USDB STUDENTS OPEN NEW LINES OF COMMUNICATION WITH LAWMAKERS

n Jan. 9, 40 students from Utah Schools for the Deaf and Blind (USDB) participated in this year’s Day on the Hill field visit to the Capital to thank the legislator in person for funding for their schools and programs. However, it’s clear the representatives themselves are also very thankful for this annual visit as Rep. Martha Judkins expressed, “Thank you!

It’s my favorite day when USDB visits!”

This year students wanted to offer an additional benefit for officials beyond just observing lessons as they had in the past, so they taught them improved ways to communicate with individuals who are hard of hearing, deaf, blind, visually impaired or deaf-blind, and it proved to be a great addition. “This was the best Day on the Hill. We had more legislators come see the students than we’ve had in all the years I have been here,” said USDB’s Tammy Flint.

Participants this year included students from the new Springville school in Utah County, the SLC campus, high school students and graduates from Ogden, and elementary students from Millcreek.

Students who are deaf and use American Sign Language (ASL) taught lawmakers some common signs, while students with hearing impairments provided suggestions for communicating with those who wear a hearing aid or have cochlear implants. Students who are blind showed lawmakers how to navigate with a white cane, taught Braille code and showed them how to use screen reader technology.

This sentiment was shared by Rep. Lee Perry, who took a tour with a student who taught him to use a white cane while wearing low-vision goggles. “I can’t tell you what an

amazing experience it was,” he said. “I’m glad we have people who can teach the students orientation and mobility. That was so much more difficult than any drunk goggles I ever wore while I was a state trooper. Utah supports these kids and their programs, and we need to continue to support them.”

Millcreek’s Officer of the Month helps capture robbery suspect

ach month, one of Millcreek’s police department officers are selected as Officer of the Month. They handle an array of different charges and personalities.

This can mean adapting creatively when the situation requires it. This is most common when it is a priority to remove someone whose behavior threatens the public. Detective Kievah Hansen came across just one of those situations.

On Dec. 18, 2019, Hansen had developed a lead on a wanted individual who had a warrant out for arrest for aggravated robbery.

The Unified Police Department’s violent crimes unit had issued a request to all of its officers to locate and arrest the suspect.

In doing some of her own investigations into the individual and his background, she found a way to make contact using social media. She reached out to who was assumed to be the person suspected through Facebook.

The department was able to trick the suspect through messages on Facebook and a ruse was set up. The suspect stated he was in Millcreek and agreed to meet with Hansen, not knowing she was a police officer.

The suspect was seen leaving his apartment in Holladay but quickly fled on foot upon seeing officers. After a short chase, he was captured.

The compounding growth of The Other Side Academy

t last month’s city council meeting, the mayor and City Council praised the Other Side Academy (TOSA) for its growth and continued progress. Councilmember Cheri Jackson said, “I’m very impressed by TOSA. They are an independent organization that doesn’t receive tax dollars. They get by on their own generated revenue. They even helped us move, and getting to know the students, some of the facts about them are astonishing. The average times arrested is 25 times. Average suspended incarceration time is six years. Percentage of students who have been homeless is 90%. They said so far, they have provided 100,000-plus free nights of housing, food, clothing and training for the formerly incarcerated or homeless, and 85% of their graduates have remained employed and crime free at the end of 2019.”

The City Journals was invited to tour TOSA’s second newly opened thrift store. We met with two former TOSA graduates who are now working as staff. Beau Clark is a manager over their construction, moving and thrift store, and Sierra Belka handles marketing, social media and public relations. They explained the organization’s inception and day-to-day workings that bolster its success.

In 2005, Dave Durocher was arrested in Huntington Beach, California and faced years in prison. Durocher had already served significant prison terms on four separate occasions, for two years, five years, six years and 10 years.

Using and dealing drugs, Durocher led the police and a California helicopter on a chase until they “pit maneuvered” his vehicle. This is when an officer align their cruiser’s front bumper on a fleeing vehicle’s left or right rear end and apply enough pressure to cause the back end to lose traction and safely spin off the road.

Facing a 25-year sentence, Durocher said, “The streets are conducive to change.

Jails aren’t conducive to change, and prison isn’t either. So where do you send someone who continues to return again and again?”

knew of a place, and said he was “going to allow Durocher the opportunity of a lifetime.”

If he pled guilty to all crimes, he would be released to the Delancey Street Foundation, otherwise known as Delancey Street, in San Francisco. On one condition: if he was kicked out or didn’t graduate, he would be returned to prison to serve the two-decade sentence.

Delancey Street is named after New York City’s Delancey Street. The area was a settling place for immigrants at the turn of the 20th century. John Maher, a former member of a drug rehabilitation program called Synanon, founded the Delancey Street facility in

1971 along with three friends who all cleaned up together in treatment.

After completing the program which is still in operation today, Durocher continued to make good choices. He told the Delancey Foundation staff he had spent the first portion of his life hurting people and he wanted to spend the remaining years helping people.

They coordinated a meeting between Durocher and Joseph Grenny, who is currently a four-time New York Times bestselling author and co-founder of VitalSmarts.

“After the three-hour dinner, the two men hit it off and a plan was formed,” Clark

The design of TOSA has been described as “amazing” because it is a therapeutic community, yet it does not have any therapists, licensed substance abuse counselors or any type of security. When co-founder Durocher was negotiating the release of inmates into the academy, the judge had a question that many people were concerned about.

“You are going to put gang members, thieves and drug dealers all in one house together, men who have sworn to kill each other on sight in prison because of gang affiliation. How are you going to stop that?”

Durocher told the judge, “We will simply ask them not to do it, Your Honor. When was the last time someone politely asked them?”

Clark and Belka reiterated that point.

“To this date, we have not had one single act of violence take place at any of our homes.

The process is set up with complete accountability to each other as opposed to a certain rule or authority figure.” It is also what makes the entire academy work differently than other types of traditional treatment.

