Pulses are a great source of protein. This means they can be particularly important for people who don't get protein by eating meat, fish, or dairy products.

But pulses can also be a healthy choice for meat-eaters. You can add pulses to soups, casseroles, and meat sauces to add extra texture and flavor.

Soaking and rinsing dry beans before cooking, as well as rinsing canned beans in water, can help to reduce these hard to digest carbohydrates.

You shouldn't let a bit of wind put you off eating pulses. Cooking and storing pulses safely Typically, pulses are bought either tinned or dried. Tinned pulses have already been soaked and cooked, so you only need to heat them up or add them straight to salads if you're using them cold.

Dried pulses need to be soaked and cooked before they can be eaten.

Dried kidney beans and soya beans contain toxins, so it's important to ensure they have been cooked properly before you eat them.

Cooking times vary depending on the type of pulse and how old they are, so follow a recipe or the instructions on the packet.

Cooking soya beans safely Soya beans contain a natural toxin called a trypsin inhibitor. This can stop you digesting food properly. The toxin is destroyed by proper cooking.

Tinned soya beans have already been cooked, so you can use them straight away.

When using dried soya beans, follow these 3 steps to destroy the toxins: soak the dried beans in water for at least 12 hours drain and rinse the beans, then cover them with fresh water boil them vigorously for 1 hour, then simmer the beans for about 2 to 3 hours to make them tender

Storing cooked pulses If you cook pulses and you aren't going to eat them immediately, cool them as quickly as possible and then put them in the fridge or freeze them.

As with all cooked foods, don't leave cooked pulses at room temperature for more than an hour or two because this allows bacteria to multiply.

If you keep cooked pulses in the fridge, eat them within 2 days. It should be safe to keep pulses frozen for a long time, as long as they stay frozen.

But keeping food frozen for too long can affect its taste and texture. Follow the freezer manufacturer's instructions on how long types of food can be kept frozen.

What are pulses?

Pulses, also known as legumes, are the edible seeds of leguminous plants cultivated for food. Dried beans, lentils, and peas are the most commonly known and consumed types of pulses.

Staples dishes and cuisines from across the world feature pulses, from hummus in the Mediterranean (chickpeas) to a traditional full English breakfast (baked navy beans) to Indian dal (peas or lentils).

Pulses do not include crops that are harvested green (e.g. green peas, green beans)—these are classified as vegetable crops. Also excluded are those crops used mainly for oil extraction (e.g. soybean and groundnuts) and leguminous crops that are used exclusively for sowing purposes (e.g. seeds of clover and alfalfa).

Nutritional value They are packed with nutrients and have a high protein content, making them an ideal source of protein particularly in regions where meat and dairy are not physically or economically accessible.

Pulses are low in fat and rich in soluble fiber, which can lower cholesterol and help in the control of blood sugar.

Because of these qualities, they are recommended by health organizations for the management of noncommunicable diseases like diabetes and heart conditions.

Pulses have also been shown to help combat obesity.

Pulses are the edible seeds of the legume family – they grow in pods and most notably include chickpeas, lentils, and a host of beans. Pulses are not new – they have existed as part of the human diet for centuries – but their benefits are not always fully appreciated. The 2016 International Year of Pulses helped to rectify this by raising awareness of their importance. Just one year later, global production increased by 15%, and in 2018 an estimated 92.4m MT of pulses were produced globally. The annual UN World Pulses Day continues to celebrate the role that pulses can play in helping to achieve the UN’s 2030 Agenda for Sustainable Development.

The amino acids in pulses complement those contained in cereals, resulting in a balanced protein intake when consumed together. Additionally, pulses are a source of iron and other essential minerals such as zinc, selenium, phosphorus and potassium, as well as B vitamins. As part of a healthy diet, one of the three pillars of the Food Sustainability Index, pulses can help to prevent and manage obesity, diabetes, coronary conditions and cancer.

Promoting pulses in action Growing pulses can improve the livelihoods of low-income farmers, including women. Women prepare 90% of meals in households around the world and produce 60–80% of food in nonindustrialized countries. Executive Director Prema Gopalan founded Swayam Shikshan Prayog (SSP) in 1998 to address malnutrition and health problems for rural women by establishing capacity-building programs and promoting sustainable farming.
