remembering Marion Chapman

Marion Chapman was employed at Mounties for just over 33 years. During her time, she worked in a number of departments finishing in Member Services as a Concierge - fitting that, after all this time if anyone knew their way around this club, it was Marion. She graciously gave her time assisting with the annual Easter Bunny Run delivering Easter eggs and good will into local schools, nursing homes and disability schools. Marion retired in March 2015. She remained familiar to us though and often popped in for a coffee and a friendly hello.

Rest in peace Marion - you will be missed.

You have probably heard through the grapevine that Johnny was heading to Mounties.

Johnny Fong’s is now open with an authentic Yum Cha and Cantonese dining experience reflecting the vibrancy and mystique of Far East China.

The 300seat restaurant boasts majestic gold and orange lights, dark furnishings and striking red highlights, creating a moody ambiance. The cuisine weaves its way through the provinces of China and South East Asia, and is expertly balanced in flavours, textures and exciting spices. Yum Cha is available daily from 12pm until 2pm or indulge in the Cantonese a-la-carte menu from 12pm til late.

The brand new Gift & Bottle Shop has been unwrapped! Explore where your Club Reward points can take you with an assortment of goodies such as handbags, toys, jewellery, alcohol and much more. Now located at the Humphries Road entry and just in time for Mother’s Day. To complement our new children’s playground at Fresh, the café itself will be donning a soft new makeover, just to freshen things up. When you think

fresh, you think green and with plenty of greenery amongst concrete, copper, and recycled timber, the café fitting will encapsulate the fresh vibe both inside (within the menu) and out.

If you feel the grounds shaking a little, don’t fear it’s no earthquake! Shortly we will be commencing digging for a new underground carpark consisting of 400 spots, increasing the number of disabled, motorbike and parents with pram parks.

It doesn’t stop there; we still have goals to kick!

Members will be delighted to know that the existing Members Bar and TAB will also be sporting a whole new look and concept, amalgamating the two premises to form a multifaceted Sports Bar. Combining state of the art technology the new Sports Bar will boast TAB facilities and multiple massive screens for all the sports enthusiasts.

HATS OFF TO A WORLD RECORD ATTEMPT AT

Mekong, a community club within Mounties Group, was proud to support the Vietnamese Community in Australia (VCA) break the Guinness World Record for the largest gathering of people wearing Vietnamese conical hats (Non La) on 5 February.

A traditional symbol of Vietnam, the vast group of people donning the palm-leaf hats set out to break the record as a community and succeeded with over 1,000 people participating during the annual TET Festival.

With an estimated 20,000 people, an array of cultural and traditional ceremonies were held to celebrate the start of the Lunar New Year, the Year of the Rooster.

The annual three-day festival entertained all ages with talent quests, pageants, competitions, traditional dances, cultural parades, fireworks,

carnival rides, lion dancing and exotic Vietnamese cuisines.

Mounties Group President, Kevin Ingram, said “Mounties Group, and in particular, the Mekong club, holds a special relationship with the Vietnamese community and we take pride in how close knit and supportive we are of each other.

We’ve had a fantastic turn out this year with each year being bigger than the last.”

For nearly two decades, Mekong which is the principal partner of the TET Festival, has played an important role in connecting and supporting the Vietnamese community in Australia.

Mekong’s involvement in the Festival was even more poignant this year. Currently closed due to extending damage caused by a recent fire, repairs are underway to rebuild the club ahead of its relaunch in April.

It is the day on which we remember Australians who served and died in all wars, conflicts, and peacekeeping operations. The spirit of ANZAC, with its human qualities of courage, mateship, and sacrifice, continues to have meaning and relevance for our sense of national identity.

I thought I could start a small telephone and internet-based information service to assist families in a similar situation to me. I called a wonderful lady from my local council, who suggested it would be easier and less expensive to form a committee of likeminded parents and perhaps contact a local not for profit service to auspice our group. The group of mothers I found were excited to be making a difference in other families’ lives. Meetings were held around my kitchen table. We found a small community organisation who was happy to auspice us. Like a whirlwind, Autism Advisory and Support Service (AASS) was born in March 2007.

