VALLEY FAIR MALL CONTINUES TO EVOLVE

A

ncient Greek philosopher Heraclitus once said there is nothing permanent except change.

Such is the case with Valley Fair Mall in West Valley City.

About a decade ago, the mall underwent a $50 million makeover that updated the look and layout of the enclosed mall and added an outdoor component that includes stores, shops, restaurants, a splash pad, and an open space for events or to just sit and relax. In all, it made for one-million square feet of retail space.

Since then, a changing retail landscape and consumer tastes have brought some new storefronts to and the departure of others from the retail center. “Evolution is natural. People listen to customers and what they want,” said Casey Bulkley, general manager of Valley Fair for retail property management company Vestar. “We’re trying to really listen to the community and trying to respond to what they need.” Vestar owns and/or manages 30 million square feet of retail space in the western U.S., including the recently acquired Gateway in downtown Salt Lake City.

One of the more notable stores to come to Valley Fair Mall in recent months is Hobby Lobby. The fast-growing arts and crafts chain with more than 900 stores in the U.S. opened in 2019 in the space formerly occupied by anchor tenant Macy’s. “We’re really excited to get them,” Bulkley said.

It is not part of Valley Fair, but a project that could have a big impact on its businesses is a planned multi-family housing development on land south of the mall and west of Costco.

Bulkley says its future residents along with those currently in the Fairbourne Station apartments to the west and in surrounding neighborhoods could make Valley Fair attractive for a grocery store similar to Walmart Neighborhood Market or Trader Joe’s. He cited those well-known names only as examples of the types of grocers that might be a good fit.

On the dining front, Bulkley says a deal has been signed for Red Lobster to open a restaurant at the north end of Valley Fair. A couple of new-to-the-area hamburger outlets will fill empty spots in the mall’s food court.

Family-oriented All Star Bowling and Entertainment and its adult-targeted Pins & Ales Restaurant and Brew Pub next door are other businesses that have come to Valley Fair recently. Bulkley knows them well.

He oversaw operations at All Star Bowling’s five area locations before joining Vestar in January to manage Valley Fair.

Pulling out of Valley Fair in the near future is Bed Bath & Beyond. It is one of 40 stores the company plans to shutter across the country this year. Bulkley says “a number of interested parties” are eyeing the space to be vacated by the home goods retailer.

Elsewhere at the mall, Bulkley says two nationally known brands that he can’t disclose right now are close to signing leases and Bank of America is scheduled to open a branch.

Valley Fair has about 150 businesses today for a fairly healthy 92% occupancy rate.

the International Council of Shopping Centers.

“As committed as we are to everyone that is currently on this property, we’re not terrified if somebody decides to move because we have a line of people that are interested in exploring new opportunities (at Valley Fair),” Bulkley said.

But he wants it to be more than just a shopping destination. He would also like it to grow as a community gathering place.

The mall is working with Visit Salt Lake, the county’s convention and visitors bureau, to attract more indoor and outdoor events to the property.

Valley Fair Mall opened in 1970, 10 years before West Valley became a city.

Bulkley mentioned a recent conversation he

had with someone who recalled what a big deal a weekend excursion to the new mall was to hang out for the day. “What we’re seeing is kind of a return to its roots of this spectacular place to come hang out,” he said.

The evolution of Valley Fair is common in the industry these days. “Tenant diversification is a national trend with distinct increases in entertainment, fitness, and food and beverage offerings in shopping centers,” said International Council of Shopping Centers spokeswoman Stephanie Cegielski.

“Incorporating these tenants may require redevelopment and a mix of enclosed and open-air. Each property is unique.”

Cegielski adds that e-commerce can work hand-in-hand with brick-and-mortar shopping centers, not against them. “The

ICSC says its research shows that a physical store boosts a brand’s online traffic by an average of 37%. Conversely, for every $100 spent online, another $131 is spent instore.

Bulkley says that, a continued strong economy, and keeping up with consumer wants and needs should ensure a bright foreseeable future for Valley Fair.

West Valley City’s Harman Theatre kicks off 2020 season with ‘Footloose’

T

he popular 1980’s musical-dance film “Footloose” will step onto the stage as a live play at West Valley City’s Harman Theatre March 12-28.

“We want everyone to come and enjoy it, especially those who used to come to this building when it was Hale Centre Theatre. We want people to come and enjoy this space as a theater again,” said Melanie Budge, development, marketing, and communications manager for West Valley Arts, which is producing the play. That nonprofit organization is part of the city’s Division of Arts and Culture.

“Footloose” is based on a true story first made popular in the 1984 movie of the same name. City kid Ren McCormack moves to a small town where dancing and rock-and-roll were outlawed thanks in part to an influential conservative reverend in town, Shaw Moore, who thought dancing and music only led to bad things among teenagers.

With help from a friend and the minister’s not-so-conservative daughter, Ariel, whom Ren ends up falling for, Ren leads the charge to get the ban removed.

The cast is led by Brock Dalgleish as Ren McCormack, Lauren Von Forrell

as Ariel Moore, Rex Kocherhans as Rev. Shaw Moore, and Dianna Graham as Vi Moore, the reverend’s wife and Ariel’s mother. The actors were largely assembled from auditions advertised through local high schools and colleges.

“We were blown away by the talent at auditions and couldn’t be happier with the cast we have. They are working extremely hard and it will show on opening night,” said director Jeanne McGuire.

An added treat to the production is that the music is played by a live sixpiece band, not prerecorded.

Performances are each Thursday, Friday, and Saturday at 7:30 p.m. with Saturday matinees at 2 p.m.

Tickets are $20 for adults and $15 for youths ages 5 through 12 (kids under 5 are not permitted). They can be purchased at harmantheatre.org or wvcarts. org.

It is the first play this year at the city-owned theater. “Arsenic and Lace” is scheduled for this fall. West Valley Arts is putting together an even busier schedule of performances for 2021.

You were just in a car accident, now what?

1. Have an emergency kit in your car.

While this step comes before the accident occurs, it’s essential to be prepared. Whatever you kit entails, make sure it has a first-aid kit, flashlight, reflective triangles and a small (and simple) camera in case there’s been damage to your phone. We’re typically frustrated or frazzled after an accident and not inclined to rational thinking. Being prepared limits the possibility of forgetfulness.

2. Take a deep breath. Accidents are traumatic experiences. Taking a breath will shift focus from what just happened to what needs to be done next.

3. Get a status check on everyone in the car. Check with each passenger to see if they are OK. Have someone call 911 immediately if someone is injured or unresponsive.

4. Move to a safe location. Most insurance companies recommend relocating the vehicle to the sidewalk or shoulder of the road as soon as possible after the accident. If the damage to the car is minor, this should be relatively easy. But if there are major injuries or questions about the safety of the car, leave it where it is, even if its blocking traffic.

5. Increase your visibility. Turn on your hazard lights and set out your attention items from the emergency kit—flares, orange cones, reflective triangles, etc. One accident should not lead to another.

6. Stay calm. It is very easy to lose your temper in this situation, it’s human nature. Keeping your cool will keep the situation

from getting worse. If it wasn’t your fault, it’s easy to want to let your emotions loose on the other driver. This will cloud your judgment and may lead to something that does not help the situation.

You still need to exchange information.

7. Exchange insurance information. This is imperative. If you are to file a claim on your car, you will need the other driver’s information. Most likely, after an accident you are feeling jumpy or stressed. It means when you try to write down their information your handwriting will look like ancient hieroglyphics and, unless you are a cryptographer, will be unable to read it later. We live in the 21st century, take a photo of their information and take photos of the damage done to both cars.

8. Don’t admit guilt. Every insurance company will tell you to do this. Even if you are at fault and it was you to blame.

This could drive your premium up or even lead to you being sued.

Let the police and insurance companies determine this.

9. Call the police. While some minor accidents don’t require a report to be filed, it’s up to the discretion of the drivers in the accident to call the police. Law enforcement can take statements, get information on injuries and property damage. Be sure to ask for a copy of the accident report. If there is a dispute, the officer will be an important testimony.

10. See a doctor. Depending on the injuries suffered or not, it is easy to skip this. A large financial situation has just happened with the car accident, you don’t want another one by seeing the doctor and jacking up your health costs. It’s important to consider it, or possibly speak with one. Adrenaline can be pumping after the accident and one might not notice the amount of whiplash to your neck. Symptoms can take 24 hours to appear. The warning signs include neck pain, stiffness, loss of motion in the neck, headaches, fatigue, dizziness and pain in the shoulders or upper back. It can be better to be safe than sorry.

Rapper Courtney Kelly breaks down stigma of mental health at Black Excellence Night

n Jan. 27, Granite School District and the Department of Educational Equity hosted the third annual Black Excellence Night at Hunter High. The event’s theme was “Still I Rise,” based on the famous poem by Maya Angelou.

Michelle Love-Day, the associate director of the DEE, welcomed everyone to the event and explained the significance of this year’s theme.

“We are celebrating our heritage, and tonight, we are recognizing it with the words of Maya Angelou,” Love-Day said. “As you know, she’s a poet that taught us to face adversity and rise above it, despite the lies and struggles we may encounter.”

