Initially when we spoke with Dan, he suggested the pappardelle with added scallops. However, the grilled sea scallop dish sounded so delicious that we decided to add grilled shrimp to our pasta instead. The MUSHROOM PAPPARDELLE pre‐pare al dente, is made with a portobello and shiitake nage blended with cream, rosemary and kale, and sprinkled with grated parmesan. The flavor was very clean and mild, and

the addition of the grilled shrimp created a nice way to enjoy a light summer pasta dish. I love scallops, and these did not disappoint. Served on lemon couscous, the beautifully GRILLED SEA SCALLOPS with a fresh lemon vinaigrette and pomegranates, has remarkable flavors and texture. The firm yet buttery scallops, along with the tender and coarse tex‐ture of the couscous makes an ideal combination. While the citrus of the lemon and the sweet/tart addition of the pome‐granates is a quite pleasing compliment to the mild scallop. Dessert was absolutely out of the question for us, but ask your server about the Brownie with vanilla ice cream, Key Lime Pie, and Salted Caramel Cheesecake. However, we decided to enjoy a martini as the evening sky grew dark. Re‐alizing that glass is not a good idea on a beach, we chose to go inside to the bar and join Bishop and Serena for the ACT

OF GRACE – an espresso martini with vodka, espresso, and coffee liqueur, and a Bailys Martini. Both quite delicious and always better in a lovely martini glass‐ which Bishop had prepare with ice to chill the glasses and was waiting for us as we moved inside.

BEACH FIRE: An outdoor fire burning wood materials other than rubbish on a beach where the fuel being burned is not contained in an incinerator, outdoor fireplace, barbecue grill or barbecue pit and has a total fuel area of 30 inches or less in diameter and 24 inches or less in height from natural grade for pleasure, religious, ceremonial, cooking, warmth or similar purposes. All beach fires must comply with the regulations contained in § 141-19. Any beach fire that exceeds the parameters herein or of § 141-19 must comply with § 141-17.

BEACH FIRE REGULATIONS:The following regulations shall apply to all beach fires within the Town of East Hampton:

1. Beach fires shall not be started or maintained less than 50 feet from any beach grass, vegetation, tent, fence, building or permanent structure, nor within 100 feet of any lifeguard stand. Should there not be enough beach to comply with the fifty-foot setback, the location of a beach fire may be reduced to 25 feet from any beach grass, vegetation, tent, fence, building, or permanent structure, but in no instance may a beach fire be located less than 25 feet from any beach grass, vegetation, tent, fence, building, or permanent structure.

2. Beach fires shall only burn whole, natural wood. No chemically treated wood, or painted wood or wood containing nails, nor wood or plastic pallets shall be used.

3. Metal, plastic or glass shall not be placed or thrown into the fire.

4. No beach fire shall be left unattended.

5. A Fire Marshal, Marine Patrol Officer, any person in the Division of Code Enforcement or police officer may require that a beach fire be extinguished when deemed to be dangerous due to wind condition, size or whenever atmospheric or other circumstances present an increased fire hazard that threatens public safety.

6. No beach fire shall be started, kindled or maintained if the prevailing wind velocity exceeds 20 miles per hour. However, the Fire Marshal, Marine Patrol Officer, any person in the Division of Code Enforcement or police officer may exercise discretion in requiring that a fire be extinguished when wind velocity exceeds 10 miles per hour.

7. A two-gallon bucket of water must be kept within 10 feet of the beach fire at all times.

8. No beach fire shall be set, started, kindled or maintained prior to 5:00 p.m. and must be fully extinguished prior to 12:00 midnight.

9. A beach fire must be fully and completely extinguished with water. No burning, smoldering, smoking, hot embers or debris shall be left on the beach. No beach fire shall be buried or extinguished with sand.

10. All fire debris must be removed and disposed of properly and the site must be restored to its natural condition at the conclusion of a beach fire.

