SUPER CHEFS WIN YOUTH COOKOFF WITH TABBOULEH AND EGYPTIAN KOSHARY

T

he delicious smell of spices filled the Salt Lake Culinary for Culinary Education (SLICE) rooms July 6 at the first-ever Great Summer Cookoff. Four-person teams from various Promise South Salt City programs and the Salt Lake County Youth Services were competitors.

After 90 minutes, the Super Chefs from Promise SSL Utah International were crowned the winner. They prepared tabbouleh, a Middle Eastern salad of finely chopped parsley with tomatoes, mint, onion, bulgur wheat, and seasoned with olive oil, lemon juice and sweet pepper. They also prepared Egypt’s national dish, koshary (also spelled koshari), a mixture of pasta, rice, and brown lentils topped with a zesty tomato sauce with garlic and vinegar and garnished with chickpeas and crispy fried onions.

“We make a real effort to give back to the community,” Deb Holbrook, SLICE executive director, said. “With this competition, youth gain valuable skills for their lives. These skills will improve their quality of life whether or not they continue in the culinary world.”

The food was judged by South Salt Lake PR Coordinator Julie Taylor, filling in for South Salt Lake Mayor Cherie Wood, Isapela Freeman of Sapa restaurant, and a SLICE representative.

Super Chefs

The Super Chefs team was unique. The team members are refugees from three countries. There were sisters from Afghanistan, a member from Sudan and another from Burundi.

Never forget, never again: Event to remember Bosnian genocide hopes to bring more awareness

A

n event took place July 18, at the Salt Lake County Government Center on South State Street, to detail the horrific experience that had taken place 27 years ago: the Bosnian genocide of 1995.

The Emerald Project, a nonprofit, nonpartisan organization operating in the Salt Lake City region has been engaged in the fight against Islamophobia and the misrepresentation of Islam since 2017. They had their latest event with “Srebrenica: Never Forget.

Never Again.”

The first half of the meeting was committed to the Srebrenica massacre, July 11, 1995, in which the lives of 8,372 Bosniak (Bosnian Muslim) men and boys were lost by the hands of Bosnian Serbian forces as the women and girls were forced to be put on buses and sent to Bosnian Serb territories, where more malicious acts were committed.

This was all due to the idea of “ethnic cleansing” that Serbia wanted to act on to remove Bosniaks from Yugoslavia.

The second half of the event was dedicated to discussing current genocides happening around the world. “We hear this going on in a lot of media outlets, because genocide and abuse isn’t something that is advertised, it’s something that happens in secret and in the dark,” said Gary Croft, a spokesperson for the event. “So we want to shed some light on this.”

“It was the largest mass murder that happened in Europe since World War II, and yet many of us in this country have not heard much about it. The massacre was a result of Islamophobia that had been going on for centuries. The massacre lasted for 12 devastating days.”

South Salt Lake home to new Famous Dave’s Quick ‘Que

W

hat do Coon Rapids, Minnesota, Las Vegas and South Salt Lake City have in common?

Each has a Famous Dave’s “Line-service model” restaurant called “Quick ‘Que,” as in quick barbeque. However, the SSL location is the first drive-thru. The drive-thru is on the corner of Morris Avenue and State Street. It is just south of I-80 in a building that was once a KFC. The drive-thru is open 11 a.m.-9 p.m. Monday through Saturday, and 11 a.m.-8 p.m. on Sundays.

“I’ve lived in Utah my entire life and have been with Famous Dave’s for over two years,” Rob Mitchell, general manager, said.

“So, to say I was excited to be part of the first drive-thru model is an understatement. Our team is equally excited to offer our classic ‘que in this unique format to the people of South Salt Lake and the area. We invite everyone to drive on over and taste our famous barbecue themselves.”

Quick ‘Que model

“The Quick ‘Que model has been in the works at Famous Dave’s of America for a few years now and really is a version of the original counter-serve shack model launched

by Famous Dave Anderson himself in the late ’90s. For us, the twist is we are redefining fast-casual and finding new ways to evolve and serve our famous ‘que in a convenient manner, especially during the height of the pandemic,” Elaina M. Morris, CEO and president of Ascend Hospitality Group, said.

After studying the concept this year, Famous Dave’s plans to open 10 or 15 more.

The local franchisee, Ascend Hospitality Group, is onboard.

“We have two full-service Famous Dave’s locations in the greater Salt Lake City area —in Layton and West Jordan—and leaped at the opportunity to purchase and convert this KFC drive-thru. We are invested in this area and community, and believe quick, convenient and delicious barbecue is a niche that needed to be filled,” Morris said.

A Quick ‘Que counter or drive-thru is about half the size of a typical sit-down Famous Dave’s restaurant. The advantage to the company is lower labor cost. A Quick ‘Que needs about seven workers during busy times compared to double the number in a regular Famous Dave’s restaurant.

“Our menu is slightly modified from the menu that we offer in our full-service Famous Dave’s locations aimed at keeping the offerings quick and convenient for guests to enjoy on the go,” Morris said.

SSL Quick ‘Que serves some of the Famous Dave’s favorites like Georgia chopped pork sandwich and St. Louis spareribs. In addition, they have added items such as BBQ bowls, meat platters, and brisket french dip.

service and drive-thru—in Utah and Washington. They currently operate restaurants in both states.

Line-service model

The line service model, also known as the counter service model, is how fast-food restaurants work. Customers walk up to a counter and give their order or order from a vehicle.

Their food is prepared in a line and delivered to the customer at the counter, where they are sitting, or through a drive-thru window.

“The counter service model was exclusively used by fast-food establishments but is now used in more restaurant types to minimize labor costs. Employees are cross-trained to work the front and back of the house as food runners and cashiers. The

menus are also typically much smaller, reducing the labor necessary to track and order inventory,” Chole Henderson wrote on ZipInventory.com.

Famous Dave’s

Famous Dave’s is owned by Minnetonka, Minnesota BBQ Holdings Inc., which has nine brands, including Village Inn, Bakers Square, Champps, and Famous Dave’s.

Dave Anderson, a Chicago native, developed a passion for barbeque. He spent more than 25 years of his adult life searching the country for the best barbeque. Finally, he learned the only way to get great “que” is to hand-rub each slab with a blend of Southern spices and smoke them slowly over a pit of smoldering hickory.

With that knowledge, Anderson opened his first restaurant, “Famous Dave’s BBQ Shack,” in Hayward, Wisconsin, in 1995.

The business had few starts and stops until becoming Famous Dave’s BBQ. As of 2021, there are 180 Famous Dave’s in 33 states and four international locations – Winnipeg, Abu Dhabi, Al Ain, and Dubai.

Anderson won over 700 barbeque awards.