When someone wants admittance to the academy, they must write a letter stating why they want in and their motivation for making a change. Many of the letters come from people getting ready to see a judge or the parole board, or people coming to the end of their incarceration sentence.

Once they have written the letter, a staff member from the facility will set up either an interview on-site or travel to the facility the person is housed in and formally interview and screen them. It’s an intensive interview to gauge whether they feel they can help that person but also ensure they will fit in with the current group.

“Once someone is admitted to the home, they meet with a panel of peers. Usually three people who have been in the program at lengths of eight months to a year, 18 months

to two years and another who has multiple years,” Belka said.

“This allows a broader spectrum to have eyes on the new person and teaches the newer members the process of connecting,” Clark explained. “What we always say is our primary goal is not to graduate students who just don’t use anymore, what our interest is to graduate men and women of the highest caliber of integrity, of selflessness, of honor and honesty of character because that way they are so far removed from any reality of participating in things that are harmful to themselves or others that it’s not just, ‘I don’t want you to use heroin anymore,’ it’s that I want you to be a decent human being that everyone can depend on, people at your job like you, your family trusts you — that is the underlying goal over time.”

The time frame for graduation is 30 months. The first 21 months is the structured part where students adjust to living at one of their homes and learn the rules and 12 philosophies: • You alone can do it, but you can’t do it alone • Make and keep promises • Self-reliance — there is no free lunch • Impeccable honesty • Act “as if” • Embrace humility • Each one teach one • 200% accountability • Forgiveness • Boundaries • Faith friendly • Pride in work They are assigned a location to work at depending on TOSA’s needs and the skills of the individual. All money goes to the TOSA fund and pays for rent, food, clothing and other needs.

The rules include no cell phones, no sexual contact between members and no sexual misconduct, and many of the other basic rules found in a therapeutic community. They hold each other accountable for everything from being honest to being selfless.

The tougher rules for many people are

the separation from family and friends. After 30 days of successful participation, a student may be able to write to and receive letters from one approved family member. All correspondence is monitored.

After three months, students may place a 15-minute phone call once a month. After one year, an on-site monitored visit from up to four family members monthly. After 15 months, they may see their children on Kids Day, which is the last Sunday of every month. After 18 months, communication with a spouse (or significant other) is approved.

TOSA has a moving company, construction services, crews that pick up donated goods and the two thrift stores. They also do free on-site pick-up for any items you would like to donate. From month 21 to 30, individuals can find outside work and save money while living at TOSA rent free.

Starting with two dozen male students, TOSA has quickly grown to 107 male and 20 female students. In 2019, just two and half years into the organization’s inception, their 990 tax form listed their total revenue for the year at $11,360,438. It’s rare for a business to achieve over $10 million in its first few years, but it’s unheard of when the business doesn’t receive any type of state or federal financial assistance.

Tim Stay, TOSA’s chief executive officer, said its revenue is made up of donations and program service revenue. “Program revenue is generated from our social enterprises, the Other Side Movers and the Other Side Thrift Boutique.”

The biggest jump of revenue came in 2019. TOSA received $1.8 million in donations in 2018, and then $8.5 million in 2019.

Stay said, “As we continue to generate profit from our social enterprises in coming years, we will pour that excess capital into expanding our facilities in additional cities. With the $8.5 million in donations, we purchased an apartment building for $2.5 million across from our campus in Salt Lake that we are using for student housing. Why this furniture store doubles as an art gallery

W

orking as a local artist can be full of challenges. One of the biggest is finding places to display your work so buyers have a chance to see it. Because of this, the Intermountain Society of Artists (ISA) has started coordinating art shows in a place you might not expect, Millcreek’s Downeast Home and Clothing Store.

The Downeast store in East Millcreek displayed local artists’ work alongside the furniture they sell from Jan. 1 to Feb. 29.

The show is called Winter on the Wasatch. It featured winter landscape pieces from local artists working in all different mediums.

This is the second show of its kind hosted by Downeast in partnership with ISA. Prior to this show, there was another group show called Art of Mount Olympus. Downeast had already done a few art shows featuring a single artist, so when Rob Chipman, the president of ISA, approached them about doing a group show that features multiple artists with the same theme, they jumped at the idea.

One of Chipman’s main goals for the ISA is to help local artists gain exposure, so

shows like this are important.

Chipman explained why finding places to display your work is as challenging as it is necessary when he said, “It’s such a dysfunctional marketplace. There’s a definite reason why they’re often referred to as starving artists. It’s difficult to get your work seen and to have that work match up with something that somebody would want to buy... It’s always a challenge. Matching an artist with people that appreciate and like their work is not unlike the challenge of dating.”

Many of the artists echoed Chipman about how difficult it can be to find buyers.

Because of this most of them have another job, or used to and are now pursuing art more exclusively in retirement.

Rob Adamson, a well-known Utah artist who also teaches at Salt Lake Community College, said, “We have a plethora of really good high-quality artists in Utah, the only problem is do we have some collectors? Most people have to sell outside the state.”

Candace Rideout had an advertising agency for 30 years and is now able to put

most of her time into her oil paintings. Rideout said she thinks the 2008 market crash badly affected the art market and it hasn’t fully bounced back. To combat this, Rideout recommended anyone hoping to work as an artist try to get featured in a national magazine such as “PleinAir,” “Art of the West” or “Fine Art Connoisseur.” She thinks it’s one of the best ways for buyers to see your art.

While this is hard on many artists, Rideout and all the artists seemed happy to be working in something they love so much.

As Rideout put it, “It’s nice to get paid for something you’d do for free.”

Showcasing original artwork in a retail store may seem unexpected, but it benefited the artists and Downeast. Many people came to the store who might not have to see the art,

and many frequent customers who wouldn’t have seen the art otherwise were able to.

Ashlee Wallis, the store manager, said displaying the art is mutually beneficial. “It helps sell the art and it sells the furniture too… You get to see what the pieces would actually look like in a home.”

But beyond that, Wallis said displaying local artists helps the store interact and connect with the community in a way she appreciates.

