FAMILIES ADAPT TO SCHOOL AT HOME

I

t’s a job they didn’t go to college for and yet, overnight, parents became teachers for their children as Utah schools closed due to the coronavirus pandemic. Teachers transferred face-to-face learning to an online format and parents juggled their own workspaces and schedules to accommodate school at home.

“I’m grateful for these teachers because this homeschool thing is rough, and frustrating and overwhelming but we are all in the same boat together and we will get through it together,” said Herriman resident Amy Stewart, mother of a kindergartener, fifth and seventh grader.

School at home for Jordan District got off to a bumpy start March 18 with an early morning earthquake and problems with connectivity with district-issued Chromebooks.

Things have improved since then, with families adapting for what works best for their family.

South Jordan resident Chelsea Brown said no one is doing this alone.

“We still have a teacher who is attached to every bit of our learning who will still give us a grade and who is still available to us,” she said.

Brown created a designated space for school work for her first and third graders.

“We’ve created a classroom,” she said. “That’s where school happens so that my kids know we aren’t doing YouTube right now. We’re not playing games. We’re in the classroom.”

R

ide-sharing and public transportation are go-to transit options for those looking to get around car-less or reduce their carbon footprint.

Daybreak residents have an additional, environmentally friendly transportation option right in their own neighborhood: KartsUT. And the business is looking for a new owner.

Julie Holbrook has lived in South Jordan for more than 12 years. She launched KartsUT last summer as a privately funded business, which it still is today.

“Our streets are really narrow in Daybreak,” she said. “I found for myself, a lot of my trips were to The District and around Daybreak and not very far. I thought, why not have electric vehicles that can get in these narrow roads and take people around when they need to go there? Then I started doing the research, and I found these vehicles.”

The wheels of KartsUT are one four-passenger vehicle and one six-passenger vehicle.

The vehicles can legally drive on roads that are up to 35 mph, and they last about 50 miles per charge, depending on variables such as the slope of a road. The compact white vehicles resemble sleek golf carts, with a bit more protection from the elements. Holbrook said KartsUT has a couple relief drivers, but she typically does the drives herself.

Holbrook is passionate about the service and its mission, but with an upcoming move out of state, she plans to place it in a new owner’s hands. She said she’s looking to sell either the business as a whole or the vehicles on their own.

“I would like to see this stay in Daybreak and be owned by someone living in Daybreak because that’s what sets us apart,” she said. “It’s your neighbors that are driving you. It’s not somebody you don’t know.”

Holbrook said single rides (which cost $5) have been a popular type of ride, but the service also offers subscription packages. Riders can book a ride online, and there is also potential for an app. She said the type of rider varies.

“It’s kind of all over,” she said. “I’ve taken a couple of elderly people. They say, ‘This is so great, I can stay in my home longer,’ and they don’t have to depend on neighbors or friends. They can come and go as they want. One gal wanted to do several errands and I said, ‘Let’s just run it by the hour.’ So, you can do that too. One gentleman said, ‘I drive all the time, and I would like to just take a ride around Daybreak and look with my family and stop at parks and things.’ The people have come up with more ideas than I have.”

Holbrook has also driven young people to their jobs in The District, dropped riders off at TRAX and taken residents to and from events on SoDa Row. “First, I wanted to test the concept,” she said. “Is this going to work at all? And it does, and it’s really handy. But you have to be out there and visible.”

In addition to doing effective marketing, Holbrook said her advice to the new owner would be that when it comes down to it, just be helpful.

“What’s most important is to just be there for the people,” she said.

Holbrook emphasized the environmental impacts of riding electric.

“Electric cars for individuals are a personal choice, but I thought this could shuttle people around if all you’re going to do is go around Daybreak and the District,” she said.

“Every little bit you can do to not pollute, not use your own vehicle, let’s do it.”

As for a new owner, Holbrook has already heard from several interested parties.

She said she’s learned the business takes not, then people will have vehicles that are a more than one person, from marketing to heck of a lot of fun.” l driving to bookkeeping, tasks that aren’t hard in and of themselves but time-consuming.

“I just hope that whoever takes this over, they keep it as a business,” she said. “But if

A

ntonella Wachterdorff’s mother, Paola, proudly shows a video of her 12-yearold daughter performing a gymnastics routine. In the video, Antonella hurtles through the air before sticking the landing; her teammates rushing up to her to celebrate. This camaraderie is part of her gymnastics experience, which also involves travel, competitions and training almost 35 hours a week.

Antonella has been doing gymnastics since she was 7 years old.

“I started tumbling, and then I moved to gymnastics, and it was just for fun mostly,” she said.

Now, the South Jordan sixth grader is already a level-eight gymnast, out of 10 possible levels. Last year, she made it to the Utah state team (made up of the best in the state) and won second all-around at the competition in Reno, Nevada.

Antonella said her favorite to compete in is vault, an event that involves the athlete surging toward the apparatus, hurtling off a springboard and performing over the vault in different positions. Her favorite gymnastics move is the double-pike, two flips with straight legs.

“Some moves are kind of hard,” she said. “When the season is over, the thing that’s hard is starting to train for the next level because you have to get all of these bigger moves.”

Antonella trains at Olympus Gymnastics in South Jordan, participating in both the Elite Program and the Junior Olympic Program, Monday through Saturday. In addition to practicing their gymnastics moves, the athletes do some type of conditioning every day to strengthen their legs, arms and core.

With such a demanding training schedule, Antonella does school online through Utah Connections Academy. She studies and does schoolwork on her own time, typically Mondays, Wednesdays and Fridays in the mornings, then after gym on Tuesdays and Thursdays.

Her mother, Paola Repetto, found Utah Connections Academy after looking online for homeschool programs about a year and a half ago. It would allow Antonella to pursue gymnastics and still get a quality education.

A traditional school setting would make it difficult to participate in the training programs because she couldn’t miss that much school, Paola said.

Teresa Beauregard, who does marketing for Utah Connections Academy, said the flexibility in schedule doesn’t lessen the rigor of the education.

“They actually take attendance and can only miss so much school before they have

attendance issues,” she said. “But it gives them a parameter to work in that works for them. It’s really unique, but it’s really a great thing. It’s an up-and-coming thing for a lot of people, fulfilling a lot of needs for students looking for a setting where they can get a stellar education in a non-traditional brickand-mortar setting.”

Beauregard said the school has about 1,100 students in the state, some of them young athletes, but not all.

“We have students that will be rodeo-ing in Tooele to ones that are doing gymnastics, competitive golf, all sorts of different things,” she said. “We also have students who have a lot of social anxiety; it’s very difficult for them to go into school settings. We fulfill a lot of different needs.”

Antonella said her favorite subjects are science and art, drawing and painting being some of her favorite hobbies. Her dream is to go to college at a school in California, such as UCLA. In the short term, she has her eye on some gymnastics milestones.

