3) This is one Sailfish that won't be tagged and released, he's going to be eaten and digested by a 700 pound Mako Shark! 4) Codfish soon to become Cod Fillets on the way home from a successful day.

Fishing Montauk with Capt. Skip This winter is a far cry from last winter, but with these colder temperatures comes colder water, and that is great for Codfishing! Boats going out in early January found decent action with the Cod and were not swarmed by hoards of Dogfish like last year. The size has varied with some bigger Cod coming over the rails. Now we are well into February and the Dogfish have moved out, making it a lot easier targeting the Cod. I teamed up with my colleague Michael Potts, mating on his boat the Bluefin IV. We have been able to get the 10 Cod per person limit on a fairly consistent basis. The Party boats have been consistent as well. The only glitch is windy conditions and blizzards, so when the weather window opens you have to be ready to go. Going into March the air temperature will start warming making it a lot more comfortable, while the water temperature stays cold. Major Shark Talk in February by Capt. Michael Potts No, no one has caught sharks locally, but with an overall concern over a decreasing shark population and the threat of tighter restrictions on what can be brought back to the dock, a tournament is in the formative stages in which all sharks would be released. Everything described here is tentative, so there will be changes after press time. The proposed title is "Shark's Eye", Montauk's first Satellite - Tag Shark Tournament. It is hoped that during the Tournament, three tags with satellite tracking capability will be placed on three large sharks. The sharks might even be given the name of the angler who caught and released them! Anyone will be able view the satellite tagged shark's travels (through the "Shark's Eye") on a website such as "Ocearch Global Shark Tracker." The Tournament dates are July 21 and 22 at the Montauk Marine Basin. Businessmen, environmentalists, and fishermen are all working together to help save sharks and promote fishing. Lot's of rules and non-cash prizes are being worked on. One rule would be the mandatory use of circle hooks (see picture). It has been scientifically proven that circle hooks are much less injurious to fish than conventional "J" hooks because circle hooks tend to lodge in the corner of the fish's jaw, rather than in its gills or deep in its throat. Then because of the long stretch of winter weather, the Seabass left local waters, but so did the pesky Dogfish, which were a big factor in January. They are sparce now. Hopefully the party boats - Viking Fleet and Miss Montauk, and the charter boats Blue Fin IV, Capt. Mark, Sea Wife IV, Elizabeth II, and Susie E will be able to bring their customers to Cod until Fluke and Striped Bass arrive in late April or early May. ~ Capt. Mike Potts

was the family’s first generation to move to Montauk, so the town and area were very familiar to the Perna family when they moved here, too. Those that like camping, still make reservations at their favorite campsites or fishing boats and other favorite outdoor pastimes.” In that respect, as everyone knows, the beauty and allure of Montauk never changes for both year round and seasonal residents and the many visitors that come to enjoy this beautiful, seaside village. Before ending our conversation Jack Perna was asked if he had any trepidation about the weekend events to honor him, especially the luncheon which often turns into a “roast” of the honoree. Perna responded quickly with an easy laugh, “Being a Superintendent of a School prepares you for anything, so I am ready”! He did however add that even after the busy events planned all weekend, you will find me at my desk first thing Monday morning! The Montauk Sun can easily predict a wonderful weekend for Jack Perna, with all the honors and accolades he deserves for the fine service and dedication he has given to educating the children that attend the Montauk School. When asked if the students at his school had anything special planned to join in the parade and honor their principal, Mr. Perna replied, “they have something up their sleeves, but it is suppose to be a secret and surprise for me”. Along with Jack Perna, all of us will just have to wait and see what the students and the Friends of Erin have planned that weekend! The Montauk Sun joins with the community, his former and current students and all that know Mr. Perna in saying Congratulations on this honor of being Montauk’s 51st Grand Marshall!

