Kick-start your creativity this month as some of the world’s finest artists and inventors head to the city for the very first Dubai Design Week.

The six-day event will see workshops, fairs and art shows take place across the emirate, while the new Dubai Design District, or D3, will host a series of events.

From luxury yachts that clean the ocean to organic material that harnesses energy from body movement, revolutionary inventions from some of the greatest young minds will be on display at the Global Grad Show. Students involved come from as far as Beijing’s Tsinghua University and London’s Royal College of Art, which counts the likes of James Dyson and Tracey Emin as alumni.

Each pavilion will represent a country from the region – from the UAE, Kuwait to Pakistan – as they interpret the theme ‘Game: The Element of Play in Culture’. Look out for the Saudi Arabia pavilion, which is curated by Basma and Noura Bouzo, the creative sisters behind Saudi Design Week and the arts magazine Oasis.

Expect to see installations as you stroll around the city too.

Day 1

10am Start your day with a visit to Longshan Temple. Built by settlers from China’s Fujian province in the 1730s, devotees of Buddhism, Daoism, and Chinese folk religions regularly use it. The colourful religious complex is filled with worshippers, not tourists.

11am To get a better understanding of modern Taiwan, visit Chiang Kai-shek Memorial Hall. Chiang was the leader of the Kuomintang (Chinese Nationalists), which fought the Communist party for control of China and then retreated to Taiwan. Time your visit to catch the changing of the guard (every hour on the hour).

1pm Just outside Chiang’s memorial is the cheap and cheerful eatery Shengyuan Shigua Xiaolongbao. To eat the thinskinned steamed soup dumplings, use your chopsticks to poke a hole through which the steam can escape, and then slurp, chew, and swallow. You can order standard pork xiaolongbao here, as well as the restaurant’s signature luffa (sponge gourd) xiaolongbao.

3pm Burn off lunch with a hike up Xiangshan (Elephant Mountain). The entrance to the path is about 15 minutes’ walk from Taipei 101 – the skyscraper that towers above Taipei landscape – and although it’s stairs and not a dirt trail, you’ll be getting quite a workout. You can reach the lookout point in around 20 minutes, and halfway up is a rest area with bathrooms.

From the top, take in sweeping views of the city, including Taipei 101. Xiangshan is an excellent free alternative to 101’s observation deck.

8pm Less chaotic and less geared towards tourists than Shilin Night Market, Tonghua Night Market is the place to come for street food. The fearless can try stinky tofu (chou doufu), while those who can’t abide its pungent odour can nosh on oyster omelette, beef noodles, taro and sweet potato balls, fresh fruit juice, and, for dessert, ice cream with small chunks of peanut brittle and coriander wrapped in a crepe. Remember to always have cash to hand when eating out in Taipei as not everywhere takes cards.

9am An authentic Taiwanese breakfast isn’t for the health-conscious. At Yong He Dou Jiang Da Wang, the menu is in Chinese, but don’t let that stop you; point to what other people are having, or call out the things you want. Youtiao (a savoury doughnut-like pastry whose name translates to ‘oil stick’) is a must, as is dan bing (scrambled egg with scallions inside a crepe).

10am Grab a cab (25 minutes) or take metro line 1 (80 minutes) to the National Palace Museum, whose collection of nearly 700,000 pieces of ancient Chinese art and artifacts is unparalleled. It was Chiang Kai-shek’s government who, fearing these artifacts would be taken by the invading forces, whisked them away to Taiwan.

Roughly 3,000 pieces are on display at any given time, including paintings dating from the Tang Dynasty (618–907).

2pm Ready your chopsticks for dim sum at vegetarian restaurant Yang Shin. Tofu, mushrooms, and greens play starring roles here. The chao mian (chow mein) comes topped with a pile of wood ear mushrooms, baby corn, bamboo, and bok choy. The deep-fried mushroom dumplings are meaty enough to satisfy carnivores.

4pm Walk 20 minutes to neighbouring boutiques MBmore and Wu Xing Creative Company. The former sells reasonably prices limited edition prints by 40-plus local printmakers and the latter handmade ceramics and silver jewelry.

7pm Queue up at Addiction Aquatic Development, Taipei’s unrivalled seafood spot. Under the one roof are a fish market, Japanese-style grocery store, stand-up sushi bars, and indoor and outdoor tables where you can tuck into the barbecued fresh catch of your choosing – think oysters, king crabs, and even geoducks.

9pm Take a nightcap at Wootp, a local favourite that brews ginger beer in house and uses it in their Moscow Mules. On the menu are classics with a twist; the Sazerac, called here a Zen Sazerac, is made with Yamazaki whiskey, sandalwood-infused vodka, elderflower syrup, and orange bitters.

riving through the winding roads of the Scottish Highlands, it’s easy to get lost in the mystery and romance of its dramatic landscape.