As a Native American of Ojibwe and Choctaw tribe descent, he was elected to the Native American Hall of Fame. He was always proud of his heritage and worked to give back. He served as Assistant Secretary–Indian Affairs in the George W. Bush administration. l

Grid City Music Fest features two spectacular performances for a special night

G

rid City Music Festival captivated audiences with some amazing talent from musicians to local vendors at The Commonwealth Room on the weekend of July 16. However, on the following night, many spectators had witnessed something truly special.

It seemed that many of the attendees came to see the psychedelic, folk-rock band Mapache, but it was the opening act, a oneman band called The Bones of J.R. Jones that garnered the attention of an audience that had predominantly never heard of him.

Jonathan Robert Linaberry, the name of the singer-songwriter, played a haunting, intimate, passionate set that beautifully fostered the emotions and senses of the crowd in visceral style.

“I’ve never heard him before. I discovered him for the first time tonight,” said Jake Reedy, who was among those drawn to the rustic, folky, bluesy nature of The Bones of J.R. Jones. “The music supports the vibe. It was fun; it was cool!”

After Linaberry’s performance, he came down to play one final song in the standing pit. People gathered around him at every angle as he sang and played without a mic nor amp—creating one of the highlights of the night.

es from musicians like Tom Waits and Bruce Springsteen to form his own, unique sound.

“I just try to lose myself in that moment before anything else in the world. Every show—the good shows, I feel like I can reach in, and tonight was a good show. I felt like I was ‘in it,’” Linaberry said.

The Bones of J.R. Jones played his first show of his tour in South Salt Lake and will eventually make his way to Georgia in September before heading back to his home state.

“I love Salt Lake. I have very good friends that live here and it’s always a treat to come out here,” Linaberry said. With a loyal fan base that had seemed to grow exorbitantly that night, The Bones of J.R. Jones is still an independent artist who has not signed to any record label at the moment.

“Find that bright moment and strike when you can. I’ve been doing it long enough and I feel like you pay your dues, play at crappy bars to five or 10 people, and hope the next time it’s 15, and the next time you hope it’s 20. It’s just word of mouth and a hope to impress people,” Linaberry said.

The second and final act of the night, and also what the majority of ticket buyers came to see, was Mapache, the Los Angeles based duo of Clay Finch and Sam Blasucci. They took the stage, giving a brilliant, ’60s and ’70s

inspired performance to close the night off.

“They have such a cool sound—a really laid-back energy and I think they’re just so good at songwriting,” Reedy said. “I feel like in a real genuine way, they go back to a simple time when things were more carefree.”

Mapache, meaning raccoon in Spanish, drew the majority of the crowd with songs like “I Love my Dog” and “They Don’t Know at the Beach.”

Local eateries like The Taste Masters and Sweet Vinyl Bakeshop provided food and drinks came from local brewery Han’s Kombucha.

Grid City Beer Works collaborated with State Room Presents to make the festival happen and they will do so again Aug. 5-6 as well as Aug. 20-21. Each weekend will include different vendors and each night will feature different musicians. Tickets available at gridcitymusicfest.com. l

Parade, festival and fun for city’s July 4th celebration

E

very year, South Salt Lake holds a Fourth of July parade and festival from 2250 South 300 East to Fitts Park.

However, this year, with a global pandemic and fear of fire hazards during a looming drought, the parade was not only cut short in time and distance, but the festival that followed at Fitts Park lacked fireworks.

“It’s a much shorter space,” said Tabesha Angelo, a South Salt Lake City local who has attended the parade and festival every year for the last 12 years. “Also, it usually starts earlier, usually one to two hours earlier.”

No doubt the limitations on firework sales has impacted the usual festivities. Many areas of the Salt Lake region placed a ban on firework sales and usage.

Although South Salt Lake was not under the list of restricted areas, where violators could have faced fines up to $1,000, the city kept proper precautions in case of an accidental fire.

“Maybe not this year,” said Angelo, regarding the idea of lighting her own fireworks for her children. “We’ll be celebrating by meeting up with friends and family to go watch the fireworks someplace.”

The parade—which included a procession of firefighters, belly dancers, students and staff from the Historic Scott School, and South Salt Lake Honorary Colonels (a civic organization devoted to supporting the local police department), etc.— succeeded in drawing a large crowd of excited and attentive locals.

Soon after the parade, onlookers migrated to Fitts Park, where the festival was bustling. Children played in inflatable bounce houses, ran through bubbles; families played cornhole, had food and drink from the food trucks, and socialized with neighbors as live music played.

“I’m impressed. The park is fairly full. I would expect there to be into the thousands of people. Definitely more people than last year. Obviously, Covid restrictions are not as restrictive as they were last year,” said Eric Sloan, battalion chief of the South Salt Lake Fire Department.

With restrictions, the illegal usage of fireworks and a possible fire was a serious concern for the fire department. “We are in a drought, and the restrictions aren’t meant to dampen Fourth of July festivities, they’re out there for everyone’s protection because we are so dry,” Sloan said. “As long as people are doing legal fireworks, they’re fine.”

Some fireworks were legal to do in the city; however, they were illegal to do on open grounds, the west side of Ninth West and in any city facility such as parks and fields. l

“I have no clue how they do it,” Alya Al Mashhadani, a paraprofessional at the school and adult leader, said.

Competition

Six teams competed: Promise SSL – Granite Park (4 Pals); Promise SSL – Historic Scott School (Let’s Roll Dumplings); Salt Lake Youth Services (Baconaters); Promise SSL – Utah International (Super Chefs); Promise SSL – Cottonwood (Dali Chefs); and Promise SSL – Hser Ner Moo and Kearns St. Ann (Tasty).

Team members range from 13 to 17 years old. Each team had an adult leader ready to help with safety issues. SLICE chefs also helped the teams.

They ranged from Hawaiian surf ‘n’ turf, green beans and rice (Baconaters) to Chinese cream cheese wontons and fan ken chao dan (Let’s Roll Dumplings) to Indian panipuri and Tibetan vegetable thukpa (Dali Chefs) to Peruvian ceviche and street tacos (4 Pals) to Mexican fresas con crema (Tasty).

The top four teams were honored, but every competitor received a gift for participating. The Super Chefs winning team received individual trophies, gift baskets and a small kitchen appliance.

The Salt Lake Institute for Culinary Education (SLICE) is located at 2233 S. 300 East in South Salt Lake City. SLICE is the only culinary school in Utah approved by the American Culinary Federation for its 12week professional program for those interested in becoming a chef or baker.

Comcast introduces new service offering to support the ACP, where Utahns can apply for free internet

I

n today’s world, access to high-speed internet is not a luxury, it’s a necessity. Unfortunately, many Utah families can’t afford to pay for internet access without cutting back on other essentials.

The Affordable Connectivity Program, created as part of a bipartisan infrastructure law, helps millions of American families reduce internet service costs. As the only internet provider in Utah participating in ACP, Comcast has increased its efforts to bring awareness to the program while helping families receive $30 each month toward connectivity costs.

