Hello we hope you are all keeping safe and well. It looks like by the time you read this newsletter that we will still have restrictions in place due to COVID although unless another nasty variant comes along it may not be for much longer. Vaccines are continuing apace which will hopefully succeed in helping to break the transmission. The Community Council has hopefully had our last virtual meeting at the beginning of the June, and we are looking to hold our meetings face to face starting in August so it would be great if you are able to come along and participate as you will be made most welcome. The school holidays are upon us so let’s hope for some good weather to allow the children to get out and enjoy themselves, and this also applies to those who are lucky enough to be able to get away as it is likely to be a staycation. You will see an update from the Headmistress of the school which is most impressive. It is great to see the children engaged in such a wide range of outdoor activities. We offer our congratulations to teacher Miss Lauren Murdoch who won EAC’s Probationer of the Year which bodes well for the school. The MEG Group opened the HUB last month for the gym and community library users. The Nearly New shop has now opened again for business which is good news for the village as there are a lot of good bargains to be had. This is our last publication until the August edition so we wish all our readers, contributors, and last but not least our advertisers who without their support we would not be able survive all the best during the summer break. - 1 medium ciabatta loaf (or 4 thick slices crusty white bread) - 5 tbsp mayonnaise - 1 tbsp white wine vinegar - STEP 1

- STEP 2 Rub the oil into the bread and season with a little salt if you like (sea salt crystals are best for this). Bake for 8-10 mins, turning the croutons a few times during cooking so they brown evenly. - STEP 3 Rub 2 skinless, boneless chicken breasts with 1 tbsp olive oil, season. Place pan over a medium heat for 1 min, until hot, but not smoking. Lay the chicken on the pan (it will sizzle if it’s hot enough) and leave for 4 mins. - STEP 4

- STEP 5 - STEP 6 Grate a handful of parmesan cheese and mix with the garlic, anchovies, 5 tbsp mayonnaise and 1 tbsp white wine vinegar. Season to taste. It should be the consistency of yogurt – if yours is thicker, stir in a few tsps water to thin it. - STEP 7

- STEP 8 Add most of the dressing and toss with your fingers. Scatter the rest of the chicken and croutons, then drizzle with the remaining dressing. Sprinkle the parmesan on top and serve straight away.