“It’s really great having one of our regulars put their art on the walls and then one of their friends comes and buys it. It’s very homey,” Wallis said.

One such regular was Susannah Mecham, a young artist and current student at the University of Utah. Mecham got involved in the show thanks to Downeast’s soda deals.

“Long story short, myself and many other Millcreek locals love to stop by Downeast to grab a beverage and say hello to the staff. Ashley is a friend of my family and she got me connected with the Winter on the Wasatch show as well as previous shows,” Mecham said. “Ashley knew I would be interested from our daily chats, which I think says a lot about the community that helps put these shows on.”

According to Chipman, the show was a success and they hope to host more at Downeast and throughout Millcreek in the future. Local artists are welcome to reach out to the ISA at isartists.org to be featured in an upcoming show. l

Medicare expert explains how it works

M

edicare specialist Sheri Fawson recently hosted a Medicare class at the Millcreek Community Center.

During the free class, she answered questions and walked attendees through the basics of Medicare.

Medicare has four basic parts: A, B, C and D. There are also Medicare Supplements that come through private insurance. With all the different options it can get quite complicated. Here are the basics of each plan as explained by a Medicare expert.

Original Medicare Original Medicare includes parts A and B. These were the plans first created with Medicare in 1965. Both are government insurance and offer the same coverage to everyone.

Part A covers hospital stays, skilled nurse care, hospice and home health care. Part B covers doctor appointments, outpatient care, occupational therapy, emergency room and ambulance rides.

Part B comes with a monthly premium of $144.60 and a deductible of $198 for 2020. Once these are reached Medicare covers 80% and the beneficiaries cover 20%.

“Medicare was never intended to pay for everything.

Like Social Security it’s to help,” Fawson said.

While Original Medicare is helpful, some important medical needs are not covered, often referred to as gaps in coverage. Some of these gaps include dental, eye exams, hearing aids, long-term care and many prescription drugs.

And if you have poor health, your copayments may end up being very high.

Medicare Supplements and parts C and D work to cover

Part D Part D covers prescription drugs and is meant to be used in conjunction with Original Medicare. Part D also comes through private insurance and you can get it as long as you aren’t getting part C. Part D is the only part in Medicare that can come with a penalty. If you first choose to wave part D then change your mind and want it later, there is a penalty.

Part D was enacted in 2006 because there was a desire for prescription drug coverage with Original Medicare. Fawson explained the reason prescription drugs aren’t covered in A and B was that prescription drugs were far cheaper when Medicare was created in 1965.

Medicare Advantage Part C is also known as Medicare Advantage. Part C comes through private insurance and it has to cover everything in Original Medicare as well as or better. It has zero additional premiums, but you still have copayments.

“The reason they came up with part C was people didn’t understand Medicare. They wanted insurance that was like what they were used to,” Fawson explained. The good thing about part C is that you get everything taken care of with one plan. “They’ll cover dental, vision, drugs — they’ll put it all

Supplemental plans Finally, there are supplemental plans, also referred to as Medigap plans. You get these along with Original Medicare.

There are 10 supplemental plans you can choose from offered by various private health and life insurance companies. The 10 plans are all standardized, so whichever insurance company you choose you’ll be getting the same coverage.

Medicare supplements cover copayments that Medicare and Medicare Advantage don’t. However, they do come with premiums. So, with supplements, you pay upfront rather than paying copayments later on.

Each of the 10 plans has varying coverage. Fawson recommended part G, a subset within Medicare supplements for the best coverage and value. l

Local panelists speak on starting over, finding strength in hardship

K

risten Hodges started the “We Brave Women” lecture series in Jan. 2017. It’s a free monthly series, usually taking place at the Millcreek Community Center, where different panelists are invited to speak on varying topics.

Hodges wanted to use this platform for as many people from as many backgrounds as possible to share their stories.

The series is “a place where women and marginalized genders can tell their stories of everyday bravery,” Hodges said.

The series has hosted a variety of topics over the years such as evolving identities, surviving of abuse and assault, and women in male-dominated fields. Hodges said she usually selects her topics because someone approaches her saying they have a story to tell. She then finds other panelists and builds the month’s event around the topic. She tries to have a variety of panelists who can give different voices to the same general topic.

The panelists range from those who are used to public speaking to those who have never told their story publicly before.

Hodges says listening to the stories every month has benefited her tremendously and hopes it will do the same for anyone who comes to listen.

“It gives us a chance to consider our own story and our own everyday bravery because

we all have stories whether or not we get a chance to tell them,” Hodges said.

At one of the most recent events in the series on Jan. 29, four panelists spoke on their experiences starting over. This topic meant something deeply personal and different to each of them but carried similar themes throughout the evening. All the panelists told stories of hardships they eventually grew from.

Kalani Tonga told her story of moving states and raising five children by herself.

When Tonga was a young mother, her husband went to prison and she was left to look after five young children on her own.

Taking care of all her children by herself felt like an impossible task until it was her only option. Tonga said, “It’s amazing what you can do when you don’t have a choice.”

She moved from Northern Virginia to live with family in Centerville, Utah. Though it was a tragic time, Mooey said she was surrounded by a community who supported and loved her through it.

“There is a strange confidence and power that comes from going through something really hard and keeping it together,” Mooey said.

The third panelist, Fatima Dirie, was born in Somalia but moved to Utah when she was 9. Once she moved here she had to learn English and attend school in a completely new culture. She put in the extra work she needed to graduate high school even earlier than anticipated.

“Here I am in a new country. I never thought I would go to school, I never thought I would have an education, but I quickly learned,” she said.

Now, Dirie works for the mayor’s office as a refugee community liaison. One of her goals in this position is to help refugees coming to Utah acclimate without giving up their culture.

“You should never have to give up who you are to please other people. You shouldn’t have to give up your roots or your identity,” Dirie said. “As much of an American that I am, I’m also still a part of my people.”

