Yuko Kinjo is the CEO and founder of Grace Rum: a small-production Rum distillery on the island of Minamidaito, 360 km from Okinawa prefecture. Sugarcane is synonymous with this island and has been planted here since settlement. Cor Cor Rum is made only of sustainable local sugarcane (no additives) and is a joint effort between Kinjo-san and the Minamidaito Island Chamber of Commerce. Their sugarcane is limited to the amount available in any given year from their fields.
A pure agricole rum full of character. Contains no additives or coloring, and therefore brings out the aroma of the raw ingredients. Enjoy the gentle aroma and sweetness of sugarcane.

Cor Cor Red is made by first converting their locally harvested sugarcane into molasses. The molasses is then distilled once to preserve as much flavor as possible. Aromatic, fully flavored and potent this rum is a wildly fresh and compelling agent for any daquiri-style drink. With yuzu, perhaps, in place of traditional lime.

This small distillery tucked away into the crevices of Yoro, Gifu Prefecture mainly produces sake but also produces mirin, Shochu, umeshu, whisky and other liquors by hand in small batches. They live surrounded by the blessings of nature, and use the abundance of soft ground water to produce many local favorites.

A rich and round flavor as well as a sharp, bright finish; the soft subterranean water provides the whisky’s gentle, velvety texture. Location : Okinawa Prefecture
Helios Distillery is better known for their local Shochu: Awamori as well as for their craft Rum production. The majority of these spirits are sold and consumed domestically in Japan and only a small portion are exported to the U.S. market. Due to the high heat and humidity of Okinawa, Angel’s Share (i.e. the rate of evaporation in ageing vessels for their spirits) is high; it is said that 3 years of age in Okinawa is the equivalent of 12 years in Scotland.
Kura the Whiskey is distilled from 100% grain malt that is then flavorized with Hokkaido peat and aged in the distillery’s rum casks; a unique marriage of Japan’s diverse geography. This Whiskey is aged for 3 years in Rum casks to soften the mouthfeel of this It is wildly aromatic from the Hokkaido peat and yet smooth on the palate.

Mars Shinshu is steeped in the history of Japanese Whisky. The namesake and designer of Iwai Whisky, Kiichiro Iwai, played a vital role in bringing distillation technology to Japan. They use copper pot stills, and the operate at 800m - a higher altitude than any other whisky company in Japan.

The brewery was established in 1902, and the Nanbu Bijin brand name came to be in 1951. The Iwate area used to be called Nanbu (South), and is a place rich with nature, abundant water and fertile soil. In Japan, most breweries of the time made quite rough, inelegant, sweet sake, but this brewery wanted to make clean & beautiful sake like a fair southern maiden. Hence, the name Nanbu Bijin, or Southern Beauty.
VODKA
An exceptionally smooth and appealing vodka with a light citrus aroma. Charcoal made from the local birch is used in the production of Nanbu Bijin’s Craft Vodka. Nanbu Bijin preserves the umami and mellowness derived from rice while the use of the birch charcoal sharpens the pure flavor

Niseko Distillery, a Hakkaisan Brewery Group company, is located in Niseko Town in western central Hokkaido. Surrounded by NisekoAnnupuri National Park and the Mount Yotei Natural Park, Niseko is widely known as a world-class ski resort, attracting visitors from all over in search of high-quality snow. Niseko is also blessed with soft water, which is unique to an area with heavy snowfall, and is known for its exceptional produce, a result of its location in a region of Hokkaido, where the temperature is relatively stable. In this ideal environment, Niseko Distillery endeavors to produce elegant, delicate and well-balanced spirits.
Made using Hokkaido-grown sweet gale and Japanese mint as the botanicals and the high-quality subterranean water (soft water) of Niseko Annupuri. The result is a clear, smooth, yet robust flavor with a light citrus aroma that makes an excellent base for cocktails. Absolutely sublime neat, with beautiful nuances of yuzu, chamomile, and coriander.

Sasanokawa is Tohoku Japan’s oldest sake brewery, and they began distilling whisky in 1946 - as such, the distillery boasts a long history of producing small batch craft whiskies for the local area, using the excellent quality Koriyama city water. Their original Asaka distillery located deep in the mountains was revitalized in 2016 to take over production of their ji-whisky (local Japanese Whisky). They are also famed for assisting Ichigo Akuto in the launch of Ichiro’s Malt whisky line by holding on to casks from the closed Hanyu Distillery.

A skilled blend of peated malt whisky aged in bourbon barrels imported from the USA and grain whisky aged in oak barrels. Both whiskies are put to rest for a minimum of 3 years before being blended.