“There’s this thing called an all-around,” she said. “It’s your total score for every event.

Last year, I had this goal of getting a 38. For a 38, you have to get a 9.5 or higher on everything. For this year, I’m going to try to get a 39, which is a 9.7 or higher.”

Her mother said she’s close to meeting that goal.

“I’m so proud of her,” Repetto said.

“She has big goals; she’s working so hard. I don’t know how she does it.” l

Mayor signs agreement with Metro Fire Agency

O

n March 3 at the South Jordan City Council meeting a resolution was put forward by Dustin Lewis, to authorize Mayor Dawn Ramsey to sign an Interlocal Agreement with the Metro Fire Agency. This resolution was passed with all in agreement.

Several cities in the Salt Lake County have formed a cooperating agreement and these cities include Bluffdale, Draper, Murray, West Jordan, South Jordan, South Salt Lake and West Valley. The purpose of this agreement is to work together to be efficient in the use of tax funds in the fire departments.

The cities agreed to form the Metro Fire Agency to help the fire departments work together. This agreement allows the fire departments to purchase equipment, train together, and it allows them to share equipment in a way that saves tax payer dollars. This cooperation was initially put together to last five years and expired in 2017. At that time it was brought forward and an Interlocal Agreement was signed by all the cities that would extend the agreement for an indefinite period of time. Recently it was discovered that there may have been some glitches in how it was signed so just to be sure that things are done properly the agreement will be resigned.

outside of the jurisdiction of the cooperating cities if necessary. This would allow fire departments to respond to fires in other areas of the state.

Councilwoman Tamara Zander of District 4 said that, “As we listen to our city staff

tell us how we work together so collaboratively with our fire and our police. I wish our city governments were working together collaboratively.”

South Jordan has three fire stations located in the city. Station 61 is located at 10758

South Redwood Road, Station 62 is located at 4022 West South Jordan Parkway, and Station 63 is located at 10451 South 1055 West.

A fourth fire station, no. 64 to be located in the Daybreak community is under construction and should be completed by 2021. l

Safe Driving Habits

S

pring is upon us, summer is on the way; and with warmer temperatures and (hopefully) blue skies on the horizon, drivers can’t blame slick roads or blinding flurries for their faulty driving anymore.

Driving safely requires good driving habits. Habits. Not occasionally safe maneuvers.

The following are some prudent practices to implement in your daily travels.

Blinkers and blind spots Driving 101. If you plan on changing lanes, let others in on your secret. Everyone will appreciate it. Others want to know what you are planning.

Likewise, if you see a blinker come on indicating your lane is that car’s desired destination, let it in. This isn’t the Daytona 500. We are not racing for $19 million. It is common courtesy, if we want people to use their blinkers, then we should reward them for doing so.

Remember the blinker doesn’t automatically assume safe passage to the next lane. And while your car’s sensors in the rearview mirrors are helpful, they are not omniscient. Check your blind spot with your own eyes. There’s a reason it’s called a “blind” spot.

Tire pressure This one is almost as simple as the first.

Check your tire pressure on a regular basis to know if there is a small leak. Maybe you drove over a nail and didn’t realize it.

We often don’t look at the tires on the passenger side since we don’t approach the car from that direction, checking regularly allows you to examine those opposite side wheels.

It will keep your car’s handling in its best condition. Each vehicle can have different appropriate PSI (measurement for tire pressure), but when temperatures drop, so does the pressure in your tires.

Drive defensively This means keeping distance between you and the car in front of you.

Touching their bumper does nothing for you. And if you need to get that close to read their license plate or sticker, your eyesight is troubling and you probably shouldn’t be behind a steering wheel.

Also you can’t always see what’s in front of the car before you. They may have to slam on their brakes due to an unexpected obstruction. If you rear end them, insurance rarely works out in your favor.

This can also mean slowing down on wet roads or not weaving in and out of traffic.

Distractions This is the No. 1 reason for accidents. This is not limited to using the cell phone, though texting, checking news alerts or making a phone call are all terrible decisions to make while driving.

It also extends to dozing off or checking the price at the gas station you just passed. Be alert, stay vigilant. Other drivers may suddenly stop, they may not see you as you yield or turn.

By staying engaged and sharp, your reactions can be sharper and you may even anticipate what other drivers are looking to do.

These habits are important and it is not overdramatic to say that they could save a life.

Australian wildfires spur biggest fundraiser at Paradigm High

S

pare the blonde jokes to male student leaders, their adviser and director after they dyed their hair.

They weren’t looking to have more fun but rather to motivate the Paradigm High studentbody into rallying behind a cause: donating to the Australian recovery efforts from the most recent bush fires.

And student leaders did just that, raising more than $17,000.

After listening to their adviser, Keith Debono, talk about his homeland’s devastation caused by the brush fires that destroyed an area the size of North Dakota, and then learn of more harm caused by the deluge of rains flooding the area, many students rallied to ring doorbells, ask patrons at the local grocer and do neighborhood odd jobs in trade for donations.

That’s not all. Within two weeks, they held a comedy night, a game challenge night and a combined concert of the school’s choirs, bands and orchestras.

“We usually combine a concert with a band and orchestra but not with choir, so it was a new thing that was just awesome,” said senior Hunter Mason, who serves on the student body cabinet as an outreach committee member.

Mason said seeking donations came about as the 430 scholars worked together as a team.

“We can’t just do it by ourselves,” he said referring to the student leaders. “There was a lot of teamwork that helped out. Kids stood in front of Harmons with jars, talking to people about the brush fires and devastation, getting donations. Others went in the neighborhood, asking people to save the Koalas, the Australians’ homes and appealed for donations.”

Studentbody president and senior Emma Conley said she spent hours baking cookies to give to those who donated when she went door-to-door.

“It was two intense weeks working on this; we all gave so much time,” she said.

“That was the coolest part is to see how hard students worked for this. We became united in our effort. I was absolutely blown away by the donations; people are so generous. It really pulled at people’s hearts to hear about what was happening in Australia.”

The entire student body was part of the school’s penny wars competition, where coin donations built up classrooms’ funds, and bills and Venmo contributions subtracted from a rival classroom. Anderson said kids made alliances and used strategies. There was a winner, but the result was the contribution.

“One kid donated $500 he earned from his job; others donated $100 or $200, but every coin, every donation counted,” he said.

first, so they selected to give the funds to Vinnies Bush Appeal.

“Once the people recover, are on their feet and re-establish themselves there, then they can reach out to the community and environment,” she said.

Debono also said “not a bit of it is used for administration fees.”

According to the St. Vincent de Paul website, each contribution of $1,100 can help those whose homes have been destroyed to set up with bedding, furniture and appliances.

