It is for this reason we have commenced construction of a multifaceted state-of-the-art Sports Lounge scheduled for completion in September, just in time for the NRL final series and the Melbourne Cup! Emperor’s Buffet is donning a new look after indulging in a slight upgrade. The buffet boasts a contemporary outlook comprising of additional seating and new amenities. An abundance of delicious seasonal cuisines awaits you at Emperor’s Buffet, so you don’t want to miss the new experience. This year, Mounties Rugby League Football Club has made a commitment to enforce a lifesaving message from the suicide prevention campaign, R U OK? into every game played in the Intrust Super Premiership Season. Mounties opened their 2017 season with the R U OK? message emblazoned on every jersey that took to the field as a visual reminder of a simple question that could change a life. Experienced Mounties veteran, Glen Buttriss, knows the importance of this message and commented, “I think it’s important to encourage people to get comfortable talking. By asking someone ‘are you ok?’ you can help family members, mates and teammates open up about any problems they might be having.” Mr Maher said he was excited to hear that Mounties had made a commitment to wear R U OK? on their jerseys this year to get this important reminder out to their team and to the many thousands of people
who will be watching their games this year. Kevin Ingram, Mounties Group President said, “At Mounties, we like to think of ourselves as family who support each other. It is this bond that keeps our players, staff, partners and supporters together through the good times and bad. This inspiring initiative aims to provide a positive message that offers assistance to everyone both on and off the field.” Head Coach Steve Antonelli said, “There is more to life than a game of football. At Mounties we encourage a work-life balance and we ask all of our players and staff to keep an open communication line between them and the club. “By having this open communication everyone can be relaxed and honest in their conversations and we can work together to resolve any issues. dreams COME TRUE Mekong Mounties University Scholarship recipients Linh Thuy Nguyen and Vivian Nguyen said they will look to give back to the community after receiving $10,000 to assist in their studies. The scholarship, which aims to assist students from low socio-economic and disadvantaged backgrounds in their studies, is now in its second year and is awarded based on a number of criteria including academic merit. Prairiewood High School graduate Linh Thuy Nguyen will use the money in her Medical Studies degree at the University of New South Wales. “I feel like the program aims to foster values of kindness and generosity in young people,” she said. “The fact that I have received this grant now means that I am equipped with the financial means to Mounties Group June - July 2017
pursue further education in the hope that I can one day give back to others.” Vivian, who will undertake a double degree in Law and Commerce, said she was privileged to receive the award. “I will continue to look back on as I try to give back to the Vietnamese community to the best of my abilities and make my parents proud.” she said. Mounties Group President, Kevin Ingram, said two winners were chosen after initially running the competition with one winner in mind. “We are proud to be supporting our young community members achieve their career and life aspirations with the Mekong Mounties University Scholarship Program,” he said.
HONOUR FOUNDER This year, the 28th annual Charity Easter Run was named the 2017 Marion Chapman Easter Bunny Charity Run in memory of Marion who sadly passed away in March. Marion was a Mounties employee for 33 years until her retirement in 2015. The Marion Chapman Bunny Charity Run was held in April with visits to William Stimson Public School and the Summit Care nursing home in Liverpool to spread the joy of Easter. Mounties Group President, Kevin Ingram said, “Easter is an important time where most of us get together with our families and spend quality time with each other. The Mounties Charity Easter Run is a way for Mounties staff to show their care and dedication to the local community. This year’s run was extra special as it was in honour of Marion who was much much-loved by all at Mounties.” June - July 2017 Mounties Group

In 1989 Mounties staff members Maree Pullen and Marion Chapman founded the Charity Easter Run. Collecting Easter eggs from staff members, they visited local schools and nursing homes, donating chocolate eggs to bring joy to the community.

food blog Johnny Fong’s Yum Cha restaurant is bringing those in and around Mt Pritchard an indulgent oriental dining experience. Located inside Mounties, the restaurant is modern and sophisticated, yet retains all the charm and hospitality that you’d expect at a traditional Yum Cha eatery. We recently ditched our usual Sunday brunch of bacon and eggs and instead visited Johnny Fong’s for some mid-morning dumplings and jasmine tea. There are so many dishes to try at Johnny Fong’s. An abundance of trolleys frequently stop by tables to tempt diners with plates of freshly made sweet and savoury bites. Seafood dishes are plentiful. There’s prawn and scallop dim sims and seafood spring rolls, both with generous amounts of seafood throughout. The fried calamari is superbly tender and extra flavoursome thanks to the sprinkling of fried garlic over the top. Then there is the seafood and bean curd spring rolls. The pastry on these is much lighter than an ordinary spring roll, but they are just as tasty. Johnny Fong’s is serving up some splendid noodle dishes too. Fat, slippery noodles layered with plump prawns was one of our favourite dishes, only topped by a lightly pan fried version which is a delicious marriage of noodles with shallots, dried prawns, coriander and sesame plus a side of heavenly peanut and hoisin sauce. There is a variety of dumplings on offer too. We tried the Coriander Dumplings which not only look gorgeous thanks to their masterly crafted shape, but taste fresh and fragrant.

