identify with, but having them commit crimes doesn’t make any sense. Facing almost no consequences for their crimes, the boys don’t learn any valuable lessons. Maybe it’s a good thing this movie is rated R so that fewer children will see it.

“Good Boys,” rated R for strong crude sexual content, drug and alcohol material, and language throughout (all involving tweens), is current playing in theaters.

‘Yeggs’ is a comic series about Robert and Bill, two rabbits who have opened their own egg franchise in the Midwest (St. Louis area). We follow their day to day lives, watching as they go about the hectic task of preparing for their one big day every year. Moore On Life The smartphone is an amazing invention, but sometimes they can be too amazing.

Of course, now we can gather information instantaneously; information which used to take thumbing through a bookcase of encyclopedias or driving to the local library and researching microfiche for hours.

Now we just pull up Google and bada bing – info at our fingertips. For me, punching up Google is too time consuming, I give a shout out to Siri to do the looking for me. I have more important things to do like walking my rabbit. He needs to get out of his cage for a good hop.

We can also order groceries from our phone and get them delivered to our doorstep. No more fighting over prime parking spots. We can even find out what kind of furry marauder has been visiting our backyard each night. It has left a big gross doodie calling card under our pine tree.

Good thing I had a Scat Scanner app which allowed me to photo the poopy present and have it researched with a flick of my finger. Now I know it’s a pesky raccoon.

The smartphone is so handy, but what good is it if I can never find it. We’re always getting separated from each other.

“Call me. I’m lost!” I cry to my husband.

“How can your phone be lost, you’re in the passenger seat of the car? It’s a two foot by two foot space. How many places could it be?”

“Don’t get sassy with me, Mister. You lose

your reading glasses when they’re parked right on top of your head; usually right up there next to your sun glasses. Now call me!”

He calls me and I find my phone in the one of twenty pockets in my purse that I forgot to check.

On any given day, I’ll be in the house turning the rooms over searching for my elusive phone.

“Call me! I’m lost!”

He dials.

My back pocket starts to ring. Of course; the one place I forgot to check.

Just in time too. I’ve got to hitch my bunny into his collar and leash and take him for a hop. Okay inventors. You would think there would be an app for that.

Ridiculous you say? Umm, did I mention there’s a crap app?