“It's never been more important to make sure that every Utahn has access to in-home broadband,” said Bill Crim, CEO of United Way of Salt Lake. “We are grateful for Comcast's contribution to closing the digital divide and will continue to work with Comcast and our other partners to remove barriers and address the needs of those without access in every zip code in our community.”

To access the savings, people can sign up for Internet Essentials Plus, a service that is free after the ACP Benefit, at local Xfinity stores. Internet Essentials Plus includes 100 Mbps speed, a cable modem, access to WiFi hotspots and unlimited data for $29.95 per month.

Any Xfinity customer across all Comcast markets who qualifies for ACP can apply their $30 credit toward their monthly internet bill.

As an added bonus, Internet Essentials customers can get one Xfinity Mobile Unlimited line with 5G for $24.95 a month plus tax when they

qualify for ACP. In addition, through its Project UP program, Comcast commits $1B to advance digital equity and build a future of unlimited possibilities.

“Our state is making great strides toward digital equity, thanks to engaged community members and dedicated partners like Comcast,” said Liz Gabbitas, digital access and education program manager with the Utah State Library Division. “These collaborations are how we'll get every Utahn connected.”

ACP is available for homes with an income of less than twice the federal poverty level, $55,000 a year for a family of four or $27,000 a year for an individual. Also, those who receive SNAP/EBT, Medicaid, or free and reduced-price school lunch would also qualify.

ACP is a game-changer that makes highspeed internet available to families across the state. United Way of Salt Lake operates a 2-1-1 help center in Utah, where 6% of calls are related to bill payment assistance. The center will refer inbound callers to Internet Essentials and ACP when calls refer to internet bills.

Folk punk artist brings his American Dream to South Salt Lake

ith an acoustic guitar and a canorously bellowing voice, musician Bryan McPherson stopped by Tailgate Tavern in South Salt Lake as part of his tour to help promote his new album, “How to Draw Everything.”

Originating from Boston, Massachusetts and then moving to California before migrating to Montana to seek inspiration and clarity, McPherson has traveled throughout the United States and the United Kingdom to share his musical skills with zeal and spunk, and eventually becoming revered by music producers, critics and bands like Dropkick Murphys and Flogging Molly.

Usually coming to Utah once or twice a year to perform, McPherson ultimately decided on choosing Tailgate Tavern as his next venue. “They’re supporters of original music,” McPherson said. “So I reached out and they got right back to me and we were able to set it up.”

So, on July 8, locals came by, trickling through the door as openers, Mike Ornery and George Nelson, both folk punk artists, took the stage before making way for Bryan McPherson—fit with a harmonica holder around his neck, guitar, mic and a stage presence that could allure

even the most captious of folk punk critics.

“It’s like the Southern version of the West—there’s a lot of counter-culture here. Punk is not as hardcore as it was in the ’90s but it’s definitely still here, and I think a lot of scenes are still here,” said Steve Harwood, a South Salt Lake City local who attended the show to support Ornery, his longtime friend. “There’s a lot of angst bubbling beneath the surface here. There’s a lot of religious autocracy here, and there’s a lot of pent-up energy, a lot of duality, and I think that’s why bands love to come here—because they feel that.”

Harwood admitted he is not partial to a lot of folk punk music; however, it is the energy and the captivation of the environment that brought him to see the musicians perform. The crowd inside the tavern was diverse, from fans in punk rock attire to those, like Harwood, wearing newsboy hats and flannels. Regardless of the crowd and their individual particular interests in music, it was the energy that drew locals to the event.

Local speech therapist offers new hope for stutterers

I

t is common for children between the ages of two and seven to develop a temporary stutter.

“Some kids are short term and we can fix those really quick,” said speech language therapist Jayna Collingridge, M.S., CCCSLP. “But if it's an ongoing issue, stuttering, for the most part, isn't curable. So it's going to be a lingering issue in somebody's life.”

About 1% of the world’s population has a stutter, which is a neurodevelopmental disorder. With traditional behavioral approaches, speech therapy for stuttering could last for years. But with the Palin Parent-Child Interaction therapy, which is a cognitive-behavioral, solution-focused brief therapy, children and parents learn how to positively live with the disorder.

Collingridge loves that the new method invites children and their families to talk openly and positively about stuttering.

“If you are going to have to deal with something throughout your life, wouldn't you want to have the most positive outlook on it?” she said.

Collingridge was just one of 21 speech language pathologists worldwide invited to learn the Palin Parent-Child Interaction stuttering therapy this June at a workshop sponsored by The Stuttering Foundation and Boston University.

As the head of the speech therapy department at Providence Hall charter school, Collingridge has a caseload of 120 students, K-12, who have a range of speech and language challenges. This year, eight of them are stutterers, more than she’s ever had in one year, which inspired her to seek out additional training.

“If there's something that I think might help my students, then I absolutely want to learn it,” she said. “If there's something more that I can do to help them have a better life, then I absolutely will do it.”

The Palin PCI approach is a much different method than she’s been using for the past 24 years as a speech language pathologist.

“It has changed the way that I think about stuttering in general,” she said. “I have to consider the child, what their needs are, what the desires of the family are, but I absolutely see this being possibly life changing for certain families.”

She has already begun to implement it with clients in her private practice.

“I think this, for some people, might be all that they need,” Collingridge said.

“Maybe it's just a piece of the puzzle, maybe it's something that'll be helpful, or it might be the end of someone's need for therapy.

Once parents change their interaction styles, they've learned that they now have the tools to help the child communicate as effectively as possible, and it doesn't necessarily require ongoing therapy.”

Parents are a vital part of the Palin PCI method. In her private practice, both parents are required to attend every session. However, that kind of parent involvement isn’t feasible in a school setting.

While implementing the method at Providence Hall will be more challenging, Collingridge is confident that she’ll be able to incorporate many aspects of the method and invite parents to be more involved.

Collingridge has also reached out to colleagues who work in public school districts to let them know about the new approach.

Private speech therapy is also an option.

Local private practice speech and language pathologists can be found on the American Speech-Language-Hearing Association’s website. Collingridge said because stuttering is not a high incidence disorder, it may be more difficult to find a speech therapist that specializes in stuttering.

Tips for conversing with someone who stutters: • Listen patiently and calmly. Slow the pace of the interaction, pausing periodically. “The faster we speak, and the more excited we are, the more excited the other person is going to be,” Collingridge said. “That's going to probably increase the difficulty of trying to get their words out.”

• Be aware of your reactions. If you look impatient, uncomfortable or embarrassed, it will stress them out, causing them to stutter even more.

• Do not finish their sentences for them and don’t interrupt or talk over

• “Don't feel like you have to fill those silences. It's okay to wait for someone to put their words together,” Collingridge said.

