Talking to the folks that make some of the tastiest dishes in town
There is perhaps no food more versatile than the humble sandwich. That might sound like a silly thing to say about something that can essentially be described as “something delicious jammed between two hunks of starch.” But that basic template allows the sandwich to be so much more, and its presence in every culture speaks to its universality. But back in 2018, we found a breakfast sandwich that made all
others obsolete; a dish so all-encompassing that it topped ‘Best Eat’ lists across the country. That dish was the komplet eggs at 21grams Balkan Bistro. A Serbian favourite so rich and delicious that ‘yummy’ noises echoed around the cosy little café. So, to celebrate 21grams’ upheaval to a bigger and better location, we chatted to head chef Uros Mitrasinovic to back in 2018, we found a breakfast sandwich that made all find out what goes into this breakfast of champions. find out what goes into this breakfast of champions.
Somun bread

“A soft chewy flatbread, our dough is fermented for 24 hours, and baked in-house daily. It’s halved, brushed with butter and topped with gouda. We toast it until it’s slightly crispy and the cheese melts.”
Parsley oil
“We decided to play with tradition a bit by introducing some freshness in the form of parsley oil.”

Eggs

Beef jus
“The most time-consuming ingredient, but also the most crucial. Made from beef bones rich in marrow that we source from our local butcher shop in Jumeirah. It’s baked and then cooked – together with vegetable scraps – for 48 hours.”
Kaymak
