So, what is Asheville’s secret ingredient?

At the end of 2020, Mountain Xpress asked five veteran leaders in the local hospitality industry — Meherwan Irani, Susannah Gebhart, Katie Button, Charlie Hodge and Michel Baudouin — to reflect on the most challenging, turbulent and unpredictable year Asheville’s nationally lauded food and beverage community had ever faced and share what kept them going.

Though they initiated a variety of models and operating innovations to keep their businesses afloat, the five restaurateurs named many common motivators: their teams; their vendors; the tenacity, resiliency and creativity of their colleagues; camaraderie and support for one another; and the inspiring generosity their industry showed to the community with fundraisers, free meals and food pantries. They also expressed deep gratitude for the support the local community showed through encouraging social media posts and phone calls, purchasing gift cards and ordering takeout when dining rooms were closed. It was the feeling of family sticking together.

When asked to look ahead to 2021 and beyond, all five stated a firm belief that the trials and tribulations of living and working through the pandemic made them better employers with healthier workplaces that are more responsive to the needs of a changing world. They see the local food and beverage industry as stronger than ever before.

If there is one thing that drives Asheville’s enterprising entrepreneurs, passionate visionaries and determined dreamers — the restaurants, bars, breweries, distilleries, wineries, farms, makers and bakers — it’s eternal optimism. Throw in that unbreakable mountain spirit, and you have a city with doors wide open for business, inviting you — a big extended family — to come from near and far and gather anew at their tables.

ABOUT THE COVER After more than a year of ordering takeout and learning to embrace outdoor dining, this year’s cover celebrates the joys of DIY and eating al fresco in the mountains of Western North Carolina.

Xpress photographer (and distribution coordinator) Cindy Kunst collaborated with Susan Hutchinson, ad hoc food stylist (and Xpress advertising manager). Scott Southwick, Xpress’ lead graphic designer extraordinaire, pulled it all together.

BY K AY WEST In Asheville, you can’t swing a pint glass without hitting a brewery, but there are plenty of other engaging establishments that invite you to belly up to their bars to imbibe crafted cocktails, distilled spirits and wine by the glass, flight or bottle.

• Longtime Asheville mixologists Katey Ryder and Donnie Pratt built a fervent following over the years working in various locales, a fan base that celebrated the grand opening of The Golden Pineapple in spring 2019. While the bar was closed by COVID-19 in 2020, the dynamic duo passed the time creating a new menu of fruit-forward drinks and classic cocktails, adding an adult beverage slushie machine and a shot chiller for its local Eda Rhyne spirits.

• Country came to town when Botanist & Barrel of Cedar Grove opened a tasting bar and bottle shop on Broadway.

With two taps for their line of DéFi wines as well as beer and cider taps, visitors will find a well-rounded tasting experience.

• It’s a wide, wild world of spirits out there, so sometimes it makes sense to head right to the source by visiting local

distilleries’ dedicated cocktails bars and tasting rooms.

Cultivated Cocktails — founded as H&H Distillery — rebranded and expanded to downtown Asheville in 2019.

Its impressive repertoire of products, including rum, gin, whiskey, coffee liqueur and creme de cacao, is showcased in boozy beverages covering breakfast to happy hour. On the South Slope, Prohibition-era themed Antidote cocktail bar offers guests a view of Chemist Spirits distillery next door while sipping a cocktail, such as the South Slope Tiki with Chemist Spirits 151 gin or a chocolate-orange negroni with Chemist Chocolate-Orange Gin Liqueur. Barrel on over to Eda Rhyne Distilling Co. near Biltmore Village for a tasting-room tutorial on the company’s locally sourced fernet, amaro and newly released Amaro Pop and Lindera vodka.

• Touring the massive Biltmore Estate mansion and grounds can work up a powerful thirst. Quench it on-site at the Biltmore Winery, where guests can sip, swirl and sniff with a winetasting experience or quaff by the glass or bottle. Located in a cinderblock building across the road from the French Broad River in the River Arts District, Plēb Urban Winery is Asheville’s only in-town vintner. Book a flight to sample several of its varietals or fill a growler to take on a picnic.

Bottle Riot sounds loud, but in fact, the plush-yet-rustic wine bar is a sanctuary of intimate gathering pods inside and outside on the covered deck, patio and around the fire. Along with a vast menu of wines by the glass and bottle, Bottle Riot offers a streamlined selection of snacks and entrees from Strada Italiano chef Anthony Cerrato.

• In your rush to check out S&W Market — Asheville’s first food hall — make time for The Times Bar next door. The Times weathered the pandemic by pivoting to a coffee shop and has since switched back to a menu of signature seasonal cocktails, mocktails and boozy coffee drinks offered in a swanky space that feels as old and new as Manhattan itself.