Martin Bates, Granite School District superintendent, was then introduced and spoke on what the event means to the district.

“For our youth and all of us, it’s important to find our voices, to be who we are,” Bates said. “To the degree that education helps, let us do all we can to help one another to get the education we need; that we can find our own voices, be who we are, and inspire one another and strengthen one another and hold onto one another.”

The Pledge of Allegiance was recited, and then Isabel Cossa took the stage to perform the Black National Anthem. Cossa is a senior at Cyprus high, a leader in the National Honors Society, and a student representative on the Parent Teacher Student Association (PTSA) board.

“The anthem is something that always brings back memories for me,” Love-Day said. “Whenever we get together for events, that is the song we sing together.”

After the anthem, Love-Day then introduced the students selected to perform their submissions for the “Still I Rise” contest.

Students were asked to write a creative response to part of Angelou’s poem, and after reflection, the question was posed: You are part of many different groups. Family, cultural, religious, or gender groups. How have you

faced adversity as part of one of these groups, and if/how have you risen up against it?

First up was Nyah Cox, an eighth-grader at Union Middle School. When going through a difficult experience in November, instead of acting out, she decided to write a poem about it. She performed her words about being stuck in a prison of racism and wanting to hurt others how they’ve hurt her; instead, she expressed the need for understanding and people speaking to each other.

“You might think, wow, it’s hard to be black,” Cox said. “But I’d rather be that, than anything else in this white world of ours.”

After Cox and her parents stood and were recognized, a video presentation of Maya Angelou’s poem, “Still I Rise,” played.

The next student winner was Fayenisha Thompson of Eisenhower Jr. High, and she performed a rendition of “Try it on My Own,” a song made famous by the late Whitney Houston.

The song selection was purposeful for Thompson. “It teaches me that there are things you know how to do. Working with

someone is great, but sometimes you have to do it on your own.”

Thompson and her parents were then recognized before the final student performer was introduced.

Garyell Mott, also from Eisenhower Jr. High, chose to recite the poem “Hey Black Child” by Useni Eugene Perkins.

“Growing up, I’ve heard of Maya Angelou,” Mott said. “She has taught me to rise above violence and negativity. I am faced with negative behavior because I am a black female, a part of the LGBT+ community. I have risen above with the help of a poem called, ‘Hey Black Child.’”

After her recitation, Mott and her family were then recognized before the keynote speaker took the stage.

Rapper and songwriter Courtney Kelly said, “The theme today is ‘Still I Rise,’ and some of you have been so courageous to get up here and share how you have overcome adversity. I want to talk about a different type of adversity that we all face sometimes. That adversity is the adversity of the mind. This is

the adversity we can face when our biggest enemy, the biggest threat to our well-being, is our own mind.”

Kelly went on to share her own struggle with mental health. She related that she used to “cry on the floor” even when it seemed her life was perfect. She had a steady boyfriend, straight A’s, plenty of friends, and was overall a fashionable and popular person.

While recounting her struggles, Kelly then shared a lyric she wrote in relation to her experience.

“Do I enjoy seeing myself broken?”

Kelly spoke about being able to change her hair, her clothes, and her overall look, but she still wasn’t happy. She was convinced that if she could find what she needed to change about herself, she would finally experience self-respect and love.

“I called my mom, thinking that she’d know,” Kelly said. “I talked to her, thinking that she’ll tell me what’s wrong or at least help me figure it out. She said something that really shocked me. She said, ‘Courtney, this is the same thing you’ve been dealing with

Kelly was shocked. Her mother went on to tell her that she was too obsessed with what other people thought, making others jealous of her life, and making others want to be just like her.

“You have been on this endless mission to make people want to be like you,” Kelly’s mom said. “But you don’t even want to be like you.”

When her mom suggested professional help, Kelly got upset.

“I had been purposefully not using the words ‘mental health.’ I realize the term can have some negative connotations, and it can be triggering for people,” Kelly said. “It used to be triggering for me. I would get angry or offended if someone brought up my mental health. A lot of the time, we only associate it with bipolar disorder, depression, etc. If someone needs help with their mental health, they’re crazy.”

Kelly stressed that mental health is a vital part of every person, stating that people must take care of their physical, spiritual and mental being. She suggested taking 15 min-

utes per day to write down 15 things you like about yourself or things you’re grateful for.

“You can change the way you think about yourself by stopping the lies,” Kelly said. “Stop telling yourself that you are and

that you aren’t. Tell yourself the truth and be kind. You are not ugly, you are not fat, you are not stupid, you are not a failure. You are good enough.”

Kelly then urged the audience to take advantage of mental health resources.

“Don’t wait until your lowest moment to seek help. Mental health doesn’t just mean depression and anxiety. If you have anything going on in your mind that is halting you from being happy, stopping your ability to get up and do the things you need to do every day, go get help. It’s okay. Often, these options are anonymous and you don’t have to tell your friends or talk about it. Just go get the help you need.”

Before performing two of her original raps, “Lil Girl” and “Well-connected,” Kelly had one final takeaway for the audience.

“I declare, and I challenge you to declare this as well: I love myself too much to ever let myself fail. I love myself too much to ever let the adversity of my own mind prevail. So still I rise, high as air, still I rise, out of mind’s own stare.”

How WVC is attempting to raise one neighborhood’s quality of life

O

ne neighborhood in West Valley City could be seeing a major upgrade through a potential new program, tentatively called My Hometown.

Though details remain to be finalized, city officials appear to be priming a neighborhood pilot program that aims to improve a designated area’s overall health.

“Bottom line discussion is how can we help facilitate a sustainable, livable neighborhood where there are uplifts or increases that the city can’t necessarily provide?” Nicole Cottle, assistant city manager, told the City Council during a February study meeting. “How do we tap the community benefits that exist out there…and coordinate them in a way that we utilize many of the fine services we provide to combine to really change an area and make it long term and sustainable?”

“And that, kind of has blossomed,” Cottle said. “It feels like where there were holes, there potentially can be outside providers that fill those holes.”

The idea came about after a meeting Cottle and fellow assistant city manager Paul Isaac had with community stakeholders who voiced concerns about various aspects of the city, from community engagement to code enforcement.

was already doing what it could on a neighborhood level. So they pushed it back on the corporate and community leaders, asking them for help.

“There are some great opportunities to help,” Cottle said.

City officials would set up a task force and use its existing resources. They would coordinate with the various groups.

The proposed pilot neighborhood would be what Cottle called the Hillsdale neighborhood, an area of approximately 700 homes and 500 mobile homes located between Constitution Boulevard (2700 West) and 3200 West, and 3100 South and Parkway Boulevard (2600 South). The area has about 3,000 people.

In choosing a neighborhood, Cottle said they looked at areas in the bottom half of the city’s neighborhood health audit, which looks at 10 years of history in 70 neighborhoods tracking things like crime rate, ordinance enforcement and census data. She said they wanted a neighborhood with challenges, but aspects they could work with.

Median household income for the area is $46K (Utah’s average is $65K), the poverty level is at 32% (Utah average is 11%), and $15K per capita income (Utah average is $26K). Sixty-one percent speak a language other than English and 61% of adults 18 and older have no diploma. Cottle said the area has lots of duplexes, but not as many rentals as they thought.

Cottle also said they drove around with area leaders learning details about homes they didn’t know.

Stansbury Elementary, WVC fire station 73 and a Church of Jesus Christ of Latter-day Saints chapel are located in the area with the closest park in the neighborhood to the south, Hillsdale Park.

She added part of the goal is to make the program replicable in other parts of the city.

Most of the City Council expressed enthusiasm at the program.

“The staff will learn what works and what doesn’t,” Mayor Ron Bigelow said.

“But the concept is fantastic because it focuses on strengthening communities.”

Councilman Tom Huynh, whose district encompasses the Hillsdale neighborhood, said he was grateful for the city to step in and do this.

Councilman Steve Buhler said it was important the council be updated regularly on the program. He was concerned about how long the program would last or after spotlighting this area does the program simply end and move to another area?

“Right now we have more questions than answers,” he said.

How exactly the program would measure success was still up in the air as officials decide what metrics to use such as ordinance violations, crime stats, single family home turnover or English course attendance. l

A

n unqualified and untrained team began the season on the mats at Cyprus High school, but by the time the season ended their improvement was noticeable.

“Overall, the season has been good,” Pirates head wrestling coach Josh Checketts said. “We started out with a young, inexperienced team and they have worked really hard and gotten better. It is easy to see how much better they are now than they were at the beginning of the season.”

A total of five upperclassmen filled out the roster for the Pirates. As many as 24 sophomores and freshman took the mat this season.

In total, two wrestlers qualified for the state meet, held Feb. 12-13 at Utah Valley University.

Sophomore Damon Armenta lost in the first round, but managed two consecutive victories in the consolation round. The first over Matta Tyler (Skyridge), a major decision 19-8 and the second, a pin over Cameron Clark (Corner Canyon). He lost in the third consolation round to Mason Rigby (Davis).

