REVIEW: BLACK FLAMINGO
Miami comes to Dubai at this lively new spot
The freshest addition to Palm Jumeirah’s bustling strip, West Beach, is a Miami-inspired restaurant by the name of Black Flamingo. It stands out among its neighbours thanks to a vivid colour scheme used across its furniture, art, and interior decor. Parasols in bright teal or magenta signify you’ve reached the right place, as does the custom flamingo statue. Inside, tasselled bar stools and tables add fun texture to the bar area, while the lounge boasts a catwalk-style stage with sofa seating on each side. A neon palm tree lights up one wall, while on the ceiling the theme continues with a tropical mural and flamingo-themed chandeliers.
The menu is Caribbean, a somewhat underserved cuisine in the city, but perfectly fits with the vibe of the venue. Created and overseen by renowned Dubai chef, Reif Othman, guests are treated to an authentic selection of dishes from the West Indies.
Proceedings start off strong with a portion of chips and guacamole (Dhs55) and beef empanadas (Dhs78 for five pieces). Despite not being prepared tableside, it’s clear that the guacamole is fresh, and the super-crispy chips certainly taste homemade. Each empanada was well-stuffed with flavourful and juicy pulled beef, the ratio of pastry to meat excellently balanced.
Upon recommendation we try the coconut seafood ceviche (Dhs88). The coarsely chopped seafood arrives in a bath of chilli and coconut broth that we’d have happily finished off with a straw. The combination of creamy and spicy juice along with the varied mix of seafood and the sweetness of juicy lychee pieces was surprising and delicious. The beef skirt fresh tacos (Dhs82) are also a must-try, as the tender steak, crunchy veg and soft tortilla create the perfect balance of texture and flavours.
A special mention must go to the staff, who seem overjoyed to play a part in the opening of the fun new restaurant. Not only are they attentive without being overbearing, and knowledgeable about the menu, but they also bring good vibes to help you feel welcome from the offset. A playlist of new and classic R&B tunes also elevates the atmosphere, and – along with the decor, menu and mixology – helps to transport us to Miami with every song.
We finish our meal in an impressively creative fashion, through a dish named el mejor coco (Dhs78). The dish has taken months to perfect, we’re told, and includes a fully edible chocolate nest, and a chocolate ‘coconut’ filled with mango, dragon fruit and orange jelly, and coconut ice cream. It’s light by dessert standards, but still feels indulgent as we break the chocolate shell to reach the fruit. Black Flamingo, Radisson Resort Palm Jumeirah, Monday to Thursday 5pm till late, Friday to Sunday 1pm till late. THE MOST WONDERFUL TIME OF THE YEAR

AT THE KEMPINSKI HOTEL MALL OF THE EMIRATES

REVIEW: SUBLIMOTION

Is this immersive experience worth the hefty price tag?
Sublimotion returned for its second season last month, promising even more culinary theatrics than before. The hyper-exclusive immersive dinner experience dropped jaws with its Dhs5,000 per person price tag, causing everyone to ask: is it worth it? The new season brings a new menu, refreshed entertainment and the introduction of a slightly less eyewatering package of Dhs3,500 for those who don’t wish to drink alcohol.
Found in the ultra-luxe Mandarin Oriental Jumeira, Sublimotion has its own entrance, guided through a LED tunnel. The experience begins in a mini library, with hotel keys hanging behind the bar. Instead of being asked which welcome drink we would like, fate decides for us as we choose a playing card from the pack. “You were born to be a player. This moment is yours. Destiny,” it reads, and the bartender begins shaking up a long, amber-toned cocktail.
We’re ushered into the main room and take our seats based on the name projected onto the table. We’re sat in white wheely chairs around a large board-room style table, with a mirrored wall on each end of the room, and full projection on the remaining two walls. Proceedings begin with rosé Champagne, which is delivered via a suspended diamondshaped bucket gently lowered to the table. A spiral projection on the table indicates where the glass should be placed, and the team of waiters pour each one in synchronicity. The courses that follow grow in creativity when it comes to both presentation and delivery, however some of the tastes and textures we found to be a little too ‘creative’ for our liking.
When it comes to the entertainment, however, the more unusual, the better. One moment we’re gliding through waterfalls and mountainscapes via a VR headset, the next we’re being pulled across the room on our wheely chair to a Dutchinspired picnic.
If we were to pick a favourite course it would be the aeroplane meal, which we were served after watching the waitress’ rendition of Britney Spears’ Toxic music video. From the trolley, we’re presented with a plastic tray housing plates of artistically presented sea bass fillet, mash potato covered in edible gold leaf, and snow peas in a pumpkin marinade.
The full experience lasts around two-and-a-half hours, which works out at about Dhs33 per minute. Is the dinner worth the price tag? That really depends on your perspective, but if you’re tired of Dubai’s usual restaurant offering, Sublimotion will certainly be an extraordinary alternative. Sublimotion, Mandarin Oriental Jumeira, daily, 6.30pm or 9.30pm, Dhs3,500 soft drinks, Dhs5,000 Champagne. Tel: (0)4 777 2250. @sublimotiondubai WHAT’S ON VERDICT An out-ofthe-ordinary dinner unlike anything you’ve experienced before... if you can afford it!