Going out to eat with your kids can be stressful. There are so many variables at play, which means there is so much that could potentially go wrong: meltdowns, spills, sibling arguments, social distancing, impromptu hunger strikes — oh, and those tempting sugar packets!

At the very least, it’s always reassuring to know that the place you’ve opted to spend your family’s potentially disastrous time together welcomes such odds.

• Creekside Taphouse in East Asheville is a favorite among local online parent groups and Best of WNC voters, who ranked it as the No. 2 Kid-Friendly Restaurant in 2020. And it’s easy to see why.

Situated on 2 acres, the venue offers ample indoor and outdoor seating, locally sourced grub and a large outdoor playground where kids can work up an appetite or work off a sugar rush.

• Closer to downtown is Salvage Station, where parents can grab a beer and a bite to eat from the venue’s Root Down Kitchen while kids explore the riverfront property. Salvage Station’s sprawling backyard also offers multiple access points to the French Broad River for kayakers and inner-tubers.

• Of course, most kids love pizza, and according to the 2020 Best of WNC voters, Asheville Pizza & Brewing Co. is the area’s No. 1 Kid-Friendly Restaurant. The venue’s flagship location in North Asheville opened in 1998 and continues to offer, among other things, a dine-in movie theater experience. In 2005 and 2012, Asheville Pizza & Brewing Co. opened two additional spots, sans movie theaters: one on Coxe Avenue downtown and the other on Hendersonville Road in South Asheville.

• Another popular pizza destination is Mellow Mushroom, voted No. 3 Kid-Friendly Restaurant in the 2020 Best of WNC (tied with Appalachian Java & Café). The colorfully decorated downtown location has plenty of indoor and outdoor seating. Located a block north of Pack Square, the pizzeria also offers plenty of good people-watching from its patio.

• Rounding out the list is Sawhorse on New Leicester Highway.

Specializing in French-Canadian-inspired cuisine, the restaurant gives diners ample opportunities and excuses to add maple syrup to their dishes. With décor reminiscent of an old log cabin, there is a homey feel to the space as well.

BY THOMAS CALDER For many, coffee is more than a mere pick-me-up. It’s a lifestyle, if not a lifeline. Comedian David Letterman once said, “If it wasn’t for the coffee, I’d have no identifiable personality.”

No matter your relationship to the beverage, Asheville’s got you covered. And if coffee isn’t your thing, there are plenty of other options, too.

• Two of the city’s Best of WNC coffeehouse winners — High Five Coffee and PennyCup Coffee Co. — have multiple locations. The former has shops in downtown, North Asheville and slightly farther north in Woodfin. Meanwhile, PennyCup has spots in the River Arts District, North Asheville, Haw Creek and The Block (downtown Asheville’s historic African American business district).

• If you’re an Anglophile, you won’t want to miss Double D’s Coffee & Desserts. The shop, which operates out of a 1963 Bristol Lodekka double-decker bus, provides guests with indoor and patio seating. The unique experience, one could say, is a jolly good time.

• Other popular downtown coffee destinations include Izzy’s Coffee Den (voted No. 2 coffeehouse in the 2020 Best of WNC)

and Trade & Lore. In the mood for coffee and literature? Be sure to visit Malaprop’s Bookstore/Cafe.

• Looking to get away from downtown? Head to the River Arts District and check out Grind AVL, Asheville’s first Blackowned coffee shop, which opened in the Pink Dog Creative space at 346 Depot St. in September 2020. Along with its menus of coffee drinks and pastries, the venue also hosts Black Wall Street Marketplace every Saturday, 10 a.m.-4 p.m., supporting other locally owned Black businesses.

• If you’re a regular visitor to the city and feel as if you’ve tried it all, consider checking out Farewell. The café and wine bar, which opened on the South Slope in January, offers a rotating, seasonal menu.

• Don’t fret, noncoffee drinkers! We haven’t forgotten about you! Those hankering to steep some leaves can check out Dobrá Tea in downtown Asheville or its sister shop in West Asheville. Serving over 100 varieties of fresh, loose-leaf tea, the business also frequently hosts workshops and classes.

• Another option is High Climate Tea Co. Established in 2019, the downtown spot offers a wide range of traditional Chinese teas.

• Of course, if it’s a hot summer day or you simply want a little more zest in your life, a smoothie might be more your speed.

In this case, some popular options include Pulp + Sprout Juice Bar and Vegan Cafe in North Asheville and Simple Cafe & Juice Bar in West Asheville.

LATE SHIFT ASHEVILLE’S OPTIONS FOR DARK-THIRTY DINING

BY K AY WEST It’s 11 p.m., you’ve just left the concert, you’re running on empty, and you need a bit of fuel to get you home. No one zooms in tighter on the late-night food map than members of Asheville’s service industry, coming off a long shift and ready to belly up to a bar for a beer and a bite. Here are some of the pit stops on their radars.