Montauk Friends of Erin The Montauk Friends of Erin was founded in 1961 as a civic and social association. Their main purpose was to organize and raise funds for a St. Patrick's Day Parade that would bring the dreary winter to an end, and welcome spring with a joyous and festive Irish celebration. The original 12 members would be very happy to see how their idea has prospered over the 45 plus years. It has been estimated that 40,000 spectators and supporters attend this annual event. The Parade is still the main goal, and the Friends have expanded their fundraising to meet the ever-escalating cost of putting on such an exciting event. They have also broadened their purpose to include scholarships for outstanding students along with sponsoring little league activities for boys and girls and they sponsor the annual holiday tree lighting with a visit by Santa for young and old. This Parade is a community effort and could not be as successful without the support of the Town of East Hampton, Town Police, Montauk Fire Department, Chamber of Commerce and the entire business community along with all the volunteers who join in to complete the team. This is a fun and easy Easter treat for all! Happy hunting! 1/2 cup corn syrup 1/4 cup Earth Balance margarine 3 cups powdered sugar 2 tsp. vanilla extract 1/4 tsp. salt Yellow and red food coloring 24oz. bag semi-sweet chocolate chips 1 Tbsp. coconut oil Cream together the corn syrup and margarine until light and fluffy with an electric beater. Add the powdered sugar. Mix in the vanilla extract and salt. The texture should be as thick as possible while still being pourable. Separate into two containers, and in one, add a few drops yellow food coloring and just one drop of red food coloring. Place both containers in freezer for 20 minutes. Grease chocolate egg molds or a mini muffin pan and spoon a heaping tablespoon of the white mixture into the cups. Add a smaller spoonful (the yolk) of the yellow on top of each egg. Cover and let firm up in freezer for 30 minutes. Meanwhile, heat the chocolate and coconut oil until melted. Once the mix in freezer is firm, remove an "egg" and form it into an egg shape before quickly dipping it in the melted chocolate. Place on a sheet of wax paper to dry. If the "eggs" start to warm up, place them back in the freezer to firm up. You may need to dip each egg a few times to form a thick coating. Enjoy...

After a snow covered winter peppered with weekly storms, welcoming the spring was cause for celebration. And what better way to do so than a weekend in St. Bart’s? The Art of Love...with Lucia Hi Lucia, How do I let my boyfriend know my needs are not getting met with out seeming needy? He says he loves me, but he doesn't show it in a way that I feel loved. How do I approach this, without accusing him of not loving me? I know he does, but I need him to show it, to compliment me or make me feel special to him. ~ Needy Hi Needy, We all have what most people call “needs” in a relationship. This is a misnomer, since the only things we “need” in life are air, water, sleep and food. What you call needs, I call desires. You desire that your boyfriend act a certain way in order for you to feel loved. Everyone has different ways of expressing their affection, depending on how they were raised. Just because he doesn’t express it the way YOU would like it expressed, doesn’t mean he doesn’t love you. This is more about you and your own insecurities. The factthat he is willing to verbalize his affection is a good thing. I would suggest that you give what you would like in return. This means, YOU compliment him, YOU make him feel special. If he really cares for you, he will reciprocate. If not, and you’ve spoken to him about your “needs” and things still don’t change, then you may have to find someone else that expresses himself in a way you’re more comfortable with. __________________________________________________________ Hi Lucia, How much time after beginning to date someone should a girl wait to have 'the talk'? Kiwanis Club of East End Corner Kiwanis is an international organization that serves the children of the world. In our local club we dedicate all of our fundraising to the local community we serve Wainscott to Montauk! Our community is very important to us. ...Out Like A Lamb with Chef Chris Kozlowski

Spring Marches on, bringing the triumphant return of the Montauk Sun, the Music Festival, and the Parade. Cold and dreary at times, these last weeks of winter beg for excuses to turn on the oven and hang in the kitchen. Pick one of those meals our Moms heated the whole house with. Shepherds’ pie is a dish that can be as difficult or as easy as you wish. Sometimes best composed entirely of leftovers, today

we present one drawn up from scratch. Do not limit your pie to the ingredients here, add your favorites – corn, lima beans … Chopmeat, also, can be used in place of the stewmeat. It will be necessary to add some wine or stock to the chopmeat to make the gravy. While we photograph the dish with wine, this is great served with iced cold beer. Good Stuff!

Stewed Lamb Shepherds’ Pie

1 pound lamb shoulder steaks or other stewmeat 1 large onion, coarse chopped 3 cloves garlic, chopped 3 stalks celery, coarse chopped 2 carrots, coarse chopped 1 cup red wine or hearty beer 3 cups stock (chicken, beef, lamb, no matter) 2 bay leaves 2 cups shelled green peas (frozen will work) 3 pounds red new potatoes 1 stick butter, softened