REVIEW: KYMA
A stunning new addition to Palm West Beach
The expectation on Kyma is especially high. Not only is its plot on arguably the most sought-after strip of sand in the city, Palm West Beach, but it’s also the latest opening from Rikas Group, who made Dubai Creek one of the dreamiest locations for a beach day when they opened Twiggy by La Cantine in January 2021. Found close to instant-hit neighbours February 30 and Surf Club, Kyma stands out from its fellow residents by surrounding itself almost entirely with lush plants. Verdant bushes, towering Palm trees and tall grasses encase the earthy stone structure of the beach club. It’s like stepping into an exclusive hideaway when you make your way inside.
Kyma’s Grecian inspiration is everywhere, and thanks to the abundance of plants, it has a gorgeous island-getaway aesthetic. At the centre, an inviting infinity pool is surrounded by plush sun loungers, each shaded by macrame parasols that dapple, but don’t block the sun. It might sound unusual, but a special mention should be given to the imported sand – soft and sugary, it adds to the instant escapism. In fact, as we settle into a lounger by the pool, the perfectly framed Dubai Marina skyline backdrop is the only reminder that we’ve not left the shores of the UAE. Melodic house tunes are atmospheric but not overbearing, and in the balmy midday heat, we refresh with dips in the temperature-controlled water, cold flannels, which are handed to guests at regular intervals, and fresh coconuts (Dhs45).
Although a more concise menu of modern Greek eats is available to order to your lounger, we don’t want to miss out on the extensive menu designed by chef Gilles Bosquet, so move to the alfresco restaurant for lunch. We’re instantly glad we did, as we peruse the extensive list of crudo and ceviches, hot starters, salads, pastas and grills.
Sharing starters arrive as they’re ready, something we don’t mind – but isn’t always popular. The crispy zucchini (Dhs56) is so lightly battered and fried that it almost melts in our mouth and we delight in every mouthful. The perfect parcels of feta in fylo (Dhs89) are another delicious hit: cheesy, crispy and drizzled with just the right amount of sweet honey. The sea bream carpaccio (Dhs72) is a narrow favourite, each sliver topped with a truffle vinaigrette. For our main, we opt to share a lobster pasta (Dhs425 for two), which arrives as a generous bowl of al dente pasta, swirled in a tomato and capsicum sauce, and while we might not be able to finish it all, we pick out all of the chunks of fresh lobster so as not to miss a mouthful. The lamb chops (Dhs240) arrive piping hot from the charcoal grill, simply served with a light oregano seasoning and roasted tomatoes, and we’re glad we order a side of hand cut fries (Dhs45). This is elevated beachside dining that goes far beyond a menu of typical beach club eats and the stunning setting makes it hard to tear ourselves away as the sun begins to set beyond the horizon. Kyma, Palm West Beach, daily, 10am to sunset pool, 12pm to 1am restaurant. Tel: (0)4 666 5999. kymabeach.ae WHAT’S ON VERDICT A bold claim to make, but this could be a strong contender for Dubai’s best new beach club.

