F

irst brought to the islands by missionaries and traders in the late 19th century, quilting in Hawaii adapted to the physical and cultural environment of the Islands and became a distinctive art form. Author Robert Shaw describes Hawaiian quilts as “ambassadors of the islands, created out of love for these unique lands and between the people who live on them.” Hawaiian quilts feature large symmetrical patterns, which are often inspired by such plant leaves as ‘ulu (breadfruit), with shapes repeated proportionately to create the intricate design effect of the cut-out classroom snowflake. here Seaside Avenue intersects with Kalākaua Avenue lies an oasis of water features, island flora and history reminiscent of what kama‘āina –locals – remember as the “old Waikīkī.” Those memories also belong to the silver generation of regularly returning visitors who – like kama‘āina – surfed, played and relaxed in Waikīkī where Le‘ahi (Diamond Head) continues to beckon welcome and coconut palms at Helumoa bend in the moani‘alalīpoa breeze.

Music that soothes the mind and soul can be described as nahenahe — soft and sweet. Add to that the graceful yet powerful dance of these islands — hula — and you have an infectious potion that is paramount to Hawaiians and a potent lure drawing millions from across the globe to our island home. The Royal Grove at Royal Hawaiian Center showcases some of the best Hawaiian music and hula anywhere. As the kupa‘āina or resident host, we offer a blend of traditional Hawaiian and island contemporary that completely satisfies the local palate. Among the dozens of local musicians, recording artists and performers who grace the Grove stage are Sean Na‘auao, Ku‘uipo Kumukahi, Mailani Maka‘ina‘i, Kawika Trask, Nanea and more. Mele or songs you hear in the Grove tell stories that range from tributes to our ali‘i or nobility to love songs that bring specific places to mind.

Traditional hula, known as hula kahiko, is our Saturday showcase, during which chanting and drumming are accompanied by powerful movement. Contrary to popular belief, it is the poetic text or mele (song or chant) that tells the story in hula — not the hands. Hand gestures complement the text but can be vague yielding to the songs and chants wherein lie the mo‘olelo or stories. By the dawn of the 20th century, most Hawaiians were disenfranchised from their ancestral lands, native language and heritage. English lyrics and lilting melodies in an era of waning Hawaiian language prominence promulgated a genre of island music we call “hapa haole” meaning half foreign. You’ll recognize this genre in such visitor favorites as “Little Grass Shack,” “Tiny Bubbles,” and “Pearly Shells.”

Healing hands mimic the flow of the ocean, the downpour of rain and the intensity of an earthquake. Hawaiian lomilomi massage applies pressure to the recipient by leaning into them, using tools of the body including lima (hands and arms), ku‘eku‘e lima (elbows) and even wāwae (feet). Spirituality defines many of our cultural practices, especially in the area of healing arts, the most well-known of which is lomilomi. It has been practiced regularly for generations by all members of the ‘ohana while more intense, specific treatments are left to trained experts. Like other healing arts, the skills and practices are passed from masters to apprentices through formal training and ceremonies. Today, lomilomi Hawaiian massage enjoys international visibility with such other styles as Japanese shiatsu and Swedish massage. Heart and Soul of Hawai‘i Sacred expression through dance By Allan Seiden

C

enturies ago when gods and people shared these Islands, and time was measured by the waxing and waning of the moon, the hula was born. The first dances were linked to Pele, goddess of volcanic fires, who made the request to her younger sister, Hi‘iaka. The Pele cycle provided the hula with a repertoire that was both religious and entertaining. Rhythmic and poetic chants (mele) combined with disciplined motion to tell stories of love and passion, anger and revenge, and loyalty and betrayal, all part of Pele’s tempestuous nature. Hula’s evolution as a storytelling art has evolved and prospered over the centuries, securing a powerful place in contemporary Hawaiian culture. Today, hundreds of halau (hula schools) and thousands of dancers, including many far from Hawaiian shores, dance hula, learning not only the movements but also its spiritual and aesthetic message. rowing up, Jake Shimabukuro remembers there weren’t a lot of opportunities to learn how to play the ‘ukulele. “It was either Roy Sakuma’s school or private lessons,” says the ‘ukulele virtuoso. “So, I think it’s fantastic that the Royal Hawaiian Center now offers free lessons. The more exposure the instrument gets, the more people will be encouraged and inspired to pick up the ‘ukulele.” Since his mom put an ‘ukulele in his hands at the age of 4, Shimabukuro has honed his skills, earning local, national and international fame. “I think I’ve just scratched the tip of the surface with the ‘ukulele,” he says. “It has tons of room to grow and so much potential.” Resembling a miniature guitar, the ‘ukulele comes in four-, six- and eight-string varieties and is fairly simple to play at a basic level of strumming and chording, and can be lots of fun to learn. “Everyone can learn how to play,” Shimabukuro says. “And they can take home the experience and continue to practice.” Classes at Royal Hawaiian Center are geared towards first-time learners (see page 8). The Art of