• Talk about it. Let them know it’s okay if they stutter. Ask if they need any accommodations. A teacher could give them a heads-up if they are going to be asked to read aloud, or they could offer to let them give their presentation in a small group instead of in front of the entire class.

arents involved in a child’s education create an environment for scholastic success.

But when parents feel disconnected from the school system due to language barriers, cultural differences or their own lack of education, a student’s chance for success drops.

Granite Family Engagement Centers help families engage with the education system in ways that empower them to get involved in schoolwork and the classroom.

“We know the value of the role of parents in education and all the data says very clearly that when families are involved in children’s learning and partnering with the school, the kids have so much more ability to reach their potential,” said Jadee Talbot, Granite School District family and community engagement director.

Granite Family Engagement Centers foster communication between families and teachers through programs and classes that engage parents. Centers offer ESL courses and computer skills, like using email and Zoom, and learning how to use the district’s parent portal to monitor a child’s progress in the classroom.

Parents who understand the system can help their children more effectively. Those who use the centers’ programs develop confidence to assist in the classrooms and even become leaders in the school.

One mother worked with the center at Olene Walker Elementary in South Salt Lake.

When she realized her 5-year-old was struggling, the mom felt empowered to create a kindergarten club. Working with kindergarten teachers and the center coordinator, she planned activities for students to help take them to the next level.

It was a proactive approach from someone in the community who understood the area’s demographics and needs, and stepped up to create a vibrant program.

“We want the parents to own the space.

If there are programs they’d like that aren’t being offered, we’d love to hear that type of feedback,” Talbot said. “It’s such an intrinsic motivator to see your kid thriving because you’re doing that extra work with them.”

There are more than two dozen Family Engagement Centers operating in Granite School District. Some centers are located in a school classroom, others have a separate building on school grounds.

With ninth graders now moving into high schools, the district has purchased seminary buildings from The Church of Jesus Christ of Latter-day Saints that sit on junior high sites to convert to engagement centers.

Some of the bigger centers, like the ones at Olene Walker and South Kearns Elementary, can serve parents from neighboring schools.

Kyndal Kruse, a family engagement center specialist, said she has seen parents become involved with the schools in a more substantial way. Parents voices are important to communicate the needs of their kids, as well as let school officials know about concerns in their neighborhoods. “[The parents] feel more comfortable in the school and more comfortable in leadership roles in the school,” Kruse said. “We’re really starting to thrive when parents are stepping into community council or coming to speak in front of faculty meetings. We’ve even had a couple of families in our centers become family center coordinators.”

The centers are seeing a return on investment as children move through the school system, graduate from high school and come back to be involved in their hometown community through service or donations. Football summer camps bring new opportunities, new challenges for coaches

I

t’s that time of year when high school football coaches around Utah try to figure out what they have at their disposal for the coming season. For two coaches in particular who are good friends off the field and are also on opposite ends of the coaching spectrum, the feeling is similar in some aspects going into 2022.

Bingham head coach Eric Jones is optimistic. Despite never having been a high school head football coach, he is excited about his team’s prospects going into the 2022-23 season. Summer camp moved right along in his estimation and the learning comes with the job.

“Camp is going well. Making lots of mistakes but that’s good. Gives us something to coach and improve on. We’ll get there,” Jones said.

In his first season at Bingham after having been a longtime assistant at Roy under the legendary Fred Fernandes—who later followed Jones to Bingham at Jones behest and became the Miners offensive coordinator—Jones brings expertise on the defensive side of the ball, in particular.

The new Bingham head coach and his staff welcomed approximately 165 kids June 21 to Ron Thorne Stadium. Each of the 165 will be assigned to one of four Miners teams (freshman, sophomore, JV and varsity) after that camp is over and after the kids have been evaluated by Bingham’s coaching staff.

On the other side of the valley, nestled up against the Wasatch Mountains is Cottonwood High School, home of the Colts, where head coach Casey Miller is dealing with a completely different kind of problem: numbers. The fourth-year head coach is also optimistic he’ll have what he needs when his camp begins July 11 and he is banking on that all of his players will be attending.

“There are only 60 kids in the program,” said Miller, who added that like Bingham, his Colts will be doing the camp at school and not at an area college. “We’ll practice in the morning, we’ll have meetings and team building throughout the day, and practice again in the evening.”

For an independent that was on the brink of having its football program fold several years ago for the first time in school history, and since that time has been consistently improving its product on and off the field, Miller has been doing everything in his power to keep Cottonwood High School football afloat.

The Cottonwood coach is fighting like crazy to not only keep the program solvent during difficult times by holding fundraisers around the clock. Miller was urging his kids to keep their grades up this past semester so that he can have enough guys on the field to actually play a game when the

Utah high school football season officially begins July 25.

Last year, that was a problem for the Colts, who in several games were only able to field about a dozen players on varsity—something that forced Miller to have to play nearly all of his players both ways on offense and defense for the entire game.

And, some had even played the JV game the day before, he added.

In order to fuel their bodies properly during the two-a-day camp, however, Miller has had to get creative—to the point that he and his wife pay for four meals worth of food out of their own pockets for all four days of the Cottonwood football camp and cook it all the day before camp gets underway.

“A lot don’t get them at home,” Miller said. “It’s important they get shown it’s possible to have good food three times a day and it isn’t just Pop-Tarts and Takis.”

Miller added that by doing things this way, he’s keeping costs well below what it would be to go to a camp and gives the kids more freedom to do more activities.

“It all means more work for my wife

and I, but it’s fun,” Miller said.

That’s a different kind of problem than that of Bingham who has so many kids that the real problem comes not in finagling enough nourishment for the players, but in figuring out the final 10% of kids who will be playing on the varsity team.

“We’re constantly evaluating practice drills, practice reps, and scrimmage reps through the use of film,” said Jones, who will dress 80 to 85 kids per varsity game.

“The actual players on the field getting the majority of the reps would be between 3540.”

For the scrimmages, Jones was able to line up several local high schools to play against two days of the week—the majority from Davis and Weber counties.

“I had a hard time finding others to participate with us. Had Farmington originally but their helmets aren’t back from painting,” Jones said. “So we ended up with Layton, Copper Hills, and Roy. We scrimmaged all three of them the [third day of camp] at Layton. On the [final day of camp] we scrimmaged Layton and CH at our place for about an hour each.”

Jones is taking over a Bingham team that lost over 40 players to graduation so he’ll have some holes to fill. Above and beyond that, the Miners have a new offensive coordinator, a new defensive coordinator and new head coach so there will be a heavy learning curve as well.

“It’s a long process,” said the firstyear Bingham head coach. “These kids are on their third OC in three years and second D.C. That’s hard from a learning perspective. The kids are improving and getting better with it though.”

That said, another trend in Utah high school football may be developing, because for both coaches, holding summer camp at their own high schools is not as cost-prohibitive. For Jones, the reasons are simple and threefold.