Mist hangs in the green treetops above sweeping glens, while smoke drifts from the pagoda roofs of tiny distilleries dotted among the hills.

This is Speyside. Malt whisky country.

A bucolic idyll in the north-east of Scotland, where the ‘water of life’ has been lovingly made for centuries, and the spirit of freedom can be inhaled in the fresh mountain air. It’s a land of castles and rugged coastline; of fishing, golf and Highland sports, of Aberdeen Angus beef and wild Scottish salmon. And it’s all easily negotiable by road.

The malt whisky trail Thanks to its abundant fields of barley and generous supply of fresh water, Speyside is bursting with single malt whisky distilleries with names to conjure with: Longmorn, Cragganmore, Knockando. Among them are some of the most recognisable brands in the world – from Glenfiddich to The Glenlivet – but each and every distillery has its own unique methods and design; each whisky its own distinctive character and flavour. Nobody knows for certain what makes each one different, and therein lies the beauty of Scotch – the sheer mystery of it.

More than half of Scotland’s malt whisky distilleries can be found in Speyside, and everybody here knows somebody with connections to the industry. At the Speyside Cooperage in the heart of the whisky region, skilled craftsmen toil over casks using traditional methods and tools.

“The hammer is a cooper’s third arm,” a tour guide will tell you, as you watch real coopers perform their ancient art. The oak casks can last for up to half a century, imbuing the spirit with innumerable dusky flavours and aromas.

Discover the secrets of Scotch on a distillery tour. In the town of Keith, on the banks of the river Isla, the picturesque Strathisla distillery has been producing single malt whisky since 1786. With its stone walls and ornate pagodas, it’s the oldest distillery in the Highlands, and its 24

whiskies are at the heart of the Chivas Regal blend. Over in Ballindalloch, The Glenlivet distillery was established in 1824, and was the first to distil whisky legally. Today of course it’s a slick, modern operation, yet its famously light, smooth, fruity whiskies are redolent of the region’s history and traditions.

Highland games With its lush greenery and sweet, clean air, Speyside compels you to embrace the great outdoors. Whether it’s salmon fishing in the river Spey, or throwing heavy objects – be warned: it’s about style not distance – in the Highland Games, sport is a way of life here. Although Highlanders have competed in feats of strength and athletic prowess for over a thousand years, the Highland Games as we know it today dates back to the 17th century. Among the traditional events are hammer throwing, tug-of-war, and tossing the caber, wherein competitors hurl a long log or pole. With massed pipe bands, dancing and fancy dress, you’ll find Highland games throughout the summer, from Aberlour to Tomintoul.

You can test your metal at a Highland Games event with the friendly team at Sporting Scotland. They specialise in organising activity packages that make the most of Speyside’s colourful local culture and dramatic landscape. If water sports are

your thing, try your hand at fly-fishing for wild salmon, or go canoeing on the River Findhorn, widely regarded as Britain’s best white water river. The mountains are perfect for a range of challenging sports, from canyoning and abseiling, to mountain biking on some of the most scenic trails in all of Scotland.

The region is famous for its hunting, whether it’s deer or game birds like pheasant and grouse and at a falconry display you can watch the graceful birds of prey hunt grouse across the rolling hills. But if you prefer your sport a little less lethal, you can always try clay pigeon shooting, archery or a nice relaxing round of golf. The MacDonald Spey Valley Golf & Country Club near the village of Aviemore, has an 18-hole championship course with the added incentive of stunning views of the Cairngorm mountains.

Exploring Speyside Although you could easily devote your time in Speyside to sampling whiskies and hurling large bits of wood, there’s plenty more to explore, from castles and cathedrals, to traditional hostelries and first class restaurants.

Known as ‘the pearl of the north’, Ballindalloch Castle is one of Scotland’s most evocative and imposing, with its beautiful walled gardens and impressive VOYAGER • OCTOBER 15

Single malts and blends - Blended whisky is a mix of single malt and grain whiskies. Chivas Regal is made from many whiskies from different distilleries, to achieve a rounded, consistent and smooth flavour.

water, barley, yeast and peat is used to make Chivas Regal. A minuscule amount of spirit caramel is used to make sure the colour is consistent, but it has no effect on flavour.

- A single malt whisky such as The Glenlivet is malt whisky from a single distillery. Single malt Scotch must be produced in Scotland, it must be distilled from malted barley, and it must have matured in oak casks for at least three years.

- Scotch whiskies have different flavour characteristics according to cask type. Those matured in a sherry butt will be sweet, nutty, slightly spicy and dark in colour. American oak barrels give whisky a dry, vanilla oakiness and a lighter colour. You’ll taste both with every sip of Chivas Regal.

