How to go al fresco: Daf Andrews of A&M Hospitality tells all
“During the winter months, having a ‘Winter Warmer’ menu that features al fresco classics like cheese fondue, boozy hot chocolate and other small plates/warm cocktails is always a winner. Restaurants could also provide heating and lighting, as well as pashminas and hot water bottles upon request.” e latest venture for A&M Hospitality is Silures, a contemporary take on a restaurant and bar, inspired by Modern European cuisine. Located in the Roath area of Cardi , Daf says: “Silures is an integral part of the community, not only via creating an accessible but premium o ering, but by championing environmental sustainability, local supply lines and ethical practices.”
Al fresco dining is paramount to Silures, as shown by its dogfriendly area on their rear terrace, making it even easier to eat outdoors this summer.

Daf suggests that it isn’t just the area which makes an experience ‘al fresco’, but the food, as well. Silures o ers a menu that changes with the seasons, thanks to Executive Head Chef, Byron Moussouris. Silures serves local ingredients from its al fresco menu, such as Atlantic Edge Pembrokeshire oysters, Dorset crab & seatrout on toast, Welsh cheese board and Montgomery Welsh sparkling wine. Chef Moussouris brings vast culinary knowledge to Cardi , having spent ve years at the luxurious hotel e Bloomsbury and four years at e Marylebone as Head Chef prior.
Whether eating al fresco or indoors, guests of Silures can expect all-day Brunch on Saturdays and signature Sunday Roasts. Much like the name, which pays tribute to the rich Southeastern Welsh history, Silures also showcases a signature cocktail menu, e Seven Wonders, which features Welsh-inspired cocktails.