“I don’t like going out of town for three reasons: too expensive, I can’t pay my assistants for their time unless we stay home, and we get more done at home.” l

FUNDING OUR FUTURE: Doing the Responsible Thing for SSL Residents Concerning this year’s budget, the jump is a big one. The aim is to take a more comprehensive approach not only to maintaining the City’s essential services but to take the leap in becoming more proactive Mayor Cherie Wood with its increasing demands. Fixing, improving, or adding to our services and amenities at 2022 prices, with a 2006 budget doesn’t work. This budget includes higher utility fees to fund essential water and sewer bonds; as well as a property tax increase to meet current and future levels of service citywide. Bottom line – South Salt Lake can’t run today’s city on yesterday’s dollars.

In my 12+ years as Mayor, one item has consistently been a top priority for residents: public safety. I’m proud to say that we have excellent Police and Fire departments as well as Code Enforcement and Homeless Strategies departments. But we are at a critical juncture for maintaining essential public safety services. Our city has grown and changed over the last decade and projections show that we can expect 10,000 new residents in the next three years.

We simply lack ongoing funding to support the retention and addition of qualified police and fire personnel to meet our most basic needs.

The solution is simple: Our City must create new and stable revenue to fund our Police and Fire departments.

Our City Council has proposed a Public Safety Service Special Revenue Fund specifically for public safety. A new property tax levy would generate $3.5 million a year for that fund to hire six new police officers and four new fire department personnel. What does that mean for you? More officers and fire personnel result in an increased presence, faster response times, and ultimately, a safer city.

For the first time in our City’s history, we are investing in a stormwater utility to better maintain our storm drains and keep our waterways clean. The incremental increase in sewer utility fees will fund the CVWRF upgrades required

by state and federal regulations and the increase in water utility fees is going to fund a new well. The average household will see a property tax increase of $296 annually.

An increase in the South Salt Lake portion of property taxes is serious business and I don’t take it lightly. This would be the first property tax increase in South Salt Lake in 16 years. (Remember that South Salt Lake is a single line item on your County Property Tax bill.) Clarissa Williams, City Council At-Large Close your eyes. Now can you remember any of the librarians from school? Ms. Van Gundy was my elementary librarian in the little community of Ganado, AZ, on the Navajo Nation, where I attended Ganado Primary School. The school has since been torn down due to asbestos and rebuilt. I can still recall its library, the tables were placed in the center, with books lined on the wall. The carpet was red, or was it green?

No matter, but the second-level balcony in that library I can still remember very well.

My teacher was Ms. Van Gundy, in her brown corduroy dress, wearing a cardigan, and with those oh-so-comfy shoes.

She would lead the class up the balcony of the library, and we would sit down on floor mats for storytime. If you were lucky enough, you could grab a colorful bean bag to sit in.

She would grab a book and begin to read to the class. She would occasionally incorporate the use of puppets as well.

After storytime, she would ask questions, I’m sure it was to see if we were all paying attention. If you answered them properly, she would have a sticker or those cool bookmarks as prizes.

After storytime, we could play for a few minutes, or otherwise, browse the books and take them home. Taking home books to read, I always thought was the best feeling. However, remembering to bring them back was always a challenge. I think if I ever had fines, it was because I was always late in returning my books. It’s probably the best fine you could get.

Fast forward to the present day. South Salt Lake is welcoming a new library. Once housed in the Columbus Center, the library has a new home on the old grounds of

the old Granite High School. The building itself is magnificent.

Housing thousands of new books, and waiting for readers to immerse themselves into new adventures. Inside there are areas where residents can set up for study time and even find a quiet workspace. A beautiful amphitheater has been built on the west side of the building. Now, while living in an age of technology, we do have e-books. But still, there is just something about having a book in hand. Smelling the pages of a real book brings me back to childhood. So grab your family, and tour the new library. Sign up for a library card and make memories with your family!

Public Safety Collaboration is the Key to HRO Success

Message from SSLPD Chief Jack Carruth

Homeless Resource Officer (HRO) Chad Leetham regularly attends a Multi-Agency review meeting which includes the Mental Health Unit Team with the Unified Police Department. This collaborative case management review helps outline wraparound resources to support their clients. In conjunction with law enforcement officers, are mental health providers, homeless resource personnel, counselors, case managers and various specialty support staff.

HRO Leetham also takes time monthly to support the Mobile Crisis Outreach Team (MCOT) which meets with the Road Home Shelter, the Men’s Resource Center, and Shelter the Homeless personnel to discuss those with mental health concerns to provide the appropriate support and resources. Case managers work with these clients to achieve short and long-term goals and solutions.

HRO Leetham has specialized training in crisis management, Autism, and mental health concerns. He is a leader in helping clients find the necessary tools, skills and resources to assist them. We appreciate his dedication, passion, and support in serving clients experiencing homelessness and our community.

Join Us at Night out Against Crime Message from SSLFD Chief Terry Addison I hope everyone has enjoyed their Independence and Pioneer Day holidays. I would like to thank all of the residents in the city for your help in keeping July safe. The firework restrictions that were placed throughout the City helped our community by drastically limiting the firework-related fires that we previously responded to years past. Not only did this help in property conservation and life safety, but it also helped the City save a much-needed resource; water.

On August 2, from 5 pm to 8 pm at Central Park, the SSLFD will be participating in the National Night Out Against Crime and Emergency Preparedness Fair. This is a time when we get to connect with the community and share public safety and disaster preparedness tips with our residents. The fire department will

have an inflatable firehouse where we will teach fire safety in the home. Topics will cover Exit Drills In The Home (or EDITH), the importance of smoke detectors, cooking safety, and other disaster-related safety tips.

Additionally, we will have a booth set up in to share information and recruit for our CERT program. The Community Emergency Response Team (CERT) program educates volunteers about disaster preparedness for the hazards that may impact their area and trains them in basic disaster response skills, such as fire safety, light search and rescue, team organization, and disaster medical operations.

We hope to see you all at the night out and have the opportunity to share our knowledge with you so we all can build on our disaster preparedness.

Community Happenings Celebrate SSL: The Central Park Neighborhood As South Salt Lake celebrates 2022 as the ‘Year of the Neighborhood’, we are highlighting the neighborhoods that make us unique and taking note of what makes them so special. Take a moment and find out about some of its history, landmarks, businesses, and what makes it uniquely a great neighborhood in South Salt Lake!

If you look on the original plat map for the neighborhood around 2700 South, you will see the words “Central Park” and wonder why. The original developer was inspired by the famous NYC park and the name stuck, not just on the blocks, but also on the Central Park Ward building, condos across the street and at the new(ish) Central Park, formerly Woodrow Wilson Elementary.

Community Places This neighborhood holds three of South Salt Lake’s biggest destinations - City Hall, the Columbus Center and Central Park Community Center. All three of these sit on sites of former schools, including City Hall, which replaced Madison Elementary. The population grew older over the years, but kids have gained importance as these places became sites of afterschool programs, preschools, and parks, too. Every home in this neighborhood is within a few minutes’ walk of a park, trail and community center. So get out and enjoy it!