REVIEW: COUQLEY DOWNTOWN
A beloved French brasserie has opened another outpost…
Couqley, a much-loved restaurant in JLT, known for its snug setting and authentic feel, has recently opened a branch in Pullman Dubai Downtown, Business Bay, taking the original concept and revamping it to create a new, bright and chic experience.
Greeted by stunning red doors upon arrival, we are transported into a chic French bistro as soon as we walk through. At the centre of the restaurant is a heightened bar boasting the signature Couqley cockerel hung from the ceiling. To the left we spot an open-style kitchen and to the right is a private dining area.
The interiors provide a real feel for France, paintings and décor are all reminiscent of mid-century style, while the alfresco dining is adorned with hanging plants and greenery that one would expect in Paris.
We start off with two varieties of steak tartare. The classic steak tartare (Dhs119) was an instant hit, and we couldn’t resist scooping up more of the flavourful meat onto our toast. The wagyu steak tartare et truffes (Dhs137) was not quite as tasty but still managed to satisfy our truffle craving. Next, we move onto the poélée de champignons (Dhs76). The poélée’s mushroom sauce was deliciously creamy, and well balanced against the ratio of flaky pastry. We couldn’t waste a single morsel, so much so that we swiftly reorder. Naturally at any French restaurant, we had to try the escargot de Bourgogne (Dhs61 for six). The snails were cooked to perfection, and drenched in butter, garlic and herbs – just the way they should be.
Making our way through the main courses, we try Couqley’s signature steak frites (Dhs137). We requested it medium rare and the steak arrived at optimum temperature, which alongside with Couqley’s signature sauce, really sealed the deal. We also enjoyed the sea bass en papillote (Dhs129), which was served in a foil bag to ensure all of the juices remained, and led to the most flavourful, tender fish. Dessert consisted of a crème brûlée (Dhs41) and the pain perdu (Dhs55). The crème brûlée arrived perfectly caramelised with sweet vanilla cream underneath. However, the real showstopper is the pain perdu. It was crispy on the edges and deliciously soft on the inside, the thickness of the brioche was perfect, and the balance of cinnamon and vanilla ice cream perfectly rounded out the day. Couqley, Pullman Dubai Downtown, daily 12pm to 1am. couqley.ae WHAT’S ON VERDICT There is not a single negative thing to say about Couqley. Perfectly cooked food, incredible service and the new venue is refreshing and inviting.

Find out who secured a place in the inaugural Michelin Guide Abu Dhabi

WORDS: MILES BUCKERIDGE
The plat is now out of the Michelin bag in Abu Dhabi and based on the whims and wants of its inspectors, we’ve learned who’s kind of a big deal on the capital’s culinary scene. A significant 42 restaurants were added to this inaugural 2023 Guide, four were awarded the sought-after Bib Gourmand status (good, affordably priced food) and three more were honoured with what is likely international gastronomy’s most coveted prize of all, a Michelin Star.
But who are these Michelin winners, and why should we care? Well, if you like good food – you’ll struggle to find a better respected independent arbiter of taste, than our friends at Michelin. Their rigorous testing method applies science to art, and rates experience based on the quality of the ingredients, the mastery of cooking, the harmony of flavours, the personality of the chef through the cuisine and the consistency both over time and across the entire menu (each restaurant is visited multiple times).
ONE-STAR RESTAURANTS
Three restaurants were each awarded one Michelin Star in Abu Dhabi as part of the 2023 guide.

99 Sushi Bar and Restaurant [ ]
After the Guide announcements, we predict that this (Spanish by birth) haute Japanese cuisine concept is probably experiencing somewhere in the region of 99 problems seating all the people trying to get a table now. These are of course great problems for the sushi house, based in The Galleria Al Maryah Island, to have. And whilst the volume of attention is likely new, 99 Sushi has been a central pillar of Abu Dhabi’s fine dining circuit since 2017. Their signature dishes include wagyu and Kobe prime cuts, otoro nigiri, blue fin carpaccio, Hokkaido uni, gyozas, and king crab salad. They’re also known for adding exciting European flexes onto Asian cuisine. We’re talking tinkering with truffle and figuring out new ways to use foie gras. @99sushibaruae