Our service quickly took off, organising parent support groups and a huge official opening at

It soon became apparent that we needed to become an incorporated association in our own right. It wasn’t easy. I had no idea how to set up a charity but with the help of Google, a little common sense, asking lots of questions and learning to follow my instincts, we successfully became a fully incorporated association with deductible gift recipient status in June 2009.

This was huge! Whilst all this was taking place, I had two beautiful little boys who both had Autism, both were still non-verbal at this stage, my little one was still having violent and aggressive meltdowns and I was receiving calls all time of the day and night from families in need.

But I was on a mission. I found my passion. I found my life’s purpose and I ran with it. Not only was I helping my boys gain skills they lost in their regression, I was able to use my experiences to support and encourage others. No one needed to feel alone, isolated and helpless any more.

However, I could not have come this far without the help of organisations like Mounties Group providing funding to support the operations of this service.

MOTHER’S DAY

After a waiting room conversation with the mother of a child with cerebral palsy, I found out about other free or inexpensive service providers who could assist my children straight away. It occurred to me that if the situation was this difficult for me to deal with, what about families who did not have English as their first language, who were not able to advocate for their child? Where did they go?

Fairfield City Farm. I had never seen so many families in need like mine; parents needing support or just a friendly ear to listen to them in a nonjudgmental way.

For me, my world came crumbling down the day my beautiful boys were diagnosed with Autism 12 years ago. My head was spinning from being told my beautiful boys were broken. My dreams for them were shattered. I was told they would not amount to much. When I asked for help I was pointed to a service provider who said my boys were at the back of a two-year waiting list and help would cost a few thousand dollars. When I asked is there anyone else who can help, I was referred to another of their programs which had a waiting list just as long and just as expensive.

MEET THE TEAM Mounties Masterchef Jonathan Flanagan Head Chef - Terrace Bar & Café and Fresh Café

When did you realise you wanted to become a chef?

I started working in Hospitality at the age of 18 and was originally hired as a waiter. One day the chefs were short staffed and needed a helping hand.

Being young and eager, I decided to give it a go.

How hard could it be? Well, it was an experience, a scary one to say the least, but I loved it. From then I studied for two years, whilst retaining my place in the kitchen working under one of North West England’s most respected chefs.

How long have you been a practicing chef for?

I’ve been a qualified chef for 12 years. But you don’t earn the title simply after you’ve got your certificate.

It’s hard work, dedication and most importantly requires listening. You can’t learn if you don’t listen.

What is your favourite thing to cook?

Seafood hands down. It’s so versatile and fresh.

A good piece of salmon, barramundi, scallops, lobster, crab I could go on... The beauty with seafood is that you don’t have to do much to it for it to be fantastic.

What is it you love most about being a chef?

The creativity. It’s one of the only jobs where you truly have the freedom to express yourself.

What was the inspiration behind the new Terrace Bar & Café menu?

The new Terrace Bar & Café menu is unique to what is being offered in Sydney at the moment. The burgers are out of this world. Every item has been specifically selected with each ingredient being matched to further enhance the final product. We believe we’ve brought a taste from the famous stars and stripes straight to you in Mt Pritchard.

What is your favourite dish on the current Terrace Bar & Café menu and why?

Tough choice. I will have to go with the Chilli Cheese Beef Burger. Brioche bun - chilli con carne - beef patty – guacamole - sour cream & cheese.

Amazing! Make sure you have napkins on hand, it could get messy! I always have to add on sweet potato cheese & bacon Fries to share. I say share...

The question on everyone’s mind, do you get hungry when you cook?

Funnily enough I don’t. I taste everything I make, little bits here and there, meaning my appetite is non-existent! Unless I’m baking; the oven doesn’t work fast enough then.