The final speaker, Kris Irvin, came out as transgender toward the end of 2015. Since then, Irvin said they’ve essentially been “starting over every time I meet a new person.” Coming out also meant Irvin’s relationships changed with those already in their life.

“There are a few people that I’ve lost, and that’s hard,” Irvin said. “But I’ve gained so many connections.”

Uncle Bob’s Butter Country pancake syrups

Saturday pancake breakfasts have been a staple in the Smith household for decades. But the crowning glory has always been dad Bob’s homemade buttermilk syrup.

“One day we were out of buttermilk, but we had an old container of Log Cabin (syrup),” Bob recalled. When the pancakes were served without dad’s buttermilk syrup, his children boycotted the pancakes.

His oldest son asked incredulously, “Do you really expect us to eat this syrup?”

“Right then, I knew the buttermilk syrup was something special,” Bob recalled.

Special might be right.

There have been few innovations in pancake syrups. “It’s been basically maple forever, some artificial syrups and low sugar ones, which nobody likes, and some fruit syrups,” Bob said. So buttermilk syrup — a favorite of home cooks — was ready to sweeten up the market. The Smith family dove in.

After obtaining a cottage food certificate (an approval by the State), things started slowly. In their Cottonwood Heights’ kitchen, the eight Smith children plus parents made 250 bottles of syrup.

It was a tricky business managing three gallon-sized pots, temperamental frothing syrup, and bottling. They sold the final product, Uncle Bob’s Butter Country syrup, at local farmers markets.

It wasn’t until a few years later when Bob’s son Jared returned from his church mission and began attending BYU that things got going. “I knew that if we didn’t make and market this, someone else would,” Jared said, adding that once people taste buttermilk syrup, there’s no going back to artificial maple syrup.

Jared set about experimenting, making hundreds of bottles, and consulting

food scientists, including his brother-inlaw, Cameron Smith, a recent food science graduate at the time.

It took about 18 months to verify that Uncle Bob’s syrup was shelf-stable, because it is made with real buttermilk and cream. Getting the product to market proved to be another challenge. Eventually Harmons took them on and later, Associated Foods. Butter Country is now in 170 stores.

Jared described the syrups as on par with premium maple syrup, but with new flavors, a creamy texture, and no artificial additives. For traditionalists, they have a butter-infused maple flavor. The original buttermilk flavor makes a good base for fruit toppings. New flavors include harvest spice and coconut cream.

Bob said he hopes these syrups bring people back to the simple delights of a pancake breakfast.

“It’s about making memories,” he said.

One autumn day, Rick Black was pureeing his varieties of homegrown chili peppers to freeze, when he had a fiery vision.

“I wondered what the essence of the chilis would be like in a good quality hot fudge,” he recalled. “That is, literally, how the idea came.”

With his favorite Dutch processed cocoa, he experimented extensively until he invented a chili-infused hot fudge sauce that, he said, “amazed” people, including his brother in Texas, who became his first

Black’s goal was to make a premium product with a unique twist. He sought sensations that brought the palate to life — a smoothness and sweetness from chocolate combined with the “essence” of chilis to bring out notes of heat and flavor.

Black, a scientist by profession, got seven tasting groups together in his Sandy neighborhood. He’d test different types of chocolate, cocoas and combinations of chili varieties, then asked participants to fill out questionnaires.

“Even if people didn’t like spicy foods, they all said it’s the best hot fudge they’d ever had,” he said.

After perfecting his “proprietary blend” of seven varieties of chili peppers and finding the best cocoa, he leased a commercial kitchen, and with a humorous poke at our label-conscious culture, named his spicy creation Free Range Fudge.

Popular flavors include original, extra spicy, milk chocolate and peppermint fudge, which Black’s daughters say is “like a warm, spicy, ooey-gooey Junior Mint.”

New flavors for holiday offerings are in the test kitchen now.

Donning chili-patterned pants and wearing an aspirator and goggles while pureeing the chilis, Black makes his fudge in small batches, selling them through his website, www.blackmarkettradingcompany.com and at local stores. His family, including wife Jill, help cook and bottle the fudge. They work quickly, the beneficial result of Black’s production-efficiency studies. Daughter Marli does the photography, while daughter Kalen manages social media.

Soon, he hopes to have his own commercial kitchen in order to work on transitioning from small-batch to large-batch production for distribution to grocery stores.

“This is a passion,” Black said, and one that’s challenging to do while working full-time. But he’s having fun zooming around town in his Honda hybrid with a bold graphic of the Free Range Fudge mascot — a cartoonish chili pepper wearing a cowboy hat. On the rear window is written his favorite quote, “We don’t pen up our peppers.”

“Happy peppers make happy fudge,” he quipped.

SweetAffs Cakes and Cookies

With a 2-year-old, a part-time job, and a small farm she runs with her husband, she works late most nights. “It’s been a learning process of what I can handle and what I can take on,” she said. “I do things in stages.”

She’s hoping to add more classes, including online classes for her out-of-state fan base. One day, she wants to operate SweetAffs full time. Until then, she’ll work late into the night baking and decorating the dozens of cookies and several cakes she makes each week.

“I am grateful that I am in a place to make this a reality,” she said. “I try to be grateful for it and for everything I have.”

Food competitions take the cake

By Jet Burnham | j.burnham@mycityjournals.com Eight teams of students and teachers emerged from the dust of flour and sugar with creations such as panda-faced red velvet cupcakes and apple cinnamon cupcakes with apple cider buttercream and a last-minute caramel drizzle. The latter was named winner of Fort Herriman Middle School’s second annual Cupcake Wars held Jan. 22.

A passion for cooking, the thrill of competition and bragging rights, motivates many teens to enter cooking competitions.

“It lets them be creative in a way that school doesn’t always let kids be creative,” said Madison Heist, teacher and judge at FHMS. All seventh graders learn basic cooking skills. Older students take Foods and Nutrition classes as electives. The most serious high school students take two years of ProStart classes to prepare for food service industry jobs. But—it’s the contests that really take the cake.