Since the brush fires began last summer, 46 million acres of land has been burned, including 3,500 homes, according to the Canberra Times. That was followed by severe thunderstorms that dumped 15.4 inches of rain in Sydney in early February, bringing concern about dams holding from the deluge.

Debono’s family lives west of Sydney in the state of New South Wales. He said when he lived there, he’d regularly hike in the nearby national park.

“My family was personally effected,” he said. “There was poor air quality as ash fell, but they were lucky. They were on high alert to evacuate, but there was no fire on their property. My father’s business was on a street that was flooded. There are going to be long-term effects with the economy and the environment.”

Debono plans to visit his family this summer, but they may not recognize him.

That’s because he was one the 10 who had his hair — or in his case, his beard — dyed.

“The students set marks at what would happen if they raised so much money,” he said. “If they raised $6,000, I’d have to dye my beard. It took about two hours to bleach since the hair is very course. It looks more orange, but I pledged to keep it dyed at least one month. People don’t ask questions, they just glance at me twice and go on, pretending it’s not out of the ordinary.”

The last to dye his hair was director Fernando Seminario, who has a blonde streak on the top of his dark hair.

“We set the amount for him to dye his hair at $10,000, and I thought that was quite ambitious since we hadn’t ever raised that amount before,” Debono said. “When we reached and surpassed it, I think he was at first a little surprised — and maybe a little terrified at what it meant.”. l

allways were less crowded on Friday, March 13, not because of superstitions, but likely as students stayed home after the announcement of the Governor’s COVID-19 Task Force’s guidelines, which included no out-of-state school travel for two weeks, no school assemblies, dances or concerts, limitation of sporting events, as well as staggering lunch, start and dismissal times. Those guidelines changed within 24 hours to a soft closure for two weeks, which has many schools and school districts extending learning to an online format. Jordan District breaks ground on new elementary in anticipation of student growth

ordan School District Superintendent Anthony Godfrey welcomed those who gathered on a cold, blustery March morning, telling them the district loves to be groundbreaking in everything it does, including breaking ground for a new elementary in South Jordan.

The start of the 33-classroom school comes as Jordan School District prepares for anticipated growth in the Daybreak community. The site for the school, 11189 South Willow Walk Drive, is west of Mountain View Corridor.

“We have huge South Jordan growth, and by building this elementary school, we can stay ahead of the growing population and provide our students with a great learning environment,” Godfrey said. “We review every option before building, including alternative calendars and boundary changes, before deciding a new school is needed.”

Although boundaries aren’t determined yet, anticipation is that the new elementary, which is slated to open in the fall of 2021, will relieve some of the expanding population at Bastian Elementary and possibly Herriman Elementary, he said.

Jordan Board of Education President Bryce Dunford said the 12 acres is just one of three other parcels of land Jordan purchased last April in anticipation of building upcoming schools. All are within one-half mile of the groundbreaking site.

Dunford said one of the parcels, a100acre site, will likely be home to an anticipated middle and high school, which may help with student growth expected at Copper Hills and Herriman high schools and Sunset Ridge and West Hills middle schools.

“We want to avoid our students crossing Mountain View Corridor, which is a natural boundary,” Dunford said.

He also said the $16.8 million school is being built with lease revenue bonds, meaning the district borrowed money and will repay it with capitol revenue. Lease revenue bonds are usually used with construction of state office buildings and facilities.

“With building this school, residents will not see a raise in paying taxes,” Dunford said. “We are doing everything not to raise tax money. This is one way we can do it as a school district in constant need of new schools with our growth in our cities.”

The new school, which will be 75,255 square feet, is under construction by Hughes General Contractor. It is designed with a gymnasium, media center, computer lab infrastructure, three playgrounds, and projectors and voice enhancements in all classrooms. There are plans for skylights to bring in as much daylight as possible, said Dave Rostrom, district facilities services director.

“We use a lot of bright colors to identify the different pods or grade levels so it’s easy for students and patrons to identify,” he said.

The new school capacity is built for 850 students; however, with additional use of building space and six portables, it could reach 1,050 students, Rostrom said.

Joining State Superintendent Sydnee Dickson and members of both Jordan Board of Education and the Utah State Board of Education in attendance was Principal Nick Hansen, of nearby Golden Fields Elementary, which the school design was based on, designed by VCBO Architecture firm.

“I’m excited to have new neighbors to the west,” he said, adding that he came so he could share the news with his community.

“This new school may have impact or not on our school numbers, but they certainly will be a welcome part of the education offered to the Daybreak community.”

Already three elementaries — Golden Fields, Eastlake and Daybreak — serve the growing Daybreak community, which Hansen estimates is at 50% of its master plan.

Five apps and online games to keep your mind sharp during quarantine

ith public schools closed and many parents working from home for the foreseeable future, many Utah families have a lot more free time on their hands than usual. Parents will probably be hearing a lot of, ‘What can I do?’ from their kids. To help answer that question, we compiled a list of a few apps and online games that are addictively fun, but won’t rot your brain.

Lightbot

Lightbot is an app for Apple and Android devices that teaches basic coding concepts like commands and loops. It starts off easily enough that elementary-aged students can handle it, but progresses in difficulty to the point where high school students can find a daunting challenge.

Little Alchemy

Little Alchemy is a game that tests users’ creative thinking skills as they combine “elements” like air, earth, fire and water to create new ones. Combining fire and water, for example, creates steam. Combine that steam with the earth element to get a geyser. It’s an open-ended test of ingenuity as you create buildings, weather and even life itself. You can find the game on the Apple and Google Play Store, as well as a browser version at www.littlealchemy.com.

Though it doesn’t tell you where it is. Once you have a rough idea of where you might be, you drop a pin on a map and make your guess, then earn points based on how close you are. Have you ever found yourself clicking through a seemingly endless spiral of Wikipedia articles at two in the morning and wound up on an article about something completely random, and then think to yourself, “How did I get here?” Well, this app turns that process into a competition. It gives you a random

It’s a good practice in relational thinking and (depending on how fast you’re trying to go) you might also pick up some trivia knowledge along the way. You can either play solo, against your friends and family locally or solo, if you want to take your time. l

Sporcle

If you like trivia games but apps like Trivia Crack drive you crazy with how many ads you have to click through just to play, then you should definitely check out Sporcle. It’s a website (www.sporcle.com) with tens of thousands of trivia quizzes on every subject from pop culture and history to sports and geography. There’s even plenty of quizzes for the kids too, like trying to name every one of the 151 original Pokémon, or trying to name the Disney movie based on visual GeoGuessr clues. The benefits of poetry in a time of uncertainty

I

t’s never too early to introduce children to poetry and to celebrate National Poetry month this April. There are many resources available to help children reap the benefits of reading and writing poetry, including building community and advancing literacy, while still having tremendous fun while you’re at it.