Junior Ryan Herzog closed out his season at state. He was defeated in the opening round, but rebounded with a 9-3 decision over Brendan Bleicher (Roy). His season ended with a loss to Park Beeler of Granger.

Herzog finished with a 24-8 overall record, Armenta was 34-9.

“Our best wrestlers are Herzog and Armenta,” Checketts said.

The Pirates had two seniors on this year’s squad. The underclassmen were forced to learn along the way.

Several younger wrestlers posted good seasons with double-digit victories: sophomore James Grunwald 13-10; freshman Dustin Merrill 14-20; junior Brayden McKay 18-10; senior Jonathan Anderson 15-16; sophomore Ashton Cox 10-11; sophomore Kenneth Ocha 16-10; senior Macabe George 15-16; and sophomore Dominick Reyes 1511.

This year, the Pirates also fielded a full girls team of 12-15 wrestlers. The Utah High School Activities Association will offer girls wrestling as a sanctioned sport next season.

“Overall, the girls bring a different energy and personality to our team. In general, they are more expressive. They show their emotions, but it has helped our boys become more aware. The two teams have bonded,” Checketts said.

Earlier this season, Cyprus hosted the first all-girls high school wrestling meet.

They were scheduled to compete in the girls state wrestling championship Feb. 17 (after press deadline) at Telos U in Lehi.

Checketts pointed out the dedication of his wrestlers this season.

“Wrestling is hard, we work them hard, it is physically demanding and mentally demanding. On the mat it is just the two of you. In football if you miss a play you can hide per se, and someone can fill in for you.

But, in wrestling, if you mess up everyone knows. Also making weight can be hard for teenagers. They want to eat the junk food, but ultimately those that stick it out have a different confidence. They know they can do hard things,” Checketts said. l

n its efforts to continually improve its training and expertise, the West Valley City Police Department will have an independent party perform an onsite assessment in October.

The independent party is CALEA (Commission on Accreditation for Law Enforcement Agencies), a national organization considered the gold standard in public safety. The department was awarded CALEA accreditation in 2017 after an extensive three and a half year process where it had to demonstrate the best practices of law enforcement in over 150 standards.

West Valley City Police is the only department in the state with the accreditation, Salt Lake City is currently one year into the process. Only 5% of agencies across the country are accredited.

Mark Brooks, the department’s accreditation manager, presented the future timeline of West Valley City’s process with CALEA to the City Council on Feb. 11. He compared the designation to a five-star rating for hotels or restaurants.

“That’s what CALEA accreditation is about, it’s about meeting higher standards,” Brooks told the council. CALEA came together in 1979 to set up industry standards and best practices for law enforcement agencies.

When the department was accredited in 2017 as a tier one program, it was for a fouryear period. Each year, 25% of the department is remotely reviewed by CALEA. The agency aims to move to the advanced tier. A tier one program, Brooks said, requires 187 standards while the advanced tier will require approximately 400.

The department would be reaccredited

in March 2021 if it passes evaluations.

Brooks himself used to be a CALEA assessor, evaluating at least 100 agencies and talking to 100 more.

“This is the best thing you can do for your police department,” he said, pointing out that the police department holds the highest liability for city governments. CALEA agencies have reduced liability, Brooks said, making them more likely to win legal cases.

Deputy Chief Scott Buchanan told the council that police applicants routinely tell them they only test with West Valley City due to the accreditation.

“Chief (Colleen) Jacobs has been a strident supporter of accreditation, making sure we are providing all the attention it requires,” he said.

The process is a continuous updating of policies and standards, Brooks said, noting nine major law enforcement areas the standards address: • Roles, responsibilities and relationships • Organization, management and administration • Personnel structure • Personnel process • Operations • Operation support • Traffic operations • Detainee and court-related activities • Auxiliary and technical services For a vehicle pursuit, for example, there are 12 directives given to comply with the standard.

“It does provide our command staff and chief the information they need to make good decisions,” Brooks said. l

Utah Celebrates the 150th Anniversary of Women Voting

Utah women were the first in the nation to vote 150 years ago. A young, 23-year-old school teacher, Seraph Young, cast her ballot on her way to work on the morning of February 14, 1870 and became the very first woman, under an equal suffrage law, to vote. This year we’re celebrating Utah’s leadership in the nation on this very important issue.

Utah’s suffrage history is a story of cooperation and civic engagement.

It’s the story of Utah men and women working together in a common cause for the benefit of all. On a cold January day in 1870, 5,000 women gathered in downtown Salt Lake City to ask for, among other things, the right to vote.

Just a few weeks later the territorial Utah Legislature, made up entirely of men, unanimously extended that right.

For the next 17 years they voted side by side trying to craft their territory into a place where they could live according to their ideals. But, in 1887, in an attempt to end polygamy, Congress passed the Edmunds-Tucker Act, which took away from all Utah women the right to vote.

Needless to say they were outraged and went to work immediately trying to win it back. They knew that it was important

to have a say in their communities and that one of the most effective ways to do that was to vote.

They created the Woman Suffrage Association of Utah and organized local chapters throughout the territory. Utah women met together, and organized.

They signed petitions, and they spoke up for what they believed in. When Utah held it’s Constitutional Convention in 1895, both parties supported voting rights for women in their platforms.

The delegates included a clause in the Utah Constitution that read, “The rights of citizens of the State of Utah to vote and hold office shall not be denied on account of sex. Both male and female citizens of this State shall enjoy equally all civil, political and religious rights and privileges.” Once again the all-male electorate overwhelmingly approved sharing the franchise with their wives, sisters, and mothers.

The story didn’t end there. After winning the right to vote for themselves, Utah women went to work on behalf of their sisters across the United States.

They testified before Congress, raised money, worked with the national suffrage organizations, and some of them

In August 1920, the 19th Amendment was ratified granting suffrage to women across the United States. The cooperation and civic engagement continued after the 19th Amendment passed to ensure that minority groups could equally enjoy that privilege.

Utah has a strong history of leadership and a legacy of influential women and men working together who understood that Utah, and the nation, prospers when each citizen has the opportunity to participate. How can we live up to that legacy? As we enter an election year I challenge you to make sure you are registered to vote and then exercise that right! Organizations chose positions on the bill – those with research supported it; those with uninformed biases supported a substitute bill published by another representative. In the House debate, the substitute bill was adopted. That meant, in the confusing process considered a “hijack,” I became the sponsor of a bill I disagreed with. I was glad to see the final vote against my own bill. The good news is that, with statewide awareness of the bill, Utahns now know about a piece of curricula, rarely put into state law, and the fact that it is purposeless. They also have another view of each representative’s thinking, as the votes illustrate.

One other bill has waited to be moved to a committee for initial hearing. My job with that is to speak with leaders to learn the reasons.

Sometimes a simple revision changes the view. The reality is that sometimes a bill’s basic concept might decide its fate with no hearing.

In even that case, however, public awareness and contact to legislators is always helpful.

Student filmmakers say no to vaping, e-cigarettes

M

iddle-schoolers and high schoolers across Salt Lake County will have the opportunity to share their short films addressing the dangers of vaping and e-cigarettes at the third annual Kick Ash Film Festival.

After working on their 30- to 60-second films and submitting them into the film festival, the top films will be shown at 6:30 p.m., March 19 at the Leona Wagner Black Box at the Rose Wagner Performing Arts Center in Salt Lake City.

The public is invited to attend the free event.

“Vaping amongst Salt Lake County youth has increased 500% since 2011,” said Julia Glade, Salt Lake County health educator and film festival coordinator. “Yet, 56% of high school seniors say e-cigarettes are harmful. We want to change that perception.”

Glade put together the film festival as a way for youth to share with their peers and community the means to communicate tobacco prevention and cessation.

“Teens tend to use their phones and are very savvy using technology, so this way, they can create films about prevention and their peers are more apt to listen more,” she said.

Teens also are involved in supporting the film festival. The Salt Lake County Healthy Teen Advisory Board suggested this year’s theme: “Huff, Puff, Hooked” and some of the judges are students.

Before the red carpet event, the judges will select their top middle school winners (seventh through ninth grades) and their top high school winners (10th through 12th grades). First place will receive $350; second place, $250; and third, $100. There also will be audience choice awards and the school which has the most entries will be awarded $100.

Prizes and monetary awards were donated by sponsors, including University of Utah Health Plans, Primary Children’s Hospital, Intermountain Health Care and R.C. Willey, Glade said.

In addition, this year’s winners as well as past film winners will have their films posted on the Salt Lake County YouTube channel.

More than 50 entries were expected to be entered by the Feb. 27 deadline, Glade said. The first year, students submitted 29 entries.

Leadership and recess – how one school is making a difference

M

aking a difference comes in all shapes and sizes, even successes and challenges as Morganne Nielsen, Playworks program coordinator at Jackling Elementary, will not hesitate to tell you.

In her second year of outfitting students – not only with some cool purple T-shirts, but in instilling within each frame accountability, kindness and compassion — Coach Morganne (as the students and faculty know her) is all about making a difference in the lives of those she coaches. This includes corralling and teaching 45 student leaders for the 201920 school year; i.e., mentors, junior coaches, and assistant coaches.