Competitive cooking is a popular TV trend that has influenced many foods instructors to incorporate contests into their curriculum—who can create the best smoothie or ice cream sandwich? Others host afterschool competitions for any student who thinks they can craft the best pizza, burger or cupcake.

For more intense competition, the Family Career and Consumers Leaders of America (FCCLA) offers student competitions in Baking and Pastry and Culinary Arts events. ProStart hosts region, state and national competitions requiring teams to create and execute a three-course meal.

Young said competitions provide learning opportunities students can’t get in a classroom.

“In the classroom, they have a limited amount of time and oftentimes a limited amount of resources,” Young said. “Having students compete teaches them to try new things, expand their comfort zone, build confidence, and do hard things that they didn’t think they could do.”

JHS junior Jordan Castaneda likes that competitions allow him to be more creative. For the ProStart competition later this month, his team will make shrimp nigiri, stir fry chicken in a noodle nest, and layered mocha Chantilly cake. They will have just one hour and two gas burners to execute their menu and will be judged on taste, presentation, technique, time management, knife safety, sanitation, food cost, menu planning and business plan.

During competitions, students are expected to problem-solve on the fly. As a FCCLA event judge, Kristy Yeschick watches for how well students respond to problems under pressure.

“In the classroom they have that safety net,” she said. “If they mess up, it’s OK, they can do it again. Whereas in the competition, you’ve got to be at your top game.”

Copper Hills High School foods instructor Megan Maxfield said competitions teach teamwork, problem-solving, time management, and leadership skills.

When CHHS teams competed in the FCCLA regional Baking and Pastry event, problem-solving began weeks before the competition. The recipes they were given recipes for chocolate chip cookies and

garlic bread knots had errors, said senior Brooklyn Gutierrez. Measurements and cooking times had to be adjusted through trial and error during several practice runs.

At competition, the team had to adapt to even more complications: Their cookie dough got too cold, the kitchen equipment was unfamiliar, and humid weather affected their recipes.

FHMS teacher Kayla Martin, whose team has won cupcake wars both years, said skills gained through competitions benefit everyone, not just those interested in highly competitive culinary careers.

“Everybody works a fast food job at some point in their life,” she said. “So it’s good practice for working in a kitchen or a high stress job.”

Many students love the thrill of the stressful environment of competition.

“I like the pressure,” JHS senior Mia Conham said. “I think it’s fun and I get really competitive.”

JHS senior Holly Tang said when they are prepared, they can enjoy the competition.

“We always have a ton of fun,” she said. “We’re always laughing and joking with each other.”

Emma Powell, a competitor in FHMS’s Cupcake Wars, said it’s easy to forget about the pressure when doing something you enjoy.

“It has a competitive aspect to it but you also have fun in the moment,” she said. “Then you realize there’s 10 minutes left. There are people you have to beat. So you put more effort than you think you can put into it.”

It’s a life of learning for this wine educator

Not for vacation planning (she wishes), but rather to study Spain’s 17 autonomous wine regions and the dozens of unique appellations. There were thousands of wine facts to know, maps to memorize and soil conditions to understand. For 6 to 8 hours each day, Schowe sat at her desk studying for the Wine Scholar Guilds’ rigorous Spanish Wine Scholar certification program.

“It’s the hardest test I’ve ever taken, and I have a master’s degree,” joked the Sandy resident. But such diligent study is all in a day’s work for Schowe, the first female wine educator in the state who started Utah’s first official wine school, Wasatch Academy of Wine, decades ago.

Wine has always played a central role in Schowe’s life. She grew up near California’s wine country, where wine was appreciated and served with dinner and visits to wineries were regular events. So, when she moved to Utah in the ’70s, she said, “I anticipated a change in the wine culture.”

But, when she found herself at a Provo restaurant and the waiter poured her “wine,” which turned out to be a disguised bottle of Welch’s grape juice, she thought, “What kind of bizarre place am I in?”

Utah, she decided, was ripe for a proper wine school. But that would come a bit later.

Instead, Schowe, who had just received a master’s in education administration, found herself developing Utah’s first community education program serving children and adults with disabilities. Granite School District told her if it was going to succeed, she’d have to fundraise for the participants’ enrollment fees.

“I thought, ‘How incredible, I got a master’s degree just to do bake sales and car washes,’” she said. Then her thoughts turned from tedious cake baking to the joys of wine tasting.

She enlisted Utah chefs to donate food for a tax write-off and then gathered every oenophile (connoisseurs of wines) she knew to make a donation, bring a bottle, and learn about it.

“The [District] was impressed with my fundraising, but I never told them it started with wine,” she said. Enough money was raised to open several programs in the District that addressed the academic needs of adults with cerebral palsy, gave children access to wheelchair basketball, and created programs for developmentally disabled adults to learn independent living skills.

Several years later, in 1991, she started Wasatch Academy of Wine.

For Schowe, the appreciation and study of wine is a gateway to many stimulating experiences in life. Besides new tastes, aromas and textures, an education in wine opens up new worlds — the geology of a grape-growing region, its society, art, history and culinary expressions. “You can become intellectually and experientially connected to the world through wine,” she said.

While academic study is necessary, she values learning through experiences, especially through travel and meeting winemakers.

“Last year I was in Europe for two months. The purpose was to meet with winemakers, to walk through their vineyards, to watch them make wine, to visit cellars, to taste wine with their families and experience their food traditions,” she said.

“I bring those stories home and it greatly enhances the presentation in all my classes... it gives a deeper meaning.”

Her life’s goal is to taste every wine from every appellation in France, Italy and Spain and, while she’s tasted many, there are hundreds she hasn’t. “It is like a treasure hunt,” she said.

Her students today have increasingly sophisticated palates, Schowe said, so the Academy has expanded to include Wine Scholar Guild classes, wine dinner clubs, and popular food and wine pairings.