Former Colorado Western Slope Poet Laureate Rosemerry Whatola Trommer, a poet, teacher, storyteller and creative consultant for her site “Word Woman,” talked about the outcomes, creative exercises, resources, and poems to help promote a child’s interest and investment in poetry even during a time of social distancing and school closures.

With many parents and caregivers now in the uncertain position of developing and supplementing school curriculum at home for a temporary time, Whatola Trommer explained that poetry can be an enjoyable way to learn and connect and, “perhaps best of all, poetry will be a way to foster creative discussions about what is happening in the world right now.”

Whatola Trommer also wants to reassure educators and parents that despite suggestions, there is no wrong way to go about it. “There is not a right way to read a poem.

Students are familiar with online learning formats because teachers have been using them all year. Marinda Wessman’s third grader always does math homework online and now that the English worksheets are digital, they are still familiar to her.

“It’s the same work,” Wessman said.

“It’s just figuring out how to do it online versus doing the paper and pencil. I just really appreciate that the teachers are being so organized and putting all the assignments in an easy format.”

Two of Wessman’s children are in the Chinese Dual Language Immersion program at Monte Vista Elementary in South Jordan.

The DLI teachers have been providing regular video instruction through Zoom.

“The teachers are really good because they know that they’re kind of on their own when it comes to the Chinese stuff—they can’t rely on parents to help,” Wessman said.

Dominoe Hammond, who has children in high school, middle school and elementary school, is impressed with her children’s teachers.

“I’m amazed how they were able to pull this together in no time,” she said. “They’re

what stood out about it, what phrase or word or image. And in this way, the poetry can open up larger discussions about feeling and ideas related to the poem.”

Instead of poetry workshops, Whatola Trommer leads what she calls “playshops” because they are too enjoyable to include the word “work.” She breaks down some of the benefits of exposing children to poetry as follows: “One, poetry is fun. Two, poetry is highly useful for literacy in young children (especially rhyming poems). Three, poetry can be acted out. Four, poetry can be used to

supplement other classes and open up other subjects – poems about math, nature, other languages, other cultures. Five, poetry helps children access and talk about feelings. Six, poetry is fun to say aloud. Seven, poetry is fun to write.”

At an early age Whatola Trommer fell in love with children’s poet Shel Silverstein and still appreciates his poems today as they are “supremely playful, but also have dark underbellies.” She sees the value of also introducing children to some adult poets. For example, she said, “Most kids will find joy in

Blake’s ‘The Tyger,’ in Dickinson’s ‘Hope,’ and in Shihab Nye’s ‘Kindness.’” She credits E.E. Cummings’ poems for first instilling in her that poetry can be both playful and still tackle difficult subjects.

Whatola Trommer has continued in this vein herself by writing such poems including her recent poem about the pandemic, “Staying Home,” which she said would be accessible for kids. The poem recognizes fears that children, and all of us, might have right now, but ends with the following lines of comfort: “They remind you who you are /invite you to look out the window/and see how beautiful the world/when the shadows are long.”

connecting with their kids, even through all of this, and they’ve been so responsive and so helpful to answer our questions. I’m just so grateful.”

Her older students keep organized with calendars and assignment lists. Her younger ones are comfortable with the online format and can complete their work fairly independently.

“Even my first grader is managing it on her own with very little help,” Hammond said. “So my energy can be focused on all the bonus stuff, the extras, the fun things afterwards.”

The Hammonds, who live in West Jordan, hold fun family PE classes and baking lessons and play games once school work is done.

“We are just trying to get through this the best that we can for ourselves and our families and it’s going to look different for everyone,” Hammond said.

In Herriman, Amy Stewart schedules regular breaks for her three kids.

“I feel like with as much time as they will be looking at a computer, I want them to take breaks to move their body,” Stewart said. “Essentially, after about 30 minutes of work, we take a five-minute break and have them move.”

The kids do quick ladder drills, cosmic yoga, or a hand and foot game she printed off the internet. The family holds recess af-

ter lunch and plays together outside in the evenings.

“We are just trying to get through this the best that we can for ourselves and our families and it’s going to look different for everyone,” Hammond said.

As of this writing, families did not know how long schools would be closed.

Most are optimistic that they will get better

at this new normal with more time. They are also enjoying the slower pace of their lives.

Wessman, who lives in Herriman, is enjoying the break from driving her children to and from their schools in Riverton and South Jordan and to their extracurricular activities.

“I’ve enjoyed having my kids around, and I really love having our evenings open,” she said. l

High school sports events on hiatus during COVID-19 pandemic

ocal high school and youth sports programs are on hold as the country braces itself against COVID-19 concerns.

“We are currently following the direction from the Granite School District,” Hunter High School’s athletic director Pam Olson said.

The Utah High School Activities Association released a statement dated March 13 stating all activities, athletics, practices and team gatherings be suspended beginning March 16. This directive was initially set to last approximately two weeks before schools closed until May 1. More information can be accessed on the website www.uhsaa.com.

“It has been a little bit crazy,” Taylorsville High School athletic director Guy Mackay said. “Most of the kids are disappointed. They want to compete, that is one of the reasons they put in all of the hard work.

It will definitely be more difficult to keep up the enthusiasm of the teams if they are unable to play.”

At press deadline all UHSAA events had been postponed. The NCAA has cancelled its spring sports including March Madness. The Utah Grizzlies also announced the remainder of their season has been cancelled.

Trying to keep things as normal as possible could be difficult.

“We don’t want to cause a panic. We haven’t taken too many precautions other than cleaning equipment and encouraging good hygiene. We are trying to be understanding when kids don’t feel good too,” Mackay said.

Kearns High School initiated a no handshake or high five policy before events were cancelled.

“Our kids are understandably disappointed,” Kearns athletic director Davis Ballard said. “But they understand why it is happening.”

The UHSAA board of directors is in constant contact with Utah public health officials. They pledge to reevaluate in two weeks and notify their member schools.

“We encourage schools to follow best practices from the Utah Department of Health and the Center for Disease Control, along with the best practices of school districts and charter boards,” UHSAA Assistant Director Jeff Cluff said.

Spring sports schedules and makeup arrangements will be made following the approval to proceed by state government officials. l

Residents express differing opinions about upsurge of panic buying

anic, confusion and self-isolation have become increasingly common scenes as the coronavirus has changed not just our way of living, but our perception of it.

Schools have closed, businesses have modified their operations, and consumers have begun behaving in erratic and unpredictable ways.

With toilet paper, sanitation supplies and groceries flying off of the shelf, one might wonder why panicked people began panic buying at grocery stores in the first place?

Pam Crotter, who is 61 and experiences underlying health conditions that puts her in the at-risk population, was shocked to see how much people were buying out of fear.

