A frommessage Chancellor Hicswa

For nearly a century, this university and this community have been uniquely connected in doing great things.

Whether it was using downtown business space in the early years preparing elementary teachers as Eastern Montana Normal School or connecting graduates to a growing economy when we were Eastern Montana College or advancing new programs as Montana State University Billings, the community has always been there for us. Likewise, by providing well-prepared graduates for the workforce, we have been there for you.

And since 1993, when the first Wine & Food Festival was held, the legacy of community support has endured. Your unwavering generosity in support of MSU Billings’ students is commendable and has not gone unnoticed. Thanks to you and your contributions to the MSU Billings Foundation scholarships, students have been able to fulfill educational goals and find employment right here in Billings, the greater region, and even the world.

Our work together is far from complete. While the hopes, dreams, and resolve of our students remain strong in the 21st century, financial needs also remain. Your continued generosity through the Wine & Food Festival sends a message to our students that together, we remain committed to their education and their futures.

Enjoy this evening, but just as importantly, appreciate what your contributions continue to do for our students.

Wine Master and

Patrick Merry

Winemaker at Merry Cellars in Pullman, Washington

After completing a degree in Computer Science at Rocky Mountain College and working in information technology for several years, he moved to Spokane and earned an MBA from Gonzaga University—still unaware of what the future would hold but thoroughly enjoying the close proximity to Pacific Northwest wineries.

After completing his master’s degree, Patrick found his way to Pullman, WA, in pursuit of a doctorate in Computer Science. It was there that Patrick first tried his hand at winemaking. In the beginning, it was a hobby that relied on the labor of friends and neighbors to help process the fruit and bottle the end product. Within a few short years, his “hobby” quickly became something more substantial, and with the encouragement of others and the incredible support of his family, Patrick launched Merry Cellars in 2004 with an inaugural vintage of 400 cases. Growing from that initial vintage in 2004, Merry Cellars now produces 5,000 cases annually and has relocated to a new facility on the edge of town.

In recognition of its excellence, Black Stallion Estate Winery was named 2023 AMERICAN WINERY OF THE YEAR by Wine Enthusiast.

From an early age, he enjoyed following recipes and making things from scratch and spent a great deal of time in the kitchen with his grandmother learning to cook authentic Mexican food. This love of cooking led him to a career with Sodexo, beginning as a dishwasher in 2014 at Buena Vista University in Storm Lake, Iowa. In 2020, he accepted the position of Executive Chef at Buena Vista University. In 2022, Phillip came to work as the Executive Chef for Sodexo at Montana State University Billings. In this role he is responsible for residential dining, retail dining, and executing catering

Daniel Burt

Daniel Burt is a caterer/personal chef, serving Billings and surrounding areas with gourmet foods for all occasions. He crafts his food using skills learned in his 15 year fine-dining restaurant and catering career. A Billings, MT, native, Daniel has also worked in Missoula, and Portland, OR, most notably under Chef Cathy Whims (Nostrana) in Portland, and local chef Dirk Frickel. His cooking focuses on high quality ingredients, and local/sustainable foods as much as possible. He likes his food to be simple, yet memorable: simple, using solid technique and attention to detail, yet memorable by using lesser known ingredients or combinations of ingredients that provide guests with a memorable meal.

His partner Jessica helps him provide the guests with exceptional customer service. When he’s not in the kitchen, you can find them spending time outdoors with their son Maclan.