11. All beach fires must be fully contained within a metal container.

We each ordered a dish from the Mains, and then Chef Manuela Carbone sent us an extra treat‐ a perfectly Pan‐seared Salmon with crisp skin, perched upon a gen‐tle Beurre Blanc, and garnished with Vendace roe, roasted potatoes, and tender sauteed broccolini. We ca‐sually enjoyed the delicate flavorful salmon entre while sipping glasses of wine: a refreshing Lauverjat Rose San‐cerre from France, a crisp white Jurtschitsch‐Gruner Velt‐liner ‘terrassen” from Austria, and a French lighter bodied style of red, Monardiere Cotes‐du‐Rhone ‘Ca‐lades’.

Cod being one of my favorite fishes, I really enjoy try‐ing different styles of preparation. The elegantly [un‐breaded] Crispy Cod with an adornment of fresh dill, and plated with a creamy egg salad, a side of fresh grated horseradish was by far one of my favorites. Fork tender middle with a gently charred top, it was delicious! Wal‐lenbergare‐can be described as a comfort food, which it is, but it’s also a whole lot more. A ground Veal patty atop

a lovely buttery sauce, nestled with potato pure, lingon‐berries, fresh pickle chips, and sweet peas; quite a uniquely delicious meal. Finally, we had a hard time de‐ciding between the ‐Côte de Boeuf and the Market Fish‐each served with a choice of two sides and designed for two people. The Market Fish was two whole local sea bass, served with a Beurre Blanc, roasted potatoes, kohlrabi coleslaw, green veggies, fresh horseradish and brown butter. Very tempting, but since we had other fish, we decided to go with the steak. [However, we did see it served at our neighboring table, and it came out in a large black skillet, looking and smelling amazing.] Côte de Boeuf consists of a grilled to perfection bone in dry aged ribeye with a side of a delicious bearnaise & red wine sauce. For our two sides, we choose the very tasty par‐mesan and parsley french fries with Bearnaise sauce, and the fresh vegetables; grilled green asparagus, haricot verts, sugar snaps, and lemon. Presentation, aroma, taste and service ‐ top‐notch!

WHAT I LEARNED IN GRADE SCHOOL

Almost nightly we hear news reports about the failing educational system that some states or cities are experiencing. Each time I hear this and the subjects the stu‐dents are learning or not learning, as the case may be, reminds me of the rigorous studies I had as early as fifth and sixth grades. However, because of the wonderful teachers I had back then in our Bronx public school, the courses and topics had been presented in a way that was interesting, exciting and made us want to learn more. His‐tory lessons were described in such a way that it felt like a story being woven where you wanted to hear the next part of the tale. Were they able to survive colonial life? Were the explorers going to make it across the wilderness or sailing around the globe to safely arrive on their journey to discover new worlds? One of my favorite topics was when our teacher introduced us to mythology, emphasizing both the Greek and Romans. Hearing how they explained things the ancient world didn’t comprehend, pre‐scientific discoveries, made their reasoning more creative than the actual cause found centuries later. It was fascinating to learn that the Greeks and Romans had gods with similar “powers”, but called different names. For instance, the god of waters and seas was believed to be Neptune by the Romans. The Greeks had a similar god with the same role, but called him Poseidon. (Think about the film, Poseidon Adventure, which takes place in the ocean.) Likewise, the King of all gods for the Romans was Ju‐piter, but the Roman believed their King was called Zeus.

Speaking of the Roman Empire, another subject from that period I thought inter‐esting was Roman Numerals. Back in the day I felt like it was learning a secret code, so different from our numbers learned in kindergarten. To this day, whenever I see something written in Roman numerals like the date of a building’s construction on the facade or at the end of a film describing the year it was made, I quickly try to decipher its numbers. No Lost Shoes (Environmental category) – Directed by Max Romey. Our shoes go lots of places, across vast distances, and over many miles. But eventually, no matter how much we care for them, our shoes break down and usually get thrown away. Max Romey wanted to find out what happens to his old shoes, and in his film No Lost Shoes, high‐lights the full scale of the problem.