Last year, Morganne had only eight junior coaches, and that was “pretty much the program as a whole,” she said. But this year, “I had so many kids interested, I decided to start some secondary programs.”

And she has, with some amazing results.

Coaches from fourth to sixth grade are learning how to transition students from recess to class time, are doing line-up cheers and attention grabbers for the younger grades, and learning how to diffuse conflicts as they arise. Recently, the coaches took part in a Martin Luther King Day of Service for Primary Children’s Hospital, providing monster dolls, created, cut and sewn by their very own hands.

Growth is what Morganne counts on seeing every day.

“I like working with the kids and helping them to realize their individual power,” she said. She likes to “show them that they can make a difference in the lives of other kids just by playing with them and being a good example.”

“So much of the program caters to natural born leaders,” she explained. Even so, there are a few students in the program that lead in their own way.

One such student, a fourth-grader named Ale, is the sort of leader who is good with the individual, Morganne said. “She’s very alert.

I’ll look over and she’s talking to someone on the other playground – like 200 yards away.

She serves in her own way.”

Ale speaks highly of her coach, too. “I like playing with the kids,” she said. “And I want to be like Coach Morganne. Brave.”

“People show their power differently,” Morganne said. “Ale knows she’s not good at line-up cheers but she’s so good at many other things. I feel like all of the coaches kind of have that.”

Coaches are expected to set an example.

They are expected to step up and do things even when they are not asked. They are expected to help other kids feel accepted and appreciated.

And they are expected to attend after-school meetings and yearly events.

solve problems in and outside of the play- more help. “I like volunteers to come and be ground, such as bringing order into the class- a part of the program,” she said. “We need room after recess or facilitating games like consistent, caring role models for kids.” l four-square and basketball. Each year, schools are required to hold a Community Engagement Initiative event through Playworks. Last year, the coaches focused on mindfulness, this year they are merging with Sandberg Elementary. “That’s who we’ll be inviting as part of our student body next year,” Morganne said. “It will be fun.”

Additional fun will include the Junior Coach Leadership Summit held April 16.

Lancer grind qualifies wrestlers for state tournament

he Lancers locked in their third straight region wrestling championship on their way to qualifying six for the state tournament.

“We are young, but we are making a lot of progress,” Granger head wrestling coach Sam Vidal said. “From week to week we are getting better and working hard. This is our third region championship in a row even though we lost eight seniors off last year’s team.”

Granger junior Park Beeler placed fourth at the state tournament at 160 pounds. He was ranked sixth in the state headed into the final event. His first round victory followed by a quarterfinals loss led to three straight victories in the consolation bracket before falling in the third place match to Tytan Smith (Syracuse) by pin.

“He (Beeler) has a great work ethic and a motor that goes. He lives in the room. I have to wake up early so he can come in and get extra work on his own. He is a leader and team captain. He has the motivation to get better and that is awesome,” Vidal said.

Beeler finished the season with a 43-7 overall record. He recorded 25 pins and the most team points throughout the season.

Vidal said Beeler has been instrumental in recruiting and leading the team.

“At 170, Sina (Koloa) started last sea-

son. He works with Park. He is an awesome story and has worked on his self-belief. He has adapted to be a strong wrestler,” Vidal said. “At 113, Donovan (Alarcon) is in his second year and has no quit.”

The Lancers qualified six wrestlers for the state tournament: Alarcon, Beeler, Koloa, Alex Jimenez, Macc Fualaau and Martin Lake.

“This is my third year at Granger, my kids are like a family, they support each other,” Vidal said.

Sophomore Arlef Antonio represented the Lancers at the all-star duel during the season. She posted a 16-16 record this season and had 11 pins.

“She has been a pioneer about recruiting other girls, she is like the lone one. Her work ethic, she gives the boys a match, but the boys can be overpowering to her,” Vidal said. “Coaching these girls has helped me learn that they want to be pushed just as hard.

They do not want to fail. Once they learn how to fail and come back from it, they kill it.”

The girls state tournament is scheduled to be held Feb. 17 (after press deadline) at Telos U in Lehi. Next year the Utah High School Activities Association has elected to sanction girls wrestling.

“At times it is hard to keep the kids involved. We are honest with them that wrestling is hard. We talk about it every day at practice with tough workouts. We tell them

that they will hate it at times, but the more you push you will find out about yourself. It takes someone special to wrestle. It is that grind they have to push through to become better people,” he said. l

Sound The Alarm What many people may or may not know of the more than 62,000 disasters the Red Cross reponds to every year over 90% are home fires. That is about 1 every 8 minutes. According to local Red Cross spokesperson Rich Woodruff, “Every day home fires are responsible for as many as seven deaths and 36 injuries in this country.

SpringHill Suites going up at Valley Fair

A

s Utah becomes an increasingly popular travel and tourism destination, West Valley City hopes to attract some of those visitors with the construction of its newest hotel.

The global hotel chain Marriott International is building a SpringHill Suites on a section of sparsely used parking lot on the east side of Valley Fair Mall.

Next to Interstate 215, the five-floor, 133-room hotel is scheduled to open in November.

For West Valley City, the hotel marks the latest effort to create a true downtown area that includes Valley Fair and its 150 stores and restaurants, city hall, Fairbourne Station, UTA’s bus and TRAX station, and multi-family housing.

Casey Bulkley, general manager of Valley Fair for retail management company Vestar, says SpringHill Suites and the shopping complex will benefit each other. The hotel will cater primarily to business travelers who will “be here a few days and they’re going to spend some money and they’re looking for stuff to do” which makes Valley Fair’s dining, entertainment and shopping options attractive, he said.

I-215’s nearly direct access to the airport makes SpringHill Suites’ West Valley City location ideal, Bulkley said. “There’s a lot of people who come to town that may not be doing business downtown (Salt Lake City).

There’s a lot of business happening in West Valley.”

Utah Hotel and Lodging Association executive director Jordan Garn agrees SpringHill Suites is better suited to visitors here on business than vacationers, considering its mid-block location on limited-access, oneway 2400 South behind Valley Fair.

hotel via that which makes them less dependent on a highly visible, highly accessible location because those that are coming there have already booked their stay,” Garn said.

Garn says SpringHill Suites in West Valley is a welcome addition to the area’s available hotel rooms. “The supply is at least catching up with the demand,” he said. “It’s

a testament to Utah as a state being more and more of a destination both for leisure and business travel and that’s why we’ve seen so much investment” in new lodging.

There are more than 400 SpringHill Suites in the United States and Canada. The closest ones are in Salt Lake City, which has three, and South Jordan.

Driving smart – what Zero Fatalities is doing to teach teens about safe driving choices

n Feb. 11, hundreds of teens and their parents stood in a single line that traveled from the Hunter High School auditorium doors to the commons area, and almost to the inside front doors. This was a mandatory visit, one that would allow teens from Utah one car closer to getting their coveted driver’s license.

Once inside the auditorium doors, parents and students signed their names – proof that they’d been there – before making their final ascent to the chairs inside.

There, teens and parents listened intently as Natalie Lovell from Zero Fatalities gave a presentation ranging from topics such as how Zero Fatalities is a “realistic goal” to how seatbelts should be on “every person in the car.”

“One person unbuckled can be a projectile and kill others,” Lovell said, and if you’re ejected from the car there’s a 75% chance of dying from your injuries. “When you’re driving, you’re the boss. Wait until all of the seatbelts are on.”

Zero Fatalities, a UDOT and Utah Department of Public Safety program, offers students an opportunity to drive safely. Although the program is mandatory for teen drivers, the program is really about not losing any more lives.

Last year, 264 lives were lost in Utah from car crashes, according to Lovell, who believes that Zero Fatalities is not an unrealistic goal to reach.

“How would you feel if the goal wasn’t zero fatalities but five fatalities a year?” she asked. “What if one of the five was someone you loved? What if it was you?”

Though some have said they are never going to reach this goal, Lovell believes everyone can make the goal possible.

“Don’t drive stupid,” she said. “Be responsible.”

Being responsible doesn’t just mean learning the rules but following them in every situation. “People think they’re the ex-

ception. They’re not. Be the driver you want your teenager to be.”

She has seen men shaving while driving and men and women watching movies on their iPads.

“Men are not exempt from the beauty distraction… [and] watching movies while driving is the worst thing I’ve seen.”

said. “We don’t get to decide the consequences of our choices.”

Last year, 37,000 people died in car crashes in the United States. Speeding was a factor in 40% of the fatalities and crashes then and now occur for many reasons including talking on cellphones, dropping a water bottle while driving, and reaching down to pick it up; changing the radio, going through a yellow light in an intersection, speeding, driving after drinking alcohol, driving while tired or even talking to the driver to keep him/her awake.

The problem?

It doesn’t work.

“Talking isn’t the answer,” Lovell said.

What works is getting a good night’s sleep, getting out of the car for frequent breaks, stretching, walking around, stopping to eat, switching drivers and taking a nap.

