EDNA — A small eatery in downtown Edna can now say it has attracted customers from as far away as Colorado.
That’s because Erin Epperson, 36, of Fort Collins, Colo., strolled into Delish at 112 E. Main St. recently.
She handed the barista behind the counter her coffee mug and wasn’t disappointed when she later sipped an iced latte with four shots of espresso that the barista prepared for her.
Epperson was in the area to remodel her grandmother’s home.
With six coffee shops within a mile of where she lives in Colorado, she hadn’t expected to see a place like Delish in Edna.
“I think it’s great. I’ve made business connections at coffee shops as well as lasting relationships. It’s a place to socialize but not in a bar-like atmosphere. Plus, there’s always free WiFi,” she said, smiling.
And co-owner Kimberly Muschalek said that’s what she and her husband Bryan wanted to create, especially for young people.
During finals last year, Delish offered coffee and other drinks for half price.
This is important to Muschalek because as an Edna resident who fled for the big city the first chance she got, she remembers riding her bike downtown and having very little to get into.
“We wanted to give back to our community and give back as much as possible,” Muschalek said.
And coffee is not the only thing on the menu.
Three months ago, Muschalek hired Monica Woods as a chef. Woods, who worked at the Four Seasons and went to culinary school in Houston, has drawn in customers of all ages with the twists she puts on staple Texas dishes.
For example, a recent special was fried chicken with tomato jam and sweet potato salad.
“If we had chicken fried steak, it would probably sell out in no time, but ...,” Muschalek said, trailing off.
“But if you’re going to be a stereotype, might as well be one that people talk about, right?” Woods said, finishing Muschalek’s thoughts.
They get their ingredients
from Knopp Branch Farms, so the specials change depending on what’s in season. And Muschalek has poured a lot of her creative energy into those specials plus one other item on the menu — milkshakes.
While she makes her living in Austin by preparing healthy food for people to pick-up while at their gym, nowadays people know her for those milkshakes, which they say are “over the top.” For example, the chocolate milkshake she offers was drizzled with fudge, sprinkles and chunks of cake and topped with whipped cream and a cookie.
“I don’t know how I got into ice cream. I started out a little healthy and just ran in the whole other direction,” she said, chuckling.
Since she got milkshakes, her husband, a former high school football coach, put pizza on the menu. Both items are the most popular.
The two originally moved to Edna to open a wedding venue but fell in love with the location of Delish, which used to house a flower shop. They’re still working on the venue and in the meantime have started to cater events.
Carol Ann Lee, a 73-yearold Edna resident whose husband works as a dentist across the street, said as long as Delish is open, she’ll keep coming for lunch at least once a week.
She said Muschalek and her daughter attended high school together, and she can’t get enough of the strawberry bacon salad Delish sells.
“I think we should support all of our local businesses,” Lee said.