- When you taste a blended whisky, you may be tasting whisky that can never be tasted again.

An 18-year-old Chivas Regal, for example, may use whiskies from distilleries that have since ceased to exist.

- Scotch whisky is 100 per cent natural. Only

- Whisky doesn’t mature in the bottle like wine.

A 12-year-old Chivas Regal has spent at least 12 years maturing in the cask. It remains a 12-year-old whisky, even if the bottle itself is 50 years old.

A bluffer’s guide to whisky 1. The volume of spirit which evaporates from the cask while whisky is maturing is known as the angel’s share.

2. In order to call itself Scotch, a whisky must mature in an oak cask for at least three years.

3. A drop of water added to your whisky helps release its complex aromas and flavours.

4. A single malt whisky is malt whisky from a single distillery; a blended whisky is a mixture of malt and grain whiskies, often from a number of distilleries.

5. The traditional Scottish drinking vessel for whisky is a shallow, two-handled cup called a quaich.

6. A glass of whisky is known as a dram – it has no specific measurement, its size is left to the host’s discretion.

7. There are five distinct whisky producing regions in Scotland – the Highlands, the Lowlands, Islay, Cambletown and Speyside.

collection of 17th century Spanish art. It is said to be haunted by a number of ghosts, including a general who rides a white horse through the castle grounds. Equally as eerie, but no less striking, is the ruin of Elgin Cathedral, which dates back to 1224 and houses Scotland’s tallest gravestone.

Speyside has some of the most scenic roads in Scotland, but the Strathspey Railway is well worth a ride. The preserved heritage railway from Aviemore to Broomhill features steam locomotives, and takes a breathtaking course through the Cairngorms National Park.

The trains offer an on-board dining experience, but for a true taste of Highlands hospitality you can’t beat a traditional Scottish pub. The Fiddichside Inn in Craigellachie is a riverside pub that’s as charming as it is tiny. It has a wide selection of whiskies, and is run singlehandedly by Joe, the landlord, who is in his 80s. There’s no food, though, so for a good Highland feed head for the Copper Dog restaurant at The Craigellachie hotel.

Specialising in local ingredients, such as Scottish smoked salmon, succulent Aberdeen Angus steak and the inevitable haggis, it makes for a cosy and relaxing spot to sit down, relax and plot your next adventure in Speyside.

Huge rise in cargo traffic at DWC The position of Al Maktoum International at DWC as a top cargo airport continues to rise as volumes rocketed in the first half of 2015. The airport continues to rise up the ranks of the top cargo airports worldwide edging into the 19th position up from 20th earlier in the year.

The volume of freight handled at DWC in the first six months of the year rose to 443,012 tonnes, up 42 per cent compared to the same time last year. The first half of 2014, in comparison, saw 311,364 tonnes travel through Dubai’s second airport.

The growth was driven by Dubai Airport’s strategic initiative to relocate all dedicated freighters from DXB to DWC in May 2014.

“The story is only just beginning for DWC but the early results continue to impress,” said Paul Griffiths, Dubai Airports CEO. Meanwhile aircraft movements at DWC were actually down 17 per cent on the same time period, from 25,184 in 2014 to 20,866 in 2015. This is due to the surge in flight numbers last year, created by the temporary relocation of 300 flights per week during runway refurbishment at DXB. “The airport is quickly emerging as an important cargo hub and with the addition of 70 weekly flydubai flights to seven new destinations in October we expect the airport to soon establish itself as an important gateway to the Middle East.”

DXB passenger numbers up by 29.6 per cent in July Dubai International (DXB) welcomed 6.68 million passengers in July 2015, a surge of 29.6 per cent compared to the 5.15 million recorded during July 2014, according to a report issued by operator Dubai Airports.

The surge is the result of a major runway refurbishment programme between May and July last year that reduced the airport to a single runway operation and many flights had to be diverted to Al Maktoum International at DWC. “Over six million passengers per month has become the norm at DXB and we expect that to continue for the remainder of the year,” said Paul Griffiths, Dubai Airports CEO. “Despite the high volumes we have maintained service levels by implementing detailed operational plans, boosting staff levels, intensifying communication efforts with our business partners and customers.”

Overall for the first seven months of 2015, DXB saw a 12.9 per cent increase in passenger numbers, rising from 39,831,861 in 2014 to 44,981,967 this year.

Sichuan Airlines launches DXB-CTU flights Chinese airline Sichuan Airlines has commenced twice weekly flights between Dubai International (DXB) and Chengdu Shuangliu International Airport (CTU) September 4.

The new route marks the first venture into the Middle East for Sichuan Airlines.

DDF awarded for corporate responsibility Dubai Duty Free won two awards recognising its positive impact on its surrounding people and communities at the CMO Asia Best Corporate Social Responsibility (CSR) Awards and the Asia Green Future Leaders Awards, held on August 12.