She’s delighted to now see local restaurants with well-researched wine lists and knowledgeable staff. And diner’s tastes have ventured beyond just wanting to know what the best Cabernet is, she said. People want to explore wines in detail, such as dry sherries from Andalusia, the southernmost region of Spain. That’s something she’s excited to teach now that she’s spent all winter studying Spanish wines.

Meatless doesn’t mean tasteless

If one of your goals in 2020 is to eat less meat, you’re in luck. 2019 saw the widespread introduction of meatless meal options, even in fast food restaurants like Del Taco and Burger King.

Of course, many people go meat-free for the sake of animals. But eliminating animal products is also one of the best ways to reduce your carbon footprint. Even just cutting down on meat can have an impact.

You might say meatless burgers are having a moment. Meat-free patties come in two basic categories: those designed to imitate meat and those that embrace their veggie essence. Of the meat imitators, the Impossible Burger (made largely of soy protein) and Beyond Burger (made of pea protein) reign supreme. They’re very similar to real meat in taste, texture and even macronutrient content. Veggie patties are usually made from a blend of vegetables, grains and seeds, and their macronutrient content reflects that. Overall — especially

when prepared with all the fixin’s — meatless options aren’t necessarily healthier than their animal-based counterparts. But we’re just talking taste here.

If you venture downtown, plant-based eateries and meatless options are easier to find. But restaurants in the south Salt Lake Valley have some tempting offerings as well. Here’s a roundup of the best meatless burgers.

1. Ice Haüs’s Kein Fleisch Burger (Murray) Ice Haüs, a bar and restaurant, offers one of the more extensive vegan menus you’re likely to find at a place for omnivores.

Their Kein Fleisch (German for “no meat”) burger does not disappoint. Ice Haüs uses Beyond patties, but they certainly put their own spin on the burger, which is topped with vegan kielbasa and cheese, beer-caramelized onions, sautéed mushrooms, sauerkraut, and spicy mustard. It’s heavy, flavorful and satisfying. If you’re looking for a big, juicy meatless burger you probably won’t notice it’s meatless, this is the one to try.

2. Hires Veggie H (Midvale) Unlike many burger joints that source their meatless patties from outside companies, the patty at the center of Hires Veggie H is house-made. The patty is a blend of carrots, broccoli, onions, green peppers, celery, mushrooms, rice, wheat, rye, oats, barley, seeds and spices that tastes a lot better than it sounds. It’s also topped with a soft bun, cheese and fry sauce. It’s not meant to imitate meat—the veggie patty is its own thing—but it might be as close to the greasy deliciousness of a classic Hires Burger as you can get without involving a cow. Plus, almost any of the burgers on Hires’ menu can be made with a veggie patty instead of beef patty, so there are plenty of options for meat-free eaters.

3. Dog Haus’s Impossible Burger (Sandy) Dog Haus is known for their hot dogs and sausages, but they do have a fair selection of plant-based options. Their Impossible Burger isn’t large, but it does have everything Utahns love in a cheeseburger: pickles, iceberg lettuce, tomatoes, cheese

and fry sauce. The sweet King’s Hawaiian roll that serves a bun completes the sandwich. I dare you to tell the difference between this and a beef burger.

4. Crown Burger’s Garden Hamburger (Sandy) Crown Burger doesn’t make its meatless option easy to spot on a menu. But the Garden Hamburger is, in fact, vegetarian.

There’s not much to it except for a tasty bun, fry sauce, fresh toppings and a Gardenburger patty (made from mushrooms, oats, cheese and spices). And while it’s not meant to fool you into thinking it’s made of meat, it is a pretty delicious sandwich.

5. Fueled Kitchen’s Black Bean Veggie Burger (Draper) Fueled Kitchen offers one of the most popular meat alternatives: a black bean burger. Their black bean burger has a subtle spiciness, accentuated by the tomatillo spread that tops the patty. The whole wheat bun is soft and the sandwich feels substantial, but it lacks the greasiness many crave in a burger.

Eastwood Elementary turns 60 and celebrates in style

E

astwood Elementary School at 3305 South Wasatch Boulevard was built in 1959–60. On Jan. 30, the school celebrated its 60-year legacy with displays, alumni, cake and student performances of songs from the era.

In the main foyer and halls, tables held Eastwood yearbooks and memorabilia. Other displays showed “things that were released the same year we were released,” said principal Naomi Hopf.

From the displays, kids learned the first Barbie doll was released in 1959. It was the same year grocery stores started selling Cocoa Krispies and Cocoa Puffs. You were really cool if you had an ant farm, played Frisbee and took your best girl to the drive-in movie.

In the gym, Hopf introduced Bill Souvall. Souvall attended the school the first year it opened. His granddaughter, Ellie Aramaki, is currently in second grade at Eastwood.

“All the classrooms were full that first year. Everything was just new. The restrooms were nice and the classrooms were new.

There were barriers to keep us off the grass because they had just planted it,” Souvall said.

“The area was still so wild. Outside we found rattlesnakes, and one day we found a dead bobcat,” Souvall said.

Souvall remembers having a crush on his teacher Ms. Sharp. “She was a cutie — she had red hair. After my parents went to parent/ teacher conference, my dad came home and said, ‘I can see your point,’” Souvall said.

“My mom saved all my old report cards.

There are a lot of good memories. But the school does seem a lot smaller [now that I’m an adult],” Souvall said.

Next on the program was a performance by each grade. “Each grade learned a song from the year the school was built. They’ve had so much fun, and they’ve nailed them,” said Amy Bulut, who taught the songs to all

the grades. Bulut works at the school and has two children who attend Eastwood.

The faculty and some older students sang and danced to “Rockin’ Robin.” They were followed by the third grade. With the girls dressed in poodle skirts, they sang “Personality” and showed they had plenty of it.

The second grade warned everyone about the “One-eyed, one-horned, flyin’ purple people eater.” Fifth grade invited every-

one to dance by singing “At the Hop.” First grade sang “Yakety Yak” and no one talked back. They all wore sunglasses, and a student at each end acted out the saxophone solo with a toy saxophone.