Ida & Laurie Bickley Park and the FitLot – 2508 South 500 East Adjacent to the Columbus Center, this all-ages and all-abilities park was named after two remarkable city residents: Ida and Laurie Bickley. This dynamic duo volunteered at the Columbus Library three days a week, for over 14 years (until Ida was 94 Years old). The city is honored to mark the impact of ordinary citizens on our City’s history, fabric, and community!

Businesses: State Street was the original Utah Highway, and because the first auto-oriented shopping strip in the state. Over time, some businesses closed, and others opened, but the character is largely the same. Many historic buildings, small businesses and flashy facades line the major streets here.

August Beautiful Yard Award CONGRATS TO ADAM AND STEPHANIE TON Xeriscaping is definitely the growing trend for beautiful yards this summer in SSL. A huge thank you to the Department of Workforce Services who provided funding for summer field trip opportunities. Our elementary youth were able to go to Hogle Zoo, Clark Planetarium, Loveland Living Planet Aquarium, and Tracy Aviary.

Promise South Salt Lake and Salt Lake County Youth Services put on the 1st Annual Great Summer Cookoff and it was a savory success! The cooking competition was hosted

by Salt Lake Culinary Education (SLICE) whose facility is worthy of the cooking shows you see on TV.

Teens from PSSL and SLCo prepared in the weeks prior to the main event by participating in cooking clubs to practice their skills and decide on their menus. The teams were tasked to create an appetizer and the main dish to be presented to the judges which included representatives from the City of South Salt Lake, Sapa, and SLICE. The skills in the kitchen by the teens were notable and even had the professional chefs of SLICE impressed Some of the dishes presented were ceviche, surf n’ turf, wontons, and steak fries, but the winning dish came from the Utah International Charter School team who presented a Middle Eastern tabbouleh and Egyptian Koshary.

We had so much fun participating in the 4th of July Festivities.

Youth and staff came together to be part of the parade and then helped with the activities in the park. It was great seeing the community come together to celebrate and get to know one another.

Two area outstanding Granite teachers, one principal applauded for education excellence

hree area top educators in Granite School District were recently honored amongst their peers and students for their excellence.

Twin Peaks special education teacher Colette Madsen, Cottonwood High School English teacher Kathy Hess and Woodstock Elementary Principal Brenda Byrnes were each surprised to learn of the honor.

“They said it was an assembly and the kids like going to the assemblies and I was thinking, ‘I didn’t even know we had one,’” Madsen said. “I was heading down with them and then was told I needed to pop into the office about switching money in an account. I'm like, ‘I don't have that money,’ but I was told to sign this form— and I realize now, it was a fake form. So, I hurried right into the assembly, and I was like, ‘Why is there a camera in my face?’ I totally didn’t know.”

Each year the Granite Education Foundation, in partnership with the Granite School District, awards nine teachers and one administrator an Excel Award of $1,000 apiece. Each awardee was nominated by either a student, parent or colleague.

Granite School District Family and Community Engagement Director Jadee Talbot said more than 1,500 nominations were submitted this year.

“Nominees are then invited to submit an application to be considered for the next round,” he said. “From the applications, the list is narrowed down to a finalist list.”

Then, the Excel committee visited classrooms before the winners—who represent the 2,961 teachers at 87 schools— were announced.

“I was nominated and applied, and they did the observations; it was all before winter vacation and in January, so I never gave it another thought,” Madsen said.

“I still can’t believe this. I’m still kind of numb.”

The 15-year veteran teacher originally planned to be a commercial artist.

“When my daughter went to kindergarten, I started working at the school where she was going because I had to go and pick her up and I fell in love with special education,” she said.

Through an alternative learning route, she was able to gain her education while being a paraeducator in Jordan School District. After she graduated, she was offered a position at Twin Peaks, where she has taught for 13 years.

“I was extremely happy, and I can still do art with the kiddos. They’re visual learners so I can bring that in with the way I teach and communicate. A lot of our

students are non-verbal and because they think in pictures, not words, we use a lot of pictures, picture schedules, picture communication. It is very much visual, and the kids are so fun. When you know how they learn, a bit slower and in a different way, you’re able to adapt the teaching. There are days when you watch them succeed; you watch the little milestones,” said the kindergarten through second-grade teacher. “I just love teaching.”

Even though she has ways to acknowledge students, Hess said she was surprised for being acknowledged herself.

“I certainly feel honored,” Hess said.

“I recognize how much the District cares for teachers. Granite is a huge supporter of the teaching profession and of the students.

“It was quite a shock,” Hess said as she watched her husband, children and grandchildren file into her classroom along with other district and school personnel.

“We had read ‘Frankenstein’ and a student was just ending her presentation and sharing a beautiful drawing when everybody started coming in. It was still for about 10 seconds, then I realized what was going on. It was just kind of overwhelming.”

Along with observations and paperwork, Hess had shared with the Excel committee her teaching vision and why she loves it. She also shared the focus for inclusivity and voice she incorporates in her teaching.

“The focus is on how do I find my voice and then, when I find my voice, what can I do with my voice? What is the purpose of not just tolerance, but inclusivity?” she said. “We worked on acquiring graphic novels for a fundamentals class so that they can read some of the classics more on their reading level. We want students to be able to read more books on a social justice platform so they can become involved.

They've chosen books that they are reading, they’re getting into groups, and they will be diving into social justice issues that are so important for them. They see what's going on in the world and they've got a voice and know that they matter.”

Through reading, Hess said students are looking at social issues and becoming more understanding.

“I have found they are much more accepting and tolerant of others’ perspectives. Their perspectives have just not been tarnished, and we're not only recognizing what the problem is, but also that they have got some very keen ideas on what social justice should look like in the world. So, we have about 10 minutes where we talk about your perspective and open up for two minutes. There are those that would prefer not sharing vocally, so I give them an opportunity to write some of their questions or concerns on a paper.

But everyone has an opportunity to share in this atmosphere that is safe,” she said, adding that she has been an advisor to a

“It is funny because I almost didn't go into the meeting because I was wanting to help a student,” she said. “But the director, she was kind of like, ‘let's do this. Then we'll circle back around to help that student.’ Her job was to get me locked away in this room so students could come in the gym. Then, they told me that there was an incident in the gym so they needed me. I walked in there having no idea. I did hear noise, but we have PE on Monday, so I just thought something happened in PE. I was completely shocked.”

Byrnes first saw her family, then Granite School District Superintendent Rich K. Nye holding a congratulatory sign.

“I knew I had been nominated for the award. So, at that point, I figured it out pretty fast, and the kids were so cute. They were just screaming and cheering for me; it was really fun and so sweet how happy and excited they were for me,” she said. “I got teary-eyed and emotional. It's a huge honor and something that I never thought I would win.”