The steamed pork bun is everything you would expect - big and fluffy with a sweet and savoury pork centre. The taro roll is another sweet and savoury dish but it is a more complex textural experience, with its crisp exterior encompassing sticky dough and a pork centre. Now, you can’t go to Yum Cha without having chicken feet! If you’ve never tried them before, don’t be scared. These succulent morsels are coated in a sweet and sticky marinade and while fiddly to eat, they are so worth it. There are so many dishes available, we only scraped the surface with what we tried. To drink, we suggest sticking to the aromatic jasmine tea. A pot is brought to your table as soon as you arrive and when you need more, simply tilt the teapot lid so it is ajar and a waiter will bring another pot right over. The tea is not just Yum Cha’s namesake, but it is also said to aid in digestion, meaning you can try loads of dishes without feeling bloated. This also means more room for dessert! The desserts we tried were light, yet indulgent. There were plenty of tempting egg tarts on offer but we opted for the flower and coconut jelly with its fragrant layers of jelly which are both beautiful to look at and a delight to eat. Then, there is everyone’s favourite Yum Cha dessert, mango pancakes. These are thin, silky pancakes wrapped around fresh chunks of mango and lashings of luscious whipped cream. While Yum Cha dishes are designed to be shared, the mango pancake is one dish we recommend keeping to yourself!

SHORBAT ADAS RED LENTIL SOUP PREP TIME : 5 minutes

Serves: 8 people INGREDIENTS
Olive Oil - 2 tbsp
Red Onion - ½, chopped RECIPE OF THE MONTH
Red Lentils - 2 cups, rinse
Cumin - 2 tsp, or more to taste Cinnamon - 1 tsp Turmeric - ¼ tsp
Salt - 1 tsp, or more to taste Water - 8 cups
Lemon - 1, juiced INSTRUCTIONS
1. In a large pot, heat olive oil over medium heat and sauté chopped onion with the cumin, cinnamon & salt until fragrant and tender for 5 minutes. 2. Add the red lentils, water and turmeric and bring to a boil. Reduce heat, cover and simmer for 20 minutes or until the lentils are soft and tender. Stir occasionally. 3. Stir in the lemon juice and serve with chopped parsley and freshly cracked pepper. Why not make some homemade garlic bread to go with it. Rug up and enjoy your warm soothing soup! WESTERN FRONT TOURING EXHIBITION 1916-1918
Australian troops suffered heavily in mighty battles at Bullecourt, in France, and at Messines and in the third battle of Ypres, in Belgium. In the final quarter of the year, all five Australian divisions were serving together for the first time, with some attacking side by side. This became a terrible period, over eight weeks, between September and early November, on the battlefields leading up to Passchendaele, Australia lost 38,000 men killed, wounded, or maimed. The year finally ended, much as it had begun, with the main armies bogged in the muddy trenches of France and Belgium. To Flanders Fields, 1917 is an Australian War Memorial travelling exhibition containing original collection items, photography, maps, art, and firsthand accounts from the archives to tell the story of this pivotal year of the First World War. More Australians were killed on the Western Front in the First World War than in any other theatre of war. The Flanders region of Belgium saw some of the bloodiest fighting of the war, including events which would eventually turn the tide in favour of the allies. With the battles at Messines, Ypres, and Passchendaele in Belgium, and at Bullecourt in France, 1917 was a pivotal turning point for Australia and the world.

A special display commemorating Australians in France and Belgium in the First World War, proudly presented at Mounties from 2 June – 28 June.
To Flanders Fields, 1917, looks at the third year of the Great War, which proved to be the worst Australian troops ever experienced. More troops died in battle in that year than in any other. Massive offensives were fought for moderate gains, while the scale of the killing rose to a further level of horror.

Mekong MARKS A NEW ERA Mekong has established the main ingredient to success, a whole lot of team work with a splash of high spirits and a pinch of patience. Less than 100 days since more than 100 people were evacuated after a fire broke out inside the gaming room, the Mekong Club has officially reopened. A VIP opening night was organised on April 27 attended by Fowler MP Chris Hayes, Cabramatta MP Nick Lalich, Fairfield Mayor Frank Carbone and several dignitaries from the Vietnamese community. The night was filled with a positive aura as attendees enjoyed canapés and drinks and acknowledged the heroic efforts of staff on the night of the incident and

throughout the refurbishment period. During the temporary closure of the club, staff volunteered a total of more than 400 hours of their time supporting the Street University’s youth development program. Mounties Group CEO, Greg Pickering said the team at Mekong has worked “tremendously” to repair the club after fire caused significant damage on January 20. “Mekong has strong ties to the Vietnamese community and with the club being an important meeting place, we worked hard to reduce the time the club was closed for repair. The opening of the new-look Mekong marks a new era in which Mekong will continue to be a place for the local community to enjoy,” he said.

SWIM SAFETY Over the first two months of summer Royal Life Saving reported that 69 people drowned in Australian waterways, with 21 of those drownings occurring in NSW. What was more devastating was that 13% were children under 10 years of age. The Australian environment and our love of the water means swimming and water safety skills must be an essential part of our lives. Swimming and water safety education remains a critical, long term issue. Government, schools, and community organisations play a part in drowning prevention strategies, but ultimately parents hold the key responsibility of keeping children safe. When children are around water, Royal Life Saving recommends the following four key actions to prevent drowning and to keep your child safe. Supervise – Children must be actively supervised. Don’t let everyday activities such as checking your phone, reading, or getting snacks distract you from watching your children. Restrict Access – Children can drown in water that is as little as 30cm deep. There must always be a barrier between children and water. Water Awareness – Children should learn water safety and survival skills from a young age. These Mounties Group June - July 2017
include water familiarisation, checking for and removing water hazards, setting rules around water and discussing water safety with your child. Resuscitate – Having the skills to respond in an emergency can mean the difference between life and death. Many children are alive today because their parents knew how to perform CPR and responded quickly. You never know when you might be faced with an emergency. At Ignite, our learn to swim classes are Royal Life Swim and Survive endorsed because they include water safety and survival skills. We also offer monthly resuscitation courses for parents. The courses will help: • make children ‘water smart’ so they can actively and safely participate in aquatic activities • provide parents with the essential knowledge and skills required to provide resuscitation in an emergency.