Rote Learning

It was mandatory that all fifth graders know the names of all the states and their cap‐itals. To fulfill this requirement our seventh grade teacher, Mrs. Paoletta, told us to pick a “study partner” that we would share this learning assignment with as we stood in front of the class. My good friend Dianne and I took on the tasks and studied together after school. Alphabetically, starting with the letter “A” one student would name the state and the other would have to respond with the capital. Another rote lesson was to know ALL the presidents in order, starting with the obvious, George Washington. Trust me, to this day I can still name all of them practically rapid fire until I get to the names of those presidents that came into office long after I graduated from grade school and stopped these recitals. For those I have to stop and think and recite at a much slower pace. Indeed, those were the good old days of learning!

DAIRY FREE CHOCOLATE MUFFINS

Okay, truth be told, I don’t care that these muffins are dairy free. I just care that they are moist and delicious! Why dairy free? Well, I wanted something chocolatey one day and I was out of milk and low on butter, so I took what was then my favorite chocolate muffin recipe and swapped out the butter for oil and the milk for that morning’s left‐over coffee! The result came out better than the orig‐inal. I think the coffee really enhances the chocolate flavor and the oil made them lighter than the origi‐nal. The best part (besides the end result) is that they are so simple, only take a few minutes, use pan‐try ingredients, and there is very little clean up...you don’t even need to bring out your mixer!

This recipe will make about a dozen and a half muffins, or about 3 dozen mini‐miffins. I made some of each, since I ran out of pans...LOL.

Dairy Free Chocolate Muffins

INGREDIENTS:

DIRECTIONS:

Preheat oven to 350° 1

Whisk flour, sugar, cocoa powder, baking powder, 2 and salt together in a large bowl.

Add eggs, coffee, oil, vanilla, and any “add‐ins” you 3 care to use, and mix until well combined.

Use a scoop to fill paper lined muffin tins almost to 4 the top for a good “muffin top” (thank you Seinfeld).

Bake for 15‐20 minutes (mini‐muffins for 10‐15 mi‐ 5 nutes) or until a toothpick inserted in the center of one of the muffins comes out clean.

Let cool in pan for 5 minutes, then move to a rack to 6 cool completely before storing in an air tight container.

Actually, these muffins are so good right out of the pan, that step 5½ above should be “put on a pot of cof‐fee in anticipation of your fresh baked treat.” Enjoy!

August 10 Mercury at Greatest Eastern Elongation. The planet Mer‐cury reaches greatest eastern elongation of 27.4 degrees from the Sun. This is the best time to view Mercury since it will be at its highest point above the horizon in the evening sky. Look for the planet low in the west‐ern sky just after sunset.

August 12, 13 Perseids Meteor Shower. The Perseids is one of the best meteor showers to observe, producing up to 60 meteors per hour at its peak. It is produced by comet Swift‐Tuttle, which was discovered in 1862. The Perseids are famous for producing a large number of bright meteors. The shower runs annually from July 17 to August 24. It peaks this year on the night of August 12 and the morning of August 13. The crescent moon should not be too much of a problem this year. Skies should still be dark enough for a good show. Best viewing will be from a dark location after midnight. Meteors will radiate from the constellation Perseus, but can appear anywhere in the sky.

August 16 New Moon. The Moon will located on the same side of the Earth as the Sun and will not be visible in the night sky. This phase occurs at 09:39 UTC. This is the best time of the month to observe faint objects such as galax‐ies and star clusters because there is no moonlight to interfere.

August 24 Moon Occults Antares. The Moon pass in front of the bright star Antares in the constellation Scorpius. This rare event will happen at 10:29 PM (02:29 UTC) and will be visible in the central US and northern Florida.

August 27 Saturn at Opposition. The ringed planet will be at its clos‐est approach to Earth and its face will be fully illuminated by the Sun. It will be brighter than any other time of the year and will be visible all night long. This is the best time to view and photograph Saturn and its moons.