• Better late than ever is the menu plan at enduring downtown favorites Sovereign Remedies and Storm Rhum Bar. Both specialize in highbrow spins on lowbrow dishes, like Sovereign chef Bert Sheffield’s house-ground, foot-long hot dogs and Storm chef Jay Medford’s tempura cauliflower with chipotle yogurt, and gojuchang pork sliders with kimchi.

• “I don’t like pizza,” said no one ever, especially not as the clock creeps toward midnight. From the city that never sleeps, PIE.ZAA on the South Slope boasts New Yawk-style pizza by the supersized slice (12 inches from tip to crust and 15 inches wide) or by the pie — only slightly smaller than a monstertruck tire. Or downsize (but still fill up) with a slice, full pie or chicken wings, tenders, fries and more from One Stop Kitchen at the Asheville Music Hall.

Last call for award-winning wings and reverie-inducing • Wisconsin mac and cheese isn’t until midnight on weekends at

Foggy Mountain Brew Pub. The owners are from Oshkosh, by gosh, and their mac is as cheesy as it gets.

• West Asheville is all aboard for the late-night meal train with multiple options on Haywood Road’s mainline. First stop is WALK, known for its al pastor, tuna and tofu tacos. At Desoto Lounge, the classic pinball machines, jukebox, PBR tallboys and meatloaf sandwiches are the real deal. West Asheville’s version of Cheers is the Westville Pub, where everybody knows your name, your booze of choice and your favorite slider trio. At the Odditorium, sloppy Joe’s, slaw dogs, burgers and fried-in-the-shell peanuts by the bag are just a few of the tasty treats coming out of the spanking new kitchen into the wee hours of the night.

• Off West Ashevillle’s beaten path but well worth the hunt is The Malvern, a retro gastropub on the edge of Malvern Hills on Patton Avenue. French fry flights, wonton nachos and buttermilk-brined fried chicken make hearty nightcaps.

• Look for the crowd of smokers out front to find two downtown bars with late-night food menus. Asheville Yacht Club prepares Polynesian- and Caribbean-influenced cuisine that’s still clearly from the South. Meanwhile, the Rankin Vault offers the right burger with the right beer and perfectly crispy tater-tots as well as other sandwiches and sides to surprise.

The Langren Hotel opened on July 4, 1912. It was located on the corner of Broadway and College Street. With 210 rooms, local papers celebrated its arrival and its implication for the city’s growing tourism industry. The building razed in 1964, replaced by a parking lot.

Fun was In 2017, the AC Hotel Asheville Downtown Fact opened where the Langren once stood.

BY K AY WEST With Foodtopia as its nationally recognized brand and the hospitality industry one of the biggest sectors of its local economy, the suspension of indoor dining in Asheville just weeks before peak visitor season in 2020 was a stat-level emergency. The city responded with new policies that enabled restaurants to expand outdoor seating into privately owned parking lots, specified city sidewalks and storefront street parking. Although indoor service has resumed, al fresco dining spaces remain popular because nothing whets the appetite or soothes the soul more than a breath of fresh mountain air.

• In the River Arts District, Smoky Park Supper Club offers riverside seating on its lawn and elevated deck — the Adirondack chairs are particularly popular. Chef Michelle Bailey has created a seasonal, regionally sourced menu of wood-fired American cuisine that includes starters, sandwiches, burgers and more. The Smoky Park Burger, which features aged cheddar, charred herb mayonnaise, grilled onions and house pickles on a sesame bun, has a cultlike following.

When the pandemic made outdoor seating a necessity, • Asheville’s most personable French chef/restaurateur, Michel Baudouin, wasted no time or sentiment in flipping his beloved petanque court outside East Asheville’s RendezVous into a chic and stylish open-air boite. Large canvas umbrellas shelter tables, cane bistro chairs and heaping cones of his famous frites.

• If your fantasy dinner party companions include culinary icons Julia Child and Edna Lewis, then West Ashville’s equally iconic Sunny Point Café has a table for you. The all-day, mother/daughter-owned, fresh-made comfort food eatery commissioned local muralist Gus Cutty to adorn the walls of its large patio with those familiar faces. Additional tables installed throughout the sprawling edible garden might tempt diners to pick their own veggies, but the kitchen has you covered.

• Zia Taqueria operating partner Robert Tipsword thought inside the box to create outdoor dining options in 2020, chalking 14 individual squares on the parking lot surface for picnic tables. Even so, there remains a foundation of steadfast businesses that locals and visitors alike hold near and dear to their hearts — and stomachs.

