CAMELBACK MOUNTAIN— These are strenuous

summit hikes, and they forever change hikers’ admiration of the “camel’s back” from anywhere in the Valley. Christine Barone, a former Starbucks executive, became a Scottsdale resident and joined True Food Kitchen as its CEO in 2016. Now a nationwide favorite, the True Food concept was launched 10 years ago in Phoenix, and was “inspired by the philosophy that food should make you feel better, not worse.” It was created by chefs, visionary restaurateurs, and Dr. Andrew Weil, a renowned doctor of integrative medicine.

What is the appeal of True Food Kitchen?

What is Dr. Andrew Weil’s involvement in the restaurant?

Dr. Weil is still actively involved. His main motivation in creating it was to show people that there’s no opposition between food that tastes good and food that’s good for you. He continues to seek out new nutrient-dense ingredients and meets regularly with our culinary team to share his insight and feedback on our seasonallyrotating menu.

What are some of your personal menu favorites?

In addition to our new seasonal favorites, I love the variety of our menu. Some of my current favorites are the Edamame Dumplings, Ancient Grains Bowl, and our Sunrise Bowl is one of my brunch favorites.

The restaurant recently celebrated its 10-year anniversary! Will any of the original menu items be brought back?

Yes, we just celebrated our 10-year anniversary this fall, and in honor of that milestone, we hosted a community dinner featuring menu items from the past decade. We noted a few guest favorites and will be showcasing a few “throwback” dishes this winter. Our fans of the Onion Tart will be very happy… hint, hint!

In how many states can you now find True Food Kitchen?

[There are] 25 restaurants in 11 states throughout the U.S.... and growing!

You travel to other markets often. Any travel tips you can share with our readers?

I do travel a lot for business and have many tips that help me.

I always bring my own hair dryer, I take direct flights whenever possible, I have my flu shot, I have a moisturizer that I love with sunscreen, and I always have a bag packed with essentials for lastminute travel so that I can pack in less than 10 minutes the morning I fly out. I also love walking to learn a new market and always bring a pair of comfortable shoes that work for a business meeting or a five-mile walk through a new city.