“The devastating thing was to see all of the canned and boxed good aisles — the whole aisles were just gone. I got one of the last loaves of bread. I mean it was 4 o’clock in the afternoon on Friday,” Crotter said. “People were just getting off of work and just starting to react to everything that got shut down that day.”

At the store, Crotter realized that people were hoarding an excessive amount of supplies, with consequences that could affect vulnerable populations and those who were the most at need of them.

Even though this could potentially have a great impact on her, Crotter’s first instinct was to think the risks that this type of consumption has on other people.

“That’s the hard thing is to see how uncaring society is being about taking everyone into account. Like buying that hand sanitizer and toilet paper, not to think about all the elderly people and all the immune compromised people. There

are little babies that are on (tracheal tubes) and older people that are at home that do self-care, they can’t get distilled water because when people are running out of the bottle, they are buying distilled water too. They’re just buying it all!”

Crotter said.

As people hoard supplies and buy excessively there is a chance that they might forget that there are essential goods that compromised groups must have.

“There’s different medical conditions that you need distilled water for, not just (tracheal tubes). You have to clean home nebulizers for asthma and lung conditions, and they’re having a hard time getting those supplies. It’s risking people’s lives this craziness. And it’s just like: why do you need that much toilet paper?” Crotter said.

Fortunately, Crotter has been a witness to the kindness of others amid the panic buying.

“That’s one good thing that I noticed is that I probably had five people reach out to me yesterday on social media or call me and ask me if I needed anything. They were off work for the day and asked me if I needed anything,” Crotter said.

According to clinical psychologist Steven Taylor, consumer behavior changes during pandemics because of anticipatory anxiety and fear. People perceive that they might be in danger because of the things that they see and hear around them.

They see others taking drastic precautionary measures such as buying a three-month supply of food or 50 cases of toilet paper. Their minds then turns toward what they can do to protect their families, and they view the danger around

them as a perceived threat.

However, it is important to recognize this psychology at play and not just react based on emotion.

At the Smith’s on 922 E. 2100 South employees who spoke on conditions of anonymity said that the store had been relatively calm from the time that the buying en masse had ensued. No fights for items or mass hysteria had occurred during the shopping experience, however, there was still an unusually large number of shoppers at the store on Sunday, March 15, with around 200 shoppers buying toiletries at 11 a.m.

In their opinion, the two employees at the Smith’s felt that the panic buying was the result of fear stoked by the news cycle.

“They’re panicking for no reason, they’re just paranoid. The media just (is) saying you need to get this, this, and this, instead of listening to the CDC who actually know what the virus is, they’re just panicking,” they explained, saying that people should just stay calm and help others as much as they can. “They’re just saying the worst-case scenario instead of actually helping prepare people for this,” they said.

The employees feel that elderly people and the at-risk population should take necessary precautions, but that everyone else should just stay calm. They don’t see the situation at Smith’s getting worse because the supply of product is being ordered in quantities that are expected to keep up with the demand. Smith’s has adjusted its normal hours in order to prepare the store for people buying.

Another shopper at the store, Arjun Gopal, who is in his 20s, came to the Smith’s for his routine grocery shopping trip.

“It is a bad flu for people our age, for people under 40 it’s going to be a normal flu, so there’s no point in stocking up so much,” Gopal said. “I think it’s because of a few people who want to be prepared for all kinds of situations, and then other people see them doing things and posting things online.

People are like sheep: one person does something and everyone else wants to do the same thing and follow the part. I feel like it’s just a few people igniting everyone else, and then just everyone else following through.”

As one might surmise there are plenty of attitudes on what consumer behavior should be during the time of crisis. With so many different voices, opinions and information on the topic, what should one’s approach actually be?

The truth of the matter is that there is plenty of supply to meet the demand for groceries and toiletries, and if people resist buying excessively then there will be plenty to go around.

The temporary shortage of some groceries and other supplies is a result of a sudden upsurge in demand driven by panic. In response to this, supply chains are ramping up their production and hours to make sure that the demand for food is adequately met.

The United States Department of Homeland Security has recommended that during a pandemic a household should stock up on two week’s supply of food.

They also advise households to have a continuous supply of prescription drugs and to make sure that they have any nonprescription drugs and health supplies on hand, including pain relievers, stomach remedies, cough and cold medicines, fluids with electrolytes and vitamins.

Additionally, stores like Smith’s are adjusting their hours to provide adequate time to restock shelves. On March 16, they released a press release stating that they are creating a senior shopping hour from 7-8 a.m. on Monday, Wednesday and Friday to help provide the at-risk population with the time that they need.

“Smith’s wants to provide these at-risk customers with the ability to purchase the items they need to avoid busier and more crowded shopping times. We request that customers respect these hours for the health of our community during this time of uncertainty,” the press release said.

Like many of you, we here at the City Journals watched as the story unfolded in front of our eyes, first China, then the spread, the cruise ships, then the United States, then the state of Utah and Rudy Gobert, it became ever so clear that it was going to bear a heavy toll on local businesses and economy.

And it has, with restaurants, gyms, theaters and dentist offices being closed and events being canceled. The pandemic along with the earthquake has taken a heavy toll on the local business, including the City Journals.

The City Journals are dependent on local businesses to advertise in the Journals. This is how the Journals have printed newspapers for over 29 years.

It wasn’t long after Rudy that we here at the Journals started getting calls from local businesses needing to pause their advertising and people’s attention turned towards dreams of massive stacks of toilet paper in their storage room.

We soon realized that being completely dependent on advertising may not be the best way to fund the operations of the Journal.

We started brainstorming ways to balance our funding between the two parties that use us, the readers who read the Journals and the advertisers who advertise in them. We knew that we did not want to charge people to visit our websites, we knew we did not want to

have a subscription to the paper, so we decided to just ask our readers for help.

To help alleviate this pain we decided we would start by asking our readers to make donations to the paper. Please visit our website (donate.TheCityJournals.com) to donate to the City Journals. We know that many in the community are feeling the same pain as us right now and donating will not be an option. That is OK. You will continue to receive your Journal. n March 23, in an unprecedented move, Utah’s schools and colleges were issued an extended dismissal to May of this year due to the coronavirus pandemic.

Rather than celebrating summer early, students are tasked with online learning where possible. With many schools offering Chromebooks and other resources, Utahns must now figure out the new norm of how to navigate quarantines without sacrificing education.

Joann Kozyrev, the vice president of Design and Development at Western Governors University (a private, online university based in Salt Lake City), shared her thoughts on what to expect in the near future, especially for adult learners.

“We do think some good things will come out of this,” Kozyrev said. “There are things about online learning that people don’t understand and have not taken advantage of, like the gamified nature of being able to check yourself against the standard of online quizzes.”

People may be intimidated by the individualistic style of online learning and the possibility of procrastination taking hold as it gets easier and easier to push off assignments and tests.