The fourth graders sang “Beep Beep.”

With the help of two students using homemade cardboard cars, they demonstrated how it feels when the car behind you tries to pass up your Cadillac. And the kindergarteners

donned shower caps and held rubber duckies to finish the night with “Splish Splash.”

After the performances, everyone moved into the hall for birthday cake. One kindergartner whose dad was also celebrating his birthday that night said she had fun singing “Splish Splash.” She said they’d practiced a lot, and after some prodding from her mom, remembered the songs were from the year the school opened.

Eastwood will continue to celebrate throughout the year. One tradition they’re looking forward to is dance fest on May 14.

“This year at the dance fest, we’re going to try to get enough people so we can ‘hug the school.’ We need lots of people from the community and all the students so that we can fit all the way around it. Then we’ll take a picture. So spread the word!” said Hopf.

“Eastwood is a great community. We consistently test well. We have a smaller student body, and we accept lots of out of boundaries permits. We’re always looking for kids and families to join us that care about the community and are ready to learn.” l

Millcreek proclamation recognizes 100th anniversary of League of Women Voters

ll across the country, citizens remember and are honoring the history behind women’s suffrage and the determination to establish voting equality among women.

It was on Aug. 26, 1920 when the 19th amendment was brought on by not one singular event but a series of events. Utah couples like Emily S. Richards, a woman suffrage crusader, and her husband, Frank Richards, are a historic example of a couple who fought together for women’s right to vote.

At last month’s city council meeting, the council signed a proclamation recognizing the 100th anniversary of the League of Women Voters.

Throughout Utah, you could walk into almost any city office and see the UtahHeritage.org memorabilia created for the anniversary, from bumper stickers of Alberta Henry’s smiling face to Zitkala-Sa looking toward the sun. You may have even seen the fake tattoos of a purple and orange lily flower with the word “trailblazer” written beneath it.

At last month’s meeting, the City Council first recognized Seraph Young, Brigham Young’s granddaughter. She was recorded as the first woman in any state or territory now part of the U.S. to vote in a municipal election.

The proclamation recognizes the names and dates of individuals who took part in the strategies that helped move the suffrage movement state to state and create the League of Women Voters.

The president of the League of Women Voters and local columnist, Katherine Biele, attended the meeting along with other members of the organization. They each took turns reading the proclamation during the meeting.

The League of Women Voters was formed on Valentine’s Day, 1920, precisely 50 years from the day Young cast the first vote.

Millcreek’s proclamation states, “Let it be known, that the Mayor and City Council of Millcreek do hereby recognize the League of Women Voters as an important Civic organization working for the welfare of all Utahns and recognizes the long history of civic engagement by the organization and its intent to pursue this work for the next 100 years.”

Utah Sen. Mike Lee also spoke commemorating women’s suffrage while in Washington, D.C. He said, “Mr. President, on February 14, 1870, a remarkable thing happened in Utah — something that changed the course of history not just in our state, but in our entire nation. Seraph Young, a 23-yearold school teacher, became the first American woman to cast a vote in a political election under an equal suffrage law…It was a moment that both followed and preceded a long line of remarkable contributions from Utah women — women who have pioneered and led in our state and in our nation.”

a bill to place a statue of Martha Hughes Cannon at the U.S. Capital Building.

The bill passed and Sen. Deidre Henderson and Rep. Karen Kwan commissioned a Utah artist to create the statue. Ben Hammond is working on it now and by the end of the year, it will be shipped to Washington and placed in the capitol rotunda.

Cannon was a medical doctor in the late 19th century, earning degrees at University Deseret (now the University of Utah) and University of Michigan in both medicine and pharmaceuticals. She later earned degrees in oratory and public speaking; she had four degrees by the time she was 25.

For years now, in rankings involving all 50 states, Utah has consistently been one of the worst states for gender pay discrimination as well as a leader in fighting against the gender pay gap. In 2018–19, Utah had the largest and second largest gender pay gap among all 50 states.

The fight for suffrage may have ended long ago in Utah, but the fight for equality continues.

Skyline boys lacrosse ready for upcoming season

S

kyline boys lacrosse officially kicked off Feb. 24, but the Eagles have been working unofficially since October, and it shows.

Ready to defend their amazing 11-3 record from last year, they have wasted no time.

“The boys have been working themselves out since October, hitting the weights up to three times a week, really getting ready for the season ahead of us,” Coach Joe Sanchez said.

The Eagles have six returning starters, who have taken the lead, alongside Sanchez, to get this program off to a running start.

“About two weeks ago the seniors decided it would be a good idea to start running practices a few times a week,” said Sanchez.

A big part of that decision was because of the number of freshmen the Eagles are going to take on this year. Sanchez estimates they will have anywhere from 18 to 20 new players on the team.

In Utah the sport is still growing, but as Sanchez, a seasoned player and coach who hails from Baltimore, puts it, “Before I could walk I had a stick in my hand,” he said. “So we’re not cutting, just because it’s so new here, you know I am not here to discourage kids from playing.”

with about 58 kids,” Sanchez said. “Yeah, so we have grown by about 50% since I first started.”

Although he thinks eventually it will become a cut sport, for now the coaching staff is excited for new players to learn the sport and be part of the culture.

The culture is not just about the sport, but also becoming leaders within the team and the community.

“We leave it up to the seniors every year to work with the whole club to establish goals — lacrosse goals, school goals and service goals,” Sanchez said. “They set them up and then present them to the coaching staff, and then once approved, they implement them.”

Sanchez explained that the team has recently partnered with a Bigger Faster Stronger (BFS), which has helped teach the boys about leadership and service.

John Rowbotham is the coach from BFS who works directly with the players.

He works them out three times a week in the weight room, and has also helped implement a leadership program so players can learn these valuable skills that transition both on the field and in everyday life.

Now that the players are back on the field ready to play, Sanchez has a team philosophy he will build on this year.