Brown the lamb well in a small amount of oil in a high sided pan or pot with a cover. Remove and add vegetables to the hot oil. Cook well, add wine, bring to a boil and reduce shortly. Add stock, bring to a boil and reduce heat. Return stewmeat to the pot, add bay leaves, cover and place in a 300 degree oven for 2-3 hours, until the meat is quite tender. Remove from oven, remove meat from the stew and separate away the bones. Strain the liquid and return to the pot. Skim off the fat and return meat to the pot. Thicken with a slurry of water and flour until quite thick. Add the peas and reserve. While the stew cooks make the mashed potato crust. Boil 3 pounds red new potatoes until tender. Strain and mash. Season well with salt, pepper, and 1 stick of butter. Allow to cool somewhat before working half of the potatoes into the bottom of a large nonstick pan. Be sure to work well up the sides and to try to keep a uniform thickness. Add the stew, also easier to work with if slightly cooled. Spread the remainder of the potatoes over the top. Bake at 375 degrees for 30 – 45 minutes until golden brown and quite hot in the middle. Serve soon and often. May 14th-17th 2013 Once again The Montauk Sun is presenting an amazing weekend of new, original music throughout Montauk. There will be over 110 shows in the restaurants and bars throughout the town, and on the village green in the center of town. It’s all free and unimaginably fun!! Last year we had bands from all over the tri-state area, as well as many local bands, and some from as far away as Georgia, Florida and California. They entertained us with a wide variety of genre and all who listened experienced the music of up and coming, energetic, friendly, and talented performers. The weather was great, the streets were full of music and lovers of music; it was a weekend of fun for families and friends from far and near. This year’s event is quickly shaping up to be another wonderful experience for all involved. We are actively working on acquiring sponsors, performers, and schedules. Some new additions for this year will include building upon last year’s workshops for performers, as well as instrumental workshops for children and a SHOWCASE OF YOUTH Talent on The Gosman’s Stage on Friday afternoon. In addition, we’re thrilled to introduce the first annual “Montauk Music Festival Scholarship”. Working along with the Kiwanis Club of East Hampton, we will select a local student that has performing abilities and wants to pursue a musical college education. The scholarship will be for $1000; $500 from the Kiwanis Club, and $500 from the Montauk Music Festival. During the next couple of years Zebra played opener for Aerosmith, Journey, ZZ Top, Loverboy, Cheap Trick, Sammy Hagar and REO Speedwagon. After learning the lyrics to Steven's songs and adding her passion and caribbean fusion to each melody, the band was in the merge of having it's new identity. Then Jorge, an experienced drummer with lots of ideas and profesionalism comes to a rehearsal with the band realizing he had finally found his musical home. Luis, a talented pianist joined with his keyboard to perfectly fit in the band. Luis is capable of transforming a song into a pattern of different sounds and effects. Another mutual friend, Paco, joined the band one night for their usual rehearsal, finding out to his surprise that his old pals from school and soccer games (Jorge and Luis) were playing with K-O-S, becoming then the band's bassist. Last, but not least Aquiles, a veteran of the percussion, caught such an incredible enthusiasm after rehearsing with the band the first time that he accepted Steven's invitation to play with K-O-S. La Fiesta 98.5, a local radio station, hosted a talent show where K-O-S was appointed to be #1 in performance. La Fiesta aired the band's first hit "FE" which they also recorded at the station's recording studio, for more than 6 months in their morning show as per the listener's request. The band has also performed at a few local popular venues like the Bay Shore YMCA Boulton Theatre, The Stephen Talkhouse in Amagansett, The Memory Motel and The Wash Out in Montauk and The Guild Hall in East Hampton, NY.