“We’re helping with our employees and our students quite a bit with okay, now your routine is changed,” Kozyrev said. “How can you continue to do all the things you need to do, how can you adjust when you no longer have that carefully crafted schedule, etc.”

Kozyrev stresses that making and setting goals is essential for online education success.

“There will be an adjustment period. We try to make sure that we are always focused on the goals we have. We utilize the online space to meet those goals.”

For adult learners, who are also parents, this new move to an online-only curriculum for their school-aged children is proving to be a challenge.

“My schooling is done online anyway, so that hasn’t

changed too much for me,” she said. “I only have one child in preschool, so I didn’t think putting a few lessons together would affect my schedule; however, I find myself spending the only time I have to work on assignments putting together a decent preschool instead.”

In addition to student-parents, there are teachers who are now trying to juggle their own children and students more than ever.

“I have a baby who needs my attention, and now that everything is online, my afternoons are maxed out,” said Jessica Warburton, mother of three and part-time math teacher based in Vernal. “I am either finishing up things with my kindergartner, trying to help her with her schooling, or planning lessons for my students.”

Another complication can be communication between students, parents and their teachers.

Where children are used to visual instruction, asking in-person questions, or even skimming the written directions, there is no such luxury now.

“It’s a learning curve for parents,” Warburton said. “They have to now navigate websites their students are using and stay in contact with teachers in a way

they haven’t before.”

In addition to communication, parents are encouraged to help children maintain a schedule and stick to it, even when they’re not interested.

“Our day is really scheduled,” said Samantha Baumann, a mother of two who is studying biomedical science at Dixie State University. “We try to give our kids a sense of normalcy.

We have a school start time, and while they do their online assignments, I have lecture.”

In terms of suggestions for successful homeschooling, WGU has several helpful tips as an online college for over 20 years.

“Time management and making time and space for learning is essential,” Kozyrev said.

“Put on a headset, put up a sign letting your family know that you’re studying and not to be interrupted. Help kids to have the end goal in mind.”

Teachers are requesting parents to be cooperative with this new standard.

“This is really forcing parents’ hands, in a sense,” Warburton said. “If you want your student to get an education, this is what you need to do to help them.

Bottom line, students thrive with structure, and we’re asking par-

ents to help with that.”

While education in Utah is looking very different now, families should not feel pressure to be perfect or to become professional teachers overnight.

“Let’s learn about the ways students are doing these things and support them,” Kozyrev said.

“Know when to move forward and put a plan in place.”

Cabin fever is sure to set in during the next weeks and months, but don’t let that discourage you.

“Kids are supposed to be learning how to work together,” Kozyrev said. “How to connect with each other, and how to support each other. I encourage all of us, as parents, to really listen to our kids and their needs during this time.”

Students and parents alike are encouraged to seek help through their schools, online tools, and through others, who may also struggle with the new system.

“Online learning can give us the possibility for people to learn in ways that perhaps they couldn’t have before,” Kozyrev said. “We’re going to learn something; it’s just a matter of deciding what we’re going to learn at this time.”Bottom of Form. l

Tattoos and permanent makeup in West Jordan

uring a city council meeting at the end of February, Mike Johnson, owner and artist of Studio Elev8 in South Jordan, approached council with a request to change city code that currently prohibits tattoo businesses from operating in West Jordan.

“As of right now, permanent cosmetics are allowed in West Jordan, but other body art, illustrative tattooing is not,” Johnson said.

City Code defines which personal care business can receive license and which cannot.

“This definition includes permanent cosmetics when done in association with another permitted use such as beauty shops and nail salons, but excludes tattoo and body engraving services.”

Council Chair Chris McConnehey said on social media, “This is why we prioritize citizen comments. We have the day-to-day things that we have to address, but there are some things that don’t cross our radar until someone stands up and says something.

I’m sure there will be more to hear and further conversation in the coming weeks.”

Illustrative body tattooing is allowed in South Jordan city, where Elev8 is currently located.

“I’m looking to move,” Johnson said. “ I want to come to West Jordan because I’m really impressed with the rebuilding of the city. It’s more centralized. I have a lot of people that travel from all over the world, and it makes it easier to access.”

Johnson has received supportive comments on social media.

“I used to be against and misinformed about tattoos and now I have 2 of them,” Resident Channel Achenbach said on social media. “ I got them both in 2019 in love and support to a friend that took her life and when I lost my Father, that same year. I’ll support YOU!” l

s individuals in the South Valley begin to hunker down and isolate, companies that work with the people most at risk of COVID-19, the elderly, are ramping up efforts to keep their customers and patrons safe and well taken care of.

On March 13, all 16 senior centers operated by the Salt Lake County Aging and Adult Services closed to prevent the spread of COVID-19. Besides offering recreational activities and a chance to socialize, the centers offer breakfast and lunch service.

“What we are focused on right now is continuing to provide our midday meal service,” said Afton January, communications manager for Salt Lake County Aging and Adult Services.

January said many of the 19,000 people who visited county senior centers last year are dependent on the midday meal as a critical part of their daily nutrition. Prior to closing, center managers worked to communicate with patrons and made a list of those who were relying on the meals offered at the senior center. The following day when the sites were officially closed, employees gathered outside of the senior centers to pass out prepackaged meals to clients who needed it. This midday meal service will continue even while the centers are closed.

“In the coming days we may reduce the number of sites to make it more centralized but right now all regular meal patrons can go to their center Monday to Friday to pick up a meal.”

Salt Lake County Aging and Adult Services also run the “Meals on Wheels” program that delivers a midday meal to “frail and isolated older adults.” January said the program, which delivers to around 2400 seniors,

will continue to operate with a few changes during the COVID-19 crisis.

“We are taking extra precautions going into client homes with people who have chronic conditions,” January said. “Sanitation is always at the top of our minds and we are also providing additional hand sanitizer, Lysol wipes and things of that nature. We are also instructing all of our staff members and volunteers to not enter the home, but do a distant handoff; alert the client and put the meal where they can receive it.”

Tasha Lopez, executive director of Beehive Homes in Herriman said they are taking extra precautions with cleaning and hand washing as well.

“We used to let people in and direct them to the handwashing sink,” Lopez said. “Now we are escorting them right to the sinks to make sure it gets done.”

Beehive Homes is also trying to decrease exposure by temporarily stopping volunteers and limiting visitors to one per resident.

“The family will designate one sole person allowed to come in,” Lopez said.

Limiting volunteers and increased cleaning requirements puts more stress on staff and employees, but both Lopez and January say that everyone is happily contributing.

“I’ve got angels on our team,” Lopez said. “They are the best most caring people and aren’t giving it a second thought. They love residents like their own family. It has been incredible to see.”