Picked up by Bernard Creed, Dubai Duty Free Vice President for Finance, the first award was The Best Corporate Social Responsibility Practices. This acknowledges businesses that show a commitment to health and safety and sustaining strong relationships with its employees and customers.

The second title that Dubai Duty Free was awarded was The Best Green Organisation of the Year, for demonstrating environmental commitment.

“These awards are a true reflection of our commitment to CSR,” commented Colm McLoughlin, Dubai Duty Free Executive Vice Chairman.

“We have made a pledge to embed these principles and have a dedicated corporate responsibility department that is very active in driving forward new initiatives.”

Dubai team flip boat at XCat World Series

A Dubai team flipped their boat while competing at the Gold Coast GP stretch of the XCat (extreme catamaran) World Series, while Italian racer Giovanni Carpitella took home his first Dubai Duty Free Speed Cat Run title, on August 22.

The boat, operated by the team DTCM made up of Salem Al Adidi and Eisa Al Ali, flipped in the second round while competing against the XDubai team, Arif Al Zaffain and Nadir Bin Hendi.

“It was a combination of factors. We were going at top speed because it was the finish line, and at that point the waves were getting higher so it all happened very quickly,” explained Al Adidi. “But we’re both perfectly fine.”

Elsewhere, the extreme powerboat competition saw Carpitella and Darren Nicholson of the team T-Bone Station overcome the competition Marine Investimenti Sud in a headto-head final showdown in front of a crowd of 10,000.

“I was very glad to be able to sing my anthem on the podium,” said Carpitella. “It needed to be both a balanced boat and a fast one and it worked because we were really steady, but still got to 185 km/hour in just 1,100 metres of the course.”

Fifteen teams are competing in the XCat World Series, which is said to be one of the world’s most extreme powerboat series. From Australia, it is set to go to France this month before then heading to Dubai and Abu Dhabi in November 2015.

The Russian volleyball team won the 2015 Men’s U23 World Championship by three sets to one

Russia beats Turkey in U23 volleyball championship The Russian volleyball team was triumphant after beating Turkey in the final of the 2015 Men’s under 23 World Championship, held in Dubai on August 31.

Russia won by three sets to one, with Turkey managing to bring it back in the second set. Egor Kliuka’s 20 points topped the list of the scores for the winners, followed by Pavel Pankov’s 10 points.

This was the first time that Dubai Duty Free was the main sponsor, with Dubai Duty Free Executive Vice Chairman Colm McLoughlin saying, “I would like to see volleyball gaining popularity among the residents of the UAE.” This was the second edition of the Fédération Internationale de Volleyball (FIVB) 12-team international event, which ran from August 24 to 31 and was held at sports clubs Al Ahli, in Al Nahda, and Al Nasr, Al Karama.

“This new partnership with the UAEVBA (UAE Volleyball) will help us promote volleyball,” said Salah Tahlak, Dubai Duty Free Senior Vice President of Corporate Communications.

“Orson Welles was one of my favourite customers. Every day, he’d ask me what new things I’d created.” Wolfgang Puck is a celebrity chef in every sense of the phrase. From appearances on Hell’s Kitchen to The Simpsons, the Austrian is a star in his own right, and his fame is also one built on feeding the rich and famous.

In 1973 the young chef – fresh from the kitchens in Paris – found himself in the US and, a couple of years later, in Ma Maison, LA. The restaurant wasn’t much to look at, but Puck’s fusion cooking was new and exciting and soon it was buzzing with Hollywood legends – big names included Fred Astaire, Elizabeth Taylor, Marlon Brando and, of 82

course, Welles. “[Welles] usually had lunch twice – once with me at 11 and a second time with his guests,” admits Puck.

So, who has been his favourite celebrity to cook for? “To single one out would be very difficult since I’m friends with many,” he politely declines.

He’s forgiven the humble brag, considering that he’s been a favourite of Hollywood’s elite for more than 40 years and head chef at the post-Oscars banquet, the Governors Ball, for the last 20.

“Every day we have celebrities in our restaurants [in LA],” he says. “In the end they’re not any different than you or me and I don’t get nervous.”

Puck also heads a culinary empire of restaurants worldwide, including CUT in Downtown Dubai. From Hollywood to Terminal 3, he’s launching a new venture The Kitchen at Dubai International when Concourse D opens later this year.

“We’ll have part innovation and part comfort food,” he reveals, with many of the details still under wraps. “I would like to give people a great dining experience before leaving Dubai.”

The particulars of his newest restaurant may be a secret. But one thing’s for sure: while we might not all be Oscar winners, we will have the chance to dream of 1970s glamour while we dine on a pre-flight meal. wolfgangpuck.com
