The Productionof the “Orange”starts at the beginning of October wit a careful selection of the grapes, which are hand- harvested The grapesare taken off the stem and pressed. The fermentation starts spontaneously thanks to the indigenous yeasts and it lastsfor over 60 days. Fermentationstarts spontaneouslyand is carried outusing only the indigenous yeasts present in the skins of the grapes. A huge part of our story at Epoch is about preserving two integral pieces of Paso Robles history. When we purchased our Paderewski Vineyard in 2004, not only did we hit the jackpot as far as soils and views were concerned, we were also buying a property that was once owned, planted, and cherished by Polish pianist and Prime Minister, Ignacy Jan Paderewski. In 2010, we were fortunate enough to purchase the old York Mountain property, which was the site of the first bonded winery on the Central Coast. ERUPTIO

This wine was born in Pico Island, Azores. In this terroir the viticulture is pushed to the extreme. The influence of the highest mountain of Portugal jointly with the clouds which gather around the mountain led men to plant the vineyards so close to the sea that it is possible to hear the sound of “crabs singing”. The vineyards planted in the cracks of the mother rock. in volcanic soils. close to sea and sprinkled by the salty Atlantic water find here extreme conditions to survive. Only the walls of volcanic stone built by local men about 500 years ago offer resistance and protection from the seaside wind to the vineyards. These walls are called “currais”... HUDSON RANCH

ARTEMIS KARAMOLEGOS WINERY

Artemis Karamolegos Winery is a natural continuation of the tradition of Artemis’s family. His grandfather cultivated vineyards and produced his own agricultural products in Santorini. Artemis’s innate love for Santorini led to the creation of his first wine in 2003. In the next few years he worked with the family vineyards emphasizing the indigenous grape varieties, embracing the traditional viticulture and dedicating to continuous experimentation at the different stages of wine production.

The central pillar of the winery is Artemis’s long-term relationships with the island’s grape growers and the continuous work in his own vineyards. As a result, we produce the best quality grapes for our wines.

TENUTA PRINCIPE ALBERICO

A blend of Semillon and Malvasia, pressed softly, fermented and aged in stainless steel separately for about 3 months and blended just before bottling.

Merlot, Cabernet Sauvignon, Cabernet Franc fermented in truncated concrete tanks and aged in large oak barrels for 6-8 months before blending and resting in steel tanks before bottling.

100% Semillon pressed softly, fermented in stainless steel and 16 hl oak barrels followed by aging in barrique and extended refinement in bottle.

Merlot and Cabernet Sauvignon fermented in truncated concrete tanks with pumping over and punching down and aged separately in 16 hl oak barrels for 12 to 18 months before bottling and aging for another 2 years before release.

For more than two generations, the Antinori family has served as the faithful steward of one of Italy’s most historic and influential properties: The Tenuta Principe Alberico, located just a stone’s throw from Rome’s historic center along the Appian Way. The distinctive geographic and geological characteristics of the territory make it remarkably suited for wine production due to extraordinary mineral-rich soils formed from volcanic ash deposited from past eruptions. Inspired by his friend Tancredi Biondi Santi, one of the most famous winemakers in Italy at the time, Prince Alberico Boncompagni Ludovisi implemented organic farming practices on this legendary farm, which covers roughly 120 hectares. Of those, 21 are planted to vine, including a few rows of Cabernet Sauvignon, Merlot, Sémillon and Malvasia di Candia that the prince planted in the late 1940s. At the time, the word “organic” as we know it today did not even exist. As the country was recovering from the destruction of the world war, most Italian farmers, including grape farmers, were converting their estates to highly productive chemical-based agriculture. But the prince stayed true to his vision and today is considered a pioneer of organic grape farming in Italy (some would even say he was a precursor of natural wine because of his interest in spontaneous fermentation). The Antinori sisters — Albiera, Allegra, and Alessia, the prince’s granddaughters carry on this tradition and have expanded the historic plantings using cuttings from the very vines their grandfather planted and farmed himself. www.ethicawines.com