“Drowsy driving is as dangerous as drunk driving,” she said.

And if teens have been drinking, they need to know they can count on parents or adults for help. “They need to know they can call you at any time for any reason.” l

Hunter senior plays football at NFL Pro Bowl

T

he Utah Girls Tackle Football League sent 22 all-stars to play an exhibition during halftime of the NFL’s Pro Bowl.

Representing UGTFL’s West Granite team and a Hunter High senior, Maleini Tofavaha was among those to make the trip to Orlando Jan. 26.

“I was nervous about the trip,” Tofavaha said. “Then I got down there and started doing all of the activities it sort of went away.

Right before we walked onto the field my stomach got some butterflies and I started to feel sick.”

The NFL promoted the fact that everyone can play football. Whether it be boys or girls, tackle or flag. They indicated there is a place for everyone. The Utah girls then took the field and scrimmaged for about 5 minutes.

“My coach gave us a speech and then and there I felt tears running down my face.

I was overwhelmed with the great honor to play football in front of so many people.

Then I zoned out and focused on the game we came to play,” Tofavaha said.

She plays offensive and defensive line.

This will be her third year as part of the league.

The all-stars visited the AFC practice on Saturday before their exhibition.

“The trip was amazing,” UGTFL co-founder Crystal Sacco said. “When the crowd cheered it was breathtaking. We all felt famous for the weekend. Everywhere we went people wanted the girls’ autographs.”

The girls and six coaches were asked to participate in the halftime presentation two weeks before the big game. It was a scramble for league officials to make preparations and pick the players.

“Picking the team was a hard thing,” said Shawn Goetz, the league vice president.

“We tried to pick deserving girls that best represented the league. It was the best trip, I am not sure if I even believe it happened still.”

The teams represented 17 high schools from across the Wasatch Front. Last season, the UGTFL had 12 high school-aged teams.

They expect to field 16 this season.

The league is thought to be the first girls tackle football league in the country. It was formed in April of 2015 and started with four teams. According to Sacco, they expect 600 girls this season.

The purpose of the league is to provide girls with the opportunity to play tackle football. All coaches are USA football certified (a safe tackling certification). The teams play eight on eight with a smaller football and modified defensive rules.

Sign ups for girls interested in playing are scheduled to be held through the first practices in March. Games are played at West Hills Middle School in West Jordan.

and dad cheering for me I started to enjoy it,” Tofavaha said.

The face of the league, Sam Gordon from Herriman, has now participated in three straight NFL postseasons. In 2018, she received the inaugural Game Changer award from the league and last year she was part of a spectacular commercial welcoming fans to

the 100th year of the NFL. Several members of the league were involved in a class action lawsuit filed against several school districts alleging that male athletes were given far more opportunities to play interscholastic sports than their female counterparts. l

Let’s learn about UHSAA’s newest sport: Lacrosse

tah high schools are welcoming boys and girls lacrosse to their sanctioned sports this spring season. This traditionally “East Coast” sport is not as familiar to sports fans here so we thought we’d ask some experts in the area to give us all a “Lacrosse for Dummies” lesson.

The sport itself has plenty of differences between the boys and girls games so let’s look first at this individually.

We asked Collin Madsen, boys program coordinator for Intermountain Lacrosse, to help explain the sport from the high school boys perspective.

• There are 10 players on each side of the field – three attackers, three midfielders, three defenders and one goalie.

• Among its midfielders, teams can use a faceoff specialist, who may come right to the sidelines after faceoffs, and a long stick midfielder, who plays with a longer stick.

• Faceoffs, where one player from each team crouch down and fight for control of the ball, start all quarters and also happen after each goal is scored.

• Lacrosse sticks are allowed to be deeper for the boys than the girls and the string can be mesh or traditional leather.

• During play, the attackers need to stay on the offensive side of the field while the defenders stay on the defensive side. The midfielders can be mobile all over the field.

• Players can body-check another player that has the ball with referees allowing body contact from the shoulders down to the waist.

Boys are required to wear full protective gear, including helmets, shoulder pads, elbow pads, rib pads, gloves and mouth guards.

• Fields measure 110 yards long by 60 yards wide – that is marked with a midfield line, two restraining boxes and two creases around the goal.

• High school games are four 12-minute stopped time quarters.

Madsen said approximately 5,500 boys play lacrosse in Utah with 2,000 of those of high school age. “I’d hope and expect both of those numbers to increase slightly this year with sanctioning and definitely see a sizeable amount of growth at both youth and high school over the next three to five years and beyond,” he said.

Things you need to know about girls lacrosse

Maddie Ferguson, the girls program director for Intermountain Lacrosse helped us understand the differences between the high school girls game and the boys.

• There are 12 players on each side of the field – three attackers, five midfielders,

three defenders and one goalie.

• Games are started with a draw where centers from each team stand facing each other with the ball being placed between the heads of both player’s sticks. At the whistle, both players try and push or pull the ball high enough in the air that it clears the shoulders of both players. After a “fair” start, they can either get the ball from the air or the ground.

The other midfielders are waiting outside the center circle until the draw is clear or a penalty is assessed and possession is given to the other team. Draws are used after each goal as well as at the beginning of the second half.

• Lacrosse sticks have a traditional pocket and the material of that pocket can be different.

• During play, no more than seven players can be below the restraining line on their offensive side of the field. On the defensive side, eight are allowed including the goalkeeper.

• The top of the ball must be above the sidewall when it’s in the pocket.

• No body-to-body or stick-to-body contact is allowed. An immediate yellow card is assessed if a player’s stick hits another player above the shoulders and a two-minute non-replaceable penalty is given (like the hockey penalty box). Two yellow cards equal a red card and players are subject to automatic removal from the game. Players are only allowed to make contact with their stick when the ball carrier is holding their stick below their shoulder. Girls are required to wear a mouth guard and goggles.

• Goalies remain in the goal circle, or defensive area. The three defenders are in their restraining area and typically use a square or diamond setup while the three attackers do the same in their restraining area.

The five midfielders are the only players that can be in the center section of the field for the draw with the center midfielder designated to take the draw.

• Typically, players use a tight cradle motion between the ear and the shoulder when possessing the ball.

• Fields measure 120 yards long by 70 yards wide and contain a midfield line, two creases, an arc at eight meters and an arc at 12 meters.

• High school games are two 25-minute halves.

“The growth here has been amazing,” Ferguson, a New Jersey native, said. “There are more girls high school teams than ever and it’s growing at a massive pace.” She noted that nearly 40 teams have been added since UHSAA’s announcement that the sport would be sanctioned. Also, Utah now has its own U17 national team where previously they had been combined with Idaho and Montana and with that increased presence, more All-American

players are being recognized from the state and moving on to play collegiately.

Where the boys and girls games are the same

• When a team shoots and misses the goal, possession is awarded to the team that is closest to the ball when and where it exits the field of play. So the offense can take multiple shots in a possession that miss the goal, and still retain possession.

• An offsides penalty is assessed when too many field players are over the restraining line. The maximum is seven.

• Only goalies are allowed in the crease or goal circle unless the goalie is not in that area. In that case, a field player can run through to pick up the ball, but no defense can be made against shots on goal since they are not wearing the appropriate gear.

• A rule of “shooting space” protects players to ensure safe play. When players are on the attack and typically around the goal area, defenders must come in from an angle – not head on – to align their bodies to defend safely. “Shooting space” penalties result in an 8-meter shot (think penalty kicks in soccer). The “dangerous propel” rule puts the responsibility on an attacking player to refrain from shooting if a defender comes at them head on until the official makes the “shooting space” call. Otherwise, the penalties offset. “Those two rules are super, super complicated to observe as they are happening, to administrate as an official, and to put into action as a player,” Collins said. “So, I would say that shooting space is one of the most common penalties in the game and generally the least understood.”

• Yellow and red cards typically are handed out for safety and sportsmanship violations and other penalties result in change of possessions or penalty shots, depending on where on the field the fouls occurred.

• Whether it’s boys or girls lacrosse, the most basic movement on the field is a cradle which keeps the ball securely in a player’s net. The use of an effective cradle leads to the best possible scenarios for a shot attempt or a pass.

• When the ball is scooped off the ground, it’s called a ground ball. In a battle for that ball, players cannot hit the other’s

stick if they don’t have possession of the ball. That is called an empty check and is basically a turnover, handing possession to the other team.

• Defensemen use “d-pole” long sticks which are six feet long and designed for players to try and check and dislodge the ball from attackers from a distance. (Teams are only allowed to use up to four long poles on the field at one time while the other six players have a standard lacrosse stick that is required to be between 40-42 inches in length.

These sticks allow for easier movement and protection.

• Goalies wear full protective gear and have sticks with a much larger head than the field sticks.

“The inclusion of lacrosse as a UHSAA-sanctioned sport is huge for the sport,” Madsen said. “I think that overall it is going to have a massive impact on the sport here in the state. It is something that the Utah lacrosse community has been talking about and hoping would happen for many years, and it has finally come to fruition. I think it brings additional credibility, awareness

Don’t burn out

M

ental health is ridiculously important.