Byrnes, who taught second grade at West Valley Elementary, just completed her fifth year as Woodstock’s principal.

She also has served as assistant principal at Cyprus High and Eisenhower Junior High.

“I wanted to have a bigger impact, to be able to help more kids so I became an administrator. So even though leaving the classroom was hard, because you're one step removed from the kids, I did it so I could work with the adults, and the adults are going to be working with the kids, so I realized, we’ll have a bigger impact on them,” she said.

Now she is leaving her principal position to hire teachers for the district, so they, too, can have a positive impact on students.

“This all has just been a big circle of emotions,” she said. “I am very honored.” l

ood insecurity is often cited as an invisible problem. It effects children everywhere, and yet, it’s not always evident that a child is at risk of missing a meal. During the school year, children who might not have access to food otherwise, rely on school for nourishment. The summer months, which should bring joy and freedom to children, suddenly become stressful and scary.

“Nothing is scarier than food insecurity,” The Granite Education Foundation said via their Facebook page. “Granite will operate three Community Food Pantries throughout the summer months.”

The foundation is one of many organizations trying to help combat summer hunger. Summer, with its scorching temperatures and long days, already make it difficult for students to stay fed, let alone hydrated.

Summer food pantries are a necessity during a season that often gets overlooked.

Here in Utah, the summer months are when donations are at their lowest. In fact, major providers like the Utah Food Bank rely on the giving season, winter, to make up for these sizeable gaps.

While the food bank is a great resource for those seeking food, its location isn’t always ideal for those who may not have the money to spend on excess transit, especially during the current inflation crisis with high gasoline prices. “It falls back on the community, and we want to do our part to make sure we can take care of those in direct need. If you, or someone you know, needs assistance during the summer, [they can visit our web-

site for more information on locations and times],” the foundation stated on Facebook.

According to the foundation, over 54% of students in Granite District are at an economic disadvantage. Moreover, major fallout from the pandemic and inflation have pushed more families into the brink of poverty than in years prior. Not only does the foundation help with providing food, but they also offer students backpacks, shoes, and other essential items to help students succeed in school.

“As a school and as a district, we have such an amazing opportunity to create an environment where students feel loved, safe, and taken care of. It really does begin with helping meet those basic needs,” writes a social worker in the District.

Other organizations are running food pantries this year too. K2 the Church and the Southeast Christian Church also run a monthly pantry. However, many of these pantries conclude at the end of July, leaving August a vulnerable time.

Fortunately, the Granite Education Foundation provides pantry services up to Aug. 11, covering the duration of the summer months. The foundation is running three pantries, one at Granger Elementary, another at Mill Creek Elementary and the last at Kearns High School. All students and families are invited to visit these pantries no questions asked.

Cottonwood football heads into the season with just as many players, but tons of promise

ith only 25 players on varsity, the same number as it had last season, the Cottonwood High football team will head into another year as an independent.

The Colts may be in their last year under that distinction in football, but that is something that head coach Casey Miller said he wasn’t sure about.

For Miller, who is now in his sixth year at the helm, this year is about taking the giant leap forward that he envisioned could happen for the program when he took it over after Bart Bowen resigned.

“We are really trying to get that elusive fifth win and be the first [Cottonwood football team to have a non-losing season in a decade,” said Miller, who will return some key players this season.

The kicker, added the Cottonwood coach, is that all 25 of his varsity players will have to play both ways, offense and defense in 2022.

Those will include senior quarterback/ defensive back Brock Simpson, who was only a freshman when he was taking licks from hulking defensive linemen when the Colts were in Class 5A and were losing

by 60 points or more by halftime. Simpson, who has thrown for 3,416 yards in his four years here, threw for over half that last year [2,048 passing yards, 13 TDs, 12 INT] for Cottonwood.

Another player who will be key for the Colts is their versatile running back and linebacker Sterling Wilson. He ran for a good chunk of yardage last year and also had 41 tackles on defense.

Where Cottonwood could really do some damage though is out on the flanks.

Senior Nick Bean headlines a talented receiving corps. His 665 yards led all Colts receivers last year. Bean also hauled in three receiving touchdowns and ran back a pick six on defense. Along with Bean returning to feature for Cottonwood, senior Lincoln Martinez was also a deep threat last season, hauling in three touchdowns on 195 receiving yards.

But they’re not all that the Colts have coming back at wide receiver this season.

They also bring back Kaelen Gray and his 495 receiving yards and team-leading four TD grabs from 2021 as well as Roman Caywood. Each is in their third season of

The area that could be problematic for a Cottonwood team looking for five wins on the season for the first time in over 10 years is smack dab, front and center, on the offensive line. That’s where Miller said their biggest and one of their most talented guys was lost for the season—but not to an injury.

“We are going to just be inexperienced,” added Miller when talking about his offensive line. “Lost our biggest returning player [300-pounder] to grades, so he won’t be playing.”

In addition, the Colts football program was hurt even more by several other kids not making grades, and ended up losing four total the previous semester, which in Miller’s view kills a program that only has 25 to 30 varsity players to begin with.

Miller said he envisions his offensive and defensive lines to start two seniors, one junior and one sophomore with just one having had any varsity experience— but with a touch of the bad news comes some that is good. For the first time in his six years at Cottonwood, Miller doesn’t foresee having to play any ninth-graders on the varsity.

“We shouldn’t have to dress any

freshman this year unless something drastic happens,” Miller said, who mentioned before this article went to print that he will be forced to train several upperclassmen who are new to the sport of football in the two weeks of team practices leading up to the Colts home and season opener against Summit Academy Aug. 12.

Cottonwood will round out the month of August with games at Richfield [Aug. 19], and will return home to face Providence Hall Aug. 26. We’ll have recaps of all three games and reactions in the next edition of the Journal.

All in all, added Miller, the team had a good summer camp that began July 12 and they got out of the two-a-days with no injuries—important for a team dressing just 25 players on varsity. The boys also did what they were asked to do in the offseason, and Miller believes that could very well equate to a season unlike any other in recent memory.

“Kids have been working hard in the weight room and are as strong as we have been,” he said. “We have lots of experience returning, and the spirit of the team is as high as it has been in my six years.” l

Individuals with Down syndrome have the chance to shine at Gigi’s Playhouse

igi’s Playhouse has a mission: to change the way the world views Down syndrome and to create an environment of acceptance and inclusion for individuals with Down syndrome, of all ages.

While there are 55 locations of Gigi’s Playhouse around the country, the Layton location (1916 N. 700 West) is the only one in Utah. Angela Horn just started as the site’s manager and is excited to bring free educational and developmental programs to people with Down syndrome and their families.

“I think a misconception is that everyone who has Down syndrome is alike,” Horn said. “We know that’s not true. Everyone is different. Everyone has their own personality and their own abilities. We like to celebrate all of their abilities and all of their accomplishments as they go along.”

