SIP & SAVOR In other parts of the country, it’s known as Happy Hour. However, in Hawai‘i, we call it Pau Hana, a dedicated time for special drinks and appetizers. At Chef Chai at Pacifica, the gourmet menu includes fresh ahi tartar in mini waffle cones and fresh oysters served with a lemongrass-and-garlic mignonette.

Growing up in Mexico City, Arturo Silva still remembers the street food and its simplicity.

When applied to chicken wings (pictured left), the result is a tasty bocadillo (snack). Silva’s pork belly flautas and goat cheese quesadilla are two other noteworthy dishes on the happy hour menu, which also includes specials on wines, house margarita and draft beer.