• West Asheville’s Tastee Diner has been dishing up cheap, simple grub on Haywood Road since 1946. Currently owned

by Kate and Adam Bannasch of East Asheville’s Copper Crown, the restaurant serves stick-to-your-ribs breakfast items all day, from Denver omelets and biscuits with sausage gravy to a Korean fried egg sandwich with pickled veggies and kimchi. There’s also a vast menu of lunch and dinner diner offerings (including several vegetarian options) such as burgers, hot dogs, sandwiches, fried chicken and milkshakes.

• The story of The Market Place restaurant is closely woven into the history of Asheville’s food scene. Pioneering farm-to-table chef Mark Rosenstein founded the eatery on Market Street in 1979 and moved it to its current Wall Street location in 1990 as the once-derelict downtown area began its revitalization.

In 2009, Rosenstein sold the business to chef William Dissen, who continues the landmark’s legacy of local sourcing and seasonal, farm-fresh fare.

BY THOMAS CALDER Yes, Asheville’s culinary scene is well known and nationally acclaimed. But there are plenty of wonderful restaurants, cafes and breweries in surrounding towns. If you’re looking to get out of the city for the day, here are a few fun and delicious options within a 25-mile drive.

• In the mood for barbecue? Head to Swannanoa via Interstate 40 east and find Okie Dokies Smokehouse. Want to keep exploring? Continue east another 10 minutes, and you’ll discover the picturesque and walkable town of Black Mountain, which has a number of notable eating and drinking venues, including The Dripolator Coffeehouse, Louise’s Kitchen, Open Oven Brunch & Bakery and Lookout Brewing Co. • Conversely, you could take I-40 west to Canton. The town experienced its first boom in the early 1900s, when the Ohiobased Champion Paper and Fibre Co. expanded its operations to the banks of the Pigeon River. The company continued operating for nearly 100 years before Evergreen Packaging took over in 2007. The plant’s paper production process creates a unique odor, but downtown Canton’s distinctive

charm makes up for it. Southern Porch (which occupies the building that once housed the historic Imperial Hotel), Papertown Coffee and BearWaters Brewing Co. are a few local favorites.

Just north of Asheville, Weaverville’s quaint downtown • stretches only a few blocks but is jampacked with food options. For breakfast and pastries, try Well-Bred Bakery & Café. For local beer, pizza and live music, head over to Blue Mountain Pizza. (Both are Best of WNC Hall of Fame winners.) Other options on the main strip include Tommy’s Family Restaurant, Glass Onion, Allgood Coffee and Twisted Laurel.

• To round out the road trip, consider Hendersonville, about 30 minutes south of Asheville. Prior to COVID-19, thousands converged on the city annually during Labor Day weekend for its N.C. Apple Festival. On Hendersonville’s restored Main Street, which is a leader in the accredited Main Street America program, options include Black Bear Coffee Co., McFarlan Bakery, Never Blue (specializing in global plates) and Postero (offering new American cuisine and craft cocktails). Thanks to the steadily increasing attention for the already popular scene, local businesses have been able to expand their reaches with additional locations to better serve their customers.

• The Enka/Candler area is growing fast and now has a shiny new taproom where neighbors can gather. Wicked Weed Brewing’s production brewery, aka Wicked Weed West, offers a wide selection of beers on tap that can be savored while seated in chartreuse and rose-gold chairs amid plentiful plants overlooking the shiny brewing equipment below.

• While experimental brewery DSSOLVR brings in visitors from the Lexington Avenue side of the historic downtown Tyler Building, the Noble Cider and Mead Taproom provides

plenty of allure from the top floor, which fronts on Rankin Avenue. • In 1994, Highland Brewing Co. was famously born in the basement below Barley’s Taproom & Pizzeria, back when downtown Asheville had about as much going for it as a flea circus. Over a quarter-century later, after thriving at its location in East Asheville and expanding its distribution throughout the Eastern U.S., the brewery that put Asheville on the craft beer map has returned to its downtown roots with a taproom in the historic S&W Cafeteria building on Patton Avenue. Welcome back!

• Arguably the most remote brewery in Buncombe County, Turgua Brewing has been quietly operating out of brewer/ owner Phil Desenne’s rural Fairview property since spring 2017. While Turgua’s variety of styles made with locally sourced ingredients will continue to be brewed at the original location, they are now available to imbibe at the new Turgua on the Creek location, a little over 3 miles away on Cane Creek Road. The 2,400-square-foot taproom features a custom copper-top bar, 24 taps and space for live music and movie screenings.

• Burnsville’s first legal brewery, Homeplace Beer Co., got its humble start in the Burnsville Town Center building in summer 2017. Owner/brewer John Silver’s approachable beers quickly caught on and necessitated an expansion, which occurred mere blocks away in the former Banco Lumber space. The three-story structure houses the Homeplace brewhouse, plus plentiful indoor and outdoor room for enjoying brews and Hog Hollow Wood-Fired Pizza’s grub.
