For the vegetable noodles, onion, mushrooms and some crunchy peppers and carrots are sautéd with garlic and ginger. The veg is then mixed with soy and Hon Dashi sauce and some tasty egg noodles.

This thick wholesome tomato soup is made fresh daily from a roux sauce. The tomatoes give it the flavour, the onions add depth and the carrots bring the vibrant colour. Cooked for at least two hours and then strained, the chef adds a pinch of herbs and a dash of fresh cream.

A perfume inspired by tea might seem like an unusual prospect on the face of it, but when the British perfume legend, Jo Malone, is involved, you should probably expect the unexpected. The result is the Rare Teas Collection, comprising six new fragrances, infused straight from the leaf and into the bottle.

A creation such as this was no easy feat.

“We’ve worked the fragrances to frame the rare tea, adding ingredients that would bring out the most unusual and elegant notes,” says fragrance director Celine Roux.

In doing so, the team went somewhat into the unknown. “Our approach was

something completely new,” explains master perfumer Serge Majoullier.

“Through an infusion process we used rare teas in our fragrances, a first in perfumery. We liked that this idea was almost similar to brewing tea – both an art and a science.”

uch is Brazil’s infatuation with football even its flag includes a sphere in the centre of a green field, yet the country’s relationship with other sports is less pronounced. It’s for this reason that intrigue surrounds Rio de Janeiro, the enchanting host city of this month’s Olympic Games. Will the famously passionate cariocas turn out in support of Brazil during bewilderingly foreign sports such as rugby sevens and archery?

Maybe, when it comes to the Olympics, the trick is to simply look at the sports in a different way; a way that attracts and involves the very people the original Games were created for — the amateurs. Sure, Rio might not be a city famed for professional cycling, sailing or taekwondo, but that overlooks the fact all these sports are, at a basic level, ingrained in the Brazilian lifestyle and psyche.

While it would be easy to spend months in Rio, a lot can be achieved in a week.

Dubai Voyager’s week-long itinerary not only opens your eyes to the city’s natural wonders, helps you meet locals and soak up Brazilian culture, it also proves that, when it comes to sport, the Cidade Olimpica is more than just a city for football lovers.

Like most major cities, Rio has a traffic problem. Fortunately, the first event on our schedule requires little more than two legs and a smartphone. Download the BikeRio app to gain access to 4,000 rental bikes located at 400 stations around the city; then buy a US$1.50 day-pass and get road cycling. The bike-track hugging the 20km beachfront provides breathtaking views of the Dois Irmãos and Pão de Açúcar mountains. And people-watching is an activity that never gets tiresome here, along the stunning body-beautiful beaches of Ipanema and Leblon.

After returning your bike, grab lunch and make the toughest decision of the day: fresh coconut or frosty caipirinha? You’ll rarely need to go far to find either, but since the evening’s sport is rhythmic dance, the country’s potent cachaça-based cocktail might be better for the hips. Mondays means open-air, open-access samba parties at Pedra do Sal, a huge, smooth rock, around which live music and seductive samba continues late into the night.

The next morning is, if heads and legs have recovered, for race-walking.

Several museums in Rio are free to access on specific days so cram in some culture before lunch. Both the Museum of Tomorrow (free on Tuesdays) and the Museum of Modern Art (Wednesdays) offer exhibitions from world-renowned artists in English and Portuguese. Then, for lunch, do as the locals do and eat arroz e feijão (rice and beans) in one of Centro’s cheap restaurants.

Continue your cultural journey with a train to the top of the largest Art-Deco statue in the world: Christ the Redeemer.

The 100-foot tall sculpture takes on new perspective up-close as thousands of tourists jostle for that perfect picture.

Savour the moment, snap the sunset photo and escape down the mountain for dinner and a game of football with the locals. Beach matches are commonplace in Copacabana, but for a real insight into Brazilian soccer, head to Parque do Flamengo, where AtivoRio.com organise mixed matches with guys, girls, gringos and locals. But be warned: Brazilians don’t like to lose.

With that in mind, it is little surprise one of the country’s most popular martial arts is both non-combative and noncompetitive. Capoeira, which combines elements of gymnastics, dance and taekwondo, was created by Brazil’s African slaves in the 16th Century. Like shadowfighting set to music, the sport is great for assisting flexibility and weight loss and has now attracted global attention. Much of that is down to the pioneering work of Mestre Leopoldina, who — when not teaching classes around the world — offers 2.5-hour lessons on Monday, Wednesday and Friday nights at his Nestor Capoeira School.