Suntory Chefs put on a quiet display of culinary prowess in three distinct dining rooms. By Simplicio Paragas

I

’ve long admired Restaurant Suntory chefs for their ability to cook for up to 12 guests at a single time. And they do so with little fanfare. They don’t twirl their knives or spatulas. They don’t make volcanic onions erupt. And they certainly don’t juggle. All eyes and attention are on where they belong: the food. Long before “organic” became fashionable, Suntory was already using organic tofu, organic eggs, organic soy sauce and free-range chicken. The unwillingness to compromise on the quality of the ingredients is paramount, according to general manager Nobuyuki Aoyama. “That’s what makes us different from other teppanyaki-type places,” Aoyama says. “The ingredients that we use are better than most others. We’re more of an upscale teppanyaki place.” Indeed the room itself exudes a simple elegance framed by large windows that allow natural light in, with passers-by pressing their noses up against the glass to see chefs in action. The restaurant comprises three distinct dining areas: the teppanyaki room, the sushi bar and two washoku (refers to any type of Japanese cooking) sections, where guests can also order a teppanyaki meal, without having to sit in front of the grill. “It wasn’t so long ago when we would force people to sit at the teppanyaki tables if they wanted teppanyaki; this is no longer the case,” Aoyama asserts. “They can now order

teppanyaki if they’re sitting at the bar, if they want.” At the sushi bar, tradition trumps contemporary, and presentation is straightforward and not seppuku on a plate. Chefs pride themselves in staying true to the essence of Japanese cuisine, which demands flavors be subtle and fresh. An order of petit sashimi ($16) yields a briny tasting of salmon, ahi, ika and snapper, each sliced thickly — and not paper thin like at some restaurants. In the teppanyaki section, guests can order the prized Wagyu beef — when available — or a cut of Certified Black Angus sirloin or filet mignon. Be warned that the Wagyu, does come with a premium price tag. So is it worth it? Sure, if you have $68 to spare for a 4-ounce cut or $92 for an 8-ounce portion; otherwise, stick to the relatively less expensive Black Angus sirloin ($35/$42), which in itself is well-marbled and tender. Priced in between, the melt-inyour-mouth Chateaubriand ($45/$55) is a thick tenderloin cut that’s rarely available at other teppan tables. While servers provide guests with two dipping sauces and a small pinch of sea salt on the side, none are necessary. The flavor of the meat and the red Alaea salt already sprinkled on to the steaks on the teppan grill by chefs are more than sufficient. Slivers of crispy garlic further enhance the flavor, rendering the sauces superfluous. “I don’t think any other place does this,” says chef Peter Roy a l H awa i i a n c e n t e r

One of the more popular entrees is the budget-friendly “Special Lunch” ($13.50), which includes two pieces of Cali-

Ingredients ½ ripened avocado 2 ounces salmon 1 teaspoon ikura (salmon roe) 1/4 package of shimeji mushrooms 1/8 lemon Green onion to garnish

1. Cut avocado in half and scoop the meat out with a large spoon. Cut the avocado in 1/4-inch cubes. (Save the avocado shell.) 2. Dice the salmon in 1/2-inch pieces. 3. Cut shimeji mushrooms in half. 4. Coat the bottom of a saute pan with a little oil and butter; add salmon, avocado and mushrooms, and stir fry for a few minutes. Season with salt and pepper to taste. 5. Remove from heat and place in the avocado shell; top with the spicy mayonnaise sauce. 6. Pre-heat oven to 350 F and bake until lightly browned. 7. Garnish with ikura and chopped green onions. 8. Squeeze lemon juice over top before serving.

As if P.F. Chang’s extensive “dynasty” list of Chinese cuisine wasn’t enough, its happy hour (from 4 to 6 p.m.) menu is equally as extensive. Classic Mai Tai (Makes 1 drink)

Ingredients 1 oz. light rum 1 oz. gold rum 1/2 oz. orange Curacao liqueur 1/2 oz. orgeat syrup* 1/2 oz. lime juice 2 cups ice 1 fluid ounce dark rum 1 wedge fresh pineapple 1 maraschino cherry

Directions Fill an old-fashioned glass with 1 cup crushed ice. Set aside in the freezer. Combine light rum, gold rum, orange Curacao, orgeat and lime juice in a cocktail shaker. Add 1 cup ice, cover and shake until chilled. Strain into the chilled old-fashioned glass. Top with dark rum. Garnish with a wedge of pineapple and a maraschino cherry. Add an umbrella for a tropical touch.