If we experience burnout (a state of emotional, physical, and mental exhaustion caused by excessive and prolonged stress: synonyms include overwhelm, fatigue, exhaustion, collapse), we can’t function to our usual standards. Luckily, we are beginning to take mental health seriously. We are talking about it more, leading to policies being implemented that place emphasis on mental health, more focus being paid to the individual and less stigmatization of diagnoses. I’m grateful to live in a time where my boss and colleagues understand if I need to take a mental health day.

But…(you knew this was coming, right?) I don’t support the perpetuation of normalized self-care stereotypes. For those frequently on social media, common tropes can be found weaving through tags like #selfcaresunday and #mentalhealthmonday. Within the first long scroll, users will view pictures of female legs emerging from bubbly bath water, potentially from a bath bomb, with an assortment of accessories like a wooden caddy holding a book, lit candles, flower petals, and/or a glass of wine. In addition, users come across posts endorsing skin cream, face wash and other beauty products.

These posts perpetuate the idea that self-care is wrapped up with beauty. (While there are positive emotions associated with the confidence of looking and feeling beautiful, which can influence one’s mental health) I believe that self-care should not be solely dependent on beauty. I should be able to take care of my mental health without glowing skin or radiant makeup. As Beyoncé says, pretty hurts.

Instead, I whole-heartedly support perpetuating individuation – finding something to do for your mental health that works for you; something that supports your mental health, something that allows you to practice self-care, something that releases those dopamine neurotransmitters. For example, music makes me happy. A self-care ritual I routinely engage in is driving along I-15 and singing (and dancing) to the steering wheel.

Additionally, I will always, always recommend therapy as an important and frequent practice to take care of your mental health (mostly anyone with psychology training will). If therapy is an option for you and your financial situation, please consider it. Just remember to stick with it – therapy sessions don’t begin to become beneficial until after the first few visits. Therapists need the opportunity to get to know their patient beyond just a single hour. However, many patients will drop therapy after their first session because they don’t feel that it’s immediately helpful. Don’t do that.

“Therapy doesn’t work for me,” one of my friends told me last month. My immediate thought was that the therapist and patient

weren’t a match, which happens. Sometimes you just need to find your therapist. However, this experience left my friend totally dismissive of therapy altogether. “That’s okay,” I told them, “let’s find a therapy that works for you.” What I meant by that was, let’s find your self-care ritual. After asking them a variety of questions trying to narrow down what contributes positively to their mental health, we figured out that their therapy needed to be prayer. After that conversation, he attempted to engage in prayer more often, and that self-reportedly helped his mental state.

Back to the main point: mental health is important. Self-care is important. Find a selfcare activity that works for you, and practice it frequently. Make that activity a ritual.

Maybe taking a bath does help your mental state (because you’ve figured out that works for you, not because of the conditioning of that ritual). Maybe that’s going on a drive and singing your heart out (I’ll see you on the freeway). Maybe that’s spending time outdoors. Maybe that’s exercising. Maybe that’s engaging in #selfcaresunday by going to church. Maybe that’s meditating. Maybe that’s eating ice cream. Maybe that’s snuggling with your pet. It doesn’t matter what the ritual is, as long as you’re making time for you and your mental health. l

Schwan’s “Everything we have is good”

ody Campbell is a busy area manager for Schwan’s Company, and he likes it that way. He has been involved with Schwan’s for three years and is now in charge of the Salt Lake City Depot, an operation that serves customers in their homes from Kamas to Park City to Wendover. With eight sales representatives, a fleet of trucks, and amazing food brought right to customers’ doors, there is a consistent theme in Campbell’s work: excellence.

“Everything we have is so good,” Campbell said. “It is better than anything you will get in a grocery store.”

Campbell is a recent link in a chain that makes up Schwan’s legacy. The company began in 1952 when Marvin Schwan established a delivery business for his family’s homemade ice cream. Patrons immediately noticed the high quality of the ice cream and wanted more. In the years that followed, Schwan slowly added more and more items until the company became the quality food empire that we know today.

Schwan’s trucks in the Salt Lake Valley today carry 350 items at all times and are always fully stocked. Customers can place

orders online to ensure that their favorite items are on the truck and choose from the large variety available. Schwan’s employees will typically check in on their customers every two weeks to make sure all of their food needs are being met.

Customers should be prepared for an amazing experience when they order from Schwan’s.

“Everyone is pleasantly surprised about how good the food is,” Campbell said. “There is a huge variety that is pre-cooked, ready to go, convenient and easy to prepare.” Campbell also stressed that Schwan’s is a good fit for everyone.

From one-person households to large families, there is something for everyone.

In a world where a premium is placed on convenience, Schwan’s is impossible to beat. According to Campbell, when you compare Schwan’s to other delivery options available, Schwan’s has a very minimal delivery fee and the company’s rewards program is an added bonus. And, of course, the food is better than anywhere else.

What items do customers especially love? “All of it,” Campbell said, “but the fire-braised pork is No. 1, followed closely by pot pies.”

Not only is the food delicious, it is also healthy. Using a standardized flash freezing process, Schwan’s negates the need for preservatives, making their food fresher than what is available at local grocery stores.

When asked what he likes about working for Schwan’s best, the answer came to

Organic foods aren’t just for health fanatics anymore

A

t one time, the term “organic food” generated images in some people’s minds of nature-loving, Prius-driving health fanatics who thought any chemicals or artificial ingredients in food would mean premature death.

That impression is gradually changing as more of the products are making their way into mainstream grocery stores and into households that typically haven’t been overly health conscious.

Shad Stagl of Stagl Organics in Salt Lake City is doing his part to grow and sell such crops and educate people about them.

Stagl owns and operates the organic farm behind his home on the city’s west side. He does the bulk of his business using a model called “community supported agriculture.” That’s where people pay up front to purchase a season’s share of his organically grown produce. They pick up a box of vegetables every week or two for up to 23 weeks as it is harvested during the growing season.

Stagl finished 2019 with 52 such customers and hopes to have more this year. He also sells his crops at the Liberty Park farmers market.

“It gives me a chance to introduce people to new food that they might not normally buy,” Stagl said.

crops will be free of them, too. “Your food is only as nutritious as your soil,” he said.

Organic pesticides are also available to kill damaging bugs without leaving potentially harmful residues on the plants.

Stagl has a few fruit trees, but the vast majority of his crops are vegetables: tomatoes, eggplant (technically both are fruits), lettuce, kale, radishes, turnips, squash, zucchini, parsley, celery, peppers, potatoes, carrots and more.

Organic food sales in the United States totaled $47.9 billion in 2018, an increase of 5.9% from the previous year, according to the Organic Trade Association.

The U.S. Department of Agriculture says organic products are available in about three out of four conventional grocery stores, along with 20,000 health food stores. Organic foods that were once confined to special sections of stores can now be found sprinkled among regular products on shelves.

West Valley Firefighters hand out coats to Farnsworth Elementary students

ome students at Philo T. Farnsworth Elementary school were walking to school this winter with no coats.

The West Valley Fire Department wanted to change that.

Firefighters visited the school on Jan. 30 to hand out about 30 coats to kids in need.

The coats were provided by the West Valley Professional Firefighters group.

“We’ve been fortunate to have the ability to get them coats for the winter and hopefully the next couple years,” said West Valley City Fire Department Captain Tyler Sleater in a video released by West Valley City.

Erica Hibbard, a social worker at the school, said in the same video that they have many kids who live below the poverty line so the warm clothes were appreciated.

“We’re super thankful that people in the community are willing and wanting to donate so we’re thankful for all the donations that made this possible,” she said.

Uncle Bob’s Butter Country pancake syrups

Saturday pancake breakfasts have been a staple in the Smith household for decades. But the crowning glory has always been dad Bob’s homemade buttermilk syrup.

“One day we were out of buttermilk, but we had an old container of Log Cabin (syrup),” Bob recalled. When the pancakes were served without dad’s buttermilk syrup, his children boycotted the pancakes.

His oldest son asked incredulously, “Do you really expect us to eat this syrup?”

“Right then, I knew the buttermilk syrup was something special,” Bob recalled.

Special might be right.

There have been few innovations in pancake syrups. “It’s been basically maple forever, some artificial syrups and low sugar ones, which nobody likes, and some fruit syrups,” Bob said. So buttermilk syrup — a favorite of home cooks — was ready to sweeten up the market. The Smith family dove in.

After obtaining a cottage food certificate (an approval by the State), things started slowly. In their Cottonwood Heights’ kitchen, the eight Smith children plus parents made 250 bottles of syrup.

It was a tricky business managing three gallon-sized pots, temperamental frothing syrup, and bottling. They sold the final product, Uncle Bob’s Butter Country syrup, at local farmers markets.

It wasn’t until a few years later when Bob’s son Jared returned from his church mission and began attending BYU that things got going. “I knew that if we didn’t make and market this, someone else would,” Jared said, adding that once people taste buttermilk syrup, there’s no going back to artificial maple syrup.