After an active few afternoons, let expedition company Rio Adventures look after you with an all-inclusive day-trip to Arraial do Cabo. A couple of hours along the coast from Rio, this paradisiacal beach-town provides opportunities for swimming (breast stroke or butterfly?), diving (scuba rather than 10m sync) and sailing (on water so clear it can appear like glass). an eye out for penguins, which have been known to pop up after taking a wrong turn en-route to Patagonia.

Even athletes need rest and recovery, so after grabbing a few hours of sleep at home, it’s time to refuel. Few countries in the world do meat quite like Brazil and donning your elasticated underwear is essential before heading for a traditional churrascaria. Prepare to be hand-served succulent, salty meats from an array of giant skewers until you can eat no more.

Fogo de Chão is the most popular, but The Churrascaria Palace is slightly cheaper without any noticeable drop in quality.

Quick tip: Forego the temptation of the buffet bar; you’ll only regret it when the

next round of picanha (rump steak) arrives.

Waking up at the weekend means only one thing to cariocas: time to flash the flesh. Contrary to popular opinion, not all Brazilians are gifted with perfect bodies so don’t be self-conscious when it comes to swimwear. At the beach volleyball courts near Posto 12, you can try your hand at Brazil’s second-most popular sport. Or, should you feel more adventurous, try your feet at futvolei, a hybrid game that Brazilians love so much they’re fighting to have added to the Olympic roster.

Once the sand is washed out of your hair, it’s time for the ultimate event of the week: a Saturday night triple-jump through Brazil’s best night-spots. Starting

at the bohemian bars of Botafogo, line your stomach with flavourful finger foods such as bolinho de feijoada (bean-stew fritters) or mandioca frita (fried cassava wedges). Then hit Arcos da Lapa, the famous aqueduct that marks the centre of Rio’s craziest nightlife and includes pop-up caipirinha stalls always ready to feed your thirst.

Finally, when you’re ready to move, stroll along to Rio Scenarium, a polished threestorey nightspot that includes a restaurant, live music and a western-style club. On the dance-floor, you almost certainly won’t outlast the cariocas, who all appear gold medalists in endurance, but they will appreciate the effort. And that, after all, is the true spirit of the Olympics.

What: Worlds Of Adventure Where: Sheikh Mohammed Bin Zayed Road When: August 15 After months of anticipation IMG Worlds Of Adventure is opening its gates on August 15. Dubai never does anything by halves and this park is no exception: spread over 1.5 million square feet, this is going to be the world’s largest theme park.

Tickets have been on sale for a few months, with thrill-seekers rushing to get a first peak at the impressive rides. The massive temperature-controlled complex is made of four main zones, and the Marvel Zone is drumming up the most excitement. Resembling New York streets, it will feature Hulk Epsilon Base 3D, a 100-seater motion simulator that propels people through their own Hulk battle, and a 400-metre spinning coaster Spider-Man Doc Ock’s Revenge.

The Cartoon Network Zone will have rides suited to smaller thrill-seekers, such as The Powerpuff Girls carousel, while the IMG Boulevard will be home to street performers, stage shows, restaurants and shopping.

Big coaster fans should head to the dino-themed Lost Valley Zone and get in line for The Velociraptor. The epic 1.1-km-long rollercoaster launches its victims outside into the Dubai desert and back.

After all that, fortunately there are plenty of cafes and restaurants to refuel, including a fine-dining spot inside the 10-storey Stark Tower in the Marvel Zone.

GETTING AROUND So you’ve arrived in Dubai, but what next? Here are the best ways to get around the city

TAXI All terminals at Dubai International (DXB) and Dubai World Central (DWC) have their own official 24/7 taxi rank. Your taxi metre will begin at Dhs25 (Dhs10 anywhere else in the city) and has a rate of Dhs1.92 per kilometre.

Expect to pay Dhs60 from DXB to Downtown and Dhs110 to Dubai Marina. The pink-topped taxis have female drivers and are for women and families.

TRAM The tram starts near the Palm Jumeirah, travels down Al Sufouh Road past Media City and into the marina, where it loops around close to the beach at JBR.

METRO The Dubai Metro is clean, air-conditioned and linked directly to Terminal 1 and 3 with clear signposts. The trains run roughly every 10 minutes from 5.50am (10am on Friday) to midnight (1am on Thursday and Friday).