“Our philosophy is ‘movement within a scheme,’” said Sanchez. “Lacrosse isn’t a coach’s sport. The kids learn where they need to be, how to be balanced on the field. It’s up to them to move within each other within the scheme.”

He explained this will be the second year of running both offensive and defensive “schemes,” a building block of a traditional

“Many of the kids will have a season under their belt so they can learn it and master it. Our offense is very free flowing. It’s up to them to grow it and perform,” said Sanchez.

For now, Sanchez says they plan to keep practicing what they know and working hard.

Their number one goal? “Well that’s always the same: beat the team down the hill [Olympus High School].” l

To funeral or not to funeral. What I did when my husband asked me not to hold his funeral.

I’m about to pass a milestone, the second year of my husband’s passing.

We were married for 37 years, created a beautiful family and seemed to be living an enchanted life, being thankful for what we had and working hard to achieve our goals.

While our life together would seem nothing extraordinary to Hollywood, to us we had made magic. Our frugal lifestyle had allowed us to retire early in anticipation of travel, we created healthy and happy children, and had a good home. In spite of our challenges we had made it. Then we got the tragic news and a late cancer diagnosis left us stunned and floundering. Our own private Hollywood fairytale was over, my husband had precious few months left to live.

He would spend the next 2 months giving last pieces of advice to his children, catching up with long lost friends, visiting with family and friends, tinkering around the house taking care of little things that were lingering on his to do list and giving me a plethora of instructions. These included the little things, like who to take the car to when it needed fixing and remembering to leave a check under the mat for the lawn mowing man, to the much larger pieces of financial matters. His mind so

full of making sure I would be okay that these instructions would sometimes come in the middle of night and he’d wake me urgently to make sure I would remember that garbage day is on Thursday.

Then one morning he hit with a big one, he’d been thinking about his funeral service, or lack of, and announced to me that he did not want a memorial service, stating that they were a waste of money.

“Do not have a funeral for me, go traveling somewhere instead and tell our friends to get outside and make a good memory in my honor. Tell them, time is shorter than you think and don’t waste any more of it.”

When a loved one dies, we gather to celebrate their life. When we don’t do that it can leave us feeling empty and possibly a little guilty. If you opt to forgo the traditional funeral here are some things, I found helpful, to honor my husband.

1. Post a tribute on social media: Hit the photo albums and post a photo collage.

Ask friends to share memories on the post.

2. Have a gravesite friends and family reunion on their birthday or other special occasion. Set up chairs or have a picnic, laugh and share memories.

3. Create a new tradition. The process of creating a tradition can alone be very meaningful. Set a date to volunteer in

memory of your loved or create an annual family dinner in your loved one’s honor.

4. Go somewhere meaningful. Travel to a place you shared special memories or a place they didn’t make it to, this can be especially heartwarming if done with special family and friends. If you opted for cremation you might scatter a few ashes.

I leave a pinch of my hubby’s ashes when I travel to destinations we had planned to go together.

5. Plant something and watch it grow.

It could be a tree or a special flower that was special to your loved one. My hubby loved pumpkins, so I plant one in my yard each year to honor him.

6. Hold an anniversary memorial.

You may have skipped a funeral, but this doesn’t mean you can never have a memorial. If you are feeling a lack of resolution, pick another meaningful day to have a memorial. This could be as simple as a memorial BBQ or dinner party to a full formal memorial service.

Your family and friends will be there to support you no matter how you choose to close your loved one’s life. Honoring a loved one in a most personalized remembrance is absolutely beautiful no matter how you choose to do it. l

Carry a Tune About the time the peasants started to revolt, I was done with Cinderella. Yes, I was tired and grumpy (it was Tuesday after all) but the musical had gone on way too long and it just. needed. to. end.

I’ve read the book and watched the Disney cartoon a gajillion times – and I KNOW there are no rioting peasants in Cinderella.

But this musical not only had an uprising, it had a side story about the stepsisters and an idiot king being duped by his advisor. #FacePalm Turning fairy tales and Disney cartoons into live musical extravaganzas has become a thing; a thing that’s trying my (depleted) patience. Broadway writers take a perfectly-fine 90-minute animated movie and transform it into a two-hour (or more) event with NEW SONGS that no one cares about. The audience is just thinking, shouldn’t this be over?

I usually love musicals. I hum songs from Rodgers and Hammerstein productions, I adore Stephen Sondheim’s lyrical wordplay and Lin-Manuel Miranda redefined musical production.

But lately, I’ve found myself irritated with songs that seem unnecessary, boring or just meh. Do cast members have to break into song when someone goes to the barber, or the grocery store, or the high school library?

When a character walks out of the bathroom and violins soar as he sings about his love for toilet paper, I’m ready to throw my Jordan almonds to the floor and storm out of the theater.

Songs should never stop the action. The

lyrics should continue the story without torturing the audience with a nonsensical waste of time. If you can take a song out of a musical and it doesn’t affect the story, it isn’t necessary! In fact, I suggest limiting musicals to two or three really good tunes. You only remember a few songs, anyway.

Love songs are the worst.

We get it. The two main characters have a love/hate relationship. At this point in the musical, we love/hate them, too. I hear a piano chord and my shoulders tense, waiting to hear a song about how love is a disaster. (One hour later, they’ll sing a song about how love is glorious.)

There are big production numbers, infinite costume changes and (inevitably) someone jumps on the coffee table and tap dances while singing about the weather. If I jumped on my coffee table, it would explode into thousands of toothpicks.

There’s also a list of musicals that make you wonder if the idea didn’t come from a two-day drinking bender, followed by a concussion and a small bout of the flu.

Carrie should never have been a musical, in fact, let’s take all Stephen King novels off the list for future productions. King Kong on Broadway?? Where do songs fit into that disaster? And NO ONE has given me any good reason why Mamma Mia hasn’t been banned worldwide. Don’t get me started with Cats. Sports musicals are always iffy because who’s the audience? Sports fans?

Wife: But it’s a musical about the New York Yankees!