Programs at Gigi’s Playhouse include the popular Language Music N' Our Peeps class, recommended for children up to 3 or 4 years old. LMNOP teaches communication through music, fun activities and basic sign language.

Gigi’s Kitchen is a program where teens and adults learn how to prepare nutritious meals. The class reviews a recipe, prepares it and shares the meal together.

Participants set measurable goals and work on those a little bit each day, with everyone celebrating accomplishments.

Women who discover they’re expecting a child with Down syndrome often reach out to the center for guidance. With programs for expectant moms, all the way through end-of-life, Gigi’s Playhouse is a safe community. In 1980 the average life expectancy of a person with Down syn-

drome was 26 years old, now it’s more than 60.

The center shut down during COVID but has seen a resurgence over the last few months.

“This is one thing that they get to do and everyone looks forward to coming out,” Horn said. “As things are reopening, we want our families to have a place they can come to.”

Because the programs at Gigi’s Playhouse are free, the locations are 99% volunteer run. The center usually offers more classes but a lack of volunteers makes it difficult.

“We have over 20 signature programs but are only offering four because we need volunteers,” Horn said. “We really would love to have volunteers so we can build our programs back up. It’s my goal to continue adding new programs throughout the year and to offer more for our families. I’d love to be able to get our programming numbers back to where they were before COVID.” Volunteers are needed to run programs, greet families, find funding and donations, clean the facility and provide marketing. Volunteers familiar with event planning are also needed to assist with the center’s fundraising gala in October. Resident greenthumbs enjoy fresh produce from Fitts Park Community Garden

t the July 13 City Council meeting, the council approved the name of the new community garden at 3065 S. 400 East as the Fitts Park Community Garden. The garden is full of green vegetables at this midpoint of the growing season. Soon the harvest will be ready.

There is some talk about a U-pick area for residents who want fresh produce but didn’t get a plot.

Over 30 residents are involved. The plot fee is $35, with plot scholarships available.

The SSL Department of Neighborhoods operates the community garden in conjunction with the Wasatch Community Gardens (WCG). SSL received a grant from the WCG for the Fitts Park Community Garden.

“I’m excited to announce that your garden application has been tentatively accepted,” Giles Larsen, Parks for Produce program manager with Wasatch Community Gardens, wrote. “Very nice work! I’m impressed by the very quick turnaround on collecting signatures, the diversity of organizations that SSL works with, and the degree to which the community appears excited about this project!”

WCG also manages the Harmony Park Community Garden at 3690 S. West Temple.

Fitts Community Garden vs. Central Park Community Garden

This new community garden is different than the community garden at Central Park. The Central Park Community Garden is sponsored by the New Roots Initiative, a program of the International Rescue Committee (IRC) in conjunction with Wasatch Community Gardens.

This type of community garden is located in Central Park, and a larger one is at the Central Valley Reclamation Facility on the city’s west side.

Millcreek City has a garden at Sunnyvale Park on 700 West. The IRC also runs the park.

These gardens focus on providing an area for refugees to grow fresh fruit and vegetables and, more importantly, vegetables and fruit they are familiar with.

On the other hand, the new Fitts Park community garden is open to all SSL residents.

WCG and the Parks for Produce program

Wasatch Community Gardens is a nonprofit organization. Since 1989, the organization has provided access to land for growing and education to children, adults and families.

powering people to grow and eat healthy organic local food.”

The organization fulfills its mission through four main programs: Community

Garden, Community Education, Youth and School Garden, and Job Training Programs.

The program focuses on turning some of the parks’ lands into community gardens. The WCG is well organized and supplies a Parks for Produce manual, which takes the community garden from a concept to reality. It also provides tested rules to support the garden.

Skate Park

Last year, as the city worked on the General Plan, many residents voiced the need for a skate park. The SSL Department of Neighborhoods found the property and the City Council approved purchasing prop-

erty at 2650 South Main for the skate park.

early one million miles away from Earth, the James Webb Space Telescope is gazing into space with the intensity of a teenager watching TikTok. The most powerful observatory ever launched (Hubble orbits a measly 340 miles away from Earth), the JWST navigated to its location and deployed its mirrors, telescopes, solar panels and antennas, unfolding like a Transformer in the middle of space.

NASA (Nerding About Space Again) was unsurprisingly geeked about the first images from the JWST and organized a live event to reveal the pictures to the world. I’m an astronomy fangirl, so it made my nerdy

heart happy to see the images unveiled on July 12 during the NASA production.

I couldn’t help but appreciate that Hollywood hadn’t produced the reveal show. It would have been completely different, with movie stars turning it into a literal song-anddance. It would have included a Gorgeous Galaxy red carpet event before the Beautiful People, dressed in sequins and velvet, highlighted the space pictures “right after these messages.”

Instead of talking to actual astrophysicists, the Beautiful People would have interviewed actors like Matthew McConaughey and Tom Hanks, asking them what it was

like portraying an astronaut in the movies.

There would have been glitzy graphics, a soundtrack by Lizzo and brief glimpses of the space images before the cameras returned to the Beautiful People so they could talk about how much they liked planets.

Thankfully, NASA did the whole program themselves. It was like someone handed the high school astronomy club an iPhone and told them to prepare a science project about the Webb telescope. They didn’t use professional spokespeople. They weren’t dressed in formal wear. It was just astrophysicists literally (yes, literally) bouncing with excitement as the world saw the photos for the first time.

There was even a technical glitch when NASA tried to connect to scientists in Canada but couldn’t get through. NASA can relay images from billions of light years away, but can’t connect with colleagues in Montreal.

Stupid Zoom calls.

Astronomers explained the images sent from the JWST that included dying stars

and black holes and cosmic cliffs and binary stars, which I don’t think are legal in Utah.

It showed a universe teeming with galaxies never seen before. At least not by people on Earth.

The telescope can see through space dust, asteroid rubble and alien trash to get the clearest pictures ever created. Scientists once thought there was only one galaxy in the universe, but one JWST image showed thousands of galaxies in a teensy bit of sky.

Hopefully, this will prove to politicians that the world does not revolve around them.

Webb’s mission is to search for light from the first stars and galaxies that formed the universe after the Big Bang, unless you don’t believe in the Big Bang. In that case, you can sit next to those who think the moon landing was fake, the earth is flat, evolution is a fraud, the Mars mission is bogus, the moon is an alien spacecraft, that it’s NASA’s job to create space hoaxes and we’ve never crossed the Van Allen Belt.

But if you’re a star-nerd, like me, watching something so vast is mind-boggling.

We’re a tiny, blue marble floating through the enormity of space, doing our best not to fall into a black hole or get vaporized by a meteor.

So many evolutionary steps had to happen for us to even be here. What a rare gift.

Let’s stop messing it up. l