You can buy your ticket at the station and the price will vary depending on how many zones you cross. Alternatively, buy a Dhs20 Nol card and top it up as you go.

For Downtown and Dubai Marina head to the platform for UAE Exchange at DXB. From DWC the nearest station is Ibn Battuta Mall, which can be reached by bus or taxi.

WATER TAXI ABRA Before the first bridges were built in the 1960s, traditional abra boats were the most efficient way to cross Dubai Creek. At just Dhs1 per trip, it’s a fantastic way to see the city, as well as cross from Bur Dubai’s Textile Souk to the Spice Souk and Gold Souk in Deira.

Skip the traffic and take to the sea by hopping on a water taxi from one of the many stations along the coast, from Jebel Ali Golf Resort to Jumeirah Beach Hotel and Al Mamzar.

From Dubai Marina Mall to the Waldorf Astoria on the Palm Jumeirah, expect to pay approximately Dhs195. They’re available throughout the day and can be booked online in advance.

Hangout@DXB campaign welcomes millions of passengers Dubai International (DXB) kicked off its annual Hangout@DXB campaign as it welcomed nearly two million passengers over just two weekends in June and July.

With schools breaking up for summer, the Eid Al Fitr break and summer holidays beginning, the team at Dubai Airports prepared for an anticipated 900,000 people over June 30 and July 7 weekends.

“Nearly a quarter of a million passengers will be passing through our facility every day during the two weekends,” said Anita Mehra, Dubai Airports Senior Vice President of Communications and Reputation, speaking in June.

“We want to make sure that our customers can make the most of the wide range of food, spa and relaxation, shopping choices available at DXB, and have a comfortable and memorable start to their vacation.”

The second annual Hangout@DXB was split into two parts: firstly, there were handy tips to help passengers get through the airport smoothly, such as advising them to arrive three hours early and double check their airport and terminal before setting off.

There was also a series of exciting events and that were really worth arriving early for, featuring restaurant and shop promotions, relaxing treatments and fun and games, such as the ‘Find Pedro live in the atrium’ and ‘treat and tweet’ competitions in the new Concourse D. The Eid Al Fitr celebrations also featured a range of live performances, as part of Dubai Airports’ year-round #musicDXB initiative, with support from Red Bull and The Fridge.

Performers included chart-topping Emirati singer Omar Al Marzooqi in Concourse D, as well as a number of pop-up music and entertainment shows.

DXB wins best airport award Dubai International (DXB) was named the Best Airport in the Middle East at the Asian Freight, Logistics and Supply Chain Awards (AFLAS) held in Shanghai in June.

Organised by Asia Cargo News, the awards recognise leading air and shipping lines service providers, air and sea ports, logistics and other industry professionals.

“We are very pleased to have been chosen as the best airport in the region, particularly because the award is given based on the choice of thousands of readers, many of whom have experienced the state of the art facilities, service quality and efficiency of Dubai International,” said Anita Mehra, Dubai Airports Senior Vice President of Communications and Reputation.

The nominations and winners are voted on by more than 15,000 readers and e-news subscribers of the publication.

DXB is currently the second busiest airport globally for international air freight volumes having handled 2.5 million tonnes in 2015.

DXB… taking a view from space Dubai Airports rate of growth is certainly something special, but who would have thought you could see it from space? As you can see, it makes quite a sight.

Taken by a Dubai satellite and provided by the Mohammed Bin Rashid Space Centre (MBRSC), the view is even more impressive with the addition of the brand new Concourse D. The major expansion and facility has boosted DXB’s capacity to 90 million passengers per year.

Dubai Airports has announced plans to increase the airport’s annual capacity to 118 million passengers by 2023 without building any additional infrastructure.

The recently revealed new programmes, DXB Plus, will boost flow and enhance services through improved design, customer services and smart technology.

Dubai Duty Free Irish Derby ends up in a two-horse race The ninth annual Dubai Duty Free Irish Derby was won by Harzand in a tense race against a determined Idaho.

Held at The Curragh Racecourse at Co Kildare, Ireland, the final race saw Harzand, trained by Dermot Weld and ridden by Pat Smullen, outgun the fast finishing horse Idaho, (who was ridden by Ryan Moore), in front of a packed audience of nearly 18,500.

The winning horse is owned by His Highness Aga Khan IV and has joined the elite band of horses to have completed the English/Irish double.

A delighted Weld said, “I knew my horse had improved physically, but it was great to see two fine jockeys Pat Smullen and Ryan Moore fighting all the way to the finish line.