It took about 18 months to verify that Uncle Bob’s syrup was shelf-stable, because it is made with real buttermilk and cream. Getting the product to market proved to be another challenge. Eventually Harmons took them on and later, Associated Foods. Butter Country is now in 170 stores.

Jared described the syrups as on par with premium maple syrup, but with new flavors, a creamy texture, and no artificial additives. For traditionalists, they have a butter-infused maple flavor. The original buttermilk flavor makes a good base for fruit toppings. New flavors include harvest spice and coconut cream.

Bob said he hopes these syrups bring people back to the simple delights of a pancake breakfast.

“It’s about making memories,” he said.

One autumn day, Rick Black was pureeing his varieties of homegrown chili peppers to freeze, when he had a fiery vision.

“I wondered what the essence of the chilis would be like in a good quality hot fudge,” he recalled. “That is, literally, how the idea came.”

With his favorite Dutch processed cocoa, he experimented extensively until he invented a chili-infused hot fudge sauce that, he said, “amazed” people, including his brother in Texas, who became his first

Black’s goal was to make a premium product with a unique twist. He sought sensations that brought the palate to life — a smoothness and sweetness from chocolate combined with the “essence” of chilis to bring out notes of heat and flavor.

Black, a scientist by profession, got seven tasting groups together in his Sandy neighborhood. He’d test different types of chocolate, cocoas and combinations of chili varieties, then asked participants to fill out questionnaires.

“Even if people didn’t like spicy foods, they all said it’s the best hot fudge they’d ever had,” he said.

After perfecting his “proprietary blend” of seven varieties of chili peppers and finding the best cocoa, he leased a commercial kitchen, and with a humorous poke at our label-conscious culture, named his spicy creation Free Range Fudge.

Popular flavors include original, extra spicy, milk chocolate and peppermint fudge, which Black’s daughters say is “like a warm, spicy, ooey-gooey Junior Mint.”

New flavors for holiday offerings are in the test kitchen now.

Donning chili-patterned pants and wearing an aspirator and goggles while pureeing the chilis, Black makes his fudge in small batches, selling them through his website, www.blackmarkettradingcompany.com and at local stores. His family, including wife Jill, help cook and bottle the fudge. They work quickly, the beneficial result of Black’s production-efficiency studies. Daughter Marli does the photography, while daughter Kalen manages social media.

Soon, he hopes to have his own commercial kitchen in order to work on transitioning from small-batch to large-batch production for distribution to grocery stores.

“This is a passion,” Black said, and one that’s challenging to do while working full-time. But he’s having fun zooming around town in his Honda hybrid with a bold graphic of the Free Range Fudge mascot — a cartoonish chili pepper wearing a cowboy hat. On the rear window is written his favorite quote, “We don’t pen up our peppers.”

“Happy peppers make happy fudge,” he quipped.

With a 2-year-old, a part-time job, and a small farm she runs with her husband, she works late most nights. “It’s been a learning process of what I can handle and what I can take on,” she said. “I do things in stages.”

She’s hoping to add more classes, including online classes for her out-of-state fan base. One day, she wants to operate SweetAffs full time. Until then, she’ll work late into the night baking and decorating the dozens of cookies and several cakes she makes each week.

“I am grateful that I am in a place to make this a reality,” she said. “I try to be grateful for it and for everything I have.”

Food competitions take the cake

By Jet Burnham | j.burnham@mycityjournals.com Eight teams of students and teachers emerged from the dust of flour and sugar with creations such as panda-faced red velvet cupcakes and apple cinnamon cupcakes with apple cider buttercream and a last-minute caramel drizzle. The latter was named winner of Fort Herriman Middle School’s second annual Cupcake Wars held Jan. 22.

A passion for cooking, the thrill of competition and bragging rights, motivates many teens to enter cooking competitions.

“It lets them be creative in a way that school doesn’t always let kids be creative,” said Madison Heist, teacher and judge at FHMS. All seventh graders learn basic cooking skills. Older students take Foods and Nutrition classes as electives. The most serious high school students take two years of ProStart classes to prepare for food service industry jobs. But—it’s the contests that really take the cake.

Competitive cooking is a popular TV trend that has influenced many foods instructors to incorporate contests into their curriculum—who can create the best smoothie or ice cream sandwich? Others host afterschool competitions for any student who thinks they can craft the best pizza, burger or cupcake.

For more intense competition, the Family Career and Consumers Leaders of America (FCCLA) offers student competitions in Baking and Pastry and Culinary Arts events. ProStart hosts region, state and national competitions requiring teams to create and execute a three-course meal.

Young said competitions provide learning opportunities students can’t get in a classroom.

“In the classroom, they have a limited amount of time and oftentimes a limited amount of resources,” Young said. “Having students compete teaches them to try new things, expand their comfort zone, build confidence, and do hard things that they didn’t think they could do.”

JHS junior Jordan Castaneda likes that competitions allow him to be more creative. For the ProStart competition later this month, his team will make shrimp nigiri, stir fry chicken in a noodle nest, and layered mocha Chantilly cake. They will have just one hour and two gas burners to execute their menu and will be judged on taste, presentation, technique, time management, knife safety, sanitation, food cost, menu planning and business plan.

During competitions, students are expected to problem-solve on the fly. As a FCCLA event judge, Kristy Yeschick watches for how well students respond to problems under pressure.

“In the classroom they have that safety net,” she said. “If they mess up, it’s OK, they can do it again. Whereas in the competition, you’ve got to be at your top game.”

Copper Hills High School foods instructor Megan Maxfield said competitions teach teamwork, problem-solving, time management, and leadership skills.

When CHHS teams competed in the FCCLA regional Baking and Pastry event, problem-solving began weeks before the competition. The recipes they were given recipes for chocolate chip cookies and

garlic bread knots had errors, said senior Brooklyn Gutierrez. Measurements and cooking times had to be adjusted through trial and error during several practice runs.

At competition, the team had to adapt to even more complications: Their cookie dough got too cold, the kitchen equipment was unfamiliar, and humid weather affected their recipes.

FHMS teacher Kayla Martin, whose team has won cupcake wars both years, said skills gained through competitions benefit everyone, not just those interested in highly competitive culinary careers.

“Everybody works a fast food job at some point in their life,” she said. “So it’s good practice for working in a kitchen or a high stress job.”

Many students love the thrill of the stressful environment of competition.

“I like the pressure,” JHS senior Mia Conham said. “I think it’s fun and I get really competitive.”

JHS senior Holly Tang said when they are prepared, they can enjoy the competition.

“We always have a ton of fun,” she said. “We’re always laughing and joking with each other.”

Emma Powell, a competitor in FHMS’s Cupcake Wars, said it’s easy to forget about the pressure when doing something you enjoy.

“It has a competitive aspect to it but you also have fun in the moment,” she said. “Then you realize there’s 10 minutes left. There are people you have to beat. So you put more effort than you think you can put into it.”

It’s a life of learning for this wine educator

Not for vacation planning (she wishes), but rather to study Spain’s 17 autonomous wine regions and the dozens of unique appellations. There were thousands of wine facts to know, maps to memorize and soil conditions to understand. For 6 to 8 hours each day, Schowe sat at her desk studying for the Wine Scholar Guilds’ rigorous Spanish Wine Scholar certification program.

“It’s the hardest test I’ve ever taken, and I have a master’s degree,” joked the Sandy resident. But such diligent study is all in a day’s work for Schowe, the first female wine educator in the state who started Utah’s first official wine school, Wasatch Academy of Wine, decades ago.

Wine has always played a central role in Schowe’s life. She grew up near California’s wine country, where wine was appreciated and served with dinner and visits to wineries were regular events. So, when she moved to Utah in the ’70s, she said, “I anticipated a change in the wine culture.”

But, when she found herself at a Provo restaurant and the waiter poured her “wine,” which turned out to be a disguised bottle of Welch’s grape juice, she thought, “What kind of bizarre place am I in?”

Utah, she decided, was ripe for a proper wine school. But that would come a bit later.

Instead, Schowe, who had just received a master’s in education administration, found herself developing Utah’s first community education program serving children and adults with disabilities. Granite School District told her if it was going to succeed, she’d have to fundraise for the participants’ enrollment fees.

“I thought, ‘How incredible, I got a master’s degree just to do bake sales and car washes,’” she said. Then her thoughts turned from tedious cake baking to the joys of wine tasting.

She enlisted Utah chefs to donate food for a tax write-off and then gathered every oenophile (connoisseurs of wines) she knew to make a donation, bring a bottle, and learn about it.

“The [District] was impressed with my fundraising, but I never told them it started with wine,” she said. Enough money was raised to open several programs in the District that addressed the academic needs of adults with cerebral palsy, gave children access to wheelchair basketball, and created programs for developmentally disabled adults to learn independent living skills.

Several years later, in 1991, she started Wasatch Academy of Wine.

For Schowe, the appreciation and study of wine is a gateway to many stimulating experiences in life. Besides new tastes, aromas and textures, an education in wine opens up new worlds — the geology of a grape-growing region, its society, art, history and culinary expressions. “You can become intellectually and experientially connected to the world through wine,” she said.