“I am highly confident in our staff and volunteers,” January said. “This is a scary time but it is when we remember why we do what we do. Everyone

is incredible and is stepping up.”

January said that help is available to any older adult whether they are a current senior center member or not.

“We want to make sure to help any older adult who needs assistance,” January said. “Our message to the community of older people is to call us at (385) 468-3200. We don’t want to have closed centers and have people isolated and not know what to do if something happens to them. Our intake lines will be operational throughout this crisis.”

January said there are two major things that individuals can do to help the older community.

“First, people need to socially distance. Stay home, stay out of crowds, don’t go to the grocery store if you don’t need to,” January said. “As people withdraw from social life for a short amount of time people at lower risk fill in the gaps for people whose lives depend on staying inside.”

January said the second thing people in the community can do to help is reach out to older adults in their lives.

“It is a really good time for individuals who feel like they want to help to reach out to people and offer assistance,” January said. “Whether it is your grandparents, aunts, uncles, people you go to church with, elderly neighbors or colleagues...if you are in good health you could offer to go to the store for them or help in other ways.”

Lopez said the one thing she would request from people in the community is prayer.

“Pray for them,” Lopez said.

“Good vibes, happy thoughts, whatever your thing is we could all use it, but especially this population.” l

n March 18 at 11:59 p.m., Dr. Joseph K. Miner, the executive director of the Utah Department of Health ordered that “all foodservice, restaurants, self-serve buffets, salad bars, unpackaged self-serve food services, bars, taverns, nightclubs, private liquor clubs, and saloons in the state of Utah shall immediately close to members, guests, patrons, customers, and the general public.”

In compliance with the order, restaurants across the state immediately shuttered their doors to avoid large gatherings of people and minimize the spread of COVID-19.

This has caused incredibly problematic financial dilemmas for restaurants that often run on tight margins and rely on frequent patrons to sustain their business model.

Despite the obstacles that have resulted from this unprecedented crisis, many restaurants around the valley are still offering curbside, takeout and delivery.

The website “Curbside Utah” has sprung up to serve as a hub where restaurants can let customers know that they are still open during this time of hardship. The user-friendly interface allows visitors to search open restaurants by city. The restaurants list special instructions for how to order food over phone from each place and pick it up.

Small business owners and restaurants can easily take advantages of the service of Curbside Utah. At the top of the front page you are able to click a link that allows you to list your restaurant. Other small restaurants such as Peppercini’s American Eatery located at 3981 S. 700 East in Murray that rely on their visibility of the customer base from the surrounding office complex to do business have used other creative strategies to appeal to customers.

The small eatery has changed its hours and advertised the change on Facebook and Instagram, according to Shay Holton, manager.

“Our hours used to be 8 to 3 but we have extended 8 to 8 just with hours being cut in the building,” Holton explained. “We rely on the people that are around us and they’re all working from home. Either they’re too far or not a lot of people know about us right now.”

The change comes because the owners thought that getting a few night businesses as customers will help make up for the labor in the morning.

Peppercini’s is not currently a member of Curbside Utah but expressed enthusiasm about its potential to help connect to customers.

“We feel good about still being able to do pickup and deliveries. We’ll survive once this is over,” Holton said.

Everyday Psych: I didn’t want to talk about COVID

“

I’m not afraid of the virus, I’m afraid of the people.”

This sentiment is one I’ve heard constantly in my social circles. It’s a sentiment I share and would like to elaborate on here.

In the midst of the coronavirus pandemic, it’s not only important to stay safe and healthy (by routinely practicing proper handwashing and social distancing to combat the virus), but level-headed and grounded as well (by routinely practicing research and critical thinking to combat mass hysteria and panic).

The TL;DR (too long; didn’t read) version of what I’m suggesting here is: don’t freak out.

Even in the throes of the “toilet paper crisis” there were still rolls of toilet paper in many stores (don’t worry, I checked). But with everyone sharing stories and frantic pleas for toilet paper on social media, we all flocked to our local stores to hoard the goods.

With such instances, we temporarily forget about the primary concern we are all facing.

And getting into a grocery store fight doesn’t help combat that primary concern.

Researching and understanding the science of the coronavirus is extremely important for keeping ourselves and our loved ones happy and healthy. Credible information helps to combat mass hysteria. If we allow

ourselves to become too worried, anxious, and/or panicked, we could enter the realm of mass hysteria or acute conversion.

“Mass hysteria is the spread of bodily complaints within a school or workplace with no organic bases for the symptoms,” explains psychology professor Dr. David Myers. Mass hysteria is most commonly termed in cases without medically diagnosed physical illnesses, but noticeable symptoms.

For example, psychiatry professor Dr. Gary Small wrote about the “phantom gasser” in Illinois who would spray poisonous mist into the windows of teenage girls. The girls were showing physical symptoms such as nausea, vomiting and burning sensations. Other such examples of mass hysteria include nervousness around nuclear testing in the 1950s, meowing nuns during the Middle Ages, and arm and hand tremors in writing classes in Germany in 1893, among others.

However, sociologist Dr. Robert Bartholomew defines mass hysteria as “a collective stress response.” From the collective stress we are all encountering and/or experiencing related to the coronavirus, I think we have the potential to exhibit signs of mass hysteria, even with a real organic basis for the symptoms.

For example, “Notes from the field” by

Iuliano et al., a 2009 study focusing on the H1N1 outbreak in Delaware, showed the possible effects of mass hysteria, even with a real physical illness.

As Jaimee Bell, a freelance writer for the website Big Think, describes, “Mass hysteria isn’t only about your mind convincing you that you have symptoms of a non-existent disease or virus—it’s a collective state of mind that can convince entire populations of things that aren’t based in evidence or logic.”

In his commentary, Bartholomew goes on to say, “Think of mass hysteria as the placebo effect in reverse. If people can think themselves better, they can make themselves sick.” Here, he references conversion disorder, which is a somatic symptom disorder within the DSM-5 (Diagnostic Statistical Manual – five). These disorders have symptoms “associated with significant distress and impairment.” (However, I think our current situation might call for acute illness anxiety disorder, as the criteria for which is a “preoccupation with having or acquiring a serious illness” and “a high level of anxiety and health.”)

This is all to say, let’s be cautious and careful in the wake of this pandemic. We don’t need to be constructing hysteria, experiencing symptoms of acute anxiety, or

reverse placebo-ing ourselves. Instead, know the symptoms of COVID-19 to be wary of (fever, tiredness, and dry cough) and react as normal to everything else (like allergies).

Don’t panic or become too hysterical.

Instead, the stance I’ve been trying to embody and perpetuate is to have a pragmatic level of concern. l

Twice as nice: Bingham girls basketball repeats as 6A champs

efore the coronavirus wiped away most of the spring season, the Bingham girls basketball team wrapped up another memorable winter sports season by capturing the Class 6A state title.