Dubai’s relationship with gold is a long-standing one, and as much as people visit the city for the stunning beaches and amazing attractions, the gold market at Dubai Duty Free and in the city is thriving

Gold will always be seen as an ideal investment compared. There are many features unique to the metal, like its liquidity, movability and resistance to inflation. More importantly, the ability to invest small amounts in gold makes it affordable to everybody. Here’s what you should know: 24K gold: When we say 24K gold, we mean that all 24 parts are just pure gold without traces of any other metal(s). It is 99.9 per cent pure.

22K gold: This means that 22 parts of the jewellery is gold and the balance some other metal(s). This is equal to 91.6 per cent gold plus 8.3 per cent of some other alloy.

18K gold: This suggests that 18 parts of the jewellery is gold and the balance some other metal. This is equal to 75 per cent of gold plus 25 per cent of some other metal alloy.

We can state that 24K is the softest and 10K the hardest, because 10K would have 41.6 per cent gold and the balance would be other metals that are mostly harder than gold.

Dubai’s gold market Although the UAE itself is only 44 years old, the city as a gold trading port goes back at least another 30 years, to the 1940s, and a time when traders from India and Iran would pitch stalls in the area, making Deira a focal point on international gold trading routes.

If you’re travelling out of the airport and into the city, you should head for Dubai Gold Souk in Deira. Amongst the warren of traditional Arabic markets you’ll find everything from perfume to rich spices.

and away the largest souk of the lot.

If you’re heading towards the more contemporary side of the Dubai, then the Gold And Diamond Park should be your destination. After that you can jump on the metro and head to a nearby mall or park.

Gold at Dubai Duty Free Gold has been an integral part of Dubai Duty Free’s offer since the start in December 1983. Executive Vice Chairman Colm McLoughlin still remembers having to cross the creek in an abra with a case of cash to buy from local traders at the Gold Souk in order for Dubai Duty Free to have some to sell.

Thankfully, the process has moved on since then, but the ordering of gold is still done on a weekly basis by the Purchasing Department at the same Gold Souk. Every week sees an average of 20kg of gold, of mixed varieties, bought. This can value up to US$1million.

Products are vast in order to accommodate all nationalities as customer demands vary substantially by country.

By far the biggest customers come from the Sub Continent and the Middle East for 22kt and above who value it mainly for weddings and gifts. The Chinese market buys a lot of gold bars for investments, whereas most Western nationalities buy for themselves for simple jewellery and mainly 18kt.

The gold sales at Dubai Duty Free in 2016 have been staggering. The fist six months of the year, alone, has seen 1.5 tonnes of gold sold. And a comparison between 1983 and now? Well, in that first year gold sales were at US$2.2million and 2015, a staggering US$152 million.

While the Edinburgh Fringe Festival might cover as much of the arts as is humanly possible in a three-week period, it’s undoubtedly the comedy that enjoys unofficial top billing.

The festival you’ll see this month has certainly come a long way from the inaugural event in 1947 – eight theatre companies turned up. It’s now the city’s cultural highlight of the year... every year.

If you’re performing there it means months – if not a whole year – of anxiety and nervous excitement. It also means potential financial ruin, even for the shows that do well there.

Paul Charlton has won two Fringe First awards and is a veteran of the festival.

“When I first went with my show: The Ginge The Geordie and The Geek we used credit cards and our flat deposits to finance it, and consequently slept on sofas for the next 18 months unable to afford the deposit in another flat – and we’d sold out all 3,500 tickets that year.

“So why do we do it? Well, it’s quite simply the place that every performer should cut their teeth. The atmosphere is crazy and for the first few years, as a performer, it’s brilliant and so exciting.

“For audiences it’s thrilling – so much choice, and so many great shows. With that in mind you should plan your trip

with almost military precision – but then paradoxically, be prepared to throw that plan right out of the window if the flow takes you somewhere else. You’ll have headliners such as Al Murray, but I can tell you with full confidence that you should see James Acaster for the standup comedy – but book a ticket as his shows sell out fast. Then for theatre go and see Vox Motus, they’re inventive and engaging story-tellers.

“But while you should have your favourites lined-up, be prepared to take a punt on an unknown quantity. Somebody with hunger who’s out there for the love of their art, with belief in their ability and the hope that they might just make a name for themselves. That’s what we did and it ultimately resulted in a TV series with the BBC. Without those people taking a chance on our show we really wouldn’t have achieved anything.”