While academic study is necessary, she values learning through experiences, especially through travel and meeting winemakers.

“Last year I was in Europe for two months. The purpose was to meet with winemakers, to walk through their vineyards, to watch them make wine, to visit cellars, to taste wine with their families and experience their food traditions,” she said.

“I bring those stories home and it greatly enhances the presentation in all my classes... it gives a deeper meaning.”

Her life’s goal is to taste every wine from every appellation in France, Italy and Spain and, while she’s tasted many, there are hundreds she hasn’t. “It is like a treasure hunt,” she said.

Her students today have increasingly sophisticated palates, Schowe said, so the Academy has expanded to include Wine Scholar Guild classes, wine dinner clubs, and popular food and wine pairings.

She’s delighted to now see local restaurants with well-researched wine lists and knowledgeable staff. And diner’s tastes have ventured beyond just wanting to know what the best Cabernet is, she said. People want to explore wines in detail, such as dry sherries from Andalusia, the southernmost region of Spain. That’s something she’s excited to teach now that she’s spent all winter studying Spanish wines.

“I look forward to planning new and creative ways for wine enthusiasts of Utah to learn about wine, where and how it is made, and connecting them with the hard working and caring people who make it,” she said.

Meatless doesn’t mean tasteless

By Alison Brimley | a.brimley@mycityjournals.com If one of your goals in 2020 is to eat less meat, you’re in luck. 2019 saw the widespread introduction of meatless meal options, even in fast food restaurants like Del Taco and Burger King. Of course, many people go meat-free for the sake of animals. But eliminating animal products is also one of the best ways to reduce your carbon footprint. Even just cutting down on meat can have an impact.

You might say meatless burgers are having a moment. Meat-free patties come in two basic categories: those designed to imitate meat and those that embrace their veggie essence. Of the meat imitators, the Impossible Burger (made largely of soy protein) and Beyond Burger (made of pea protein) reign supreme. They’re very similar to real meat in taste, texture and even macronutrient content. Veggie patties are usually made from a blend of vegetables, grains and seeds, and their macronutrient content reflects that. Overall — especially when prepared with all the fixin’s — meatless options aren’t necessarily healthier than their animal-based counterparts. But we’re just talking taste here.

If you venture downtown, plant-based eateries and meatless options are easier to find. But restaurants in the south Salt Lake Valley have some tempting offerings as well.

2. Hires Veggie H (Midvale) Unlike many burger joints that source their meatless patties from outside companies, the patty at the center of Hires Veggie H is house-made. The patty is a blend of carrots, broccoli, onions, green peppers, celery, mushrooms, rice, wheat, rye, oats, barley, seeds and spices that tastes a lot better than it sounds. It’s also topped with a soft bun, cheese and fry sauce. It’s not meant to imitate meat—the veggie patty is its own thing—but it might be as close to the greasy deliciousness of a classic Hires Burger as you can get without involving a cow. Plus, almost any of the burgers on Hires’ menu can be made with a veggie patty instead of beef patty, so there are plenty of options for meat-free eaters.

3. Dog Haus’s Impossible Burger (Sandy) Dog Haus is known for their hot dogs and sausages, but they do have a fair selection of plant-based options. Their Impossible Burger isn’t large, but it does have everything Utahns love in a cheeseburger: pickles, iceberg lettuce, tomatoes, cheese and fry sauce. The sweet King’s Hawaiian roll that serves a bun completes the sandwich. I dare you to tell the difference between this and a beef burger.

4. Crown Burger’s Garden Hamburger (Sandy) Crown Burger doesn’t make its meatless option easy to spot on a menu. But the Garden Hamburger is, in fact, vegetarian. There’s not much to it except for a tasty bun, fry sauce, fresh toppings and a Gardenburger patty (made from mushrooms, oats, cheese and spices). And while it’s not meant to fool you into thinking it’s made of meat, it is a pretty delicious sandwich.

5. Fueled Kitchen’s Black Bean Veggie Burger (Draper) Fueled Kitchen offers one of the most popular meat alternatives: a black bean burger. Their black bean burger has a subtle spiciness, accentuated by the tomatillo spread that tops the patty. To funeral or not to funeral. What I did when my husband asked me not to hold his funeral.

I’m about to pass a milestone, the second year of my husband’s passing.

We were married for 37 years, created a beautiful family and seemed to be living an enchanted life, being thankful for what we had and working hard to achieve our goals.

While our life together would seem nothing extraordinary to Hollywood, to us we had made magic. Our frugal lifestyle had allowed us to retire early in anticipation of travel, we created healthy and happy children, and had a good home. In spite of our challenges we had made it. Then we got the tragic news and a late cancer diagnosis left us stunned and floundering. Our own private Hollywood fairytale was over, my husband had precious few months left to live.

He would spend the next 2 months giving last pieces of advice to his children, catching up with long lost friends, visiting with family and friends, tinkering around the house taking care of little things that were lingering on his to do list and giving me a plethora of instructions. These included the little things, like who to take the car to when it needed fixing and remembering to leave a check under the mat for the lawn mowing man, to the much larger pieces of financial matters. His mind so

full of making sure I would be okay that these instructions would sometimes come in the middle of night and he’d wake me urgently to make sure I would remember that garbage day is on Thursday.

Then one morning he hit with a big one, he’d been thinking about his funeral service, or lack of, and announced to me that he did not want a memorial service, stating that they were a waste of money.

“Do not have a funeral for me, go traveling somewhere instead and tell our friends to get outside and make a good memory in my honor. Tell them, time is shorter than you think and don’t waste any more of it.”

When a loved one dies, we gather to celebrate their life. When we don’t do that it can leave us feeling empty and possibly a little guilty. If you opt to forgo the traditional funeral here are some things, I found helpful, to honor my husband.

1. Post a tribute on social media: Hit the photo albums and post a photo collage.

Ask friends to share memories on the post.

2. Have a gravesite friends and family reunion on their birthday or other special occasion. Set up chairs or have a picnic, laugh and share memories.

3. Create a new tradition. The process of creating a tradition can alone be very meaningful. Set a date to volunteer in

4. Go somewhere meaningful. Travel to a place you shared special memories or a place they didn’t make it to, this can be especially heartwarming if done with special family and friends. If you opted for cremation you might scatter a few ashes.

I leave a pinch of my hubby’s ashes when I travel to destinations we had planned to go together.

5. Plant something and watch it grow.

It could be a tree or a special flower that was special to your loved one. My hubby loved pumpkins, so I plant one in my yard each year to honor him.

6. Hold an anniversary memorial.

You may have skipped a funeral, but this doesn’t mean you can never have a memorial. If you are feeling a lack of resolution, pick another meaningful day to have a memorial. This could be as simple as a memorial BBQ or dinner party to a full formal memorial service.

Your family and friends will be there to support you no matter how you choose to close your loved one’s life. Honoring a loved one in a most personalized remembrance is absolutely beautiful no matter how you choose to do it. l

Carry a Tune About the time the peasants started to revolt, I was done with Cinderella. Yes, I was tired and grumpy (it was Tuesday after all) but the musical had gone on way too long and it just. needed. to. end.

I’ve read the book and watched the Disney cartoon a gajillion times – and I KNOW there are no rioting peasants in Cinderella.

But this musical not only had an uprising, it had a side story about the stepsisters and an idiot king being duped by his advisor. #FacePalm Turning fairy tales and Disney cartoons into live musical extravaganzas has become a thing; a thing that’s trying my (depleted) patience. Broadway writers take a perfectly-fine 90-minute animated movie and transform it into a two-hour (or more) event with NEW SONGS that no one cares about. The audience is just thinking, shouldn’t this be over?

I usually love musicals. I hum songs from Rodgers and Hammerstein productions, I adore Stephen Sondheim’s lyrical wordplay and Lin-Manuel Miranda redefined musical production.

But lately, I’ve found myself irritated with songs that seem unnecessary, boring or just meh. Do cast members have to break into song when someone goes to the barber, or the grocery store, or the high school library?

When a character walks out of the bathroom and violins soar as he sings about his love for toilet paper, I’m ready to throw my Jordan almonds to the floor and storm out of the theater.

Love songs are the worst.

We get it. The two main characters have a love/hate relationship. At this point in the musical, we love/hate them, too. I hear a piano chord and my shoulders tense, waiting to hear a song about how love is a disaster. (One hour later, they’ll sing a song about how love is glorious.)

There are big production numbers, infinite costume changes and (inevitably) someone jumps on the coffee table and tap dances while singing about the weather. If I jumped on my coffee table, it would explode into thousands of toothpicks.

There’s also a list of musicals that make you wonder if the idea didn’t come from a two-day drinking bender, followed by a concussion and a small bout of the flu.

Carrie should never have been a musical, in fact, let’s take all Stephen King novels off the list for future productions. King Kong on Broadway?? Where do songs fit into that disaster? And NO ONE has given me any good reason why Mamma Mia hasn’t been banned worldwide. Don’t get me started with Cats. Sports musicals are always iffy because who’s the audience? Sports fans?

Wife: But it’s a musical about the New York Yankees!