Hi Ho Phil Francis by Dr. Tony Knott

It’s the St. Patrick’s Day parade this month with kilts and tam o shanters once again reminding us of family “from the old country.” Hi Ho Phil Francis, my great grandfather, was born in Danville, Pennsylvania and had a total of a few months schooling. He could, however, arise from a chair at the age of ninety using no hands. My mother always told us, “He would get up from the chair like this!” And of course we’d all watch her demonstrate how he came up out of his chair. “No hands!” We all nodded. “He said, ‘it’s not necessary to use your hands!’” My great grandfather wrote an autobiography Seventy Years in the Coal Mines, copies of which were distributed only among his children. Of his younger years, he wrote: “Without the counsel of a father or the gentle hand of a mother to guide me, I was growing up wild. I was left-handed and had the habit of stone throwing. This got me in trouble with other boys; especially Irish Catholic boys, who would make fun of me and call me names which caused me to run them with stones which I always kept handy about me. Fighting was common in those days with men and boys and also much drinking. It was natural, with such influences around me to grow up wild. I took the stand that I must fight my way through the world, if I expected to live.” Much has changed since my great grandfather’s time. We generally don’t have to fight for our lives like he had to. Most of us cousins completed our education, obtained salaried jobs and now drive our cars back and forth to work. The computer has replaced Hi Ho’s pick and shovel. Now I spend an inordinate amount of time discussing the meaning of cholesterol blood test values with my patients, reading their results out loud off our electronic medical record computer screen. And I need glasses to see the numbers. My great grandfather knew nothing of LDLs and HDLs but he knew at age ninety that you don’t use your hands when rising from a chair. That’s not to say we need to make things harder for ourselves but to realize inactivity leads to ill health. There was a certain attitude of my uncles and aunts concerning the tolerance of pain and handling of illness, for instance, that was passed down through the generations since Hi Ho. “Just don’t think about it,” my mother used to tell me. My grandmother poured camphor over our fresh cuts, we’d wince and run back outside hopping up and down then limping around for a few weeks until it healed. Lacerations scabbed over until you got a new one. Wounds heal by themselves no matter what you do. As a doctor, I have come to acknowledge and respect this principle. I do is the same as what my grandmother did although I don’t force feed my patients that tablespoon of bourbon with honey and milk of magnesia. I did a rotation at a rural clinic near Lancaster, Pennsylvania and recall an older Amish woman bringing her grandson in “just to get a tetanus shot, nothing else.” At that time, the Amish didn’t accept the vaccination of their children but there had been two cases of toddlers dying of tetanus in the northern part of the county that year and word got around. This little boy stepped on a nail a week previously. The nail went right all the way through his foot and the grandmother applied an Amish poultice and drawing salve. When I exam-

ined his foot, there was no sign of infection and the wound was almost completely healed. In 1900, the leading cause of death in this country was tuberculosis followed by pneumonia then heart disease then diarrhea, if you can imagine that. Now, the number one cause is heart disease followed by cancer.

Although cancer is brought on by a combination of genetic and environmental factors, the kind of heart disease we are dying from now can be partly prevented by arising out of your chair with no hands if you know what I mean.

The center is staffed by trained and knowledgeable personnel who also lead Group Exercise Classes which are open to the general public. Having a Fitness Staff member on hand was particular helpful I found during the early days of my membership. Some of the machines were unfamiliar to me and it was a comfort to know that there was someone to ask on the proper way to use a particular piece of equipment. There were also a few times I may have been doing something incorrectly and the staff member there came over to assist in the proper technique, so I would be sure not to injure a muscle doing something the wrong way. Of course, I would be remiss if I did not mention the luxurious Roman Baths, sauna and steam room that are part of the Spa experience at Gurney’s. With a Gurney’s Spa and Fitness membership, all of these facilities are available to their guests. Then you have no more excuses not to keep in shape. By avoiding being sedentary over the winter months, when the warm weather arrives you will be more than ready to show your toned body and flaunt how great you look in your summer wardrobe! As a side note, if you want to stop for lunch after your fitness routine, be sure to stop in to see about Gurney’s Healthy Menu choices. The selections are absolutely delectable and you will not have to worry about undoing all the good you just did burning calories during your workout. Hi Amber, It’s all about control. He wants to have the control. If a guy asks you to call him, it’s because he has no intention of calling you and doesn’t want to be asked “Why didn’t you call?” By putting the ball in your court by asking you to call, you are put in a position of not being able to ask why he didn’t call, because he had told you to call. See how sneaky this is? If a guy asks you to call him, he is probably not that interested, otherwise, he would take charge and call! This is why he doesn’t answer when you call. He wants to keep you at the periphery of his life, so that you’re there when he needs you, but he doesn’t want you to be involved in his everyday life. This explains why he gets upset when you don’t call. He wants to know you’ll be there for his own selfish reasons, and feels he’s loosing his grip on you when you don’t do what he says. It is true that on September 16, 2012 the world reached a new low: The National Snow and Ice Data Center (NSIDC) reported that the extent of sea ice across the Arctic was at its lowest since satellite record-keeping began in 1979. On that date the sea ice reached its summer minimum, 1.32 million square miles, half of what the average size of summer ice was between 1979 and 2000, and almost 20 percent lower than the previous record minimum of 1.61 million square miles set on Sept. 18, 2007. NSIDC added that, despite especially warm conditions in 2007 being much more favorable for sea ice loss than this year, the thinning of sea ice due to climate change has made the ice more vulnerable to breakup and melting. Meanwhile, researchers with the European Space Agency’s CryoSat-2 probe reported in August that beyond the loss of sea-ice extent, the thickness and volume of the ice has also been declining significantly faster than expected. They found just 1,679 cubic miles this past summer as compared to 3,118 cubic miles in the summer of 2004. They anticipate that the Arctic could be ice-free in the summer for a day or more by the end of the decade. The implications of such melting are potentially immense. For starters, wildlife like polar bears, seals and walruses depend on sea ice for their survival; their habitat is literally being pulled out from under them. Polar bears were added to the federal Endangered Species List in 2008 for this very reason in what environmentalists herald as a great victory in that the federal government officially recognized the existence of global warming and would therefore be able to take more decisive action to rein in carbon pollution—of course, that part of the dream has yet to be realized. Perhaps even more alarming is the fact that melting sea ice and accelerating Arctic warming spur changes in the jet stream that increase the frequency of weather extremes like droughts, floods, heat waves and cold spells in the mid-latitude regions of the Northern Hemisphere. The fact that 2012 has been a scorcher all around—July was the hottest month on record, with two-thirds of the U.S. in drought, wildfires running rampant and half the counties in the country designated as federal disaster areas—only makes the connection between carbon pollution and the greenhouse effect all the more apparent. Environmentalists argue that we already have the technology and the legal tools to achieve rapid greenhouse pollution reductions “Full use of all of the Clean Air Act’s successful pollution-reduction programs is our best route to quick reductions in greenhouse gas emissions,” says Shaye Wolf, climate science director at the Center for Biological Diversity’s Climate Law Institute. “The Obama administration, however, has been too slow and timid in using this bedrock law to cut pollution.” Continued on Next Page The Montauk Sun ~ March 2013 ~ 35