Again.

The Miners defeated Region 1 champion Fremont 59-51 on Feb. 29 in a game held at the Jon M. Huntsman Center on the campus of the University of Utah. The game was especially sweet in multiple ways.

First, the victory gave Bigham its second-straight state crown after the Miners defeated Copper Hills in last year’s final. This season marked the third time in a row that Bingham had reached the championship game.

Second, the win gave the Miners sweet revenge and redemption from an earlier meeting between the two schools. Back on Dec. 3, Fremont blew out Bingham 71-44. In the title game, where the stakes were much higher, Bingham engineered quite the turnaround.

Third, and most significant, the Miners made a second-half comeback to seal the triumph.

Trailing 29-23 at the break, the Miners chipped away at Fremont’s lead in the third quarter after going on a 14-9 run. That cut the margin to just one point—38-37—heading into the final six minutes of play. Bingham was at its best when it mattered most.

The Miners outscored Fremont 22-13 down the stretch to seal the win, completing a 35-point reversal from the teams’ previous encounter.

Sierra Lichtie was the leading scorer for Bingham with 18 points. She had plenty of help along the way, too. Samantha Holman had 16 points and six rebounds for the Miners, while Jaycee Lichtie had 15 points and four rebounds. Ameleya Angilau had eight points and seven assists. A tough Bingham defense re-

corded a dozen steals on the day. Sierra Lichtie and Holman each had four three-pointers.

The Miners ended the season with a 19-6 mark.

Bingham reached the finals with a similar victory over Copper Hills in the semifinals the previous day. Bingham started off slowly, finding itself down 22-16 at halftime. How-

ever, a second-half surge lifted the team to a win. The Miners outscored the Grizzlies 16-7 in the third quarter and 15-9 in the fourth to win 47-38. Bingham swarming defense limited Copper Hills to just 16 of 53 shooting from the floor. Sierra Lichtie had 17 points, nine rebounds and four assists in the victory. Jaycee Lichtie had 13 points and eight rebounds.

Angilau had seven points, six assists and three steals.

Holman, Angilau and Jaycee Lichtie finished their Bingham careers, but Sierra Lichtie will be back as a junior. Still, head coach Charron Mason will have some holes to fill on next year’s roster. l

I was once asked to write down some easy recipes for the husband of a woman who is a quadriplegic. He wanted dinner ideas that were quick and inexpensive, and easy enough for someone with little cooking experience.

After some thought, I decided that instead of writing down each individual recipe, I could share a list of pantry items that, if he kept on hand, could provide him with a variety of meal ideas. This list has since been shared with newly-weds, college students, and wonderfully enough, my own teenagers who are taking on more cooking responsibilities.

1 – Canned chili Chili can be eaten alone, or spiced up with toppings like shredded cheese, sour cream, onions, olives, and peppers. You can use it as a smother for chicken, on Navajo tacos, for chili dogs, in a baked potato bar, over French fries, or mix it into macaroni and cheese. It also makes a delicious dip when mixed with cream cheese.

Trying to eat less meat? They make vegetarian chili too – and it tastes great!

2 – Canned refried beans These can be used in all sorts of Mexican inspired dishes: tacos, tostadas, burritos, taco salads, nachos, quesadillas, etc. You can change up the flavor by mixing in other items as well, such as salsa, enchilada sauce, canned black beans, ground beef, diced chilies, taco seasoning, cumin, chili powder, rice, or corn.

3- Pasta Pastas like rigatoni, macaroni, fettucine, linguini, cheese stuffed tortellini, and penne are great to break up the monotony of regular old

spaghetti noodles. And the toppings for pasta can be just as varied: marinara, Alfredo, meat sauce, sautéed vegetables, butter and seasonings, parmesan, salad dressings, olive and other flavored oils, or vinaigrettes.

4 – Potatoes While these probably aren’t considered a pantry item, I love to include them because they are so versatile, and pair well with most anything. They can be fried with onion, grated into hash browns, boiled and mashed, used in soup, roasted with olive oil and a variety of seasonings, baked and topped with veggies, chili, cheese, cream soups, salsa, sour cream, etc. You can even bake them the night before and keep them in the fridge for later use.

5 – Bottled sauces, dressings and marinades Slow cookers are a busy family’s best

friend – and there are few things easier than putting a few frozen chicken breasts in the slow cooker, pouring in a bottle of sauce, and putting on the lid. (Don’t forget to turn it on too!) Salad dressings like Italian, Catalina, vinaigrettes, and honey mustard are great over chicken. You can also use BBQ sauces, salsas, spaghetti sauce, marinades, and Indian simmer sauces. Then serve with pasta, rice or potatoes and you’re good to go! Dressings can of course top your salads, but they can also add a delicious kick to sandwiches, wraps and pasta.

Now, these aren’t by any means gourmet meals. What they are, is a solution for the reality of having our lives displaced. While we love having the whole world of cuisine right at our fingertips the reality of making do with what’s on the pantry shelf can spark our inner chef.

As the mother of four daughters, and grandma to several granddaughters, I’m frequently asked (okay, twice) what advice I’d give to young women. Women are stronger than ever before, yet many men try to drag us back to the Victorian Era. Men keep gettin’ up in our bizness, drafting regulations about our bodies, creating rules about everything from prom wear to breastfeeding, and making sure we’re slutshamed if we behave out-of-line.

We’re called hysterical. We’re labeled as trouble-makers. We’re branded as unreasonable. We’re given a warm glass of milk, a pat on the head and sent to the kids’ table.

Men have had thousands of years to run the world – and I’m not impressed. Maybe it’s time they step aside and let women do the heavy lifting. (Which we can totally do.)

FAMILIES ADAPT TO SCHOOL AT HOME

I

t’s a job they didn’t go to college for and yet, overnight, parents became teachers for their children as Utah schools closed due to the coronavirus pandemic. Teachers transferred face-to-face learning to an online format and parents juggled their own workspaces and schedules to accommodate school at home.

“I’m grateful for these teachers because this homeschool thing is rough, and frustrating and overwhelming but we are all in the same boat together and we will get through it together,” said Herriman resident Amy Stewart, mother of a kindergartener, fifth and seventh grader.

School at home for Jordan District got off to a bumpy start March 18 with an early morning earthquake and problems with connectivity with district-issued Chromebooks.

Things have improved since then, with families adapting for what works best for their family.

South Jordan resident Chelsea Brown said no one is doing this alone.

“We still have a teacher who is attached to every bit of our learning who will still give us a grade and who is still available to us,” she said.

Brown created a designated space for school work for her first and third graders.

“We’ve created a classroom,” she said. “That’s where school happens so that my kids know we aren’t doing YouTube right now. We’re not playing games. We’re in the classroom.”