Hakkasan [ ]
The name ‘Hakkasan’ represents a global chain of high-end Cantonese restaurants, with strong links to the Guide. Two London Hakkasans have won Michelin Stars, and Dubai’s own location gained one in its inaugural guide earlier this year. And this Abu Dhabi outpost, found in a very special location, has now joined that list. You’ll find it at Emirates Palace, plating up artful servings of dim sum, seafood, spice and other food fire, often based on ancient Chinese recipes. Our picks from the Abu Dhabi menu? Typhoon lobster, Chilean sea bass with organic honey and the supreme dim sum selection. The aesthetic element of the courses at Hakkasan is important, yes, but the art is indistinguishable from the eating. It’s all about the holistic experience. The chef is speaking through the food, and whilst we can try to describe it here, the only way to hear this beautiful mantra is to try it. @hakkasanabudhabi
Chef Antonio Guida
Talea by Antonio Guida [ ]
Emirates Palace now finds itself represented by a binary star system, with the relatively recent launch of Talea. It’s a culinary engine driven by multiple Michelin Star-honoured Chef Antonio Guida. A modern space, there are faux frescos on the wall depicting scenes from various Italian cities and highlighted detailing on the ceiling coves. We swooned over the calamari alla griglia, and gushed in hushed cooing sounds over what they did to a fillet of ricciola (amberjack). And what is now their verified ‘Michelin Star’ range of pizza, represents the perfect way to introduce yourself to the kitchen’s incredible flavours on a relative budget. Talea is an Italian job extremely well done, blowing the doors of our expectations clean off. Best Italian fine dining in the city? It just might be. @taleauae
BIB GOURMAND
The Bib Gourmand category is awarded to restaurants that excel in providing good food at affordable prices.

BEIRUT SUR MER
Located along the picturesque, beachfront promenade of Mamsha Al Saadiyat, Beirut Sur Mer comes painted in scintillating botanical aesthetics, paired with a remarkably strong Levantine menu. The menu is absolutely gargantuan, filled with a mezze myriad with dishes such as quinoa tabbouleh, crab moutabal, and halloumi bil teen. Beirut Sur Mer offers the finest service and a vast menu that will leave you wanting to linger for hours if only to try more plates of mezze, but don’t be like us – save room for your mains. @beirutsurmer
ALMAYASS
You’ll find expertly crafted ArmenianLebanese dining at The Galleria Al Maryah Island’s Almayass, and in line with the defining requirement of the Bib Gourmand award, it won’t break the bank. This cross of two culinary houses, both alike in dignity, translates into some great mash-up mezze items – kebbeh karaz, ras asfour with cherry sauce, manti, bastermi, and shanklish lead the pack for us. @almayass_abudhabi
TAZAL
The second of two Al Qana entries, Tazal’s range and quality of Mediterranean meets Middle Eastern fare impressed the inspectors enough to earn a solid Bib Gourmand nod. The creative menu includes fusion dishes such as peri-peri chicken biryani, seafood machboos paella, chicken kaaksadilla, wagyu al mosul, and a Korean lamb explosion with cumin tuile. It’s fair to say the restaurant’s claim that these are ‘brave twists’ certainly checks out, but given the recent Michelin acknowledgement, it seems it was a flavour experiment worth making. @tazaluae
OTORO
Locally based culinary legend, chef Akmal Anuar (whose Dubai restaurant 11 Woodfire won a Star in the inaugural Dubai Michelin Guide) opened his first Abu Dhabi restaurant this year, and it’s a keeper. The location pin drop is at the canal front destination Al Qana, the seat of so much exciting new gastronomic and leisure murmurings in the capital. Otoro is an authentic and clinically studied reenvisaging of an Osakan kitchen, and beyond the stunning nigiri options (of which, naturally the otoro fatty tuna is their expertly crafted signature), our pick of the dazzling dishes was the melt-in-the-mouth shabu shabu burger. A burger like no other, its moreish wagyu slices, perfectly toasted bun and buttery caramelised onion make every bite jucier than the last. We licked our fingers clean. @otoro.ad

SPECIAL AWARDS
The inspectors aren’t only focusing on food while they dine, they’re also looking out for shining stars among the service. In this year’s guide, there are three Abu Dhabi contenders for special awards. Service Award: Rawad Hamdan and team, Restaurant Li Beirut Sommelier Award: Marlon Nuque, Zuma Restaurant Young Chef Award: Luigi Stinga, Restaurant Talea by Antonio Guida