The company will never win over vegetarians, who eschew meat for health, animal welfare and even world hunger concerns (we’d feed more people by using the land used to grow animal feed to grow food for people instead), but it has otherwise made some significant strides. The company first came under fire from greens in the 1980s for sourcing beef for its hamburgers from ranches on newly cleared, former rainforest tracts throughout the Amazon basin. In response, the company committed in 1989 to refuse beef sourced from recently deforested rainforest areas. Environmentalists were also on the company’s case about the waste it generates. So in 1990 McDonald’s partnered with the Environmental Defense Fund (EDF) and began phasing out its polystyrene “clamshell� food containers and increasing the recycled content of the other food containers and boxes it uses. EDF and the fast food giant developed a waste reduction plan that eliminated 300 million pounds of packaging, recycled a million tons of corrugated boxes and reduced waste by 30 percent in the decade that followed. More recently, Greenpeace exposed the fact that expanded soy farming in Brazil—which feeds chickens used by McDonald’s and other large food companies—had become a threat to the Amazon rainforest. In response, McDonald’s partnered with Greenpeace to develop a zero deforestation plan for all its products. Likewise, McDonald’s beef purchasing executives have gotten in on things: In November 2010 the company was lead sponsor of the World Wildlife Fund’s first Global Conference on Sustainable Beef, an international meeting of stakeholders in the global beef system convened to discuss how to approach sustainable beef production in socially, environmentally and economically viable ways. Another green highlight for McDonald’s is its commitment to matching 30 percent of the electricity used at its company-owned stores with renewable energy credits from American wind power providers. And several Japanese McDonald’s are participating in an energy-saving campaign employing 13 different green technologies with the goal of reducing greenhouse gas emissions by more than 20 percent overall. Previously, she has spoken about Mendelssohn, Mozart and Chopin. Ms. Spencer’s talk, accompanied by Power-Point slides, will explore Brahm’s life and loves and their relationship to his music. Ms. Spencer will perform a number of Brahms’ composition for solo piano. Her presentation is augmented by impressive performances of Brahms’ works for the voice by Montauk native, Lilah Gosman, soprano and Milos Ripicky, pianist. Ruth Albert Spencer, Adjunct Lecturer, City University of New York, Department of Music, is a graduate of the Mannes College of Music. She did her graduate studies at Queens College (CUNY). Currently she is a member of the Music Department faculties of the City University of New York and the 92nd Street Y. Professor Spencer has given lecture-recitals on the relationship of Chopin and George Sand at numerous colleges, libraries and cultural institutions.
